This study examines the effect of children on family consumption decisions during different stages of the life cycle. An empirical model that incorporates both continuous measures of adult equivalence and a flexible functional form is used. Results indicate that durables, food eaten (purchased) away from home, and adult clothing are luxury goods for two-child families. Economies of scale are noted for food and shelter expenditures. Two-child families substitute out of expenditures for meals eaten away from home, adult clothing, and other goods and services to meet increased demand due to the children's presence.  相似文献

Parents play a pivotal role in socializing their children for healthy eating. The objectives of the present study were (1) to identify food socialization outcomes valued by parents, and (2) to study how parents socialize their children for (healthy) eating at home and during food shopping. Including both parents' perceptions of valued food socialization outcomes and associated processes addresses a significant gap in the food socialization literature. The study used semi‐structured, in‐depth interviews with parents of young children. Data were subsequently analysed by interpretive, thematic procedures. The sample consisted of middle‐ to high‐income families from two cities in Denmark. Findings reveal four main food socialization goals valued by parents: (1) Nutrition and Health, (2) Healthy Relationship with Food, (3) Food Assimilation and (4) Self‐Regulation and Autonomy. Parents prioritized children's acquisition of a healthy relationship with food which included preserving family relations and harmony, more than strictly attending a nutritious diet, contrasting the focus on the nutritional value of diet usually emphasised by public health authorities. The study therefore concludes that parents' notions of what constitutes healthy diets for their children is not completely aligned with common nutrition‐oriented recommendations. Also, fathers were found to play a very active role in their children's food‐related consumer socialization. The findings underline the importance of addressing the priorities and strategies of both mothers and fathers when marketers and policy makers target contemporary families regarding children's food socialization.  相似文献

A community‐based food hygiene initiative was piloted in the Toxteth–Granby area of Liverpool between December 2001 and March 2002. The project aimed to increase awareness and behaviour, related to poor food purchase, storage and handling practices, by actively involving members of the local community in home‐based peer‐facilitated training. Facilitators (23) were actively recruited from within the Toxteth–Granby community, and undertook a 4‐day induction and training programme, which included successful completion of the CIEH Basic Food Hygiene course. Facilitators subsequently recruited and visited nearly 1000 households (992) within the Toxteth–Granby electoral ward, undertook an observation sheet, a detailed questionnaire, and spent approximately 1 hour delivering food hygiene training. Facilitators returned to all households within an 8‐week period, and completed further observation sheets and questionnaires, for use in a comparative analysis. Facilitators and householders received incentives for their involvement in the project. Analysis of the data collected showed that general awareness of a range of food hygiene issues was high (such as hand washing before handling food), and most participants (73.8%) were able to recognise the main symptoms of food borne disease. As a result of the home‐based hygiene training there were significant changes in knowledge, attitudes, and food handling practices, including the use of refrigerators, purchase of chilled and frozen foods, washing or peeling of fruits and vegetables, and the cooking of meat‐based products. The project demonstrates that it is possible for communities to improve their food hygiene awareness and food handling behaviours through home‐based peer‐facilitated training programmes, with minimal input from professionals.  相似文献

This research examines the influence of marital status on the demand for services using a model in which the demand for market services and mothers' time spent in related household activities are jointly determined. Three specific areas of market services are investigated: meals prepared away from home, child care, and housekeeping. In multivariate systems analyses in which mothers' household work time and purchased services were simultaneously determined, families headed by single mothers were found to (a) purchase more meals prepared away from home and (b) be more likely to purchase child care and housekeeping services than their two-parent counterparts holding income and other factors constant.  相似文献

In a study of college students, affective credit attitude (feeling about using credit cards) and gender influenced college students' credit purchasing. Affective credit attitude predicted the purchase of clothing, electronics, entertainment, travel, gasoline, and food away from home. Females purchased clothing; males purchased electronics, entertainment, and food away from home. Gender was more influential in predicting financial management practices than was affective credit attitude, with female students employing a greater number of financial practices. A path analysis model showed gender differences in the relationship between financial practices, financial stress, affective credit attitude, and the number of credit cards with a balance.  相似文献

