Abstract

This study examines the shifting patterns in meal consumption practices among Canadians and the sources of disruption of meal habits. It analyses the notion of breakfast, lunch, dinner, out-of-household consumption of food, cooking, and snacking which could be considered as disrupting eating habits. Meal skipping, primarily breakfast and lunch was common, particularly among women, as was consumption of food outside the home, particularly among lower income earners and respondents with lower education attainment. The findings of this survey suggest that contemporary Canadians are experiencing a disruption of meal times, a rise in the frequency of snacking and an erosion of the will or ability to prepare or cook meals at home. For many Canadians, the traditional notion of three-meals a day is becoming an ideal, rather than a daily reality. Fragmented food habits and the disintegration of traditional meal patterns represent a challenge to public health nutrition in Canada.  相似文献

Spain currently is experiencing rapid cultural and economic changes that influence food markets. In this paper, the selection and purchase of food away from home and at home in Spain are modeled in a two-stage process using switching regression techniques with explicit accounting for the value of women's time available for household production. The empirical results show that the value of women's time, income, and household demographic variables are important determinants of both participation in the market for and expenditures on food away from home. The paper concludes that high-income, young families with few children and employed family heads are more likely to consume food away from home and also to spend more than others on food away from home.  相似文献

ABSTRACT

One of the largest recent changes in consumer food purchasing behavior is the trend towards greater consumption of food eaten outside the home. Between 1994 and 2000, the share of total food expenditures spent on food away from home (FAFH) increased from 7 to 15% with an increasing share for fast-food facilities. This study focuses on whether demographic and socioeconomic factors have detectable effects on Turkish FAFH expenditures. This question is of interest because previous studies suggest that increasing household income, education, female labor participation and changing lifestyle especially in developing countries increased household FAFH consumption share but decreased food at home consumption share. However, no study to our knowledge has examined the combined effect of income, education, employment, and family status on Turkish FAFH consumption. The data for this research were obtained from personal interviews of representative sample households of the province of Adana in Turkey. The findings of this study generally indicate that restaurant facilities, employment of wife and education, composition of household, and income are statistically significant determinants of FAFH consumption.  相似文献

China faces health and environmental problems associated with the use of agricultural chemicals, including pesticides. While previous studies have found that risk aversion affects pesticide use in China, they have focused primarily on commercial cotton farmers. In this study, we consider the case of smaller, semisubsistence and subsistence farmers in a poor and landlocked province of China (Yunnan). We use a field experiment to measure risk aversion and collect detailed data on farm production and input use to specifically ask whether risk aversion affects pesticide use, and whether this effect differs for subsistence farmers producing exclusively for home consumption versus semisubsistence farmers who produce both for home and the market. We find that risk aversion significantly increases pesticide use, particularly for subsistence farmers and for market plots by semisubsistence farmers. Further, this effect of risk aversion significantly decreases with farm size for subsistence farmers, but not for semisubsistence farmers, implying that pesticide use may be used to ensure sufficient food supply for home consumption. Finally, we find barriers to the use of pesticides for subsistence farmers, both in terms of financial constraints and economies of scale. This finding implies that risk‐mitigation strategies, such as crop insurance, may not target food security concerns of subsistence farmers. Given these different motivations for pesticide use, policymakers may wish to consider effective tools to support rural food security for farmers in the poorer regions of China in order to decrease pesticide use.  相似文献

We evaluate the current structure of food demand in urban China by using household expenditure survey data from five provinces. Two complementary analyses are undertaken. First, an aggregate analysis based on a fractional logit model is used to examine how households allocate food expenditures across the food‐at‐home (FAH) and food‐away‐from‐home (FAFH) categories. This is followed by a disaggregated analysis of how households allocated their FAH expenditures across 12 commodity categories. A Quadratic Almost Ideal Demand System (QUAIDS) is used. We find evidence of significant food purchase substitution and complementarity.  相似文献

