摘 要: | 本文论述了在基础配方中添加松粕粉改善俄式蜜糖饼干的试验研究。试验证明,在蜜糖饼干的基础配方中添加15%的松粕粉时,蜜糖饼干的感官评价最好,饼干的质地、颜色、外观及形状具有最佳的状态。

Abstract: | This paper discussed the experimental study of pine meal added to improve Russian honey biscuit based on formula. Proved by the experiment, add 15% in the basic formulation of the honey biscuit pine meal, honey biscuit sensory evaluation was best, biscuits texture, color, appearance and shape were with the best state. |
