广东煲汤与药膳的制作与应用

摘    要:受广东地理位置、气候条件、饮食习惯等因素的影响,广东人喜欢饮汤。广东靓汤可由炖、煲、滚和烩等多种方法来制作,而煲汤是最常见、最常用的一种方法。本文主要从煲汤的原理、煲汤工艺程序与方法、煲汤药膳的应用3个方面,对煲汤这种烹调方法进行深入的研究和分析,为在不同的季节制作不同的汤品提供参考。

Abstract:Affected by Guangdong’s geographical location,climate conditions,eating habits and other factors,Cantonese people like to drink soup.Cantonese soup can be made by various methods such as stewing,boiling,rolling and braising,and boiling soup is the most common and commonly used method.This article mainly focuses on three aspects:the principle of boiling soup,the process and method of boiling soup,and the application of soup-making medicinal diet.This article conducts in-depth research and analysis on the cooking method of soup-making,so as to provide references for making different soups in different seasons.
