Food waste prevention has become an issue of international concern, with Sustainable Development Goal 12.3 aiming to halve per capita global food waste at the retail and consumer levels by 2030. However there is no review that has considered the effectiveness of interventions aimed at preventing food waste in the consumption stages of the food system. This significant gap, if filled, could help support those working to reduce food waste in the developed world, providing knowledge of what interventions are specifically effective at preventing food waste.This paper fills this gap, identifying and summarizing food-waste prevention interventions at the consumption/consumer stage of the supply chain via a rapid review of global academic literature from 2006 to 2017.We identify 17 applied interventions that claim to have achieved food waste reductions. Of these, 13 quantified food waste reductions. Interventions that changed the size or type of plates were shown to be effective (up to 57% food waste reduction) in hospitality environments. Changing nutritional guidelines in schools were reported to reduce vegetable waste by up to 28%, indicating that healthy diets can be part of food waste reduction strategies. Information campaigns were also shown to be effective with up to 28% food waste reduction in a small sample size intervention.Cooking classes, fridge cameras, food sharing apps, advertising and information sharing were all reported as being effective but with little or no robust evidence provided. This is worrying as all these methods are now being proposed as approaches to reduce food waste and, except for a few studies, there is no reproducible quantified evidence to assure credibility or success. To strengthen current results, a greater number of longitudinal and larger sample size intervention studies are required. To inform future intervention studies, this paper proposes a standardised guideline, which consists of: (1) intervention design; (2) monitoring and measurement; (3) moderation and mediation; (4) reporting; (5) systemic effects.Given the importance of food-waste reduction, the findings of this review highlight a significant evidence gap, meaning that it is difficult to make evidence-based decisions to prevent or reduce consumption-stage food waste in a cost-effective manner.  相似文献

Food supply chains increasingly rely on big-data management solutions to foster collaboration across the food supply chain and improve business performance. However, little is known about collaboration practices that actors on the digital food supply chain adopt to solve problems such as food waste, or about the drivers and barriers related to the digital transformation of the food supply chain. Most of food waste studies rely on quantitative analysis, which cannot reveal relevant details about the tensions and dynamics of collaboration. We conducted a qualitative study drawing on eighteen in-depth interviews - of managers of large multinational and local organizations covering different and relevant roles on the digital food supply chain - to investigate how organizational and food supply chain processes are affected by the digitalization of the operations along the food supply chain. By triangulating emerging findings with literature on supply chain management we discuss different views about collaborative practices for food waste prevention in the food supply chain and provide insights on how supply chain design and firms' operations have been re-conceptualized with the usage of digital technologies and on the institutional forces both limiting (barriers) and fostering (drivers) the diffusion of the digital food supply chain.  相似文献

This study introduces a framework and model, although applied in a practical setting, sets the stage for further theoretical development of mid-range theory. The methodology applied in the study has four main stages, namely interviews with managers from an online food retail supply chain, analysis of soft and hard data using questionnaire-based surveys of customers and suppliers, archival and factual information gathered from the supplier and the online food retailer to measure food waste across the supply chain and analytical models to quantify various effects. A number of propositions emerged from our multiple methodologies and observations. The major research contribution of this work is to advance Natural Resource Based View (NRBV) to the supply chain and various complexities involved in food waste management. Dynamic capabilities were clearly evident and necessary in rapidly changing industrial contexts such as online food supply chains. This paper also proposes a food waste minimization-and-mitigation model, establishes the direct and indirect outputs of food waste and brings attention of the food waste debate in the context of an exemplar online food supply chain, as well as provides a middle range theoretic framework to enhance understanding on theory and its application to this field informed mainly NRBV.  相似文献

One of the most challenging tasks in today's food industry is controlling the product quality throughout the food supply chain. In this paper, we integrate food quality in decision-making on production and distribution in a food supply chain. We provide a methodology to model food quality degradation in such a way that it can be integrated in a mixed-integer linear programming model used for production and distribution planning. The resulting model is applied in an illustrative case study, and can be used to design and operate food distribution systems, using both food quality and cost criteria.  相似文献

