Abstract

The current research proposes a framework for the investigation and conceptualization of high performance work systems in the U.S. restaurant industry. The projected U.S. restaurant industry sales for 2006 are $511.1 billion according to the National Restaurant Association (National Restaurant Association, 2005). Because of its size and impact on the foodservice industry and the hospitality industry in general, improving the performance of the restaurant industry could help increase overall revenues and guest satisfaction in the foodservice and hospitality industry. By identifying a list of high performance work practices in the industry, a more in-depth exploration of these practices and then organizational policies can be aligned together to help improve overall performance in the U.S. restaurant industry. The current study provides theoretical background and support for the high performance work systems theory.  相似文献

With demographic shifts, international labor mobility, and the blurring of geographical boundaries, workforce diversity and diversity management have assumed an important role in hospitality operations. More importantly previous research has established the role diversity plays on outcomes such as innovation and firm performance. Yet reports of research on diversity and its management in the hospitality industry are fragmented, underdeveloped, and inconsistent. To assess the current state of this research, we provide a systematic review of the available research on the different dimensions of diversity, and on topics related to diversity management. Using articles found in hospitality journals, we identify current themes explored by scholars as well as gaps and limitations. We provide suggestions for topics, themes and methodologies for future research and highlight the importance of research that can inform managerial practice. Our review indicates that there is greater need for theory development, empirical data-driven research, and expansion of contexts in hospitality-diversity research, especially in terms of geographical regions covered by extant studies.  相似文献

This paper presents a concise review of the cruise industry mainly from marketing research and revenue optimization prospects. In recent years, the cruise industry has experienced an exciting growth. However, as one of the fastest growing and most profitable categories in the entire leisure market, this industry has hardly received any research attention. Given the limited academic articles, this paper presents a concise review about this budding research topic. First of all, a discussion about global cruise industry is conducted. Then, academic studies of the cruise industry on general marketing research, revenue management, itinerary design/optimization, optimal market segmentation, demand infiltration and economic issues are reviewed. Winter sports resorts in general, and cross-country skiing destinations in particular, will need to address the impacts of climate change in the near future. This study uses the results of a discrete choice experiment to investigate likely skier responses to various destination scenarios under possible adaptation strategies to climate change. The heterogeneity of skiers is accounted for in a latent class model resulting in three segments of Austrian and Finnish skiers respectively. The results show that it is less risky for Austrian destinations to introduce technical adaptation, as well as to expand into additional offers, compared to Finland. The main reasons seem to be the strong tradition of cross-country skiing in Finland combined with a clear aversion toward user fees. The study serves as an example for using results of a stated choice survey to evaluate future destination scenarios and provide market intelligence for management and target marketing.  相似文献

把握影响游客感知价值的关键因素,有助于促进旅游目的地竞争力的提升。以广西北海银滩国家级旅游度假区为研究区域,采用携程旅行网北海银滩游客网络评论资料作为研究样本,运用扎根理论方法构建包括5个主范畴和18个对应范畴的滨海游客感知价值影响因素模型,并运用复杂系统的决策实验和评估实验法(Decision making Trial and Evaluation Laboratory,DEMATEL)模型构建滨海游客感知价值影响因素的关系矩阵,识别影响滨海游客感知价值的关键因素。研究发现:资源和环境、管理和保护、设施和服务、情感和成本价值构成了滨海旅游目的地游客感知价值的重要维度,天气条件、海滩规模、海滩管理和保护、游客愉悦感、游客娱乐体验项目、旅游基础设施及服务是影响滨海旅游目的地游客感知价值的关键因素。据此提出促进我国滨海旅游目的地游客感知价值提升的相关建议。  相似文献

As an essential risk-reduction strategy, technology innovation is likely to play a key role in the hotel industry’s recovery from the 2020 coronavirus pandemic. However, its impact on customer decision-making behavior is unknown. Focusing on technology innovation for reducing guest interaction with employees and enhancing cleanliness, the purpose of this research was to examine the impact of expected interaction and expected cleanliness on perceived health risk and hotel booking intention. Three experimental studies were conducted using online consumer samples. The studies found that low levels of expected interaction through technology-mediated systems lead to low levels of perceived health risk. Perceived health risk mediates the relationship between expected interaction and hotel booking intention. In addition, high levels of expected cleanliness through advanced cleaning technologies moderate the impacts of expected interaction on perceived health risk. Importantly, the proposed perceived risk mechanism was effective in post-pandemic scenarios. Theoretical and practical implications are discussed.  相似文献

While the tourism sector shifts towards digital transformation, Destination Management Organisations (DMOs) often struggle to adapt to their changing technological environment. This study explores the antecedents of digital collaboration and develops a framework for micro-DMOs to enhance effective destination management through digital technologies. An integrated sequential qualitative approach was adopted by conducting multi-phase interviews, in addition to designing and trialling a real-world trial digital platform. The research provides empirical evidence that digital collaboration is essential for micro-DMOs, necessitating them to transform their current “websites” into digital platforms which act as a hub for business stakeholders to actively be involved in. Antecedents of successful digital collaboration include mutuality, trust, control, and leadership which may be manifested differently from non-digital collaboration. Additionally, the study identifies three aspects for digital collaboration; marketing, networking and knowledge sharing that demands specific attention. Our results have theoretical, methodological, and practical implications for academia, industry and policymakers.  相似文献
