There is limited knowledge about which factors underlie consumers’ preferences for domestic food products. We used a non-hypothetical multiple-price list experiment to investigate the effect of affective (product-related emotions) and normative (consumer ethnocentrism and subjective norms) factors on consumer willingness to pay for domestic food products. A total of 166 Croatian consumers were given a choice between domestic and foreign food products with different price premiums for domestic food. The results indicate that consumers are willing to pay a premium for both low- and high-involvement domestic food products. Consumer willingness to pay for domestic products is influenced by ethnocentrism, product-related emotions, and sociodemographic variables, but not by social norms.  相似文献

An online survey method was used to collect data regarding the concern and attitude of UK consumers towards genetically modified (GM) food labelling. Questionnaires were sent to 9000 participants of the online panel via emails, and 2568 consumers completed the online survey. The response rate was 29%. This study found that more than 75% of the consumers questioned were concerned about the labelling of food products with GM ingredients. Eight perceived risks and benefits of agro‐biotechnology were identified to be associated with consumers’ attitude towards GM food labelling. Among them, three were perceived benefits, such as reduced use of chemicals in crop production, improved nutritional content, and increased yields. The five perceived risks were health risks, environmental risks, moral considerations, image of multinational corporations as the primary beneficiaries of biotechnology, and growing control of multinational corporations over farming. While all five perceived risks from GM food played a statistically significant role in shaping the overall attitude towards GM labelling, improved nutritional content due to application of biotechnology was the only benefit that was statistically significant. Age of the respondents was the only demographic variable playing a statistically significant role in shaping the attitude of respondents towards GM food labelling. Older respondents were more likely to be concerned about the existing GM labelling practices than younger respondents.  相似文献

This study aimed to assess consumers’ use and understanding of food labelling and the improvements that they would like. Systematically selected supermarket shoppers were interviewed using a questionnaire. Data showed that the use of food labels was low. Among those who read food labels, at least occasionally, use‐by‐date was the most reported information looked at. Understanding of the content of five nutrients on a standard food label provided was poor. Although a high proportion of participants claimed to have no problem with the current format, those who had problems wanted food labels that were ‘bigger’, ‘highlighted’ or written in ‘plain English’. These results suggest that before improved food labels can have an impact on consumers’ food choice, strategies to encourage shoppers to read them are needed.  相似文献

The inclusion of reduced‐fat foods in the daily diet affords consumers the potential to reduce overall dietary fat. Nevertheless, despite an increased range of these food products throughout the market, there has remained a lack of widespread consumer acceptance. The aim of the study was therefore to understand why consumers choose or reject reduced‐fat foods. Ninety consumers were interviewed by means of a qualitative approach within food retail outlets in the United Kingdom. Thematic content analysis indicated that uptake or rejection of these products is influenced by health concerns, ‘goodness of fit’ with individual dietary health strategies, the preferences of different household members, perceived sensory properties and scepticism towards these products. The results imply a need to explore and innovate ‘natural’ fat substitutes and to improve the sensory quality of reduced‐fat products. Further research is required to determine how these foods are used within the household and incorporated within the overall diet. Policy must seek to restore consumer trust in reduced‐fat food products and the food supply generally.  相似文献

Consumers search for information about products to make a satisfactory purchase decision and gain knowledge about new features and updates. Consumers also use this knowledge to be vocal about their product experience because several consumers seek interpersonal recommendations. This phenomenon has contributed to the emergence of information search (IS) and information dissemination (ID) as a key research area in the field of consumer behaviour. However, the role of personal factors such as consumer self‐confidence and subjective knowledge has received little attention in the extant IS and ID literature. The major argument of this study is that information acquisition confidence and social outcome confidence enhance subjective knowledge and consequently increase the will of consumers to search and disseminate information in the context of smartphone buyers in India. Structural equation modelling was employed to test the proposed hypotheses using a convenience sample of 259 consumers obtained through a cross‐sectional survey. The study shows that subjective knowledge is crucial in strengthening the association between consumer self‐confidence and consumer intention for IS and ID. Additionally, enhancing consumer’s social outcome confidence contributes towards high subjective knowledge and consequently accelerates information dissemination. Results suggest that firms could focus on enhancing the social outcome confidence and subjective knowledge of consumers to motivate them to disseminate information. The results also show that consumers with high confidence in information acquisition ability have the high subjective knowledge and are more likely to search for information. Overall, this study contributes to the emerging literature regarding the role of personal factors in IS and dissemination behaviour.  相似文献

