The purpose of this paper is to understand differences in tourism companies' potential participation in foresight projects (regional or tourism policy‐oriented) by focusing on companies' attitudes towards participation, cooperation and the culture of future‐oriented thinking. This study used an email survey sent out to tourism companies in the Malopolska region (Poland), and in particular its capital city, Krakow. The data received were statistically analysed using the cluster analysis method and the Mann–Whitney U test. The statistically significant results generated in the study made it possible to determine and understand the differences in the foresight orientation of tourism enterprises. This research was designed to evaluate our current state of knowledge by systematically reviewing tourism and hospitality academic literature concerning sustainability in the restaurant sector by undertaking a systematic review and content analysis. The characteristics of 76 articles are listed in a comprehensive table, presenting research design and research variables, and the articles are examined for their approach to the sustainability concept as applied to the restaurant industry (i.e. the range of responsible practices addressed in each work). The findings indicate that the majority of the literature only engages with parts of sustainability, particularly ecological, rather than holistic sustainability. This matters because it may mean we fail in our attempts to achieve more sustainable restaurant operations.

This research suggests that tourism and hospitality studies need to re-engage with the evolving conceptualisation of sustainability to ensure that best practice responses to changing requirements are undertaken. The narrow focus on ecological aspects of sustainability featuring in restaurants does not acknowledge the full meaning of sustainability and therefore may constrain efforts to secure more sustainable futures. Illuminating such gaps in knowledge is important in order to strengthen our conceptual understandings, refine our practices and thereby secure more sustainable futures through tourism and hospitality.  相似文献

Many countries compete for the opportunity to host the Olympics because of the resulting positive impacts. However, there are also high costs associated with hosting this event. The participants of this study provided insight on how the 2008 Olympics influenced Beijing's tourism industry. This study explores the impacts of hosting the renowned Olympic Games on the transformation of the host city from the supplier perspective. Beijing tourism industry professionals and Beijing residents were considered suppliers and interviewed for the purpose of this study. Collected data reveal that the city of Beijing rapidly developed because of the mega event. Suppliers including Beijing's tourism department, government organizations, hotels, and restaurants have changed their marketing strategies over time because of the impacts of the Olympics. Additionally, Beijing has shifted to promoting a new destination image: fashion and vitality. The communication that Destination Management Organizations (DMOs) address to destination stakeholders plays a central role in attracting attention and resources for sustainable destination development and disclosing the efforts made to be a sustainable territory. There has been extensive analysis on the role of official tourism websites that addresses both DMO's internal and external stakeholders. However, less exploration is available on the relationship between the contents disclosed through tourism websites and the strategic positioning of the destination. This study empirically examines that link with a focus on ‘green/sustainable/responsible' travel. Results show a positive association between the orientation to sustainability in online communication and both sustainable regulation of the tourism sector and tourism development. In contrast, there is no significant association with destination size, tourism maturity and pricing policies.  相似文献

The commodification of culture for tourism can result in fundamentally changing a community's structure. Focusing on one rural Atlantic Canadian community, this article examines the transformation of longstanding stable forms of human and social capital that have bonded a local community over two centuries, and in so doing helped to ensure sustainability. Transformations induced by tourism development may dramatically transform such cultures. To avoid corrosive transformation of local culture, careful management plans that protect community values must become the focal point of the plan. This paper discusses the commodification of the culture process as it has unfolded and transformed local culture in a case study rural community. Results of the study show that while local culture may be a community's most valuable asset, the commodification of local culture for tourism may, in reality, impede a community's efforts to achieve sustainability. Cultural-based tourism development invokes transformation, whereas the traditional community culture dies away while attempting to simultaneously create a new culture based on the icons of the traditional one. This may be described, metaphorically, as a death–rebirth-like process. This research suggests that conventional notions of cultural tourism as a means of community sustainability without regard for traditional practices and values may not be appropriate.  相似文献

This study explores the combined effects of adopting sustainable practices on small tourism companies’ performance. The existing literature provides insufficient data on sustainable behaviour because most studies on environmental practices focus on larger companies in the tourism sector, and a gap exists in social practices. This study is based on a survey of 374 restaurant managers. It uses structural equation modelling to study direct links between three dimensions – quality, environmental practices and social practices – and financial performance and market success factors. Significant differences with earlier studies are found. This study suggests that proactive sustainable practices can benefit small service companies by improving competitiveness even in difficult times. Practical implications are discussed in relation to sustainable practices.  相似文献

