蛹虫草的有效成分和药用价值及其在食品中的应用

蛹虫草作为中药材与冬虫夏草有相似的功效,本文主要总结了蛹虫草中氨基酸、甾醇、矿物质、维生素等的含量,并综述虫草素、虫草多糖等的结构、作用机理、分离纯化及蛹虫草的降血糖、抗疲劳、抗氧化、对脑细胞的保护作用和防癌作用,对蛹虫草在食品方面的应用进行概括。并对蛹虫草研究中存在的问题和以后的研究方向进行了展望,为蛹虫草进一步研究与开发提供一定的理论依据。

Effective Components and Medicinal Value ofCordyceps militaris and its Application in Food

As Chinese herbal,Cordyceps militaris shares the similar effect with Cordyceps sinensis. This paper mainly summarized the content of amino acids, sterols, minerals, vitamins and other componets in Cordyceps militaris as well as the structure, mechanism of action, separation and puriifcation of cordycepin and Cordyceps polysaccharide, the hypoglycemic, anti fatigue, antioxidant, protective effect on brain cell and anti-cancer effect were included and the application ofCordyceps militaris in food was also summarized. The existing problems and future research in the study ofCordyceps militaris was pointed out in order to provide a theoretical basis for further research.
