This paper provides a critical commentary on the conception of food miles followed by an empirical application of food miles to two contrasting food distribution systems based on carbon emissions accounting within these systems. The comparison is between the carbon emissions resultant from operating a large-scale vegetable box system and those from a supply system where the customer travels to a local farm shop. The study is based on fuel and energy use data collected from one of the UK’s largest suppliers of organic produce. The findings suggest that if a customer drives a round-trip distance of more than 6.7 km in order to purchase their organic vegetables, their carbon emissions are likely to be greater than the emissions from the system of cold storage, packing, transport to a regional hub and final transport to customer’s doorstep used by large-scale vegetable box suppliers. Consequently some of the ideas behind localism in the food sector may need to be revisited.  相似文献

A major barrier to achieving sustainable diets is the lack of clearly defined and agreed upon intervention points that will positively influence multiple sectors of the food system. There is an urgent need to understand what policy approaches and interventions will most effectively enhance the sustainability of diets in rapidly urbanizing low- and middle-income countries. To address this need, this work combines the input of diverse stakeholders and analysis of existing datasets to develop a conceptual framework for sustainable diets that is locally relevant to Vietnam using a process that is generalizable to other developing countries. The resulting framework includes 235 unique, measurable indicators within eight domains: (1) food production, (2) food processing and distribution, (3) food loss and waste, (4) food access and consumption, (5) food and water safety, (6) nutrition, (7) sociopolitical context, and (8) environmental impact. This conceptual framework was employed in a participatory workshop that brought together 50 Vietnamese stakeholders from diverse areas of expertise to identify and prioritize specific metrics for measuring sustainable diets. Based on the results of the stakeholder workshop, expert interviews, and characterized datasets, a comprehensive set of minimum metrics for each domain was produced and key leverage points that are likely to have an impact across multiple sectors were identified. These leverage points include food quality and safety, agricultural chemical usage, food waste, and water management. The analysis is expected to contribute to evidence-based policymaking in Vietnam to cultivate more sustainable diets.  相似文献

The possible contribution of local sales chains to the reduction of energy consumption has been hotly debated in recent years. Some authors establish a link between the reduction of distances traveled by food and lower energy consumption due to transportation, while others hold that local supply chains have a poor energy performance. Sustainability issues are particularly sensitive to the fashion supply chain, given current fierce competition, intensive resource use, and the exposure of penurious labour conditions in some regions.In this paper, we discuss how the sustainability movement is impacting the fashion retail supply chain organisation and its performance. We carried out a study with stakeholders of the fashion industry and we report on their views. We elaborate on the challenges and conflicts of the different dimensions of sustainability, and we discuss how to leverage both the internal and external organisations in the European supply chain.  相似文献

Within a context of delivering food security into the future, dietary guidelines are being reframed, corporations are replacing unsustainable products, and consumers are being encouraged to become ecological citizens. While there is a growing literature on the food practices of ‘alternative’ consumers, ‘mainstream’ consumers are less well understood. This paper describes qualitative research undertaken in a socio-economically disadvantaged area of Sydney, Australia, which aimed to uncover consumer views towards sustainable and healthy diets. Most participants indicated a discrepancy between their desired and actual behaviours: while they want to support Australian, or local, food producers they gravitate towards cheap and tasty food from ‘anywhere’; and while they associate nutritious food with fresh food, they will buy processed foods which can be less expensive, appeal to children and are prone to less waste. Reflecting mainstream Australian political culture, participants were compromising household food budgets in order to pursue a socially acceptable standard of living (including decent housing, car-reliance). They were also incorporating the pleasure and desires of family members as part of ‘the moral arts of everyday life’. Using social theories of consumption and practice sociology we argue that food choices and practices – easy or not – need to be interpreted as part of the role that consumption plays in political citizenship and moral subjectivity. In the Western Sydney context, food practices are essentially household budget and family nourishment practices rather than nutrition and sustainability practices; a position which is not addressed in the government’s new food policies or wage determination processes.  相似文献