Micronutrients are defined as substances in foods that are essential for human health and are required in small amounts. They include all of the known vitamins and essential trace minerals. Micronutrient malnutrition affects ⅓–½ of the global population. It causes untold human suffering and levies huge costs on society in terms of unrealized human potential and lost economic productivity. The goal of this paper is to identify deficiencies in the food system that lead to micronutrient malnutrition and explore and evaluate strategies for its prevention. We examine the impact of agricultural practices on micronutrients in the food supply, including cropping systems, soil fertility and animal agriculture. We then discuss the potential of biofortification – i.e. increasing the concentration of micronutrients in staple food crops through conventional plant breeding or genetic engineering– as a means to reduce micronutrient deficiency. In addition, we discuss the impact of food losses and food waste on micronutrients in the food supply, and we explore successful strategies to preserve micronutrients from farm to plate, including food fortification. Our review of the literature sheds light on the advantages and limitations of alternative interventions to reduce micronutrient deficiencies along the supply chain. We end with recommendations for actions that will reduce the prevalence of micronutrient malnutrition.  相似文献

Research on on food waste is often reductionist, in that it attempts to measure food waste at single points within the supply chain. While this enables consideration of where food is being wasted within the supply chain, it does not necessarily answer why and how food is wasted across an entire supply chain. Using a paradox theory approach, the aim of this paper is to address these knowledge gaps by exploring the inherent paradoxes in resolving food waste across a supply chain. Drawing on in-depth qualitative research within the Australian horticulture industry, the findings reveal four macro-level paradoxes relating to policy, markets, responsibility, and marketing. This paper makes a novel contribution through consideration of a holistic, whole of chain perspective in relation to food waste. It also extends paradox theory into food waste scholarship. From a managerial perspective, the visibility of paradoxes highlights the need for organisations in the food supply chain to look beyond their own organisational boundaries and adopt a whole-of-chain approach in an attempt to address food waste.  相似文献

The issues of food loss and waste (FLW) in the global supply chains have recently gained attention. However, causes for FLW and their mitigation strategies for curbing FLW at different stages of the supply chains remains under researched. Our research aims to address these research gaps in a three-fold way: i), we identified key causes (through root-cause analysis) of FLW in the supply chain of developed and less developed countries; ii), systematically classified measures and policies, which have been implemented to mitigate FLW; iii), developed an interdisciplinary conceptual framework for waste utilisation practices that can contribute towards the triple bottom-line in food system. A root-cause analysis was performed, and mitigation strategies identified by systematically analysing and synthesizing the extant research published over the past 20 years (1998 to 2018) in the areas of food loss and waste in the supply chain. A conceptual model for the prevention of FLW utilising a systems approach through the circular economy concept has been proposed. Since the agri-food sector is largely interdisciplinary, we have also demonstrated a method of integrating contributions from multiple disciplines in our proposed model towards achieving a total depollution (zero waste supply chain).  相似文献

We elaborate mechanisms through which multi-stakeholder collaboration can ameliorate food loss and waste (FLW) from the end-to-end supply chain. In this context, we integrate the discourse on collaborative relationships in supply chains with stakeholder theory (roles and orientations) and use a multi-method approach combining systematic literature review (SLR) and embedded case studies based on secondary data. We develop a conceptual framework that illustrates collective stakeholder orientation emerging from aligned vertical and horizontal stakeholder orientation across the supply chain towards reducing FLW. We explain how achieving such alignment requires these stakeholders to navigate various collaboration conditions (structural and sporadic) that otherwise spur individualism, culminating in FLW mitigation efforts across food supply chains. We develop propositions, motivate future research, and offer practical implications.  相似文献

Little is known about the amount of food wasted in the retail sector. This study aimed to quantify retail food waste in New Zealand (NZ) and identify key drivers for food waste reduction, using a mixed-methods, observational study design that consisted of three parts: onsite food waste audits undertaken in 16 selected stores (complete data from 11 stores); semi-structured interviews with key retail staff from each store; and obtaining existing data from retailers. Retail food waste in NZ was estimated at 13 kg/capita/year for all food waste and diverted product (i.e. all food not sold or utilised at a retail level), which included 5 kg/capita/year designated as food waste (i.e. food directed to landfill, protein reprocessing and compost), with 3 kg/capita/year of this sent to landfill. Fresh vegetables (27%), bakery (23%), meat and fish (19%) and fresh fruit (17%) contributed the most to discarded product. The motivators for encouraging food waste reduction were: concern for the environment; making profit; caring for the community; and doing the ‘right’ thing. The barriers to food waste reduction were: training and educating staff; food safety concerns; quality standards; availability and capacity of waste diversion avenues; and lack of available resources. Audit data and food waste data recorded by retailers were similar. NZ has a number of policies and practices that successfully divert retail food waste away from landfill, in particular, retailers have established relationships with various groups that use their waste as a resource including protein reprocessors, local farmers, and food rescue charities.  相似文献

