The long‐established association between high salt consumption and hypertension has led to calls for a reduction in salt intake. There is particular concern for the health status of Northern Irish consumers, who already have among the highest rates of coronary heart disease and stroke in the United Kingdom. With these concerns in mind, it is essential to establish the sources and patterns of salt consumption from discretionary and processed food sources before a reduction can be achieved. This study investigated differences in salt consumption patterns among consumers of varying socio‐economic status. Research consisted of a consumer questionnaire (n = 360) distributed within Northern Ireland. The results of the study revealed high discretionary salt usage and frequent consumption of processed foods among consumers of lower socio‐economic status. General observations from the questionnaire would suggest a need for improved health education for consumers in this group. The objective of health promotion should be to encourage a reduction in table and cooking salt usage and, in particular, in the consumption of highly salted processed foods. Enhanced product labelling is also encouraged to increase consumer awareness of current salt levels in food and of the availability of low‐salt foods. In addition, the results of this study advocate further development activity in the production of product formulations with low‐salt status. 相似文献

Socio‐demographic basic factors of German customers as predictors for sustainable consumerism regarding foodstuffs and meat products 下载免费PDF全文
An important step in promoting sustainable purchase behaviour is to explore the understanding of responsible consumerism from the consumers’ point of view. For this purpose, a study among 1040 German consumers was carried out using a two‐pronged approach. First, open‐ended questions were used to explore the characteristics of sustainable food consumption in general as well as the willingness and meaningfulness of a low‐meat diet from the consumers’ point of view. After that the interactive structure behind the term was studied using a quantitative empirical method. As standard of evaluation the four underlying socio‐demographic factors gender, age, wealth and education are used. Apart from the consumers’ financial situation, the applied statistics show significant correlations of the propensity for sustainable consumerism to each of the above factors. Women, middle‐aged and well‐educated consumers show a greater tendency to purchase environmentally and socially sustainable products. Accordingly, the suitability of socio‐demographic factors is confirmed in this study. The open‐ended questions fathom what attributes consumers connect with sustainable food consumption, in particularly with regard to the consumption of meat. It is clear that attributes that affect consumers directly and attributes which can be directly influenced by their actions are better perceived by the consumer. Altruistic factors or abstract aspects of food consumption (e.g. climate protection) are generally of less significance. Conversely, factors which concern the value added chain, like for example, origin and processing, have priority. To conclude, the findings enable the identification of the variables determining the sustainability construct. This allows policy makers to develop customized incentive systems. Similarly, private sector stakeholders are enabled to adapt marketing activities and their product mix to consumer demands. 相似文献

This study sets out to examine the influence of consumers’ green values on food‐related behaviours. Data were collected from a random sample of 385 consumers in Izmir, Turkey via face‐to‐face interviews. Factor analysis was conducted to identify the underlying dimensions that capture the meaning of green values, which affect shopping, cooking and eating behaviours of consumers. A composite variable that represents consumers’ perception of green values was created to classify consumers into two segments labelled: Negative perceivers (37.7%) and positive perceivers (62.3%). The results indicated that the positive perceivers tended to have healthier and environmentally friendly food consumption behaviours than the negative perceivers. Gender, age, education, marital status, body mass index, regular exercise and smoking were significant for differentiating between the segments. We intend to construct value‐based intervention programmes that are easy to implement, non‐mandatory and cost‐effective for the negative perceivers. 相似文献

