The objective of this study is to describe the ‘scientific identity’ of scholarly journals in hospitality and tourism research by reviewing and evaluating the approaches and the geographical affiliations of authors published in selected journals. The compiled results are analysed for patterns that appear to reveal the ‘scientific identity’ of each of the selected journals. In particular, scholars can note the particular features of individual journals while acknowledging the width and variety of research designs that are published in these scholarly journals.  相似文献

A well-designed mission statement is essential for formulating, implementing, and evaluating business strategy. Yet the role of the mission statement in the strategic management of business firms has not been sufficiently highlighted in the research literature. It is not surprising that minimal attention has been paid to the role of mission statements in the strategic management of tourism and hospitality organisations. This paper attempts to remedy this apparent neglect. It focuses on the international airline industry by selecting 50 mission statements from corporate websites.1 The mission statements are then analysed to determine the extent to which they conform to commonly accepted views of the ‘ideal’ mission statement. Variations from the stated ‘ideal’ are highlighted and discussed. Conclusions are drawn regarding the role of mission statements in the strategic management of tourism and hospitality organisations.  相似文献

This paper explores the relationship between the literature on the issue of control and the realities of the hospitality industry. Management control is related to the unsanctioned entrepreneurial activities of operatives (illustrated by the ‘taxi scam’), the failure of computer systems used to control operatives, and the failure of the hospitality industry to exploit the potential of the new technology. The paper suggests that management's (and a significant part of the literature in this area) failure within hospitality is linked to the perception of the role of the hospitality manager as one of policing the industry.  相似文献

This empirical study carried out in Hong Kong set out to discover how aware are practicing on-property hotel controllers (OPHCs) and hospitality management graduates of desired attributes for the job of a hotel financial controller. It identified profiles of 21st century OPHCs ‘painted’ by practising OPHCs (practitioners) and graduates and matched these with profiles from recruitment specialists (recruiters) and studies reported in the literature on unit controllers in business generally and hotels specifically. The approach to the research, consisted of a quantitative analysis of secondary data that identified interviewees (practitioners, graduates and recruiters) and themes that were then investigated in primary data collection by qualitative methods (content analysis of discourse). The study found that graduates needed to better inform themselves of desired attributes (qualifications, skills and personality). However, practitioners and recruiters formed a consensus on profiles, both perceiving a distinction in profile between OPHCs in ‘international’ type hotels and ‘other’ types of hotel. Perceived attributes of OPHCs in ‘international’ hotels showed many similarities with their counterparts in business generally.  相似文献

The phrase ‘demographic timebomb’ has taken on the aura of a shibbholeth and that everyone knows they ought to be fearful about. But is it really understood and what needs to be done? This article seeks to answer these questions and to shed some light on the employment strategies being developed by some British hospitality employers to counteract the demographic changes of the 1990s. As a result, some of the myth that the hospitality industry is lagging behind other industries can be dispelled but other findings support popular testimony that the industry faces special problems.  相似文献

A review of over 100 papers concerned with human resource management (HRM) in five leading hospitality journals during 2002 and 2003, finds that the research agenda mirrors what is seen in mainstream HR research and theory, focusing around general HRM, employee resourcing, employee development and employee relations. Given that some mainstream HR academics have ‘highjacked’ topics such as emotional labour, emotional intelligence and HRM in service work as new and innovative, hospitality researchers need to reclaim their territory, push forward the boundaries of theory making and propose theory that is hospitality specific, relevant and useful.  相似文献

Corporate enterprise (CE) is in many ways a new subject and yet paradoxically, there is nothing new about the practice of enterprise in larger organisations. This paper has examined the changing nature of hospitality organisations using the lens of ‘entrepreneurship’ rather than that of organisational behaviour and/or strategic management. The work is primarily conceptual illustrating how larger hospitality organisations can become more enterprising and thus utilises ideas and theories from research into CE. The paper explores in detail a conceptual framework for understanding CE developed by the author. It applies this framework to hospitality organisations showing the principles involved with the promotion of business creation and innovation. Further, the paper illustrates practical steps one can take to promote new ventures in existing organisations.  相似文献

Recent changes in ownership and consumption patterns within the market have brought many operators to follow strategies that are more concerned with a retailing orientation. Many of the companies operating pubs are aiming to grow sales, and respond quickly to changes in consumer tastes and fashions. They no longer own brewing facilities and frequently control whole estates of the pubs that are marginal, and where the actions, skills and motivations of local unit managers are crucial for the success or failure of the property. The exploration of different forms of indirect control via tenancy and lease arrangements is recognition of the need to provide more entrepreneurial incentives for those managing these more marginal properties. In many ways, it is possible to view pubs owned by chains operated through both tenancies and leasing as a form of franchising. Certainly the literature and research of franchising hospitality services can help inform a study of leasehold and tenanted relationships in licensed retailing. Franchising in licensed retailing is almost wholly based on the tenanted/leased agreements, which stem from the ‘tie’. This paper argues that in the more retailing and service quality competitive environment pub operating companies will need to use more traditional franchising approaches than have been practised in the past.  相似文献

