This paper tests for the influence of advertising on the inter‐product distribution of consumer demand for non‐durable goods and services in the UK, 1963–1996. The long‐run demand for seven categories of non‐durable products is modelled through an advertising‐augmented version of the almost ideal demand system (AIDS), which is incorporated into an error‐correction model to allow for short‐run dynamic adjustments to long‐run equilibrium positions. Model estimates confirm that the restrictions of price homogeneity and symmetry appear to be consistent with the data, yield measures of the various types of demand elasticity that are in general plausible, confirm the strong influence of prices on the allocation of consumer expenditure, but find little evidence to support the hypothesis that advertising has the power to effect marked changes in the inter‐product pattern of consumer demand in the UK.  相似文献

We develop a stochastic parameter approach to model the time-varying impacts of food scares on consumption, as an alternative to the inclusion of news coverage indices in the demand function. We empirically test the methodology on data from four food scares, the 1982 heptachlor milk contamination in Oahu, Hawaii and the bovine spongiform encephalopathy and two Escherichia coli scares on U.S. meat demand over the period 1993–9. Results show that the inclusion of time-varying parameters in demand models enables the capturing of the impact of food safety information and provides better short-term forecasts.  相似文献

This paper employs a latent variable approach to isolate the effects of changing tastes on the share of total meat expenditure on different categories of meat products in Greece during the period 1965–1995. We find that changes in the relative expenditure on different categories of meat cannot be explained by changes in the relative prices of the different meat products and increased expenditure alone. For pork products in particular, the increase in the share of expenditure has been greater than would be expected as a result of the relative fall in their price. The increase can therefore be associated with changes in taste. This finding is of general interest to those conducting empirical research into consumer behaviour both in economies where there have been significant changes in patterns of food consumption, and where, as in the case of many less industrialised economies, rapid structural changes in food consumption patterns are still to come. It is also of importance to policy makers in assessing die effectiveness of advertising or promotional campaigns in influencing longer term changes in consumer preferences for different products.  相似文献

The theory of consumer behavior is applied to the estimation of a demand svstem. Monthly data on alcoholic beverages (beer, wine, liquor, soft dhnks) from the province of Ontario in Canada are analyzed. Before estimating the linear approximate almost ideal demand system (LA/AIDS), unit root and cointegration tests are implemented. Budget shares, per capita advertising expenditures, real total expenditure, prices and per capita consumption are found to be non-stationary. The budget share, the advertising expenditures, the prices and the real total expenditure are cointegrated for each beverage. Own and cross-price elasticities, income elasticities and own and cross-advertising elasticities are calculated from the estimated or the demand system. Based on own-price elasticities and income elasticities, alcohol consumption is consistent with the law of demand and the products analyzed are normal goods. The estimation of income and advertising effects is important for analyzing the need for, and the effectiveness of, potential control policies. The advertising elasticities are small but statistically significant. This suggests that advertising may promote alcoholic beverage consumption. The estimated inelastic demands for beer and wine suggest that the primary purpose of high excise taxes levied by the Federal and Provincial governments is to raise government revenues and not to discourage consumption.  相似文献

The aim of this study is to identify consumer perceptions and attitudes toward quality labeled pork and beef using cross-sectional consumer data. Given the dramatic changes over the last years in the meat sector as a result of the recent food scares, the study can facilitate better communicating with consumers and gaining insight into their perceptions and behavior toward meat products. A consumer survey was conducted in the rural region of Thessaly in Greece in order to investigate (a) food quality perceptions, (b) attitudes toward pork and beef quality labels, and (c) intentions to purchase higher priced certified pork and beef. The findings suggest that sociodemographic and personal characteristics have an impact on consumer willingness to pay for such products and different market segments can be targeted by marketers and food policymakers.  相似文献

A Microeconometric Analysis of the U.S. Meat Demand   总被引:1,自引:0,他引:1  
Price and expenditure elasticities and estimates of the effect of household demographic variables on U.S. meat demand are estimated using the newly released 1987–88 USDA household food consumption survey data. The USDA survey for the first time included variables reflecting respondents' concerns for health and diet information. A hybrid demand system, which combines a modified generalized addilog system and a level version Rotterdam demand system, is developed as the analytical framework. The micro econometric analysis takes into consideration the consumer selection problem, the missing-price problem, and the aggregation and quality variation problem. The most significant household characteristic and socio-economic variables are region, ethnic background, household size, urbanization, food planner, received health information, female household head employment status and proportion of food expenditure on away-from-home consumption. The results support the speculation of other time-series meat demand studies claiming both health concerns and convenience are the reasons for changes in consumer preference in favor of poultry and fish and in disfavor of red meat.  相似文献

