A questionnaire sent to 155 individuals was used to determine the meat preferences of families in three different socio-economic groups within the capital city of Malawi. Beef was the most strongly preferred meat, followed by chicken. When these two meats were unavailable differences between groups became apparent; high income families preferring pork and sheep, and low income families preferring goat, rabbit and ‘other’ meats. These results were influenced by the method of marketing of particular meats, but show that meat preferences of Malawians are different from those of individuals of Western European origin. Total meat production and consumption could be increased by an improvement in the production and marketing of goat meat; the second most popular species in farm holdings.  相似文献

对原子荧光光谱法测定肉类罐头中总砷含量不确定度进行评定。分析了产生不确定度的主要来源,以咸牛肉罐头为例,分析了整个测量过程产生的不确定度,取包含因子为2得扩展不确定度为0.002mg/kg,总砷含量的标准不确度最终结果为(0.024~0.002)mg/kg。为有效地控制用该方法测定肉类罐头中总砷含量的质量提供可靠的理论依据。  相似文献

Fresh meat product retailing at traditional markets in Taiwan causes concerns over meat safety issues.The agricultural administration has established programmes to raise consumer awareness of potential risks of fresh meat that have remained at room temperature for several hours. Although supermarkets sell chilled and frozen meat products, the majority of grocery shoppers in Taiwan still prefer purchasing fresh meat products at traditional markets where meat is displayed on counters or hung on hooks. This study utilizes survey data to segment meat shoppers in Taiwan. Results indicate the shoppers who purchase meat products at supermarkets tend to continue shopping at that location. Potential shoppers of supermarkets, who may switch from traditional markets to supermarkets for meat products, are identified and the major concerns of this group are the meat safety issues. Factors that influence the possibilities of selecting supermarkets for meat products are examined.  相似文献

Meat consumption in the UK has been falling for almost 20 years and the long-standing link between affluence and meat eating has been broken. In 10 years the proportion of the population claiming to be vegan or vegetarian doubled, while those identified as meat avoiders almost quadrupled with a further 40% now being classified as 'meat reducers' by Gallup. Means-End analysis was used for studying the underlying motivations of three groups: meat eaters, meat reducers and vegetarians. Health was found to be the central issue in food choice, but each group sought different terminal values. The view that meat reducers (and possibly even meat avoiders) are demi-vegetarians is challenged by the finding that their underlying motivations are similar to meat consumers and quite unlike those of vegetarians. Persuading meat reducers to adopt a vegetarian diet would require the difficult task of changing the enduring terminal values that they seek to attain through food choice behaviour. In contrast, persuading them to eat more meat would 'only' be a question of changing their beliefs about the healthiness of meat consumption. This paper reports on a study conducted in the UK and considers the implications of the findings for communications strategy.  相似文献

Abstract

The European meat industry is confronted with substantial changes of consumer preferences in relation to the type and quantity of meat in everyday diet. One of the main reasons behind these changes is the public impression that meat is a “dangerous” to consume food. This feeling is the result of recent food scares where meat played a central role and their effect on consumers' perceptions about meat safety. The research at hand explores the market potential of organic meat in Greece and emphasizes the perceptions about meat consumption held by organic consumers as opposed to those held by non-consumers of organic foods. It is expected that organic consumers will be more interested in a series of quality attributes of meat commonly found in its organic type, in comparison to non-consumers of organic food. However, the main finding of the survey is that consumer demands in relation to meat quality and safety are particularly high, irrespective of meat's production method. The research concludes that the particularly low consumption of organic meat in Greece should be partially attributed to its insufficient differentiation in consumers' minds.  相似文献

The purpose of this study is to investigate the determinants of Halal meat consumption within Turkish Muslim immigrants in Germany using the theory of planned behavior (TPB) as a conceptual framework. The role of self-identity as a Muslim, dietary acculturation in the host culture, moral obligation to purchase Halal meat, and trust on the authenticity of Halal meat is explored. A quantitative research methodology using an online questionnaire survey was used. Cross-sectional data were collected through a survey of 464 Muslims originating from Turkey and currently living in Germany. A positive personal attitude toward the consumption of Halal meat, motivation to comply others, the perceived control over consuming Halal meat, and the availability of Halal meat predict the intention to eat Halal meat among Muslims. This study is one of the few studies investigating the determinants of Halal meat consumption in a Muslim population in Germany using the TPB within a food, religion, and migration context.  相似文献
