Study examines the ethnic restaurant experiences' unique outcomes to determine whether they extend to prospective tourism experiences. To further understanding of the ethnic restaurant experience's effects, the experience's influence on perceptions of a destination's food image and mediation effect of this image between the experience and tourist intentions are also examined. Uncertainty reduction theory and cultural loss concept offered a suitable theoretical background for formulating the hypotheses. The sample comprises 387 ethnic restaurant diners in Antalya, Turkey. Hypotheses are tested using PLS-SEM with the hierarchical component modelling approach. Findings help to identify ethnic restaurants' consumer as potential gastronomy tourists since they have desires to taste ethnic food in its original place, where it is called local. Favourable ethnic restaurant experience also provides useful informational inputs for forming food image to reduce perceived risks and to decide whether it is worth visiting the destination from which the ethnic restaurant originates.  相似文献

Recent advanced technologies have enabled travelers to communicate, interact, and form relationships with destinations, businesses, and other travelers through social media. However, the nature/patterns of use of social media by travelers varies substantially between travelers and across the trip experience (e.g. pre-, during, and post-trip); consequently, travelers develop their own idiosyncratic strategies (i.e. media repertoires) for information searching, communicating, and storing memories. There are four distinct and dominant repertoires of social media use across the three stages of the trip experience. As such, the findings clearly indicate that destination marketers should target the respective groups very differently.  相似文献

This article uses social network analysis to measure institutional thickness in a regional tourism destination in Colombia. Through the analysis of 107 institutions, the empirical findings show that the configuration of formal interaction spaces determine the governance system of the destination turning certain institutions into hubs or authorities. The contribution of this research is two-fold. Firstly, it provides a new approach to the study of institutional thickness by applying a social network analysis methodology making possible to identify the components theoretically defined such as the role of institutional presence, levels of interaction, structures of domination, and common agendas in tourism. Secondly, it highlights the importance of understanding the role of the regional institutional environment and the governance framework of tourism destinations to better plan and manage their dynamics and effects.  相似文献

This study constitutes a novel application of network analysis to explore the underlying mechanisms of tourist attraction network informed by tourist flows. Using survey data collected from a sample of 456 tourists visiting Xinjiang, China, the study applies the Quadratic Assignment Procedure (QAP) to test the relationships between region proximity, grade proximity, and tenure proximity, and the attraction network determined by tourists' free choice movements. Results show that while region proximity and tenure proximity among major attractions in a destination were positively related to attraction network, grade proximity was negatively related to the attraction network, indicating that same grade attractions were mostly competing with one another for tourists. The study contributes to the methodological development of social network analysis in tourism and advances understanding of demand-driven network relationships among tourist attractions in a destination. Many destination marketers have utilized gastronomy as a source of new products and activities to attract tourists. Despite the substantial rise in the Chinese outbound market, very little is known about how Chinese tourists evaluate their travel dining experiences. By using narrative analysis, this study examines attributes that may affect Chinese tourists' evaluation of their travel dining experiences. On-site participant observation and focus group interviews were conducted, respectively, with Mainland Chinese, Taiwanese, and Hong Kong group tourists, while they were on holiday in Australia. A total of 15 attributes were identified, which were classified under the following six categories: tourists' own food culture, the contextual factor of the dining experience, variety and diversity of food, perception of the destination, service encounter, and tour guide's performance. The respective implications of the attributes on travel dining experience are also discussed.  相似文献

The purpose of this research was to explore and assess factors influencing perceptions of consumers with food allergies toward restaurants when accommodating allergen-free requests. Mixed approaches, including big data analytics (i.e., topic modeling), content analysis, and multiple regression analyses were performed to analyze user-generated reviews for restaurants listed on AllergyEats.com, an information-sharing platform for consumers with food allergies. Among the 40 topics identified, “knowledgeable staff” was the most prevalent topic. Results of topic correlation analyses revealed five groups of topics: customized orders, efforts of staff, menu options, fried foods and oil, and communication with shared latent features. Four topics in the group of “efforts of staff” had the highest positive impact on restaurant ratings, while two topics in the group of “communications” had the strongest negative impacts. Foodservice managers and educators may use the results of this study to better accommodate consumers with food allergies and develop appropriate training programs.  相似文献

Companies have begun to tap into the resources of their customers to co-create unique and personalized experiences. This study aimed to investigate the influences of openness to experience, known as a customer personality trait, and the perceived physical environment on customers’ intention to participate in a co-creation experience. Positive anticipated emotions were introduced to explain the underlying process of co-creation. The data were collected from full-service restaurant diners in the United States. The results indicated that customers who score high in openness to experience are more likely to participate in the co-creation experience whereas the perceived physical environment did not influence the intention directly. The mediating role of positive anticipated emotions was significant between the perceived physical environment and the intention and between openness to experience and the intention. Theoretical and practical implications were discussed in the study.  相似文献