Tourism destinations and tourists have always been ‘soft targets’ for terrorist activities. Although it is widely acknowledged that it is no longer a question of ‘if’ terrorists will strike but rather a question of ‘when’, ‘how’ and ‘how prepared’ the destination is to deal with them, the crisis management frameworks proposed by the literature appear to offer little help to tourism authorities in the development and implementation of a strategy aiming at the prevention and mitigation of terrorist attacks. This paper first discusses the premise that Destination Management Organizations can and should play an active role in the co-ordination of tourism stakeholders in addressing the threat of terrorism. Then, based on the analysis of interviews with 16 experts on terrorism and tourism, it offers a framework for the development and implementation of a destination-specific anti-terrorism strategy.  相似文献

A travel demand model for Mainland Chinese tourists to Hong Kong   总被引:4,自引:0,他引:4  
The purpose of the study was to determine what exogenous variables best explained the travel demand for Mainland Chinese tourists to Hong Kong. The 12 years (1984–1995) annual time series data of ‘number of Mainland Chinese tourist arrivals’, ‘China disposable income per capita’, ‘consumer price indices in Hong Kong and China’ and ‘exchange rates’ was used to develop a travel demand model. Seven exogenous variables were selected for the model through a literature review. An OLS multiple regression analysis was performed to identify the ‘best’ subset of seven exogenous variables to determine the demand model. The results showed that travel demand for Mainland Chinese tourists to Hong Kong could be explained by ‘disposable income per capita’ and ‘relaxation of visa requirements’.  相似文献

Services depend on service employees to interact with consumers in order to deliver the end-product. It has been found that 81.2% of service firms believe that the personnel/customer communication that emerges in the provision of the service is an important aspect of the product. There are two possible approaches to managing this complex point-of-sale interface. One takes the view that such personal interaction should be minimised, either by industrialisation or decoupling, and hence made less complex, whereas another considers that ‘people will remain service's essential ingredient for the relevant future’ (Sasser W.E. and Arbeit S., 1976, Selling jobs in the service sector, Business Horizons, June, pp. 61–65). This viewpoint necessitates an approach to the consumer/personnel exchange that is proactive and positive. Conventionally, marketing focuses on achieving ‘desired exchange outcomes with target markets’ from the consumer's point of view. This paper argues that in service industries satisfactory exchange outcomes must exist for the service providers too, and that marketing can be applied to the workforce as well as to consumers.  相似文献

The importance of hospitality management education has been recognized all over the world for many years. Formal education plays a crucial role in the provision of skilled and competent human resources. Traditional tourism destination countries like Greece have developed tertiary hospitality education systems aiming at satisfying the needs of the tourism and hospitality industry. This paper examines the hospitality management education system in Greece and reports the initial findings of a qualitative research project undertaken for an assessment of the Greek system. The concept and the need of hospitality management education are explored and their struggle for identity is described. Furthermore, the graduates’ views on the hospitality education that they had received are examined through a large number of in-depth interviews. Finally, based on the research findings, a number of conclusions are drawn and specific suggestions for the future of the hospitality education in Greece are proposed. These proposals are reflected in the numerous current developments taking place in Greece as well as in the suggestions for further research.  相似文献

The study aims to examine the long-term abnormal returns to hospitality acquirers as well as the association between excess returns with financing methods and size. The study applies regression analysis with secondary data examining 19 hospitality acquirers from 1996 to 2007. Using hospitality sector specific indices, the study shows that hospitality acquirers receive positive abnormal returns 12 months post-merger and that there is negative association between cash payment and acquirers’ excess returns.  相似文献

This paper uses a case study approach to analyze the turnaround actions of two restaurant firms and compares them to the model of Robbins and Pearce [1992. Strategic Management Journal 9, 287–309]. The objective of this study is to scrutinize why these firms were unsuccessful in turning around and identify gaps between the firms’ actions and the empirical model of turnaround proposed by Robbins and Pearce. Two key turnaround measures, i.e., retrenchment and recovery are explored in detail and discussed in the context of the firms. The need for studying turnaround strategies is warranted as the number of hospitality firms that perish because of unsuccessful turnaround strategies is on the increase. Since turnaround strategies have not been pursued vigorously as a stream of research within the hospitality industry context, this approach would provide a framework for hospitality researchers to initiate similar future research efforts, which in turn would help the industry cope with turnaround.  相似文献