Declining rates of growth are indicated for total food demand as well as import demand. Real world prices are likely to continue on their downward trend. Increased attention to agricultural development will help ensure that average food consumption levels will rise in all developing regions except Sub- Saharan Africa. Market instability remains a problem but developing countries are now better protected against it. The dark side of the picture: chronic undernutrition among the poorest of the poor is not likely to be eradicated in this century.  相似文献

In 2014, the Rome Declaration on Nutrition recognized food system sustainability as a key condition to ensure adequate nutrition and access to healthy diets for all. Five years later, the evidence has never been more clear: despite a series of positive outcomes, our current food systems have increasingly generated severe environmental, social, and health-related costs. Many of the most severe health impacts of food systems can be traced back to the core practices of industrial food and farming systems (e.g. input-intensive agriculture; intensive livestock production; mass marketing of highly processed foods; deregulated global commodity chains). Yet alternatives exist.This article provides an overview of the key impacts generated by current food systems on human and environmental health, with an emphasis on their effects in the region of Europe and Central Asia. It then brings together evidence on how diversified agroecological systems can play a key role in meeting health and nutrition goals, while also addressing the environmental, social, and economic challenges created by current systems. Ultimately, the article sheds light on how to break away from the underlying drivers keeping current systems in place, and suggests how more diversified systems can effectively be promoted through systemic, multi-sector, and integrated policy approaches to ensure healthy diets for all.  相似文献

Sustainable product lifecycle systems are attracting increasing attention because of cost competition, resource constraints and environmental issues. Short lifecycle products, such as consumer and defense electronics, are of particular concern. We formulate a product lifecycle evolution system based on stochastic dynamic programming. There are few peer-reviewed or major published studies that estimate the total amount of food loss in developed countries and even fewer attempt to estimate the monetary value. We compiled estimates of the amount and value of food loss for more than 200 individual foods in the United States using the US Department of Agriculture’s Economic Research Service’s Loss-Adjusted Food Availability data and then aggregated these values to estimate the total value of food loss and the value by food group. The results indicate that in 2008, the estimated total value of food loss at the retail and consumer levels in the United States as purchased at retail prices was $165.6 billion. The top three food groups in terms of the value of food loss at these levels are: meat, poultry, and fish (41%); vegetables (17%); and dairy products (14%). Looking more closely at the estimates for the consumer level, this level of loss translates into almost 124 kg (273 lb) of food lost from human consumption, per capita, in 2008 at an estimated retail price of $390/capita/year. Food loss represents a significant share of household food expenditures: our estimates suggest that the annual value of food loss is almost 10% of the average amount spent on food per consumer in 2008 and over 1% of the average disposable income. This consumer level loss translates into over .3 kg (0.7 lb) of food per capita per day valued at $1.07/day. Our estimates of the total value of food loss in the United States and loss estimates by food group are useful in that they can generate awareness of the issue among the food industry members, governments, and consumers. Potential large-scale approaches and economic incentives to mitigate food loss in developed countries are also discussed.  相似文献

There seems to be high interest in the question of food loss and food waste. The comments take up the article in Food Policy on “Total and per capita value of food loss in the United States”. It is argued that the methodology of calculating the food loss is questionable. National consumption indicators are frequently compiled using food supply estimates in the absence of reliable household or individual intake data. The authors examine the relationship between these three levels of information and in particular, the potential ‘losses’ of energy in the food system, comparing data from different countries and over time. They demonstrate the unreliability of supply estimates as proxy indicators of consumption and question their current usage in statements about global hunger and the links between health and food intake.  相似文献

This paper analyses the effects of voluntary traceability on vertical relationships within food supply chains using a transaction cost perspective. The analysis makes reference to the Italian situation where the national standard organization has introduced a private standard for traceability that provides a higher degree of information associated with the individual product than the European mandatory traceability system. A survey was conducted by questionnaire to assess changes in transaction characteristics, costs and governance after the introduction of voluntary traceability. The sample represents all Italian firms applying this standard. Factorial and cluster analyses were applied to find the different reorganizations of transactions. The results highlight an increase in asset specificity and a decrease in the uncertainty level throughout the supply chains. The introduction of voluntary traceability shows increased vertical coordination for firms that previously used oral agreements and variation in transactions conditions for firms using contracts. Instead vertically integrated firms do not reveal any variation in the governance of transactions as they are already internally safeguarded.  相似文献