文章利用AIDS模型,采用省级面板数据,对城乡居民主要食用农产品消费支出弹性及需求价格弹性进行估算,分析预算支出和价格变动对食用农产品消费的影响。结果表明:城乡居民对水产品和肉禽的消费支出均富有弹性,对粮食、植物油、蛋类和鲜瓜果的消费支出均缺乏弹性。农村居民对肉禽和蔬菜的支出弹性明显高于城镇居民。城乡居民对水产品的需求量对价格波动很敏感,但对粮食、肉禽、植物油、蔬菜和鲜瓜果的自价格弹性均为缺乏弹性。价格波动对城镇居民食用农产品消费的影响更大,而收入变动对农村居民食用农产品消费的影响更大。以上发现可为政府采取差别化政策引导居民改善食品消费结构及促进农业结构升级提供借鉴。  相似文献

This article examines the impact of socio-demographic factors on individual consumption of alcohol from both the away-from-home and at-home markets. Factors considered are urbanization, race, ethnicity, region, weight, height, sex, food stamp participation, employment status, diet status, day of consumption, household size, age, and income. Results from the economic models developed indicate that various sets of socio-demographic factors affect the consumption of alcohol away from home and at home. Findings imply that men residing in urban areas in the Northeast, Midwest, and West consume more alcohol away from home than do others while individuals residing in suburban areas in the south consume more alcohol at home than do others.  相似文献

This study investigated associations between parents' work status and the dietary consumption patterns of Australian children, and whether such associations vary by parental education and usage of nonparental childcare. Data from the longitudinal study of Australian children at two waves from ages 2–3 years (n = 4601) to 4–5 years (n = 4381) were analysed. Logistic regression models were used to calculate odds ratios of children consuming (≥1 times/day) fruit and vegetables (FV), high fat foods (HFF), high sugar drinks (HSD), as well as evaluating the incidence of breakfast consumption. This was analysed against the employment status of parents including full‐time, part‐time and unemployed. Children of part‐time employed mothers were more likely to consume breakfast, and less likely to consume HSD compared with children of full‐time employed mothers. Children of part‐time employed fathers were less likely to consume FV and breakfast, and more likely to consume HSD compared with children of full‐time employed fathers. Children of nonemployed mothers were more likely to consume HFF, whilst those of nonemployed fathers were more likely to consume HSD and less likely to consume breakfast compared with other children. Amongst less‐educated parents, children of unemployed and part‐time employed parents were more likely to consume HFF and HSD and less likely to consume FV and breakfast compared with children of full‐time employed parents. Amongst highly educated parents, children of unemployed and part‐time employed mothers were less likely to consume HSD compared with children of full‐time employed mothers. Children of part‐time employed mothers who used family day care, day care centres and grandparent care were less likely to consume HSD and more likely to consume breakfast compared with children of full‐time employed mothers. Children of part‐time employed fathers and unemployed parents who used day care centres and grandparent care were less likely to consume FV and more likely to consume HFF compared with children of full‐time employed parents. Future studies should pursue a better understanding of the mechanisms for the adverse effects of parental work status on dietary consumption to develop and enhance specific interventions targeting these groups.  相似文献

An individual's dietary habits are largely developed during childhood and adolescence, and are likely to be determined by both nature (the development of sensory perceptions) and nurture (parental influence, and later on the influence of peers). However, diet is likely to evolve throughout the life cycle as circumstances change and new influences are introduced to an individual's lifestyle. An example of this is the changes in diet that occur as a result of the transition young people make away from the family home into independent living. Leaving behind the meals provided and cooked by parents/guardians and learning how to shop on a budget and prepare and cook for themselves may result in the adoption of poor eating habits, which is likely to have a detrimental effect on health. Leaving behind the restrictions of parental control may also result in the adoption of unhealthy lifestyle practices such as smoking and excessive alcohol consumption. This study therefore seeks to investigate the effect of leaving home on a young person's diet and lifestyle. Health behaviour and food intake was assessed by questionnaire. Findings suggest that a young person's diet may change after leaving home, but these changes are not necessarily negative. More negative health behaviour was observed in young people living independently.  相似文献