Consumers worldwide are increasingly concerned with sustainable production and consumption. Recently, a comprehensive study ranked 17 countries in regard to their environmentally friendly behaviour among consumers. Brazil was one of the top countries in the list. Yet, several studies highlight significant differences between consumers' intentions to consume ethically, and their actual purchase behaviour: the so‐called ‘Attitude‐Behaviour Gap’. In developing countries, few studies have been conducted on this issue. The objective of this study is therefore to investigate the gap between citizens' sustainability‐related attitudes and food purchasing behaviour using empirical data from Brazil. To this end, Brazilian citizens' attitudes towards pig production systems were mapped through conjoint analysis and their coexistence with relevant pork product‐related purchasing behaviour of consumers was investigated through cluster analysis. The conjoint experiment was carried out with empirical data collected from 475 respondents surveyed in the South and Center‐West regions of Brazil. The results of the conjoint analysis were used for a subsequent cluster analysis in order to identify clusters of Brazilian citizens with diversified attitudes towards pig production systems, using socio‐demographics, attitudes towards sustainability‐related themes that are expected to influence the way they evaluate pig production systems, and consumption frequency of various pork products as clusters' background information. Three clusters were identified as ‘indifferent’, ‘environmental conscious’ and ‘sustainability‐oriented’ citizens. Although attitudes towards environment and nature had indeed an influence on citizens' specific attitudes towards pig farming at the cluster level, the relationship between ‘citizenship’ and consumption behaviour was found to be weak. This finding is similar to previous research conducted with European consumers: what people (in their role of citizens) think about pig production systems does not appear to significantly influence their pork consumption choices. Improvements in the integrated management of this chain would better meet consumers' sustainability‐related expectations towards pig production systems.  相似文献

Scientists have asserted that genetically modified (GM) food offers financial, environmental, health, and quality benefits to society, but the realization of such benefits depends on consumer acceptance of this new technology. Consumer concerns about GM food raise questions about what consumers know about GM food and to what extent this knowledge translates into their evaluations of GM products. The present research empirically examines the effect of both objective and subjective knowledge on perceived risk and, in turn, key consumer behaviors associated with GM food. The results reveal that objective knowledge about GM food significantly reduces performance and psychological risks, whereas subjective knowledge influences only physical risk, and the valence of that impact depends on the level of the consumer's objective knowledge. Furthermore, different risk types enhance consumers' information search and reduce their propensity to buy GM food. The overall findings thus suggest the need for cooperation among government, scientific institutions, and the food industry to foster effective communication strategies that increase consumers' objective knowledge, reduce their risk perceptions, and encourage consumer adoptions of GM technology. © 2007 Wiley Periodicals, Inc.  相似文献

Nakhon Si Thammarat province is one of the largest cities in Thailand and offers various types of street foods in the city. However, the number of street vendors that pass food safety certification is very low. Nevertheless, there are many consumers who still purchase street food because of their lifestyle who are exposed to food safety risks. Therefore, this research aims to evaluate how consumers make their decisions about the safety of the street food. This study investigates the importance of the need recognition and pre-purchase evaluation stages in consumers’ decision-making in relation to their purchasing of safe street food. The results from the structural equation modeling analysis found that, at 95%, the confidential need recognition would act as a partial mediator between consumers’ motivation → pre-purchase evaluation on purchasing safe food and consumers’ food safety knowledge → pre-purchase evaluation. In turn, pre-purchase evaluation would act as a full mediator between consumers’ motivation and safe street food purchasing. The findings signify that the stages of need recognition and pre-purchase evaluation in the decision-making process are important in order to reduce consumers' food risk while purchasing street food. Therefore, encouraging consumers to recognize the importance of purchasing safe food and convincing them to be concerned when selecting food is necessary to prevent consumers from unsafe food consumption.  相似文献

