摘    要:当今,随着饮食文化交流的不断深入,人们的饮食观念发生了深刻的变化,进入了"现代饮食文化时代"。菜系的发展关键是都有身后的文化积淀作支撑,文化才是烹饪艺术的根。立足东北餐饮的文化渊源,结合关东文化的"合"、"闯"、"和"的文化精髓,完成东北餐饮的合作与开发,必须从加强地域文化研究、推动关东传统文化创新的基础上,广泛动员社会力量参与,集中政府、专家、企业三方面的智慧,切实整合东北餐饮文化资源,把地方的餐饮文化资源优势迅速转化为产业优势,实现产业文化化和文化产业化。

Abstract:Nowadays,with the dietetic cultural exchange deep developing,people’s dietary concept have taken place the deep changes,it entered the era of the modern dietetic culture.The key of dishes system’s development is it’s cultural accumulation,so the culture is the root of culingary art.Base on northeast catering’s cultural origin,combining with northeast culture’s essence which is integrative,creationary and harmonious,accomplishing northeast catering’s cooperation and development,government,expert and enterprise must marshaling the resources of northeast catering culture together to translate regional catering culture resource into advantageous industry rapidly.And then we will realize.
