As of today, the views of European consumers and policy makers on GM foods are still divided. While only few GM labelled foods (‘does contain’) have entered the market, GM‐free labelling (‘does not contain’) is increasingly introduced in many EU member states. This study aims to examine whether GM‐free labelling affects consumers’ sensory profiling, emotional conceptualizations and overall liking. Based on a within‐subjects experimental design, 126 Belgian subjects evaluated GM‐free and nonlabelled samples of three food products: yogurt, traditional biscuit (‘speculoos’) and crisps. The results show that overall liking did not differ significantly according to label (no vs. GM‐free), regardless of participants’ knowledge of, or attitude towards GMOs. Furthermore, regarding the impact of GM‐free labelling on consumers’ subjective taste perceptions and emotional profiling, few significant differences were reported for crisps and traditional biscuit. Regarding the latter, less positive and more negative emotional terms have been assigned to the GM‐free labelled sample. The findings of this study should be viewed in the context of the stringent EU mandatory GM food labelling policy, which led to an increase of GM‐free rather than GM labels. Future research is needed to further underpin these findings and examine differently framed labels in various settings.  相似文献

This paper examines the antecedents and consequences of perceived price-matching policy fairness. Among the antecedents, we study the effects of the refund depth if a lower competitive price is identified, the degree that the retail product assortment is available at competing retailers, and the consumers’ inference as to the retailer's motive for the price-matching policy. Product assortment uniqueness is identified as a key driver of fairness perceptions, both directly and indirectly through inferred motive. The three experiments show that consumers’ perceptions of the fairness of a store's pricing policy influence their price fairness perceptions, consequently influencing their retail shopping intentions.  相似文献

This paper analyzes trends in the production of foods that vary by fat and cholesterol content to assess whether information linking these food characteristics to disease risks affected consumers' food choices. It also examines whether the change in U.S. regulatory policy in 1985, which allowed producers to discuss the relationships between diet and disease in advertising and labeling, led to improvements in food choices, or as many critics of the regulatory change feared, to confusion sufficient to slow improvements in diet.
Nahrungsmittelinformation und Nahrungsmittelpolitik: Trends in der amerikanischen Nahrungsmittelproduktion
Zusammenfassung Der Beitrag analysiert Trends in der Produktion von Nahrungsmitteln, die hinsichtlich ihres Gehaltes an Fett und Cholesterin variieren. Dabei soll herausgefunden werden, ob die Kaufentscheidungen der Konsumenten durch Informationen beeinflu\t werden, die den Fett- und Cholesteringehalt mit gesundheitlichen Risiken in Verbindung bringen. Der Beitrag prüft au\erdem die Veränderungen der staatlichen Regulierungspolitik im Jahre 1985, die es den Herstellern erlaubte, in der Werbung und auf produktbegleitenden Wareninformationen Beziehungen zwischen Ernährung und Krankheit aufzuzeigen. Dabei steht die Frage im Vordergrund, ob diese Veränderung zu verbesserten Einkaufsentscheidungen führte oder, wie viele Kritiker des politischen Wandels fürchteten, zu so viel Verwirrung, da\ Verbesserungen im Bereich der Ernährung behindert werden.

This article discusses some weaknesses in current research into young consumers’ abilities to comprehend and successfully manipulate food label information and describes the development of a research project through to an analysis of the pilot phase. The research programme identifies a method of measuring the effectiveness of state education in enabling the next generation of consumers to make informed food choices through the provision of appropriate tools and skills, both of which are necessary to fully understand a label's informational elements within a marketing context. The article also discusses the appropriateness of a quantitative questionnaire to measure the abilities and skills of individuals through the identification of some key comprehension dimensions required by modern food consumers. Finally, the article questions the appropriateness of the context in which information is provided to food consumers. Through a continuing programme of research, it is envisaged that a more appropriate context for certain elements important in the choice of a diet that is relevant to an individual's lifestyle may be proposed.  相似文献

Retailers are increasingly concerned with the sustainability of their business. Food waste is a major sustainability issue: 90 million tons of food are wasted in the EU every year. The production of much of this waste is directly linked to the food chain operations, included those performed at the retail stage. The literature on food waste has mainly focused so far on the quantification of the total food lost along the supply chain. However, the stage of retail has long been neglected. This paper attempts to partly fill this research gap, with the aim of measuring the extent of food waste in retailing as well as its environmental, social and economic value. To do so, we analyse the results of a food waste recovery project held in an Italian supermarket and, by drawing on the data collected in this case study, we perform an evaluation of the value of the food wasted. The results show that the extent of food waste in retailing is certainly considerable, both in terms of quantity and economic value. Moreover, we found evidence that it may be greatly reduced, with a significant limitation of its environmental impact and, through the mechanism of recovery, it may even generate social benefits. Despite the many limitations of such preliminary research, the results provide useful information for retailers aiming to develop strategies against food waste in the context of improving the sustainability of their business.  相似文献