As of today, the views of European consumers and policy makers on GM foods are still divided. While only few GM labelled foods (‘does contain’) have entered the market, GM‐free labelling (‘does not contain’) is increasingly introduced in many EU member states. This study aims to examine whether GM‐free labelling affects consumers’ sensory profiling, emotional conceptualizations and overall liking. Based on a within‐subjects experimental design, 126 Belgian subjects evaluated GM‐free and nonlabelled samples of three food products: yogurt, traditional biscuit (‘speculoos’) and crisps. The results show that overall liking did not differ significantly according to label (no vs. GM‐free), regardless of participants’ knowledge of, or attitude towards GMOs. Furthermore, regarding the impact of GM‐free labelling on consumers’ subjective taste perceptions and emotional profiling, few significant differences were reported for crisps and traditional biscuit. Regarding the latter, less positive and more negative emotional terms have been assigned to the GM‐free labelled sample. The findings of this study should be viewed in the context of the stringent EU mandatory GM food labelling policy, which led to an increase of GM‐free rather than GM labels. Future research is needed to further underpin these findings and examine differently framed labels in various settings.  相似文献

Recent research on consumer social responsibility highlights the need to examine psychological drivers of environmentally‐friendly consumption choices in a global context. This article investigates consumers’ willingness to pay (WTP) more for environmentally‐friendly products across 28 European Union (EU) countries, using a sample of 21,514 consumers. A multigroup structural equation modeling analysis reveals significantly different patterns and relationships, in how (a) subjective knowledge about the product's environmental impact, (b) environmental product attitudes, and (c) the perceived importance of the products’ environmental impact influence consumers’ WTP more for environmentally‐friendly products across countries. The hypothesized model predicts WTP for 20 out of 28 countries and the findings show that a “one‐size‐fits‐all” approach is inadequate in capturing the heterogeneity of EU consumers. Hosfstede's cultural dimensions of uncertainty tolerance and individualism explain differences in WTP for environmentally‐friendly products across EU countries. Business, marketing communications, and policy making implications are discussed.  相似文献

In developed countries, choosing and purchasing food is today perhaps more complex than ever. In recent years, European consumers have experienced several food crises. We face a rapidly expanding range of novel food products, the food chain has become longer, and the origin of food more anonymous. At the same time, consumers confront increasing amounts of information on food every day. Consumers build their conceptions of modern food‐related risks on the basis of their everyday knowledge and coping strategies. Hence, the focus of this paper is on consumers’ food choices and everyday practices in relation to food safety and quality as well as food‐related risks. The paper is based on a Finnish study 1 examining consumers’ food choices. The data for the study were collected in September 2004 using an Internet‐based food diary accompanied by open‐ended questions on food‐related views and strategies. Altogether, 92 consumers completed the diary. The method combining the tradition of dietary intake and food consumption surveys with open‐ended questions was developed in order to gain an insight both on the types of foods purchased and on consumers’ conceptions of food‐related issues. In this paper, we focus on the key findings of the study as regards to consumers’ notions on food quality and safety issues and the practices they use in their everyday lives. We found eight everyday strategies consumers use. We suggest, first, that the strategies are important in simplifying food choice and making daily life easier, and second, that consumers use food‐related information flexibly in creating these strategies.  相似文献

The long‐established association between high salt consumption and hypertension has led to calls for a reduction in salt intake. There is particular concern for the health status of Northern Irish consumers, who already have among the highest rates of coronary heart disease and stroke in the United Kingdom. With these concerns in mind, it is essential to establish the sources and patterns of salt consumption from discretionary and processed food sources before a reduction can be achieved. This study investigated differences in salt consumption patterns among consumers of varying socio‐economic status. Research consisted of a consumer questionnaire (n = 360) distributed within Northern Ireland. The results of the study revealed high discretionary salt usage and frequent consumption of processed foods among consumers of lower socio‐economic status. General observations from the questionnaire would suggest a need for improved health education for consumers in this group. The objective of health promotion should be to encourage a reduction in table and cooking salt usage and, in particular, in the consumption of highly salted processed foods. Enhanced product labelling is also encouraged to increase consumer awareness of current salt levels in food and of the availability of low‐salt foods. In addition, the results of this study advocate further development activity in the production of product formulations with low‐salt status.  相似文献