Italy recently reformed its food waste policy by introducing innovative measures, such as the possibility of donating food after the best-before date (BBD) and a significant simplification of the bureaucracy of donations. These measures are advocated by food waste specialists and are thought to increase donations almost automatically. The article performs a theory-based evaluation using the method of realist synthesis to investigate the two measures, test their implicit assumptions, and provide a more complete picture of how the policy works. The results highlight the marginal importance of bureaucratic procedures in the cost structure of donations, the diverse responses of different donors and food rescue organisations, and the importance of considering the capacity and preferences of charities when an increase in donations is expected. Further, the analysis uncovers severe reputational risks that limit both the supply of and demand for food past the BBD, despite legal provisions promoting its donation.  相似文献

This study investigates the issue of power in business-to-business relationships and constitutes an appraisal of the theory relating to issues of supply chain relationships, in which the received view from the Relationship Marketing (RM) literature with its emphasis on trust, dyadic symmetry and mutuality is questioned. It is contended, alternatively that other types of relationships, for example, those based on selfishness are equally relevant, and that power imbalanced business relationships are just as important to the understanding of business exchange. Specific reference is made to power relationships in vertical food supply channels in the UK, where the majority of control lies in the hands of large multiple retailers. The paper cites case material drawn from studies into the relationships between UK based fresh food supplier organizations and their principal customers, the leading UK food retailers, and determines specific outcomes with regard to issues of power, mutuality and the nature of power-dependent relationships.  相似文献

In order to measure consumer trust in food chain actors and its impact on consumer confidence in food and the technology with which it has been produced, a model was developed relating social trust, beliefs in trustworthiness, overall trust in food chain actors, and confidence in both the supply of food products and food technologies. Data were collected via an online survey in five European countries. Analysis provided support for the model and showed that consumer confidence is largely determined by consumer beliefs about the trustworthiness of food chain actors. In particular the beliefs about openness, and especially about the openness of food manufacturers, are strongly related to consumer confidence. Some national differences in trust and confidence exist. This instrument is shown to be suitable for monitoring the development of, and changes in, trust across countries over time.  相似文献

This article aims to address the need for more comprehensive studies on sustainable food systems through a case study of hospital food waste in Wales, UK. Based on a mixed-method research approach that focused on the links between hospital food waste, catering practices and public procurement strategies, the article shows that the hospital meal system, in the case studied, is responsible for overall levels of food waste that greatly exceed the official percentages provided by the Health Board. In addition to showing the theoretical benefits of research that accounts for the complex interrelations between different stages of the food chain, the study raises the need for a more integrated political approach that mobilizes all actors in the food system around a shared vision for sustainable development.  相似文献

Dealing with food waste is a major concern for the food system in the transition towards a circular economy (CE). Previous studies have developed various solutions to address the issue, but the role of for-profit start-ups remains poorly understood. This paper aims to analyse the forms of institutional work conducted by start-ups to prevent and reduce food waste. This paper adopts the multiple case study approach, utilising a three-year netnography of the emerging food waste reduction business and interview data from company representatives. We outline four categories in which the start-ups conduct institutional work: appearance of food, quantity of food, edibility of food, and living with food. The start-ups disrupt existing institutions that lead to food waste, as well as create new institutions to enable and reinforce their business operations. We argue that the start-ups have an influential role in changing the normative and cognitive-cultural institutional pillars in the shift towards a CE. The article provides a contribution to studies on the CE and food waste and has practical implications for both established and start-up businesses.  相似文献

This article explores the absence of social enterprise responses to food insecurity in Australia. Continued growth in demand from chronically food insecure consumers and criticism of the dominant food bank model of gifted food support has led to the development of ‘community supermarkets’ that charge consumers for donated food in countries including Canada, the United Kingdom, France and Italy, but not in Australia. This research investigates barriers to the development of community supermarkets in Australia through in-depth interviews with senior staff within seven organizations involved in the food relief supply chain, as well as a pilot survey of 38 food insecure consumers. The results of this research are analyzed through the lens of ‘voluntary failure’ theory and highlight systemic barriers to the reach of social enterprise as a mechanism for addressing food insecurity.  相似文献