Based on a qualitative study with 20 respondents in France and 20 respondents from the Czech Republic, this study aims to better understand how consumers’ concern about food waste, culture, social norms and emotions contribute to consumers’ attitudes and behaviors related to doggy bags. Results highlight a double paradox between conflicting norms and emotions: personal norms encourage not to waste while salient social norms encourage leaving leftovers; asking for a doggy bag generates immediate shame while leaving leftovers produces anticipated regret and guilt. Finally, the study sheds light on obstacles to overcome for the adoption of this social innovation.  相似文献

The purpose of the study was to investigate consumers’ perception of food packaging and its impact on food choices. The study population comprised 82 people who were ultimately consumers of packaged food products. The sample was drawn from six major supermarkets located in different geographical areas in Trinidad, West Indies. Data collection was carried out by using a questionnaire based on five topics: visual impact or attractiveness of the packaging; type of packaging material; labelling and nutritional information; new products; and fruit preserves. The packaging feature that influenced most of the respondents’ choice of products was information on the label (41.5%); it was followed by quality and type of packaging (24.4%), brand name/popularity (22.0%) and visual impact (12.2%). When asked if they would purchase a product that was most attractively packaged, 85.4% responded in the affirmative. Most respondents (92.7%) believed that packaging material could adversely affect the quality of performance of a food product. Also, 92.7% of respondents agreed that nutrition information should be shown on all food products, although 36.6% admitted that they do not read the label because of its complexity. Influence of gender was not significant (P < 0.05) on consumer perception of food packaging and on food choices. Although the sample was small, the data highlighted the need to educate consumers of packaged foods, so that informed decisions could be taken in respect to food quality, safety and nutrition.  相似文献

In Finland there are valid questions being asked about the sustainability of the current provision in state healthcare systems. Structurally, lower birth rates and greater longevity mean that populations age and present the challenge of chronic illness management in later life for a larger proportion of the population. Culturally, some 50 years after the introduction of a state healthcare system, ageing populations will have greater expectations of service quality than their predecessors. Paradoxically, they will also have a greater engagement with lifestyles which themselves will bring new challenges to long‐term health status. There is no single solution to the complex problem of service sustainability but undoubtedly health education provides some potential to limit future demands. Diet‐related illness and incapacity are specific health challenges for the coming decades but the problems can be substantially reduced by changing current behaviour. To make such changes possible, knowledge needs to be communicated effectively in terms of simplicity, accuracy and with appropriate timing. Health education can make a major contribution to service sustainability. This paper reports a study of primary care nurses (n = 50) in the Tampere area and examines their capacity to provide healthy eating advice. In this sample, nurses often demonstrated good levels of nutritional knowledge on which to base patient advice, but there was considerable variation. Arguably, focused in‐service training would provide updating on theory and practice for more consistent advice and better prospects for behavioural change.  相似文献

Green consumer behaviour is one of the key focuses of contemporary research on the sociology of consumption. The constant presence of environmental issues related to consumption and the changes consumer society has faced during the 20th century are presumed to reflect on present consumer behaviour. The focus of this paper is twofold: first, the postmodern elements of consumer society will be discussed; second, the study analyses to what extent these elements of postmodernism fit with the phenomenon of contemporary green consumerism. The empirical part utilizes Finnish consumer behaviour‐related data from 2003, which were analysed by applying various statistical methods. In this part, the study reports of the connection between lifestyle and green commitment. Lifestyle is measured by consumption styles and green commitment by certain environment‐related consumption choices. The results suggest that different lifestyles explain green commitment better than traditional socio‐economic background variables. The effect of postmodernism on green consumer behaviour is, thus, discussed.  相似文献

There is a gap in our knowledge about environmentally conscious consumers in industrialized economies and the desire to achieve sustainable economies. Given that most aspects of consumer behaviour are culture bound, this paper contributes by comparing consumers’ evaluations of the efficiency of actions to improve environmental quality in two of the most promising industrializing consumer societies: Brazil and China. The proposed conceptual framework includes environmental concerns, perceived consumer effectiveness, green attitudes, green behaviours and external motivators as constructs to explain the perception of efficient environmental support. Field research was conducted in Brazil with 1,149 respondents, and in China with 632 respondents to test the model. The results suggested that the belief that environmental quality can be improved is directly associated with consumers’ internal and external motivators. However, cultural traits drove important differences in the evaluation of the efficiency of such improvements. Specifically, Chinese people tended to rely on collective leadership to create the conditions necessary for improving environmental quality, while they remained concerned with the current status. In contrast, Brazilians accepted more personal responsibility for the results, although they face important constraints, such as the availability of products.  相似文献

