| Abstract: | NDMA is a kind of compounds with strong toxicity, which has been recognized as one of the most toxic substances. NDMA is a summary of carcinogenic substances, it is in the weak acid condition by nitrite and two levels of amines, especially it is easy to produce in the meat product speciifc processing environment. |