In tourism, natural resources and the physical environment are regarded as important assets to enhance the product. Practitioners in this multisectoral industry (including hotels) perceive the environment and its resources to be a crucial feature in attracting more tourists. Today, most sectors of industry face pressure to improve their environmental performance. Hotels as a component of tourism are no exception. Hotels can act to reduce their environmental impacts and, collectively, make a substantial contribution to improving the quality of the environment. A wide range of publications offer guidance and advice on the actions hoteliers may take to alter their practices and thus address environmental issues. Yet, to date, it is not clear how many hotels are applying these recommendations, nor which actions share this common goal. Equally, the lack of operationalisation in environmental principles, implicit within many codes of practice, is seeing the emergence of a gap between theory and practice in these matters. It is the nature of this gap that is explored. Additionally, an assessment is undertaken of what the tourism industry is doing to improve environmental performance, and a case study is presented based on a detailed survey of environmental management practices in 42 London hotels. This article examines how safety is understood and practised by wilderness guides leading nature excursions with international customers in Finnish Lapland. Commercial nature tourism services in Lapland are not considered adventure-oriented since risk-taking is not an integral part of the guided services. The study shows that even though perceived as low-risk activities, risks are present in a significant part of the everyday actions in commercial nature tourism services. Thus, commercial nature tourism forms a rich context to study the sustainability of contemporary safety practices since it forms a specific, guide-dependent sector of the tourism industry. The discussion further underlines the complexity of safety issues within the industry and the importance of holistic approaches.  相似文献

Following the ‘Open Door’ policy of 1978 that accepted tourism as an appropriate sector for development in China for the first time since 1949, national and local governments have issued policies to promote tourism. Over the past two decades, the continuing development of tourism has occurred as China has started to move towards sustainability in its national policies. Although sustainability is often stated as the purpose of development, and tourism development strategies are regarded as more environmentally oriented than other industries, little guidance is provided to make sure that sustainability principles are followed. To examine this situation, sustainability components in the two types of tourism policies are examined, including 56 tourism development policies by the state councils and 31 provinces since the 1980s. These indicate a mixed result. While sustainability is an important component in some of these policies, the meaning of sustainability in the tourism sector is confusing and pro-business tourism development still plays a dominant role. It is suggested a pro-active sustainability approach should be integrated with environmental concerns in the future to allow tourism to participate constructively in the national transformation to a sustainable society.  相似文献

In March 2017, as a result of a precautionary interim decision made by the courts based on the case relating to ‘unfair competition practices’, Booking.com closed its platform for inbound tourism in Turkey and ceased operations. This was the first instance of an online booking platform halting access for inbound bookings for the domestic market. This platform-based relationship involves both cooperation and competition, and thus this paper identifies this relationship as platform coopetition. Based on the governance network theory and employing a case-study approach, the Booking.com case is examined from the viewpoint of tourism coopetition from two perspectives: industry-wide and agent-specific. The paper provides an analysis of these perspectives and the past and on-going process of Booking.com’s platform closure. The constitutive dynamics this case endangers the coopetitive environment of the tourism industry and thus creates destructive uncertainties, especially for small hotels. This analysis also reveals the issues in terms of political representation for digital service platform companies.  相似文献

The present paper brings together two of the research lines which have proved most relevant in the field of strategic management during the last few years: the importance of knowledge as a source of competitive advantage; and the ease of access to that resource within clusters and/or industrial districts. More specifically, our work focuses on the tourism sector, analysing the extent to which the profitability of Spanish vacation hotels located along the Mediterranean coastline depends on internal and external knowledge, that is, on the knowledge resources generated at each destination. A multiple linear regression is designed for the empirical analysis. The evidence supports the hypothesis that the external knowledge generated at each destination is statistically significant, even though internal knowledge turns out to be more relevant in terms of hotel profitability.  相似文献

Employee recovery addresses either employee well-being or management's practices in aiding employees in recovering themselves following a service failure. This paper surveys the cabin crew at a small, European, low-cost carrier and investigates employees' perceptions of management practices to aid personnel achieve service recovery. Employee recovery within service research often focuses on front-line employees that work in a fixed location, however a contribution to the field is made by investigating the recovery of spatially dispersed personnel, such as operational personnel in the transport sector, who have a work place away from a fixed or central location and have minimal management contact. Results suggest that the support employees receive from management, such as recognition, information sharing, training, and strategic awareness are all important for spatially dispersed front-line employees' satisfaction with management's actions and overall employee recovery.  相似文献

