| Abstract: | In this paper,12 batches of commercially available camellia oil were used as research materials,and the four indicators of acid value,peroxide value,aflatoxin B1 and benzo-a-pyrene were measured respectively,and their food safety was analyzed.The results showed that the acid value of 12 batches of samples was 0.63~5.40 mg·g-1,the peroxide value was 0.036~0.660 g/100 g,and the content of aflatoxin B1 was not detected~5.19μg·kg-1,the content of benzo-apyrene is 1.3~29.9μg·kg-1.The results showed that the commercially available bulk camellia oil is prone to be unqualified in terms of acid value,peroxide value,benzo-a-pyrene and other items,and there was a large food safety risk,which needs to be controlled by taking effective measures. |
