通过感官评价确定液氮速冻藤椒代替鲜藤椒的改良配方。结果表明:速冻藤椒在1 a的冻藏期内,均可用于藤椒油生产,新配方保持藤椒油色泽金黄透明、口味清爽、麻香浓郁的特点,藤椒油1个月左右的季节性生产模式可调整为全年均衡生产模式,经生产企业初步预算配方改良后将有效降低采购成本、用工成本,降幅在10%左右。  相似文献

为比较不同温度不同包装对平菇保鲜的效果,以PP保鲜袋包装平菇和HDPE保鲜袋包装平菇为试验材料,在室温(约10℃)和低温(约1℃)两种不同的贮藏条件下,对平菇感官品质、失重率等指标进行分析。结果表明,低温贮藏能够有效抑制平菇品质的变化;相较于HDPE包装,PP袋包装均可较好地保持平菇的色泽和感官品质,有效延长了杏鲍菇的货架期。  相似文献

本文选用茶多酚、山梨酸钾和普鲁兰多糖复合保鲜剂作为牡蛎保鲜剂,实验分成对照组和测试组.在不同贮藏条件下,通过测定感官评价、pH值、TVB-N、TBA、FFA和菌落总数指标,考察保鲜剂的保鲜效果.结果发现,在4℃贮藏条件下,对照组的牡蛎保藏8 d后各指标值已超出标准限量值,测试组则可达14 d,且测试组在-3℃贮藏条件下...  相似文献

以甘蔗、菠萝为主要原料,通过单因素实验和正交实验,对其复合果汁饮品的工艺配方进行了优化,并确定了产品的离心澄清工艺。结果表明,甘蔗菠萝热带复合果汁饮品的最佳配方为:甘蔗原汁与菠萝原汁(V/V)的配比2∶1,复合原果汁含量50%,蔗糖添加量2%,柠檬酸添加量0.2%;离心澄清工艺是产品在3 500 r·min-1条件下离心15 min,所生产出来的复合果汁饮品在滋味、气味、色泽、组织状态等方面感官评价俱佳。制得的产品色泽淡黄,酸甜适宜,营养健康,可以很好地满足人们对热带果汁高端饮品的需求。  相似文献

本研究探讨以黄瓜汁与甜米酒为原料配制的无添加饮品,确定黄瓜甜米酒的最佳工艺参数为:甜米酒30℃条件下发酵4 d,黄瓜汁冷藏离心过滤后与甜米酒最佳配比为0.6∶1,过滤除菌对风味保留效果最佳。黄瓜甜米酒成品澄清透明,色泽淡青,融合了黄瓜的清爽和米酒的浓郁,滋味甜而不腻,回味绵软,风格独特,各项指标协调。  相似文献

本试验利用模糊数学感官评价法,以外观色泽、口感、组织结构及风味为评价指标,确定权重,建立感官综合评分体系,通过单因素和正交试验优化紫薯黑麦饼干的最佳配方及工艺参数,并对其质构特性进行分析。结果表明,紫薯黑麦酥性饼干品质权重集K=(外观色泽0.21,组织结构0.22,口感0.3,风味0.27);最优条件组合为:紫薯粉40 g、乳粉5 g、黄油20 g、木糖醇19 g、烘烤温度为195℃且烘烤时间为9 min。  相似文献

采后沙糖橘经预贮及姜黄素保鲜剂(姜黄素及黄原胶含量均为0.05%)浸果处理0.5~2.0 min后,在温度(8±1)℃及相对湿度85%~90%的贮藏条件下经80 d的贮藏。结果表明,经姜黄素保鲜剂浸泡处理的沙糖橘果实,其果实的病烂率和失重率均显著低于对照,果实的可溶性固形物、可滴定酸及Vc等主要营养成分的呼吸消耗损失也明显被抑制。  相似文献

因为时代的不同,人们对健康与环境保护的意识越来越强。所以,根据时代和人们的要求,环境和粮食成为了我国大环境方面的首要发展方向。粮食的贮存技术当然是重中之重。为了对小麦的贮存过程进行更深层次的了解,让检测出品质的数据相对稳定一些,对小麦的陈化在不同的贮存条件下产生的影响进行较为系统的分析,测试酸度、过氧化氢酶活性、色泽、发芽率、水分含量等一些指标的变化情况。结果表明,为了不让小麦在贮藏过程中的脂肪酸度、酸值升高,可以运用真空处理来起到防止氧化分解的作用,提高小麦的商业价值与营养价值,而且在0℃条件下采用真空处理的小麦贮藏品的品质是最好的。  相似文献

This article explores the influence of food product packaging on consumers’ sensory expectations and perceived newness of the product. Two experiments examine to what extent consumers use product typicality, graphical representations, and package typicality in evaluating new food products. Study 1 finds that (1) a typical flavor induces more positive expectations of pleasantness, taste, color, and smell, and (2) the presence of graphic representation on product labels increases perceived pleasantness but does not affect sensory expectations. Study 2 indicates that the product seems newer in the absence of a package (label-only condition), but when the product packaging is presented, an atypical package conveys more newness than a typical package. These results provide practical guidelines for the design and introduction of innovative food products.  相似文献