We examine stakeholders’ perceptions of the share of the overall responsibility of each stage in the food supply chain has in ensuring that the meat people cook and eat at home is safe to consume. We elicit these perceptions of relative responsibility via surveys using the best–worst scaling technique and analyse the data via Bayesian estimation of mixed logit models. Results are reported for two groups of stakeholders: consumers and farmers, and for two meat food chains: chicken and beef. The results reveal that consumers tend to think farmers are more responsible for ensuring meat safety than farmers do. Similarly, farmers tend to think consumers have a greater degree of responsibility than consumers believe they have themselves. Such beliefs might affect stakeholders’ willingness to take actions and reduce hazards in the supply chain. From a policy perspective, the research findings provide useful insights to support policymakers and other decision-makers in the industry in developing mitigation strategies. Communication with consumers and farmers about emerging food safety problems in a supply chain and their involvement in proactive practices would need to be attuned to their subjective perceptions of relative responsibilities in order for integrated risk management systems to be effective.  相似文献

Food waste is becoming increasingly a crucial issue to organizations, but little is known about workplace food waste reduction among frontline employees in the business-to-business (B2B) context regardless of the salience of frontline employees with such a behavior as green intermediaries in B2B supply chains. Our research seeks to fill this gap by investigating how and when quality of green communication in the B2B workplace influences frontline employees' workplace and household food waste behavior, as well as the relationship between these two types of food waste behavior among frontline employees. The dataset for this study came from sales employees in manufacturing companies based in Vietnam. The results unveiled the roles of employees' green role identity and harmonious environmental passion as the dual mediation paths for the relationship between quality of green communication and employees' intention to reduce food waste, which in turn attenuated both their workplace and household food waste behavior. The positive relationship was noted between employees' workplace food waste behavior and their household food waste behavior. The results further demonstrated the boundary condition role of household leftovers reuse routines to enhance the link between intention to reduce food waste and food waste behavior. The implications are discussed on initiatives for reducing B2B frontline employees' food waste behavior, thereby transforming them into green agents in B2B supply chains.  相似文献

本文针对废旧电子产品回收质量的不确定性,研究了由制造商、零售商和回收中心构成的废旧电子产品三级逆向供应链系统的定价模型。通过设定回收废旧电子产品的质量类别来分析回收质量的不确定性,构建了合作情况与非合作情况下的逆向供应链定价与利润模型,并利用逆向归纳法求解,得出了合作与非合作情况下的三级逆向供应链成员的最优定价策略以及相应的利润。通过比较合作与非合作情况下的最优价格及逆向供应链系统利润,发现合作情况下三级逆向供应链系统的总利润更高,同时可分解再制造的废旧电子产品与可维修再制造的废旧电子产品回收价格也更高。通过Matlab仿真分析,研究发现:随着废旧电子产品中可分解再制造废旧电子产品比例的增加,在合作和非合作两种情况下,可分解再制造废旧电子产品的回收价格和三级逆向供应链系统的总利润均减少,而可维修再制造废旧电子产品的回收价格增加。  相似文献

The Common Agricultural Policy (CAP) of the European Union, in effect since January 2023, seeks to differentiate products on quality, provide greater transparency on food origin, and on the transactions and the actors involved in the supply chain. At the same time, in Spain, the adoption of new technologies for the digitization of the agri-food sector has been proposed as a solution to address structural issues such as lack of competitiveness and innovation. In fact, systems using blockchain-related technologies for food control and traceability have seen great progress in recent years and, currently, the use of blockchain in supply chain management is almost doubling year on year. In this context, this paper investigates the level of development of blockchain technology in the agri-food sector in Spain and its applications for certifying food production conditions within the supply chain, and how it is supported by public policies. It identifies several challenges that need to be addressed for a widespread adoption could take place, such as data recorded on the blockchain, lack of standards, limited scope of projects, and integration of data capture automatically or with other technologies like RFID and AI. The document proposes to reorient public development policies to address these challenges, such as reusing data from, already in place, European data collections for production control and food traceability, educating users and stakeholders about the use of blockchain technology, and fostering legal and technical provisions which ensure system transparency to facilitate a successful implementation of blockchain.  相似文献

This paper aims to investigate the roles adopted by the distinct stakeholders that are engaged in a voluntary initiative to reduce food loss and waste (FLW) in the context of an emerging country. Data were collected by way of participant observation in multi-stakeholder events, observation visits and interviews with 54 food sector stakeholders, and from secondary data. The theoretical contribution of this paper is that it provides a systemic and realistic perspective for tackling FLW, as research in the field usually only focuses on one supply chain agent, or on consumer behaviour. Another contribution that may be replicated in other countries has to do with the role of each stakeholder in identifying the processes with which they are involved for reducing FLW. Activities and actions in a multi-stakeholder initiative change according to their positioning at the institutional or value chain level of analysis. Future studies should consider the extensive interplay that exists between the institutional and value chain levels in the food sector, and how they interact  相似文献