Quarterly data from 1962 to 1983 for beef, lamb, mutton, pig meat and poultry were used to test for constancy in the structure of meat demand in Australia. The cumulative sum, cumulative sum of squares and Farley-Hinich tests were applied to a range of models to ensure that any rejection of stability was not due to an inappropriate functional form or omitted dynamics. Little evidence was found of a marked swing away from consumption of any meat, with the exception of mutton. The results suggest that changes in prices and in total consumer expenditure are far more important than changes in tastes as determinants of meat consumption.  相似文献

This article provides the first known examination of how animal welfare information provided by media sources impacts beef, pork and poultry demand. Results suggest that media attention to animal welfare has a small, but statistically significant impact on meat demand. Long‐run pork and poultry demand are hampered by increasing media attention whereas beef demand is not directly impacted. Loss in consumer demand is found to come from exiting the meat complex rather than spilling over and enhancing demand of competing meats. An outline of economic implications is provided for the broader discussion of animal welfare.  相似文献

The primary objective of this paper is to derive a general synthetic quadratic (rank 3) differential demand system which nests within it a range of testable differential demand models including the quadratic AIDS, CBS, Rotterdam and NBR systems. A model selection test procedure is also outlined. These differential systems are then applied and tested to analyse the monthly retail demand for cuts of pork in Great Britain over the period 1989–2000. The empirical results suggest that a quadratic differential AIDS model is most appropriate for the pork demand system studied, but that the need for inclusion of quadratic income/expenditure terms is not universal for every cut within the demand system. Quadratic expenditure effects were appropriate for pork chops and leg roasts, but log linear expenditure effects were adequate for bellies, shoulders and loin roasts. Roasting cuts were expenditure and own price elastic, with pork loins, chops and bellies all expenditure and own price inelastic.  相似文献

This paper contains short-run estimates of the impact of beef imports from Australia and elsewhere on U.S. retail meat prices. The U.S. beef demand is separated into two categories, table cuts and processed items. Estimates of direct and cross price elasticities of demand for these products are used together with elasticity estimates for other meats and other foods to assess the effect of imports on prices and upon various portions of the Consumer Price Index.  相似文献

The Russian food system has undergone substantial changes. However, knowledge on how economic transition has affected the structural parameters of food demand is lacking. Based on a two‐stage LES‐LA/AIDS model and annual panel data from the Russia Longitudinal Monitoring Survey (1995–2010), we provide a comprehensive set of food demand elasticities for Russia along two dimensions. First, we estimate demand parameters for three characteristic time periods in order to trace changes during transition. Second, to account for the Russian population's diversity, we derive elasticities for five different consumer segments. These groups are established by a cluster analysis based on households' food purchases. Our findings suggest that demand for food is far from satiated in Russia. We find generally high unconditional expenditure and own‐price elasticities for food. Both expenditure and own‐price elasticities show slight decreases in absolute terms over time. Low expenditure elasticities for staple foods like bread or cereals and high values for luxury goods such as meat, alcohol and tobacco suggest considerable changes in the composition of food baskets with further income growth. Results indicate that food production at home loses in importance while more affluent households in particular increase their demand for food consumption away from home.  相似文献

Quantity and quality effects of advertising are investigated in this article. A censored demand system is estimated for fish, beef, pork, and other meats using Norwegian household data. In the demand model, generic fish advertising and meat advertising is introduced as demand shifters, and at the same time unit values are treated as endogenous. The unit values capture the quality of the commodities. Empirical findings show that advertising can have both quantity and quality effects on household demand.  相似文献

The paper investigates whether the changing pattern of meat and fish purchases, which has occurred in Britain since the 1960s, is due to changes in the structure of consumer preferences or is attributable to conventional economic factors (changes in relative prices and total expenditure). The analysis is based on two non-parametric tests, derived from revealed preference theory. These do not require the explicit specification and estimation of a demand system. The hypothesis that the data are consistent with stable preferences is accepted; in principle, all variations in consumption can be fully explained by price and expenditure changes. However, some caution is counselled. As with all hypothesis testing, acceptance is less conclusive than rejection; some structural changes in preferences may have gone undetected.  相似文献

