糌粑中营养成分的测定

摘    要:通过对糌粑营养成分进行测定,结果表明:糌粑中营养成分比较丰富,含有粗蛋白质10.23%,粗脂肪3.99%,粗纤维素为1.20%,总糖为6.88%;含有除色氨酸以外的人体所需的所有氨基酸,其必需氨基酸含量为4.673 8 mg/kg,总量为20.251 4 mg/kg;含有丰富的人体生命活动的矿物质元素,其中K、Mg、Ca、Na元素含量较为丰富,同时重金属Cd、Cr的含量按照食品重金属含量的相关标准严重超标。

The Determination of Nutrients in Zanba
Abstract:Through the determination of nutritions in Zanba, the results showed that the nutritions of Zanba were rich, contained crude prote 10.23%, crude fat 3.99%,crude ifber 1.20%,total sugar is 6.88%;contained all the amino acids that human body needs other the tryptophan, its essential amino acids content is 4.673 8 mg/kg, total is 20.251 4 mg/kg; contained abundant mineral elements of hunam life activities including K Mg Ca Na, element content is relatively abundant while the content of heavy mental Cd and Cr in accordance with the food to the standards of content of heavy metal exceeds metal exceeds bid badly.