Given the importance of cowpea [Vignaunguiculata(L)Walp] in fighting malnutrition and poverty, a socio‐economic assessment of cowpea diversity found on the Ghanaian market was conducted. The objective was to investigate emerging consumer preference for cowpea and make recommendations for the development of tailor‐made varieties. Forty‐seven cowpea accessions were collected from traders interviewed for morphological characterization to ascertain the degree of diversity. Data was subjected to Hierarchical Cluster Analysis using Genstat Discovery Edition 3 software and variations among the cowpea varieties based on the selected seed traits established. Cowpea varieties found on the markets were broadly categorized into foreign and local varieties and usually named after their sources. Foreign Cowpea varieties were very popular on the markets surveyed as reflected in the per cent distribution of respondents by cowpea varieties sold; Niger (52%), Burkina Faso (50%), Togo (46%), Lagos (36%) and Ghana (18–21%). At the trader level, the order of preference for cowpea characteristics was cleanliness (stone free and no dirt), colour (white seed colour), easy to cook, taste, size, less weevil damage, dryness and place of origin ranked in decreasing order of importance. At the consumer level, cleanliness that was also tied to the extent of weevil damage was ranked most important. This was followed by seed colour (preferable white), short cooking time, size and taste. From the sociological perspective, concerns are raised on the impact of past cowpea breeding activities giving the level of competitiveness and market performance of locally improved varieties observed. Recommendation is made for traders and consumers to be considered as relevant actors in all the stages of crop improvement and breeding activities. The number of older people in South Korea is growing dramatically, and the socio‐psychological needs of these people have begun to change from those of elderly people in the previous Confucian culture. The anti‐aging industry is popular among older South Korean consumers, and the Korean mass media have begun to broadcast new images of older people. The purpose of this research was to explore older Korean people's anti‐aging needs by examining their consumption‐related thoughts and behaviours in daily life. A theoretical framework is formulated to organize the coping processes and psychological mechanisms used by older Koreans to meet their anti‐aging needs. A total of 25 older Korean consumers were interviewed, and the qualitative data are analysed to determine the main causes and, attributes of, and reactions to their anti‐aging needs. The analysis of the in‐depth‐interviews shows that the older consumers’ negative age stereotypes act as a stressor and that their need for anti‐aging products is a defensive reaction. It is also found that older Korean consumers change their consumption behaviours to cope with negative age stereotypes and to satisfy their anti‐aging needs, and two types of coping behaviours (problem‐focused and emotion‐focused) are revealed. The results of this study contribute to the academic explanations of the anti‐aging phenomenon among older Koreans and enhance understanding of the perspectives of older Eastern consumers by revealing the existence of their anti‐aging needs. 相似文献

There has been rapid development in the methods, data and protocols for the assessment of product sustainability over the past decade. Notwithstanding this welcome development, the widespread provision of sustainable products has not occurred. Moreover, indications from a myriad of surveys suggest that consumers remain full of intent to purchase sustainably, yet these stated preferences have not translated into a widespread uptake in the purchase of more sustainable products. Heightened interest in climate change over the past couple of years has led to rising calls for labelling to allow consumers to differentiate between more or less sustainable options. Such calls apparently assume that if consumers are presented with appropriate label information their purchases will change and more sustainable purchasing will result. For many observers these calls bring more than a ring of déjà vu as the failures (or at least unfulfilled expectations) of environmental labelling schemes of the past spring to mind. A review and assessment of eco‐labelling schemes is presented. Discussion focuses on the history, successes and failures of such schemes, and consideration of their potential role (or not) in future shifts towards sustainable consumption. Behavioural, social practice, institutional and infrastructure factors are considered and labelling, legislation and other options are explored. Conclusions are drawn regarding potential routes to sustainable consumption, with particular reference to eco‐labels. 相似文献

This article aims at contributing to a body of work about children and families by exploring the importance of socio‐economic context and social capital for understanding the ways in which money is perceived, obtained and used by children. Alleged contrasts in terms of money management, consumption priorities and postponement of gratification, especially among middle and working classes, have already been debated. It seems thus relevant to investigate if these presumable contrasts apply to children and why. Do children from different socio‐economic contexts reveal the traits that have been attributed to their households? To this end, a mixed methods research project was developed involving 245 children attending different primary schools in Portugal—one private school targeted at upper class children and one state‐sponsored school located in a working‐class area. This study evaluated the sorghum brewing microenterprises in Benin with emphasis on the beer quality, the social significance of the product as well as the income generated. Tchoukoutou, the Benin opaque sorghum beer, has important social functions as it fosters the cooperative spirit and remains an ancestral beverage widely used for traditional ceremonies. The manufacturing process consists of malting (soaking, germination and sun drying), brewing (mashing, boiling, filtration) and fermentation. The beer is sour with a pH of 3.2 and contains a relatively high but variable level of solids and crude protein. Most of the consumers appreciate an opaque, sour and pink‐coloured beer. The consumers related many of the beer properties to health effects. Participants can link the perceived qualities of the beer to the grain’s functional properties, and this leads to the classification of the farmers’ sorghum as varieties of top, medium and low quality for brewing. The profits from tchoukoutou production range from 2365 to 17 212 fcfa per month (1 euro = 656 fcfa) for the producers, depending on beer yield and quantity of raw grain transformed. The generated income is used for household needs and part of it is invested in children’s education. 相似文献