The hospitality industry is highly vulnerable to pandemics. However, little is known about how pandemics alter travelers' evaluations of hospitality services. Therefore, this study investigates the changes in travelers' expectations and perceptions of hotel services during different stages of the novel coronavirus 2019 (COVID-19) pandemic. 98,163 Chinese hotel reviews were collected and scrutinized via text mining and sentiment analysis techniques to derive new implications for service optimization. The results reveal shifts in consumers’ evaluations well beyond hygienic requirements. Insights obtained from this research can help guide hospitality practice in organizing its priorities during acute pandemic situations and adjusting to possibly longer-lasting shifts in consumer preferences.  相似文献

This paper arises out of research carried out recently on the impact of a new hotel on the other hotel businesses which are operating in the same market. To ascertain the possible reactions of hotel managers to new competition and the relative importance of alternative price and non-price strategies a postal survey of 250 three-and four-star graded hotels across the U.K. was undertaken. It was found that a change in published tariff rates is regarded as being relatively unimportant whilst sales promotion is given the highest priority. Disaggregation of the sample by hotel size and occupancy rates does not reveal any significant changes in the relative importance of possible strategies. While the survey indicates that both non-price and price competitive strategies are seen by managers as essentially complementary, nevertheless, price competition in the form of secret discounting of published room rates to mass market intermediaries (tour operators and travel agents) and corporations is particularly important. While price discounting is the ‘private’ face of hotel competition much more research is needed on both the ‘public’ and ‘private’ nature of competition in the hotel industry and how these inter-link.  相似文献

Abstract

Managers within the hospitality industry make frequent reference to TQM principles. The extent to which these principles are applied effectively within the human resource management area of hospitality however remains under-researched. By applying TQM principles, this paper focusses on the relationship between customer service and training drawing upon comparative data from Western and Thai hotels. The paper also examines the perceptions of staff towards of hotels' guest-orientation and the provision of quality guest services. The researchers found that guest assessments of the performance of hotel frontline staff depend on their services function (e.g., front-office, housekeeping). The service quality skills needed by frontline staff were also found to differ in the case of Western and Thai hotels. Such differences merit proper consideration on the part of managers within the major hotel chains. The various findings may assist hospitality managers to determine appropriate strategies for the enhancement of guest services particularly in cross-cultural settings.  相似文献

Limited research examines the effects of interorganizational trust and interdependence on the relationship quality between supply chain partners in the hospitality services. It is also not well understood how the interorganizational joint team manages the relationships between hospitality firms and their suppliers. Drawing on the social exchange theory and the resource dependence theory, we propose a model and hypotheses to articulate the mediation effect of joint teamwork on the relationships between interorganizational trust, interdependence, and relationship quality. We rigorously analyze survey data from hotel and restaurant procurement managers. Our findings confirm that interorganizational trust and interdependence have significant effects on joint teamwork. Meanwhile, the teamwork mediates the effects of interorganizational trust and interdependence on relationship quality. Our work enriches the understanding of supply chain relationships in the hospitality services, and provides meaningful insights for the hospitality firms to manage supply chains. Finally, we conclude our work with suggestions for future research.  相似文献

This paper reports on a study of the learning style preferences of new entrants onto hospitality and tourism programmes in Australia and the United Kingdom. It suggests that a majority of students on these programmes in both countries have strong learning style preference that present some challenges to educators and the planning of learning experiences in higher education. Typically these students prefer learning styles that are concrete rather than abstract, and active rather than reflective. Furthermore, substantial minorities register low or very low preferences for learning in abstract and reflective styles. The initial learning style of new entrants on to taught programmes, therefore, present substantial teaching and learning barriers for educators who are attempting to develop reflective practitioners. Inappropriate teaching strategies can present some genuine learning difficulties for these students. In Australia, educators face added complexity because students from Confucian heritage backgrounds display learning style preferences at odds with their piers. They are more likely to respond positively to abstract and reflective approaches but negatively to active and concrete teaching strategies. The authors suggest one way of approaching the learning needs of these students is to use Kolb's experiential learning cycle as a way of encouraging the development of ‘balanced’ learning strategies that lead to reflective practice.  相似文献

Earlier research has demonstrated that organizational environment variables influence employees’ job outcome variables. This study focuses on the organizational practice dimensions of the hospitality industry and demonstrates that: (1) employees’ perceptions of practices can be construed as a limited set of archetypical configurations, and (2) the configurations are related to job outcome variables. The practice configurations are generated by cluster analysis, and the reliability and validity of the classification is demonstrated.  相似文献