It has long been recognised that nature and extent of state intervention in tourism development closely reflects the prevailing political‐economy and ideology within the destination state. This is certainly the case with Cuba which, since the 1959 revolution and despite the collapse of communism elsewhere, remains the world's only centrally‐planned economy that boasts a significant international tourism sector. Tracing the development of tourism since 1959, this paper explores the relationship between the evolution of Cuba's political‐economic structures and processes and their subsequent influence on the planning, control, development and ownership of tourism on the island. In particular, it considers the potential future of tourism in Cuba, challenging the widespread belief that, in a post‐Castro era, the island's tourism sector faces a bright future. It concludes that, even with a potential move towards market reform, significant improvements will be required with respect to the quality, value and diversity of the island's tourism product. This paper assesses the environmental management practices of different categories of hotels in Accra, Ghana. Managers of 200 hotels were surveyed, employing the stratified random sampling method. Results of the study indicate significant differences in the extent of environmental management of the hotels suggesting that the better the quality of a hotel, the better the environmental management performance. The goal of sustainability oriented tourism development requires a number of human resources development (HRD) strategies aimed at the tourism industry personnel, host community and the tourists, and underpinned by concepts and practices of sustainability. Sustainability based ‘work culture’, ‘professional ethics’ and operational practices are basic to sustainability in tourism. Indian tourism, despite its immense potential, has seen tardy development, and shortcomings in the HRD domain have been one of the reasons for this below par performance. This paper suggests a comprehensive and strategic approach to HRD, catering to the training and education needs of Indian tourism at various levels for the major target groups. The paper also identifies the pressing issues confronting HRD in Indian tourism and potential strategies to address them within the context of sustainability. Hot springs tourism has increasingly attracted tourists who pursue wellness and harmony with the natural environment. This paper investigates how four sustainability-related attributes influence tourist choice and estimates their marginal willingness to pay for Colorado hot springs tourism under the post-COVID-19 pandemic period. A fractional factorial choice experiment design and conditional logit model were used to analyze the choice data of 303 retained respondents collected from the online surveys. The results show the importance of sustainability-related attributes on tourist choice and suggest the hot springs tourism sector improves destination sustainability to maintain market competitiveness under the post-COVID-19 pandemic period.  相似文献

Festivals can be important contributors to tourism and the social and economic sustainability of the communities in which they are located. A festival, however, can also negatively impact the environment by increasing demands on waste management and disposal. To better understand what factors influence festival waste management, we applied both quantitative and qualitative methods to find that provincial location, festival type and festival size significantly influence waste generation and diversion. Consistency in waste regulation and practices, sustainability partnerships with local stakeholders, and responsible leadership are encouraged.  相似文献

Before the ‘open-door’ policy doi moi, the Vietnamese government had monopolised all sectors of tourism in the country. In 1987, one year after the beginning of doi moi, the state issued the Law on Foreign Investment, which encouraged foreign direct investment (FDI) in Vietnam, especially in the tourism industry. This article examines the influence of the resulting influx of FDI on tourism accommodation patterns in Vietnam. A synopsis of policy and background of FDI in Vietnam accommodation is followed by an examination of developments, projects and experiences in this field since doi moi. The article then investigates the effects of FDI in Vietnam tourism accommodation on developments and practices in Vietnam's accommodation market, including the traditional state-owned accommodation sub-sector. The article integrates insights gained from interviews with operators of joint venture and state-owned hotels in Vietnam.  相似文献

A longitudinal analysis of tourism trends in Mauritius is conducted using published statistics and reports compiled by the Government of Mauritius. A number of trend indicators and ratios are derived and plotted as time series data from 1979 to 1998. Interesting trends emerge that may be of value to other Indian Ocean Island tourism agencies and analysts. The ratios calculated are as follows: number of nights spent per tourist, discounted earnings per tourist, discounted earnings per night, contribution to GDP per tourism earnings, discounted contribution to GDP per tourist, percentage of nights spent in hotels, nights spent per tourist in hotels and nights spent per tourist in informal accommodation, average expenditure per tourist accommodated in hotels and average expenditure per tourist accommodated in informal accommodation (private bungalows, boarding/guest houses and homes of friends/relatives).

The main findings are that the continued success of tourism in Mauritius rests significantly on tourists accommodated in the informal accommodation sector and that tourist spending in real terms in Mauritius has declined from 1990 to 1997.  相似文献

Using a four round Delphi survey, a focus group and semi-structured interviews, this study investigates the respondent perspective of the public sector role in providing an environment conducive to the development of the rural tourism sector in Britain and South Africa. Although South African respondents generally perceived a greater need of support for the rural tourism sector than did their British counterparts, many of the problems, concerns and frustrations that emerged from the study were similar. Respondents perceived the public sector as ‘leader’, ‘strategist’, ‘mentor’, ‘co-ordinator’, ‘champion’ and ‘partner’ in their endeavour to build the rural tourism sector. Grappling with the problems of uplifting the quality, viability and communal benefit of rural tourism is seen as a futile exercise if the facilitatory platform of rational policy, planning and support conducive to the sustainability of the sector, is not in place. Above all local authorities are seen as ‘the enabler’ of successful rural tourism projects that diversify the local economy and generate employment and entrepreneurial opportunities. However, whilst there is respondent acknowledgement of the role played by the public sector, there is evidence of widespread disenchantment with the efficacy with which this role is fulfilled.  相似文献
