摘    要:目的:了解常熟市市场上动物源性食品中喹乙醇、喹恶啉-2-羧酸、3-甲基-喹恶啉-2-羧酸残留情况。方法:2019—2021年,在常熟市各大超市、农贸市场采集各类动物源性食品,采用高效液相色谱-串联质谱法进行检测。结果:喹乙醇在猪肉、鱼肉、鸡肉、牛肉、猪肝和猪肾中均未检出;喹恶啉-2-羧酸在猪肉、鱼肉和牛肉中未检出,在鸡肉中的检出浓度为2.5 μg·kg-1,检出率为3.3%,在猪肝中的检出浓度为4.8~21.3 μg·kg-1,检出率为10%,在猪肾中的检出浓度为2.7~6.2 μg·kg-1,检出率为6.7%;3-甲基-喹恶啉-2-羧酸在鱼肉和牛肉中未检出,在猪肉中的检出浓度为1.7~3.2 μg·kg-1,检出率为4%,在鸡肉中检出浓度为1.1 μg·kg-1,检出率为3.3%,在猪肝中的检出浓度为5.6~30.8 μg·kg-1,检出率为16.7%,在猪肾中的检出浓度为2.9~10.7 μg·kg-1,检出率为6.7%。结论常熟...

Abstract:Objective:To investigate the residues of olaquindox,quinoxaline-2-carboxylic acid and 3-methylquinoxaline-2-carboxylic acid in animal derived food in Changshu.Methods:From 2019 to 2021,most kinds of animal derived foods were collected from supermarkets and farmers’markets in Changshu,and detected by high performance liquid chromatography-tandem mass spectrometry.Results:Olaquindox was not detected in pork,fish,chicken,beef,pig liver and pig kidney.Quinoxaline-2-carboxylic acid was not detected in pork,fish and beef,but the detection concentration was 2.5μg·kg-1 in chicken,4.8~21.3μg·kg-1 in pig liver,2.7~6.2μg·kg-1 in pig kidney,and the detection rate was 3.3%in chicken,10%in pig liver,6.7%in pig kidney.3-methyl-quinoxaline-2-carboxylic acid was not detected in fish and beef,but the detection concentration was 1.7~3.2μg·kg-1 in pork,1.1μg·kg-1 in chicken,5.6~30.8μg·kg-1 in pig liver,2.9~10.7μg·kg-1 in pig kidney;the detection rate was 4%in pork,3.3%in chicken,16.7%in pig liver,6.7%in pig kidney.Conclusion:There are certain risks of olaquindox,quinoxaline-2-carboxylic acid and 3-methyl-quinoxaline-2-carboxylic acid residues in animal derived food sold in Changshu market,especially in viscera.Regulatory authorities need to strengthen supervision to guide citizens to eat less viscera,ensure food safety and protect people’s health.