International food assistance reaches more than 90 million people per year, much of it through in-kind programs that distribute food. Several key aspects of in-kind programs—what food is shipped, when and from where it is sourced—have been changed to improve program effectiveness and efficiency, becoming helpful tools in the modernized in-kind food assistance toolbox. Packaging—in what food is shipped—remains an unstudied and underused tool despite more than 50 million bags per year passing through in-kind supply chains, affecting program effectiveness and efficiency. We conduct an experiment with 46 shipments using different packaging materials and sizes to measure the effect of packaging on shipment quality, cost, and timeliness. Analyzing the data with randomization tests, we find that, relative to the current materials, new materials maintain shipment quality and cost while improving timeliness and in some cases may reduce cost. One promising material that balances cost and effectiveness is a bag with a biopesticide applied, designed to prevent insects from reproducing. We also find that, relative to the current size, larger bags may improve costs at least in the domestic portion of the supply chain. Donors and their partners should consider packaging as one more tool in the modernized food assistance toolbox. As the toolbox continues to fill, the coming opportunity and challenge to identify situations where the various tools work in complementary ways.  相似文献

This paper evaluates the sustainability performance of the Greek dairy chain and the performance of its individual members by using key indicators in relation to efficiency, flexibility, responsiveness and product quality. We assessed the importance of these indicators based on the relevant perceptions of key members of this chain. A structured questionnaire was developed where nineteen sustainability-related issues were examined. Two hundred and fifty three members of the Greek dairy supply chain responded including breeders, manufacturers, wholesalers, retailers and catering companies. Our findings illustrate the immediate need for improvement in many key sustainability performance indicators. They also show the critical role of large dairy manufacturers who are the “sustainability performance champions” in this chain and are the driving force for the implementation of many sustainability initiatives.  相似文献

Recent evidence on malnutrition and poverty raise important questions on the role of food assistance policies and programs. In this review article, we examine evidence on the economic and nutritional impacts of international food assistance programs (FAPs) and policies. The returns on investments in FAPs are, on average, high but depend considerably on the targeting and cost structures as well as on food quality and role of complementary activities. We disaggregate findings into four classes of recipients. Returns to FAPs are highest for children under two. But, FAPs oriented towards early childhood interventions are less well funded than are interventions aimed at school-age children or at the broader, largely adult population even though available evidence indicates that these latter classes of interventions offer considerably lower average returns in economic, health, and nutrition terms. Nonetheless, FAP effectiveness in achieving any of several objectives varies with a range of key factors, including targeting, additionality, seasonality, timeliness, incentive effects, social acceptability and political economy considerations.  相似文献

Micronutrients are defined as substances in foods that are essential for human health and are required in small amounts. They include all of the known vitamins and essential trace minerals. Micronutrient malnutrition affects ⅓–½ of the global population. It causes untold human suffering and levies huge costs on society in terms of unrealized human potential and lost economic productivity. The goal of this paper is to identify deficiencies in the food system that lead to micronutrient malnutrition and explore and evaluate strategies for its prevention. We examine the impact of agricultural practices on micronutrients in the food supply, including cropping systems, soil fertility and animal agriculture. We then discuss the potential of biofortification – i.e. increasing the concentration of micronutrients in staple food crops through conventional plant breeding or genetic engineering– as a means to reduce micronutrient deficiency. In addition, we discuss the impact of food losses and food waste on micronutrients in the food supply, and we explore successful strategies to preserve micronutrients from farm to plate, including food fortification. Our review of the literature sheds light on the advantages and limitations of alternative interventions to reduce micronutrient deficiencies along the supply chain. We end with recommendations for actions that will reduce the prevalence of micronutrient malnutrition.  相似文献
