摘 要: | ![]() N-亚硝胺是带有强毒性的一类化合物,已经被公认为是最强毒害物质之一。N-亚硝胺已汇总致癌物质,是在弱酸性条件下由亚硝酸盐和二级胺反应生成,尤其是在肉制品特定的加工环境中容易产生。

Abstract: | ![]() NDMA is a kind of compounds with strong toxicity, which has been recognized as one of the most toxic substances. NDMA is a summary of carcinogenic substances, it is in the weak acid condition by nitrite and two levels of amines, especially it is easy to produce in the meat product speciifc processing environment. |