This study examined the relationships among dining atmospherics, emotional responses, perceived value, and behavioral intentions, using Chinese restaurants as its research setting. Results of the study revealed that dining atmospherics had significant effects on customers’ positive emotions, negative emotions, and perceived value. Further, both positive and negative emotions and perceived value also influenced customers’ post-dining behavioral intentions. Perceived value not only functioned as the greatest contributor to behavioral intentions but also mediated the relationship between emotional responses and behavioral intentions. Positive emotions and negative emotions had asymmetric effects on perceived value. Positive emotions showed a stronger capability in predicting perceived value. Chinese restaurant managers must utilize the effects of restaurant atmospherics to improve customers’ perceived value of the restaurant and their revisit intentions. Other practical implications are discussed as well.  相似文献

This study examined a theoretical model examining interrelationships among three service qualities (i.e., physical environment quality, interactional quality, and outcome quality). In addition, this study investigated the effects of three service qualities on utilitarian and hedonic attitudes toward restaurant brands and the mediating effects of such attitudes in forming brand preference in full-service restaurants. To further understand unique differences, this study conducted a multi-group analysis comparing the proposed relationships between 318 casual and 303 fine dining patrons (621 full-service restaurant patrons in total). In the full-service restaurant setting, the results of data analysis indicated significant interrelationships among three service qualities. Physical environment quality explained a large amount of variation in both interactional and outcome quality. In turn, interactional quality had a positive effect on outcome quality. Physical environment quality had a significant effect only on hedonic attitude. Interactional and outcome qualities had significant effects on utilitarian and hedonic attitudes toward restaurant brands. Finally, utilitarian and hedonic attitudes toward restaurant brands enhanced brand preference. When separately analyzed, the effect of physical environment quality on hedonic attitude became not significant in casual dining segment. Further, the effect of outcome quality on utilitarian attitude became not significant in fine dining segment. Both theoretical and managerial implications of the results are discussed.  相似文献

This research explores how food experiential quality of consumers affects their overall dining satisfaction. Drawing on negative bias theory, we propose a nonlinear relationship between food experiential quality and customer dining satisfaction. Moreover, we investigate how restaurant price moderates the nonlinear relationship between food experiential quality and customer dining satisfaction. Results of the threshold model using 10,950 online reviews of 219 restaurants on Dianping.com provide support for the proposed hypotheses. The results suggest that a curvilinear relationship is found between food experiential quality dining satisfaction, and the turning points of nonlinear returns decreases for restaurants that belong to high-priced groups. Theoretically, our findings contribute to the existing literature by considering the nonlinear effect of food experiential quality on customer dining satisfaction in the hospitality area through the lens of negative bias, as well as considering the boundary condition. Practically, our findings suggest that restaurant managements can improve customer dining satisfaction through focusing on the food experiential quality of their customers and enhancing their response to customers who have low-level food experiential quality. In addition, if the restaurant price is high, restaurant managers should provide high-level of food experiential quality.  相似文献

This research investigates how and the extent to which co-creation activities of food tourism in the context of the commercial tourism sector shape and influence the foodscape in an emerging food tourism destination. An exploratory qualitative study conducted in Yogyakarta, Indonesia discovers how and where co-creative food activities take place through the mode of interaction, customisation, and co-production. Moreover, this research uncovers how the act of negotiation and the creation of food experiences co-created by tourists and suppliers contributes to the evolving destination foodscape. These processes contribute to the invention of new food offerings; the inclusion of tourists in the local food space; and the expansion of the local gastronomic horizon. This research sheds light on our limited understanding of destination foodscapes in relation to commercial food tourism activities, providing implications for gastronomic destination management, especially for emerging Asian gastronomic destinations.  相似文献

This paper explores the association between brand importance and growth in museum visitors. We analyzed 10 years of online forum discussions and applied the Semantic Brand Score (SBS) to assess the brand importance of five European Museums. Our Naive Bayes and regression models indicate that variations in the combined dimensions of the SBS (prevalence, diversity and connectivity) are aligned with changes in museum visitors. Results suggest that, in order to attract more visitors, museum brand managers should focus on increasing the volume of online posting and the richness of information generated by users around the brand, rather than controlling for the posts' overall positivity or negativity.  相似文献

This paper aims to investigate the underlying drivers of co-creation in food-and-wine tourism experiences and, consequently, to explore how they might influence the level of tourists' active participation in related activities. An online survey was developed and sent to platforms specialised in food-and-wine related tourism experiences. A total of 243 valid responses were obtained. The hypotheses were tested using multivariate statistical analysis. The research results reveal that experience co-creation, the interaction between tourists and local residents, the interaction between tourists and frontline tourism employees, operant resources, and satisfaction influence the level of active participation in food-and-wine tourism experiences. This study contributes to the body of knowledge by proposing and testing a model that explores the drivers of co-creation in food-and-wine settings. The theoretical and managerial implications of these results are discussed.  相似文献