This study was carried out to assess the effect of storage of cassava roots in polyethylene sacks for periods of 2, 4, 6 and 8 weeks on the sensory characteristics of cassava fufu, a popular Ghanaian dish. Freshly harvested cassava roots were dipped in tap water and packed into polyethylene sacks in 2‐kg batches and stored at room temperature (25°C ± 1°C). Samples of fresh cassava fufu were evaluated and then at two weekly intervals for a period of 8 weeks. Attributes evaluated were colour, smell, elasticity, smoothness and taste. A structured six‐point ranking scale ranging from 6 (excellent) to 1 (very poor) was used for the evaluation. The data were analysed using analysis of variance, and the least significance difference test at P < 0.05 was used to determine differences between means. The results showed that storage of cassava roots for up to 8 weeks did not significantly affect the colour, smell, elasticity and taste of cassava fufu. However, smoothness of fufu prepared with cassava stored for 6 and 8 weeks was significantly different from the samples of the fresh cassava, and those stored for 2 and 4 weeks. It was concluded that cassava roots stored for periods up to 8 weeks in polyethylene sacks produced fufu of similar characteristics as fresh cassava fufu. This method is therefore recommended for use by homemakers, food service operators, cassava retailers and processors to save them time, energy and money used for the frequent trips for purchases. The method would also reduce post‐harvest losses to a large extent.  相似文献

Atmospheric factors within a retail environment provide efficient and effective methods for influencing customer behavior. Drawing on the concept of sensory compensation, this research investigates how ambient lighting influences taste perceptions. Three studies demonstrate that dim lighting enhances taste perceptions. The results of Studies 1a and 1b provide support that low lighting positively influences consumers' perceived taste of single taste dimension foods (e.g., sweet). Study 2 shows the number of taste dimensions (e.g., sweet vs. sweet and salty) stimulated serves as a boundary condition, attenuating the significant effect of dim lighting on taste perceptions.  相似文献

Can implied motion enhance consumer judgment of food freshness and taste? Freshness plays an important role in determining anticipated taste. Different perceptual cues may influence judgments of freshness. While some cues such as coloring and bruising play an obvious role, the authors argue that cues that on face value appear unrelated to freshness may also influence judgments of freshness. Specifically, the authors argue that humans have learned to relate movement to food freshness, and that this leads perceived motion to generate enhanced judgments of freshness, and, consequently, projected taste. This proposition is demonstrated in four studies. The studies show that the inclusion of implied motion in food pictures leads to elevated judgments of freshness and projected taste.  相似文献

平房仓充氮储藏晚籼稻谷,先用复合膜对粮堆“五面”密闭,并有效处理工艺孔洞、工作间等漏气部位,利用移动式制氮机组通过四个进气口结合上充下排、下充上排和仓内环流或环流风机强排等工艺向粮堆充氮。近三个月氮气储藏过程中,氮气浓度维持在95%范围,杀虫率达到100%,并能有效防止害虫发生,次年害虫发生时间推迟近一个月;存粮脂肪酸值年变化量低于1.5(KOH)mg/100g,2009年充氮储藏期内脂肪酸值仅增加0.7(KOH)mg/100g;粮温变化趋势与常规储藏基本一致,但试验仓平均粮温偏高1℃~1.5℃,局部最高粮温变化提前近15d。  相似文献

在试验水温(25±2)℃条件下,按2 mg/kg的浓度给欧洲鳗鲡浸浴阿苯达唑36 h,高效液相色谱法测定血浆和肌肉组织中的药物浓度,研究阿苯达唑在欧洲鳗鲡体内的代谢及消除规律。结果显示:阿苯达唑和阿苯达唑亚砜的血药时间数据符合一级吸收二室开放模型,阿苯达唑砜符合一级吸收一室开放模型;其消除半衰期分别为34.15h、99.34h、46.00 h,最大血药浓度分别为3.887、6.830、1.738 mg/L,达峰时间分别为7.27h1、8.00h、40.67h,药时曲线下面积(AUC)分别为129.71、921.95、236.58 mg.h/L。选取可食组织肌肉作为残留检测的靶组织,以农业部残留限量100μg/kg为最高残留限量,在本试验条件下,建议休药期不低于23 d。  相似文献

Consumers increasingly consider private labels to be as good as national brands. This research raises the question of whether national brands and private labels equally affect consumers’ sensory perceptions and purchase intentions. The results of two studies show that consumers reverse their evaluation of private labels (vs. national brands) when tasting the product in an informed (vs. blind) condition. When consumers are not aware of brand names, they indicate better taste and higher purchase intentions for private labels. However, the opposite is true when they try products in an informed condition. We discuss the implications for private labels and national brands.  相似文献

Building on existing research into sound symbolism and cross‐modal correspondences, this article proposes that cross‐modal correspondences—systematic mappings between different sensory modalities—can be used to communicate nonmusical, low‐level sensory properties such as basic tastes through music. A series of three experiments demonstrates that cross‐modal correspondences enable people to systematically encode basic taste properties into parameters in musical space (Experiment 1), and that they are able to correctly decode basic taste information embedded in complex musical compositions (Experiments 2 and 3). The results also suggest some culture‐specificity to these mappings, given that decoding performance, while still above chance levels, was lower in Indian participants than in those from the United States (Experiment 3). Implications and potential applications of these findings are discussed.  相似文献
