摘    要:益生菌已被广泛应用于食品、医药保健和饲料等各个领域,而酸奶是益生菌最常见的载体,也是最受欢迎的益生菌产品.文章对酸奶中益生菌的种类特性、保健功效及研究进展等方面对其进行综述,为酸奶中的益生菌研究提供理论参考,同时也提出了未来益生菌在我国乳制品生产中的应用前景广阔.

Abstract:Probiotics have been widely used in various fields such as food,medicine and health care and feed,and yogurt is the most common carrier of probiotics and the most popular probiotic product.This article reviews the types,characteristics,health effects and research progress of probiotics in yogurt,provides a theoretical reference for the study of probiotics in yogurt,and also puts forward the prospect of probiotics in the production of dairy products in my country in the future.
