摘    要:在当前竞争激烈的餐饮市场中,"老字号"餐饮企业既面临严峻的生存考验,又面临难得的成长机遇,如何抓住机遇实现快速成长就成为企业界和理论界共同关心的问题.本文通过SWOT模型分析了北京"老字号"餐饮企业的生存现状,并在此基础上提出了有助于实现"老字号"快速成长的"三元互动"的良性运行机制.从而促进"老字号"餐饮企业生存和成长,并为政府的相关决策提供理论依据.
