| Abstract: | As a food crop and an economic crop,purple sweet potato is widely grown in China.Because it is rich in anthocyanin pigments,it has physiological functions such as lowering blood lipids,anti-oxidation,and anti-aging of the skin,and has received widespread attention.This article reviews the physiological functions of anthocyanins in purple sweet potato and their application in food,aiming to provide references for the research and industrial application of purple sweet potato anthocyanins. |