Most studies of the demand for meat in Australia have used some measure of total income or expenditure, but two recent studies have assumed weak separability of a meat group and used expenditure on the meat group instead. These specification differences are of interest to the extent that they affect the economic interpretation, goodness-of-fit, elasticity estimates, predictive performance or hypothesis tests in empirical demand equations. In this paper, non-nested hypothesis testing procedures are used to test the alternative specifications of the income variable and the hypothesis of separability. The results favour the use of the expenditure variable implied by separability but are mixed concerning whether separability holds.  相似文献

The remarkable economic changes occurring within China since 1978 have resulted in a striking alteration in food consumption patterns, and one marked change is the increasing consumption of meat. Given China’s large population, a small percentage change in per capita meat consumption could lead to a dramatic impact on the production and trade of agricultural products. Such changes have major implications for policy makers and food marketers. This paper concentrates on meat consumption patterns in the home in China. A censored linear approximate almost ideal demand system model was employed in the study, and major economic parameters were estimated for different meat items. Undernutrition and malnutrition are still problems of unacceptable proportions in many developing countries. However, the debate on the roles of income and other socio-economic variables such as women’s education and household size on food and nutrient demand continues. This study examines the demand for food and nutrients amongst households in Tanzania, using recent survey data. A quadratic almost ideal demand system (QUAIDS) is employed to estimate price and expenditure elasticities, as well as the impact of socio-economic variables on food demand patterns. A moment-based instrumental variable approach is then used to analyse the determinants of nutrient demand. The results show that income and other socio-economic variables exert significant effects on the demand for food and nutrients. The estimated expenditure elasticities for the nutrients range from 0.307 for iron to 1.26 for Vitamin B12. The elasticities are higher for those micronutrients that are consumed through animal products and lower for those micronutrients that are mainly obtained through staple foods. These results reflect the higher expenditure elasticities for meat, fish, eggs, milk, and milk products, as well as fruits and vegetables, relative to cereals and pulses, reinforcing the assertion that the demand for Vitamins A and B12, as well as calcium and zinc will increase with rising income.  相似文献

The focus of this study is the estimation of the Australian demand for meat between 1967 and 1990, employing a demand systems approach which uses the linear approximate, almost ideal demand system (LA/AIDS) model. Two demand systems are estimated by maximum likelihood methods, one for aggregate types of meat and one for disaggregated meat products. After correcting for serial correlation in the two demand systems, restrictions from utility theory are imposed and tested for their appropriateness. By using a new data set on the Australian retail price and consumption offresh pork, ham and bacon, the results from the disaggregated model provide the first estimates of the own-price, cross-price and expenditure elasticities for these commodities.  相似文献

The paper develops a measure of consumer welfare losses associated with withholding information about a possible link between BSE and vCJD. The Cost of Ignorance (COI) is measured by comparing the utility of the informed choice with the utility of the uninformed choice, under conditions of improved information. Unlike previous work that is largely based on a single equation demand model, the measure is obtained retrieving a cost function from a dynamic Almost Ideal Demand System. The estimated perceived loss for Italian consumers due to delayed information ranges from 12 percent to 54 percent of total meat expenditure, depending on the month assumed to embody correct beliefs about the safety level of beef.  相似文献

目的 生态效率是衡量经济和生态协同发展的重要指标,提高生态效率有助于实现产业的绿色发展。方法 文章基于我国9省份893份调研数据,运用超效率SBM-Tobit模型,在探讨了约束型、宣传型和激励型规制对肉鸭养殖生态效率影响的基础上,进一步分析绿色认知在环境规制影响肉鸭养殖生态效率过程中的中介效应以及3种类型环境规制的交互协同对肉鸭养殖生态效率的影响,并采用工具变量法处理环境规制、绿色认知的内生性问题。结果 约束型、宣传型和激励型规制对肉鸭养殖生态效率具有正向促进作用;绿色认知在环境规制对肉鸭养殖生态效率的影响中起部分中介作用;宣传型与约束型、激励型规制的交互协同对肉鸭养殖生态效率具有显著正向影响,而约束型与激励型规制的协同未产生显著影响。结论 政府应进一步完善环境规制体系,提升养殖户绿色认知水平,充分发挥环境规制的“组合拳”作用,以提高肉鸭养殖生态效率。  相似文献

Group expenditure has often been treated as exogenous when estimating demand parameters for a group of commodities with an almost ideal demand system. Researchers draw demand elasticities from past literature to use in their own analysis, but elasticities contingent on exogenous group expenditure may be inappropriate. Here, the approach is considered in the case of Japanese meat demand with a simple equation added to estimate group expenditures. The results show that elasticities should be revised and that a group expenditure equation is not a panacea as it may result in the violation of theoretical restrictions, such as symmetry.  相似文献