Food preparation skills among young adults are associated with healthy food choices, better diets and a greater likelihood of an independent, healthy adult life. This study conducted in Hong Kong aimed to investigate parents' perceptions of cooking skills; to explore the transference of cooking skills in the home setting; to identify parents' expectations regarding the transference of cooking skills; and to inform the development of educational initiatives for developing healthy eating habits. A questionnaire survey was conducted to collect information of the subjects' cooking experience, attitudes about cooking skills, cooking habits at home, family meal habits, transference of cooking culture in the family and the factors influencing the choice of ingredients and cooking. It was administered to 1009 Hong Kong parents (of students aged between 11 and 18, studying in 15 secondary schools). The collected data were analysed using the Statistical Package for the Social Sciences (version 12.0, SPSS, Inc., Chicago, IL, USA) and cross‐tabulation analyses were used to compare the responses of the parents by gender, employment status and income. The results show that parents valued cooking as important life skills for both boys and girls. Parents generally perceived their cooking skills either good (41.9%) or mediocre (54.5%), yet children are rarely taught these skills in the home. Family meals prepared primarily with fresh ingredients are still an important part of the daily routine, and mothers are dominating the roles in food choice decision, cooking and buying the ingredients for family meals. Mothers and schools are expected to be the major channel to teach children cooking skills. Findings suggest that parents are well‐disposed towards providing food and nutrition education at home, but need more support (50% reported that home should be a primary support for learning cooking skills; 36% indicated that the school should have a responsibility to teach children to cook starting in elementary school). Schools may do well to collaborate with families in food literacy education initiatives. Developing individuals' cooking skills paves the way for long‐term health benefits and the well‐being of the local population.  相似文献

The organic food market is currently the fastest growing food sector in the United States, with growth rates in organic food sales averaging 17% per year between 1998 and 2006. The largest segment within the organic market is fresh produce, comprising 34% percent of retail sales in 2006. This analysis focuses on identifying the demographic characteristics of households buying organic vegetables (in total) along with prepackaged organic salads and organic carrots, by examining the factors that influence the probability that a consumer will buy organic vegetables, and which factors influence the household share of organic vegetables purchased. We use Nielsen Homescan data for the year 2004. Households with high levels of education are more likely to purchase organic vegetables, while the probability of purchasing organic vegetables is lower for African Americans and for older households.  相似文献

Personal values and attitudes can help to explain food choice. This study confirmed a hierarchical organization of the value–attitude–behavior chain: Food‐related values influence attitudes, and these, in turn, impact behavior. Contrary to previous findings, values are only partially mediated by attitudes: Some food‐related values are fully mediated, whereas others are partially mediated, and still others have exclusively direct effects on purchase behavior. Questionnaire data from a roughly representative sample of 851 adults living in Switzerland was complemented with actual food purchase behavior measured by a loyalty card of a Swiss retailer over the period of one year. Four theoretically derived structural equation models were compared across eight different food product categories (organic, fair trade, low‐budget, fresh convenience, ready‐to‐eat, light, functional foods, fruits and vegetables). The results question central assumptions of the theory of planned behavior and emphasize the role of food‐related values in food consumption. Implications for marketing and future product developments of food companies are discussed.  相似文献

During the last decades, sociological changes have modified the role of children within families: participatory models have become more widespread, to the detriment of more authoritative ones: this change has had consequences also in reference to families’ purchases. In scientific literature some scholars have shown that this influence is real, and marketers try to take advantage of this through a communication style that attempts to “teach” children how to pester their parents: this is the so-called nag factor. To understand which are the parental attitudes toward kids’ food products, a questionnaire has been administered in schools (nursery and primary) to a random sample of parents, representative of a larger sample of kids (200 in all). Findings showed that pestering is a real attitude, in particular among the littlest children. Moreover, these findings reflect in part the reality described by marketing literature: children influence the purchasing decisions of their parents, but this influence decreases when mothers and fathers are more aware of the importance of a quality-based diet.  相似文献

