水产品中呋喃唑酮及其代谢物检测技术的研究进展

摘    要:呋喃唑酮是一种有抗菌消炎作用的药物,曾作为兽药用于水产养殖。但会导致水产品中残留呋喃唑酮及其代谢物(AOZ),通过食物链作用在人体富集,危害人体健康。以水产品中残留的呋喃唑酮及AOZ为研究对象,对其检测方法进行分类概括,总结了国内外对水产品中的呋喃唑酮及AOZ检测方法的应用和进展,联系实际对方法的可行性进行分析,旨在通过分析检测方法为监测残留提供新思路,以期保证水产品的食用安全性。

Research Progress on Detection Technology of Furazolidone and its Metabolites in Aquatic Products

Abstract:Furazolidone is an antibacterial and anti-inflammatory drug that was previously used as a veterinary drug in aquaculture.But it will lead to residual furazolidone and its metabolites(AOZ)in aquatic products,which will be enriched in the human body through the action of the food chain and endanger the health of the body.This paper took the furazolidone and AOZ residues in aquatic products as research objects,classified and described their detection methods;summarized the application and progress of furazolidone and AOZ detection methods in aquatic products at home and abroad.The feasibility of the method is analyzed in accordance with the actual situation.So as to provide new ideas for monitoring residues through analytical detection methods,in order to ensure the edible safety of aquatic products.