Advertising has become one of the major sources of game apps revenues and interstitial ads, in particular, are the most used monetization method among the types of in‐game mobile ad formats. Interstitial ads overlaid on top of a mobile game app have more obvious advertising intent and a higher degree of forced exposure and perceived intrusiveness. This study examined how the degree of congruity (high vs. moderate vs. low) between the promoted products in interstitial ads and the mobile game app environment affects consumers’ responses. The moderating effects of media‐context factors (i.e., excited– or calm–happiness game types and game immersion) were further assessed. The results of two experiments revealed that game‐product congruity lead to better consumers’ responses toward ads and advertised products. The positive effects of game‐product congruity were more salient when consumers played calm–happiness games and were less immersed in the game. Theoretical implications on integrating perspectives across disciplines such as schema theory, happiness, and immersion within the media‐context framework, as well as practical suggestions are discussed. 相似文献

Rates of peanut allergy in the Western world have increased over the last 30 years, although it is unclear why. While eating behaviours are likely to be connected to allergy prevalence, the precise relevant factors are uncertain. This study aimed to investigate dietary differences and changes in dietary habits in peanut consumption (in apparent and hidden forms) in four different countries (Bulgaria, Poland, Spain, UK), specifically chosen because of their different ‘peanut experiences’. Focus groups revealed a common perception that dietary habits have become less healthy, with more consumption of processed foods and an increase in snacking. In addition, ethnic cuisine was perceived to have had an important impact on European eating habits, while participants identified an increase in consumption of more ‘exotic’ forms of peanuts and their products. These findings point to an increase in exposure to peanuts, particularly in hidden forms, that superficially parallels increased prevalence rates. However, it was also clear that participants lacked knowledge about the composition of food and non‐food products. The dietary trends identified here thus warrant further quantitative investigation, particularly in the context of differential national patterns of allergy prevalence – data on which is currently being gathered within the EC‐funded EuroPrevall project. 相似文献

Consumption behaviour has long been linked to identity and notions of the self, with these concepts becoming ever more relevant in a global culture of consumption where materialistic behaviours and attitudes are seen as determinants of self‐image. Against this landscape of consumption, Generation Y is oft criticized as the ‘want it now’ generation, focused on hedonic acquisition of possessions and brands. This group was born into a society that reinforces the self through having and have been encouraged to consume since childhood. Debt is increasing in the youth market, with most teenagers now having access to credit cards and university graduates entering the workplace with high levels of consumer as well as educational debt. This study examines the consumption behaviour of two sets of young adult consumers: recent home leavers and those who have lived away from home for a longer period of time, examining their experience with debt in a framework of self‐identity. Core themes to emerge from this research are centred on the place of debt in establishing identity and self‐worth in transitional life phases. 相似文献

The aim of this study was to determine the knowledge and acceptability of soymilk (defined as consumption pattern/usage and taste) by adult consumers, residing in different socio‐economic areas (low vs. high) in Cape Town. The study population of 214 participants were selected using convenience sampling. A questionnaire was developed in order to obtain demographic data (four items); basic general knowledge of soymilk (four items); and acceptability of the tested products (consumption patterns and taste) (eight items). There was a significant difference between the two groups (P = 0.000) regarding basic knowledge of soymilk, with significantly more in the high socio‐economic area (HSEA) having a score of at least 75%. Gender (P = 0.082) and age (P = 0.122) did not have a significant impact on the consumption patterns of soymilk. There was no significant difference between the two groups with respect to current usage (P = 0.228) and frequency of use (P = 0.213) of soymilk. However, a significantly smaller group (P = 0.000) of participants in the low socio‐economic area had previously tasted soymilk compared with those in the HSEA (16.7% vs. 41.5%; P = 0.000). In conclusion, socio‐economic status appeared to be associated with knowledge of soymilk. No significant differences with regard to gender, age or current usage in the two groups studied were noted. 相似文献

The debate regarding the economic effects of employing immigrants has attracted renewed interest in European countries since the economic crisis. We provide an approximation of the labour market effects of immigrant workers in four European countries during the global economic crisis after briefly analysing native and foreign‐born worker conditions for the most recent period. Our analysis focuses on the correlation between the stock of immigrant workers and the number of native labour market workers across several segments of the labour market using a simple model approach. Using Eurostat and LFS (Labour Force Survey) data, we estimate a structural dynamic model using the generalised method of moments (GMM) to examine adjustment dynamics in the labour market and labour market segment and worker educational levels, countries of origin and genders. Overall, the empirical results suggest that immigrant labour force effects on native‐born worker employment rates have been persistent and but weak throughout the business cycle. These effects are globally positive, and immigrant origins do not appear to change the nature of their impact. We offer some explanations for these findings related to dual labour markets and to differences in levels of substitution among native and immigrant workers. 相似文献

