本研究以牛蒡为主要原料,混合多种蔬菜与水果进行酵素发酵,并对酵素液进行调配制作饮料,先通过配方法优化主要发酵原料的配比,再用Design Expert软件设计响应面试验优化酵素饮料配方。复合牛蒡酵素发酵原料最优配比为:牛蒡20.00%、山楂48.24%、枸杞10.72%、苹果3.92%,胡萝卜、橘子、火龙果、芹菜、卷心菜、梨、西兰花等其他水果蔬菜17.12%,该条件下酵素原液SOD酶活力最高可达43.80U/mL。酵素饮料最佳配方为:酵素添加量13.65%,白糖添加量15%,蜂蜜添加量2.95%,该条件下酵素饮料的感官得分最高,风味良好,色泽淡黄,澄清透明。  相似文献

In recent years, China has experienced many crises related to food safety which have challenged the legitimacy of food production companies and damaged the reputation of relevant state law enforcement agencies, as well as influenced consumer confidence. Based on recent interviews with 20 food and drink production companies in the Shanghai region, this paper aims to address a key research question: what are the institutional and organizational factors that influence the production systems in general and the quality and safety of products in particular? The outcome of this research indicates that the pressure to minimize costs driven by price competition, changing consumer expectations, as well as a lack of enforcement of state regulation, cause companies to struggle to stay afloat and impede their commitment to social responsibility.  相似文献

This article explores profitable international growth strategies when markets are mature through a two‐stage study of companies in the food and drink industry. The first stage assessed 400 announcements about such strategies made by medium‐ and large‐sized food and drink firms in the period 1998–2001. The second stage examined in depth the international growth strategies of the world's 35 leading food and drink companies over the period 1985–2001. Both stages showed that acquisition was the most widely used method of international expansion. The second stage suggested that organic international growth (i.e., based on the company's current product portfolio) was the other main option for such expansion. Importantly, the international acquisition route was usually focused on the existing product portfolio of a company. In this sense, there was clear convergence between the purpose of an international acquisition (i.e., to support or enhance the existing product portfolio outside the home country) and the broader company purpose of delivering successful organic growth from its current range of products. The second study also suggested that international acquisitions can bring faster sales growth than organic activity but come with greater risk and other potential problems. The research identified some practical lessons derived from such strategies in the food and drink industry. © 2006 Wiley Periodicals, Inc.  相似文献

Abstract

In July 2003, it was reported that twelve alcoholics were attempting to sue drink manufacturers for failing to warn them of the dangers of drinking alcohol. This alleged failure to warn is remarkably similar to the alleged failure to warn on which the flood of tobacco claims in the United States and Europe was based, resulting in a dramatic increase in regulation, including the requirement that tobacco products must carry health warnings.

Could this gentle trickle of interest in litigating against alcoholic drinks manufacturers be the beginning of a torrent of tobacco-style regulation and litigation?

This article examines the history of the health warning and asks whether it is likely that alcohol health warnings will become mandatory in Europe and, more specifically, the United Kingdom.  相似文献

Food and drink are distributed via corporate institutions in categories, such as ready meals or carbonated drinks. Within these categories, a minority of brands advertise, capitalizing upon the popularity of the categories. The issue of childhood obesity and health has led to a focus upon these advertised brands in terms of their being targeted at children, but nothing has been done about the categories they represent. Furthermore, parents have an influence upon their children's diet, as their expenditure accounts for the majority of their children's consumption. This paper accounts for UK children's perceptions of the effect of advertising and marketing of food and drink upon their parents, and concludes that the children see advertising as having very little influence. Rather, they see that their parents' involvement with certain categories have become, over time, their norm. Children do not see that the regulation of advertising of food and drink to them will have any significant effect upon their diet, as their parents will continue to consume from within the categories supplied by the retail sector, which in their view constitutes the most influential aspect of food and drink marketing. Given the international focus upon the advertising of food brands, this paper draws attention to other, potentially more influential issues.  相似文献