Parental control: A study of U.S. subsidiaries in Mexico   总被引:2,自引:0,他引:2  
This study develops a framework that suggests that subsidiary characteristics, such as performance, purpose and manager nationality affect the extent of control and mechanisms of control (i.e., results, cultural and action controls) that their parent companies exercise over them. Hypotheses were tested using survey responses from 44 Mexican subsidiary—U.S. parent dyads. As expected, results suggest that parental perceptions of subsidiary performance are inversely related to the extent of control that parent companies exercise over these subsidiaries. It was also found that subsidiaries established for purposes relating to a knowledge seeking motivation tended to be subject to more cultural control, but no support was found for the hypothesized relationships between market purpose and results control, and resource purpose and action control. Finally, also as predicted, Mexican managers tended to be subject to greater action control by their U.S. parent than American managers.  相似文献

Previous research on women's reactions to female body images in advertisements has been restricted to same race target women and models, and typically conducted among Western participants. The present research examines the combined effects of model race and size for the first time, and extends inquiry to Chinese consumers. Results across four experiments demonstrate that model race and size are potent informative cues that influence Chinese consumers’ self‐esteem and advertising effectiveness. Studies 1a and 1b suggest that model race is an informative trigger predicting differential social comparison and subsequent self‐esteem judgments for Chinese women, but has no effect on Chinese men's self‐esteem. In addition, model size exerts differential impacts on Chinese women's and men's self‐esteem. Study 2 shows that manipulation of the social comparison mechanism may outweigh that of race as an informative cue. Study 3 examines the relationship between model size and Chinese women's evaluative responses to advertisements. These findings not only contribute to the literature, but also offer practical guidelines for marketers advertising in China.  相似文献

To examine consumer concern about food safety, identify characteristics of those most concerned, and determine behavioural responses to concerns, we used mailed questionnaires to survey a random sample of 630 adults. Eighty-eight percent of respondents were very or somewhat concerned about safety of the food supply. Subjects perceived greatest likelihood of harm from chemicals and lowest likelihood of harm from bacterial contamination. Relative to other concerns about food such as cost or taste, food safety ranked low. Because the concern was across all ages, education levels, genders, and places of residence, we were unable to define a type of person most likely to be concerned about food safety. Less than half the subjects had changed dietary behaviour in response to food safety concerns. Foods reduced or eliminated from the diet most often were meats, fruits, eggs and vegetables. The findings indicate that consumers need risk assessment education and help in making food choices that do not compromise diet quality.  相似文献

This article outlines the preliminary results of a longitudinal research study undertaken over a 12-year period (1986–97). It charts the evolution of S/NVQs in terms of both achievements and failures. On close scrutiny, it appears that the S/NVQ system has had a limited impact upon the competitiveness of the British economy. Consumers are faced with an increasing number of sustainable food labels. These different labels may be complementary or add to the increasing competition of product information in consumers' minds. We investigate: (1) the perceptions that consumers in the UK have about sustainable labels vs. other labels, such as origin or nutrition labels; and (2) consumers' reactions to combinations of different sustainable labels. Overall, the findings from two focus groups conducted in the UK indicate that consumers have positive perceptions of organic and fair trade labels but tend to be sceptical about unfamiliar labels and general claims such as ‘climate friendly’. The results also indicate the importance of familiarity, trust and fit between combinations of labels as well as between associating a label with a brand. While the combination of certain labels can enhance the value of a food product, this study also indicates that other label combinations (e.g. private and sustainable label) can detract from a label's value. Implications and recommendations are suggested for managers to counter the image of greenwashing, and for policy makers to facilitate sustainable food choices.  相似文献

Food hygiene inspection results previously kept confidential from the public may now be released, and this gives food authorities the opportunity to publish these ratings, known as ‘Scores on Doors’, allowing consumers to make informed decisions when deciding where they will eat. The UK's Food Standards Agency (FSA) is supporting trials of some of these schemes, which will involve more than 60 of the 400 local authorities, some of which have yet to launch their schemes. Other food authorities are running disclosure schemes independent of the FSA pilot scheme. The FSA has commissioned an evaluation of ‘Scores on Doors’ schemes to determine which is the most effective scheme with a view to launching a consistent nationwide scheme. A survey of ‘Scores on Doors’ schemes reveals many differences in the way they operate. This includes differences in the interpretation of scores, the extent of information that is disclosed, the communication channels used to disclose information, the amount of publicity provided for businesses and the public, the publicity given to the schemes by local media, and whether businesses are scored retrospectively or scored at inspection following the launch of the scheme. The implications of these variables for a comprehensive evaluation of the schemes are explored.  相似文献