The main objective of this paper is to study the concept of convenience orientation among young adults. A project was conducted among students living in residence halls, where information on their food motivation and behaviour was obtained. Data were collected using a self‐administered questionnaire filled out by 319 students. Convenience ap‐pears to be the most important food motivation followed by price, pleasure, health and concern about weight. Positive correlations were obtained between convenience and: deciding what to eat, having a varied diet and lack of time, all of which were considered to be difficulties associated with living in residence. Negative correlations were obtained between convenience and total time spent cooking per day and having learned to be autonomous in the kitchen. For male, the perception of eating well, having a varied diet, and maintaining weight were negatively correlated to convenience. For female, the correlation between convenience and the difficulty of eating enough was significant and positive. Negative correlations were obtained between convenience and fresh vegetables, potatoes, eggs, fresh meat, fresh fish and fresh poultry, herbal tea and alcohol. Positive correlations were obtained between convenience, frozen foods and foods brought from the parents’ home. Findings are discussed from both a health and a family perspective.  相似文献

Before food portions are determined at home, they are determined at the supermarket. Building on the notion of implied social norms, this research proposes that allocating or partitioning a section of a shopping cart for fruits and vegetables (produce) may increase their sales. First, a concept test for on-line shopping (Study 1) shows that a large produce partition led people to believe that purchasing larger amounts of produce was normal. Next, an in-store study in a supermarket (Study 2) shows that the amount of produce a shopper purchased was in proportion to the size of this partition – the larger the partition, the larger the purchases (especially in a nutrition-reinforced environment). Using partitioned or divided shopping carts (such as half-carts) could be useful to retailers who want to sell more high-margin produce, but they could also be useful to consumers who can simply divide their own shopping cart in half with their jacket, purse, or briefcase. Divided shopping carts may lead to healthier shoppers and to healthier profits.  相似文献

Fruit and vegetable consumption of Native Americans was compared with that of non‐Native Americans and determinants of fruit and vegetable intake for both populations were found based upon the Theory of Planned Behavior. A one‐time survey was conducted as part of a larger research project funded by the South Dakota Department of Health. The survey was administered in local grocery stores and supermarkets in six South Dakota communities, including two located on Native American reservations. Of the 1000 distributed surveys, 499 were returned with 230 being usable, resulting in a response rate of 49.9%. Wilcoxon signed‐rank test and two regression models were tested using SAS 9.2 software. Dependent variables were fruit and vegetable intake. Attitudes towards health, fruit and vegetable consumption, perceived difficulty, subjective norm and intention were also measured. Community size, family income, employment status and participation in food assistance programmes [Supplemental Nutrition Assistance Program or Women, Infants, and Children (SNAP or WIC)] were socio‐demographic control variables. Overall, Native American participants consumed more fruit and vegetables at home and had a more positive attitude towards healthy diets than non‐Native American participants. SNAP or WIC participation, family health, exercise, intention to live healthier than parents, buying healthy food, and fruit and vegetable consumption when eating out were positively associated with fruit and vegetable consumption among Native Americans, while participation in the SNAP or WIC programme had a negative influence on consumption among non‐Native American participants. Family health, exercise, buying healthy food, fruit and vegetable when eating out, and intention to buy healthy food were positively associated with fruit and vegetable consumption among the non‐Native American population. Theory of Planned Behavior variables (e.g. attitude towards healthy food) significantly contributed to the model explaining fruit and vegetable consumption. The fact that SNAP and WIC participation had an opposite influence on the two populations warrants further research.  相似文献