Home gardens have been an integral part of the recent food-based interventions aimed at stimulating changes in dietary patterns and improving nutrition. However, evidence of their effects on food security, dietary quality, child anthropometry and incomes is limited, particularly among vulnerable populations groups. Using panel data from a sample of approximately 1900 households from vulnerable population groups in Odisha, India, difference-in-differences and other econometric techniques, we analyse the effects of home gardens on food security, dietary quality, child anthropometry and income. On average, home gardens contribute to better household food security, higher dietary quality of men and women but do not contribute to higher children's dietary quality and anthropometry. Also, home gardens increase monthly per adult equivalent incomes by 37% and reduce the prevalence of poverty by 11.7 percentage points. Quantile regression results suggest that home gardens enhance food security and incomes in all quantiles, but richer farmers benefit more than poorer farmers. Overall, home gardens can enhance household food security, dietary quality of men and women, and income gains among vulnerable farming population groups, but they may not suffice to improve child dietary quality and anthropometry.  相似文献

Increasingly, spatial econometric methods are becoming part of the standard toolkit of applied researchers in agricultural, environmental and development economics. Nonetheless, applications in discrete‐choice settings remain few and despite its appeal, applications of the Bayesian paradigm in these settings are still fewer. We provide a primer to the Bayesian spatial probit with the objective of making accessible to non‐users a class of iterative estimation methods that have become fairly routine in Bayesian circles, offer an extremely powerful addition to applied researchers toolkits, and are essential in Bayesian implementation of spatial econometric models. We demonstrate the methods and apply them to estimate the ‘neighbourhood effect’ in high‐yielding variety (HYV) adoption among Bangladeshi rice producers. We estimate the strength of this relationship using a standard, spatial probit model and compare the policy conclusions with and without the neighbourhood effect included.  相似文献

This study investigates the effects of national degrees of uncertainty aversion (unfamiliarity avoidance) on the magnitude of bias towards domestic products rather than imports. The empirical analysis is implemented for primary agricultural and processed food products, using a panel dataset covering trade between and within OECD countries. Primary agricultural products are often blended and associated with reference prices. Conversely, processed food products exhibit higher levels of product differentiation. The empirical results confirm expectations by emphasizing the magnifying effects of uncertainty aversion on home bias in the case of processed food products but not in the case of primary agricultural products. These magnifying effects are primarily associated with processed food products destined for final household consumption. Other results reveal significant variations between different countries (based on geo‐economic and national income categories). Our results also indicate that home bias and uncertainty aversion effects on home bias have not decreased over time. The empirical results remain robust under different estimation methods.  相似文献

This study proposes a model of household food spending that accounts for zero censoring and can be applied to data collected through a clustered survey design to investigate the impact of food sales taxes on three groups: households who are eligible for and participate in the Supplemental Nutrition Assistance Program (SNAP), households who are eligible but do not participate in the program, and households who are not eligible for the program. We find that SNAP participating households are largely insensitive to grocery taxes and respond to restaurant taxes by shifting more of their food dollars towards at-home foods. Among households who are eligible for SNAP but do not participate in the program, grocery taxes reduce spending on foods purchased for at-home consumption, and thereby increase the amount of the total food budget allocated to away from home foods. This is concerning from a nutrition and health standpoint since away from home foods tend to be more calorie dense and nutritionally poorer than at home foods.  相似文献

There is renewed interest in robust estimates of food demand elasticities at a disaggregated level not only to analyse the impact of changing food preferences on the agricultural sector, but also to establish the likely impact of pricing incentives on households. Using data drawn from two national Household Expenditure Surveys covering the periods 1998/1999 and 2003/2004, and adopting an Almost Ideal Demand System approach that addresses the zero observations problem, this paper estimates a food demand system for 15 food categories for Australia. The categories cover the standard food items that Australian households demand routinely. Own‐price, cross‐price and expenditure elasticity estimates of the Marshallian and Hicksian types have been derived for all categories. The parameter estimates obtained in this study represent the first integrated set of food demand elasticities based on a highly disaggregated food demand system for Australia, and all accord with economic intuition.  相似文献

This article develops a method for using input–output data to calculate a farm share estimate for all food rather than the typical approach of estimating a price spread for an individual product. The farm share of the food dollar is approximately 14% in the United States and 17% in Canada. The farm share increased somewhat during the commodity price boom but has generally fallen steadily by approximately 20% since 1997. While the farm share of expenditures on food for home consumption is approximately 22% across both countries, it is 4% in the United States and 7% in Canada for meals consumed away from home. The empirical framework can be extended to other countries given the extensive use of System of National Account data making international and temporal comparisons possible across farm and food marketing systems.  相似文献

