无溶剂大豆浓缩蛋白的生产工艺

摘    要:采用物理压榨法制取大豆粉,以此大豆粉为原料,通过酸法改性制取大豆浓缩蛋白,旨在获得无溶剂残留的大豆浓缩蛋白。制得大豆浓缩蛋白的蛋白质含量≥65%、NSI≥70%、脂肪≤1.0%、保油性明显提高。

Abstract:In order to obtain soybean protein concentrate without solvent residue,soybean powder was prepared by physical squeezing method,and soybean powder was used as raw material to prepare soybean protein concentrate by acid modification.The protein content of soybean protein concentrate was≥65%,NSI was≥70%,the fat content was≤1.0%and the oil content was significantly improved.
