Information technology and consumer behavior in travel and tourism: Insights from travel planning using the internet

Sustaining business success hinges upon a firm׳s ability to understand and capitalize on consumer behavior trends. Synthesizing information from a variety of sources, this paper discusses the nature of use of the Internet by American travelers. In general, the adoption of the Internet has reached a level of saturation and some traditional channels such as online travel agencies (OTAs) continue to dominate travel planning. While traditional means of Internet use for travel planning appears to be widespread across all customer segments, higher-order Internet uses (i.e., social media) are now prevalent among some segments, particularly among travelers of Generation Y. Also, there seems to be an important bifurcation in the traveler population in that the traditional online consumers remain unchanged with their pattern of use of online tools while sizable groups are adopting emergent information sources and transaction channels. This article details the particulars of these trends and offers managerial implications and future research directions.

Sensory Panel Comparison of Ostrich and Emu Fillets with Top Sirloin Beef

Abstract

The restaurant industry is an ideal test market for new food products. Emu and ostrich producers and processors are utilizing restaurants to familiarize the public with their products. By means of a sensory panel, the authors evaluated emu and ostrich muscle cuts for flavor, juiciness, texture, and other flavors to the control (top sirloin beef). The results of the sensory panel comparison provided the restaurateurs with conclusive data to assist in assessing the viability of including these new items on their menus.     

Transactions,standardisation and competition: Establishing uniform sizes in the British wire industry c.1880

When science could not provide a solution to transaction problems in the British wire industry c.1880, market groups had to negotiate a business solution. This involved converging towards a ‘one-size-fits-all’ standard: a process requiring compromises and cooperation between competitive firms, and solving coordination failure through state intervention. This paper demonstrates how different groups held different notions of ‘ideal’ standards depending on the incentives they faced. Reconciling these differences was an institutional, rather than a technological, process. The paper also analyses why, historically, dominant producers cooperated to set industry standards when faced with an imminent lock-in on ‘wrong’ standards imposed on the industry.

ABSTRACT

This paper offers a study of the development of the commercial banking system in two East European countries. Based on surveys conducted in Hungary and Poland, the authors discuss elements of the competitive market structure in the banking sector. Findings indicate that the commercial banks in Hungary and Poland have become more competitive, but there are differences between the two countries, especially in the way that the banks use sources of foreign funds.
