细菌素的应用及发酵条件的研究进展

摘    要:细菌素由于具有一定的抑菌谱和无残留毒副作用而广泛地应用于饲料、医疗、生物防治、食品和发酵工业中。发酵条件对细菌素的产量影响显著,其中培养基成分、有机溶剂的添加、乙醇和乙酸以及发酵温度对细菌素产量影响较大。概述了近年来细菌素的应用及发酵条件的研究进展。

Abstract:Bactefiocins can be extensively used in feed, medical treatment, biological prevention and cure, food and fermentation industries because it has a certain inhibitory spectra and no poisoning side effect. However, the fermentation conditions have significant effects on the production of Bactericions. Among all the conditions, medium ingredients, Tween80, ethanol, acetate and temperature of fermentation are the most significant factors. Research progresses in recent years on the application and fermentation conditions of Bacteriocins are reviewed in this paper.