This research examines the impact of gender, age, and education on food choices and addresses issues of causality in these observed relationships; a logit model was used to test the mediation effects and hypotheses. The results from a self-administered online survey indicate that gender and education are two key predictors of consumers’ food choices for their children. These findings are further explained by attitudes toward obesity. Specifically, female consumers and parents with lower levels of formal education tend to select food products that are nutritionally inferior because they are not necessarily concerned about their child’s weight and do not usually restrict their child’s food and diet. This research advances a causal mechanism that explains unexpected consumers’ food choices; it essentially proposes and tests two mediators—restrictions of a child’s weight and concerns about a child’s weight—of the relationship between key demographic variables and consumers’ food choices.  相似文献

Both consumers and firms are now more concerned about ethics as a way to make business transactions a win–win deal. As consumers ensure profitability to businesses, they expect fair practices and honest behaviors toward society. The study reported here attempts to investigate Moroccans’ perceptions and attitudes toward ethical consumerism of food. Consumers’ willingness to buy those products and their motives for such purchases as well as factors preventing ethical purchases is investigated. Besides price, which drives most their decision to buy a food or not, Moroccans are driven by ethical claims such as “healthy,” “no fat,” “pasteurized,” etc. It was shown that consumers trust information on the labels of products besides information provided by consumer authorities. In relation to ethical aspects, Moroccans are mostly concerned about the environment and religion. Older men with high income are shown to be a good target for the ethical food market.  相似文献

This paper gives a deeper insight into consumer preferences for different food products of varying place of origin (i.e. local, Germany, neighboring country, non‐EU country) and production practices (i.e. organic vs. non‐organic). Consumer surveys combined with choice experiments were conducted with 641 consumers in eight German regions. Mixed logit models were estimated to draw conclusions on consumers’ preferences for different product attributes. The Stimulus‐Organism‐Response model was applied to theoretically frame the key findings. Results reveal that consumers prefer locally produced food to organic food. However, conclusions on consumers’ preferences should not be generalized as they vary depending on product type and consumers’ place of residence. When looking at the willingness‐to‐pay estimates for ‘organic’ and ‘local’ while distinguishing among consumers from different regions of Germany, results indicate that consumers living in rural areas and consumers living in the eastern part of Germany are less willing to pay a premium for organic products than urban consumers and consumers from other parts of Germany. As preferences for origin attributes and organic production vary between different food products and in different regions of Germany, market actors should design marketing activities accordingly. This study adds to the international research on consumers’ preferences for organic and/or local food. The results provide better insights into preference structures, as more than one product has been included and surveys were conducted in different regions across Germany.  相似文献

There is still a substantial information asymmetry between producers and consumers. Despite the recent EU regulation on labeling to enhance consumer food safety and the existence of a number of certifications on sustainable food products, there remain blind spots in the widely debated consumer information issue. Our study, conducted on primary data processed with a probit model, was aimed at identifying the factors that may affect consumer response in relation to difficulties in interpreting the labels of processed food products. Starting from theoretical models, several factors held responsible for defining the consumer’s knowledge were used as explanatory variables. Our results show that despite changes in the new legislation, there remains the problem of the consumer’s lack of knowledge concerning environmental labeling and product certification.  相似文献

Agri-food business pricing practices assume that consumers know about prices and that price is an impediment to healthy food purchase and consumption. The present article assesses functional dairy food shoppers’ price knowledge accuracy and its determinants. The data were gathered from 207 face-to-face interviews with shoppers at the point of sale and were analyzed with binary logistic regression testing a number of set hypotheses. Results show that healthy food price knowledge is higher than for conventional food but still low, and consumers tend to underestimate the price paid. Price knowledge accuracy increases with high purchase frequency, promotional products, hedonistic consumption, and for enhanced function products. Results provide a basis for higher sustainable pricing strategies. Consumers’ inability to distinguish misleading pricing strategies calls for regulators to ensure fair and ethical market practices, especially for healthy food.  相似文献