This study conceptually and empirically develops an improved approach for classifying full‐nest households. Unlike existing life‐cycle models, this study separates traditional full‐nest couples who marry and have children at a young age from those who delay marriage and childbearing until their 30s. Nontraditional delayed full‐nest spouses held nontraditional sex role norms and values and experienced greater work and time pressures. They also consumed more healthy foods and beverages, avoided convenience and junk foods, but consumed more meals prepared away from home, as well as alcoholic beverages, than their traditional counterparts. While extant life‐cycle approaches use age of head of household to separate school‐age and older full‐nest families, this study uses the transitions of the youngest child to school age, and then to teenage years. This distinction more effectively captures life‐style and consumption differences than does the traditional life‐cycle approach. Overall, this new full‐nest classification scheme outperforms existing life‐cycle approaches in identifying unique sex‐role norms and values profiles as well as household food and beverage consumption patterns. It also captures meaningful and significant differences, in dollar values of home entertainment devices and furniture and of major durable assets not uncovered by previous research. Based on these findings, it is recommended that this full‐nest classification approach be incorporated into extant life‐cycle models. © 2002 John Wiley & Sons, Inc.  相似文献

The purpose of this study was to investigate the knowledge and attitudes of adolescents in Tromsø relating to nutrition; whether pupil behaviour and attitudes regarding nutrition had changed in the tenth grade compared with the eighth grade; and whether this was linked to pupils’ home economics lessons in grade 9. In total, 606 adolescents (321 boys and 285 girls) were studied on two different occasions – 2002 and 2005. A food frequency questionnaire focusing on 16 different food and beverage groups was used. It investigated knowledge and attitudes, the amounts of food items consumed and the socio‐economic situation of the participants and their families. The study produced interesting findings. The boys had surprisingly low knowledge of fruit and vegetables that did not change in a positive direction, between the eighth and tenth grades. The change among the girls was very small and therefore this study concludes that the teaching of home economics had no significant influence on the pupils’ knowledge of and attitudes towards eating fruit and vegetables. The study of home economics does not appear to enhance adolescents’ skills and attitudes to the extent expected from the curriculum. But there are gender differences at both grades. Changes in the home economics course are necessary to improve children's and adolescents’ knowledge and attitudes. Increased focus on the scope and variety of teaching methods will be a key to improvement. Future research is required to understand the potential of the home economics curricula to change adolescents’ knowledge about and attitudes to home economics in Norway.  相似文献

An economy is investigated where parents observe wage rates, interest rates and child mortality and decide about savings and the quantity and quality of their children. Expenditure on child quality causes human capital accumulation as an external effect. If mortality is high parents prefer to have many children and spend only essential rearing effort. Without human capital accumulation the economy may stabilize in an equilibrium of economic stagnation and high population growth. If mortality is low parents prefer to have only few children and spend comparatively large fractions of income on their quality. With human capital accumulation the economy is capable of long‐run growth. The paper also shows the possibility of an endogenously explained demographic transition and a development aid program on education is discussed.  相似文献

The purpose of this paper was to compose the profile of active consumers in Greece during a period of rising prices taking into account shifts in their consumption. A survey was conducted from 1 September 2008 to 21 November 2008 to collect the primary data source for the study. Questionnaires were administered to 200 consumers. To our knowledge this was the first attempt to offer insight into the characteristics of the Greek consumer in a period of economic crisis. For this purpose, econometric analysis was employed. Empirical results suggested that high‐income groups spend more for food commodities and are less likely to be active consumers. It was concluded that consumers have reduced spending for some basic and semi‐luxury products like fruits, meat, alcohol, sweets and coffee, and entertainment activities. The main factor which affected the reaction to price increases, as expected, was the monthly private income. Twenty per cent of the consumers are members of a national consumer movement organization, and support their actions against rising prices. Women, who research the market before purchasing a product, are more likely than men to participate in economic boycotts. By examining the profile of non‐active consumers and the reasons for their behaviour, we are able to propose a policy for the activation of the Greek consumer movement, which is necessary for the consumers' resistance to rising prices. Taking into consideration that Greek consumers face increased prices for food commodities and services, a policy framework to activate consumers is among the main prerequisites for maintaining consumers' well being. We suggest that the Greek Consumer Protection Institutes should regain consumers' confidence and focus on the dissemination of information about organized economic boycotts.  相似文献