In Maasai culture, responsibilities are traditionally divided between genders. Men are in charge of grazing and managing the livestock herds. Women take care of the family, administer food supplies, and are responsible for milking. For them, balancing home consumption of milk (for the family and for the calves), milk sale, and food purchase is a major task. In this article, we first investigate how different milk sales groups vary regarding the use of different food items and the respective quantities consumed by the enkaji, i.e., a Maasai subhousehold. Then, we address the commercialization decision and assess the effect of milk sales on the enkaji's food item use and food consumption. Using the data of Maasai enkajijik in the milk catchment area of a milk collection center in Ngerengere, Tanzania, we estimate the effects by employing propensity score matching procedures. Our findings suggest that milk sellers, especially those selling to the milk collection center, have a more diverse diet. In terms of per person consumption, the groups are markedly similar. Therefore, we conclude that income generated by milk sales is invested in diet diversification rather than in increasing the quantity of food consumed, hence the enkajijik appear not to make use of caloric terms of trade.  相似文献

The Russian food system has undergone substantial changes. However, knowledge on how economic transition has affected the structural parameters of food demand is lacking. Based on a two‐stage LES‐LA/AIDS model and annual panel data from the Russia Longitudinal Monitoring Survey (1995–2010), we provide a comprehensive set of food demand elasticities for Russia along two dimensions. First, we estimate demand parameters for three characteristic time periods in order to trace changes during transition. Second, to account for the Russian population's diversity, we derive elasticities for five different consumer segments. These groups are established by a cluster analysis based on households' food purchases. Our findings suggest that demand for food is far from satiated in Russia. We find generally high unconditional expenditure and own‐price elasticities for food. Both expenditure and own‐price elasticities show slight decreases in absolute terms over time. Low expenditure elasticities for staple foods like bread or cereals and high values for luxury goods such as meat, alcohol and tobacco suggest considerable changes in the composition of food baskets with further income growth. Results indicate that food production at home loses in importance while more affluent households in particular increase their demand for food consumption away from home.  相似文献

Farm operators are an integral part of some rural economies. The businesses they operate support jobs and purchase goods and services from local implement and input suppliers. Farm household spending on food, furniture and appliances, trucks and automobiles, and a range of consumer goods also supports local jobs and retail businesses. Based on the 2004 Agricultural Resource Management Survey, the linkages between farm household and business expenditures and communities are explored. Farms in urban areas purchase household goods in markets closest to the farmstead, but traveled further to purchase farm business items. The opposite pattern was observed in rural locations.  相似文献

This study assesses the potential impact of rising world food prices on the welfare of Ugandan households. While Uganda experienced sharply higher food prices in 2008, as a landlocked, food‐exporting country the causes of those price changes were mainly regional and indirect rather than directly transmitted from global markets. Using trade volumes, food prices, and household survey data we describe how Uganda, unlike some other countries, is partially shielded from direct impacts of global food price movements. Although the majority of Ugandans are net food buyers, the adverse impact at household‐level of rising global prices is moderated by the relatively large quantity and range of staples consumed that come from home production. Moreover, several of these are not widely traded. Some population groups in Uganda are vulnerable to rising food prices, however, primarily those for whom maize is an important staple, including those dependent upon humanitarian relief and the urban poor. Only a relatively small group of Ugandan households will benefit directly and immediately from rising food prices—the significant net sellers of food crops constituting between 12% and 27% of the population. In this assessment we do not estimate the level and extent of wider second round effects from these higher prices.  相似文献

We undertake a range of tests for structural food preference change in urban China, using provincial‐level panel data from 2002 to 2010. We introduce a time transition function into the Generalized Quadratic Almost Ideal Demand System (GQAIDS) to represent consumer preferences. We apply this system to evaluate the demand structure for seven food groups. The use of the GQAIDS specification relaxes many empirical demand system restrictions associated with previous analyses of structural preference change. Our findings suggest that Chinese food preferences are continuing to evolve.  相似文献

Consumer behavior and food consumption comprise the largest amount of waste in the food chain. This study aimed to identify the relationships among consumer environmental concerns, their awareness of food waste, demographics, and their food consumption. The findings suggest that food waste prevention is positively influenced by consumers' environmentally conscious buying, food waste awareness, bulk buying, frequency of home cooking, and age. Impulsive food purchasing, the frequency of eating out, and the number of people in the household negatively influence food waste prevention. Food policy makers and retailers should be involved in educating and encouraging consumers to minimize food waste.  相似文献