Cultural orientations and environmental sustainability in households: A comparative analysis of Hispanics and non‐Hispanic Whites in the United States 下载免费PDF全文
This article explores the effect of cultural orientations on the sustainable household behaviours of Hispanic immigrants and non‐Hispanic Whites in the United States. A model is tested in which the personal‐level cultural orientations of interdependence‐independence determine consumers' environmental value and concern, which in turn, affect sustainable behaviours (recycling, water, electricity and energy conservation). Results from a sample of 338 Hispanic immigrants and 249 non‐Hispanic Whites indicate that interdependence predicts environmental values among non‐Hispanic Whites. For the Hispanic sample, neither interdependence nor independence predict environmental value. In both samples, environmental value is positively associated with environmental concern, which is positively related to sustainable behaviours. The relationships between environmental concern and all four behaviours are relatively weaker among Hispanics compared to non‐Hispanic Whites, suggesting that immigrants have not yet fully embraced mainstream American pro‐environmental ideals and practices. Our study sheds light on cultural differences regarding environmental values and concerns, and implies theoretical and practical recommendations for marketers in the United States. 相似文献

Fruit and vegetable consumption of Native Americans was compared with that of non‐Native Americans and determinants of fruit and vegetable intake for both populations were found based upon the Theory of Planned Behavior. A one‐time survey was conducted as part of a larger research project funded by the South Dakota Department of Health. The survey was administered in local grocery stores and supermarkets in six South Dakota communities, including two located on Native American reservations. Of the 1000 distributed surveys, 499 were returned with 230 being usable, resulting in a response rate of 49.9%. Wilcoxon signed‐rank test and two regression models were tested using SAS 9.2 software. Dependent variables were fruit and vegetable intake. Attitudes towards health, fruit and vegetable consumption, perceived difficulty, subjective norm and intention were also measured. Community size, family income, employment status and participation in food assistance programmes [Supplemental Nutrition Assistance Program or Women, Infants, and Children (SNAP or WIC)] were socio‐demographic control variables. Overall, Native American participants consumed more fruit and vegetables at home and had a more positive attitude towards healthy diets than non‐Native American participants. SNAP or WIC participation, family health, exercise, intention to live healthier than parents, buying healthy food, and fruit and vegetable consumption when eating out were positively associated with fruit and vegetable consumption among Native Americans, while participation in the SNAP or WIC programme had a negative influence on consumption among non‐Native American participants. Family health, exercise, buying healthy food, fruit and vegetable when eating out, and intention to buy healthy food were positively associated with fruit and vegetable consumption among the non‐Native American population. Theory of Planned Behavior variables (e.g. attitude towards healthy food) significantly contributed to the model explaining fruit and vegetable consumption. The fact that SNAP and WIC participation had an opposite influence on the two populations warrants further research. 相似文献

Adequate nutrition is an important factor for health and well‐being in adolescents and later years. Fruits and vegetables are part of a healthy diet as important source of nutrients, but their intakes are lower than the recommendations in European countries. This study aimed to compare the choices made by adolescents and older people between three similar dishes, one based on meat, one on fish and one on vegetables, in two different conditions: a neutral (control) situation and an intervention situation in which the vegetable‐based meal was designated ‘dish of the day’. The comparisons of choices will be made within the same age group (adolescents in the control group vs. adolescents in the intervention group; older people in the control group vs. older people in the intervention group). A quasi‐randomised field trial design was used with a sample of 94 adolescents (aged 10–19 years) and 97 older people (aged ≥65 years), who were randomly allocated to intervention or control groups. In the control situation participants were asked to choose between three similar meals, one meat, one fish and one the VeggiEat dish. In the intervention, the VeggiEat dish was labelled the ‘Dish of the day’. All dishes were provided free of charge, displayed side by side in the same order and served in same portions. The dish choices showed no differences between the control and intervention groups in both age groups, and no differences were found among the other variables analysed. This nudging strategy, ‘dish of the day’, seems not to work for the Danish sample of adolescents and older people. Future nudging studies with these populations are needed in order to find the best strategy to move adolescents' and older people's food habits toward a healthier pattern. 相似文献