Currently research investigating travel dining experience from a cross-cultural perspective was limited. This study aimed to compare the domestic Chinese and foreign English-speaking customers’ dining experience of Beijing Roast Duck, a specialty food representing the gastronomic identity of the local cuisine. By employing semantic network analysis of the online consumer reviews, the results identified three common dimensions perceived by both groups, including the food, the restaurant and the occasion for dining out, and the service encounter. However, the domestic and foreign customers differed in their orientation about the aspects of the service encounter that they cared about. They also showed substantial differences in their perception about value for money as well as the cultural and experiential nature of the meal. The study also attested to the utility of the semantic network analysis method to uncover the rich information contained in the vast user generated content online.  相似文献

The purpose of this study was to identify the perception and relationships between corporate entrepreneurship (CE) practices and management performance. The use of Morris and Kuratko et al.'s [2002. Sustaining CE: a proposed model of perceived implementation/outcome comparisons at the organizations and individual levels. Paper presented at the 2002 Academy of Management Conference, Denver] Corporate Entrepreneurship Assessment Instrument (CEAI) was used as the survey instrument for this study. A sample size of 1200 unit managers, middle managers, and top management teams (TMTs) within nine casual dining restaurant organizations were surveyed with a response of 522 subjects at a rate of 44%. Responses of the CEAI results were studied using regression analysis and conclusions were drawn to support four out of the six hypothesis originally proposed in determining CE activity and management reinforcement. A post test analysis was also conducted in order to reinforce the previous results of the original study. This study concluded with the determination through an empirical analysis that forms of CE activity and enforcement are currently present within the casual dining restaurant segment.  相似文献

This article analyses how visitor emotions in a theme park environment influence satisfaction and behavioural intentions. Emotions consist of two independent dimensions, i.e. pleasure and arousal. Two competing models were tested. The first model is derived from the environmental psychology research stream as developed by (An Approach to Environmental Psychology, MIT Press, Cambridge, 1974), where the visitor's arousal generates pleasure and, in turn, approach/avoidance behaviour. This emotion-cognition model is supported by Zajonc and Markus (1984). The second model to be tested is based on Lazarus’ (Emotion and Adaptation, Oxford University Press, New York, 1991) cognitive theory of emotions. In this latter model, emotions are elicited by visitors’ disconfirmation of the theme park. Using confirmatory factor analysis, it was supported that the cognitive theory of emotions better explains the effect of pleasure on satisfaction and loyalty. Additionally, consumers’ willingness to pay more for the service is more likely to be induced by disconfirmation than by satisfaction alone. Managerial implications concerning the cognitive–affective sequence of satisfaction are discussed.  相似文献

This study explores the motivational factors and dimensions underlying tourists’ food consumption through a combined repertory grid method (RGM) and generalised Procrustes analysis (GPA) approach. By employing the RGM triadic elicitation technique, a total of 14 motivational factors was yielded (i.e., authentic experience, prestige, cultural knowledge, health concern, assurance, convenience, price and value, novelty, variety, familiarity, eating habit, sensory pleasure, social pleasure, and contextual pleasure). Content analysis and GPA results further categorised the factors into five dimensions (i.e., symbolic, obligatory, contrast, extension, and pleasure). Based on the findings, a conceptual framework was developed to illustrate how tourist food consumption can be differentiated into supporting consumer experience, peak touristic experience (contrast), peak touristic experience (symbolic) and “attractionised” experience.  相似文献

Memorable experiences in restaurant settings are not well understood, and little is known about what they represent and how they should be measured. This study filled this knowledge gap by developing a formative index to assess and measure memorable dining experiences (MDE). Drawing upon strategic experiential modules, MDE was conceptualized as a second-order formative construct consisting of five first-order dimensions including sensory, affect, behavioral, social, and intellectual. This study adopted a mixed methods approach combining in-depth interviews and an online survey to determine and evaluate the underlying structure of MDE. Using PLS-PM as the analytical technique, the results of the data supported that MDE was a second-order formative construct, with 37 items capturing the five first-order dimensions. The study provided a comprehensive conceptualization of the MDE and a measurement scale with strong psychometric properties to help hospitality managers create and measure such experiences to gain a competitive advantage in the market. Restaurants and dining out are an important part of the tourism industry and are a major business in their own right. They also have characteristics that make a geographical analysis especially pertinent: They require movement through space, there are strong regional variations in patterns of restaurant development, and location is an important factor in the success of a restaurant. This paper examines two aspects of the geography of the restaurant industry in Canada: national patterns of restaurant development and the tendency to dine out, and local patterns of site selection.
