Consumer attitudes play an important role in the acceptance of new technologies. The success of food innovations depends on understanding how consumers form and change attitudes toward food technologies. Earlier post hoc explanations suggest that evaluative conditioning can change consumer attitudes toward food technologies. The present study tests how evaluative conditioning can affect consumer acceptance of new food technologies. Furthermore, authors investigate whether evaluative conditioning is resistant to extinction after a two‐month period and whether the evaluative conditioning effect prevails in a product‐related context. Within an evaluative conditioning paradigm including between‐subjects control groups in addition to standard within‐subjects control conditions, participants were presented with three food technologies (conventional, enzyme, and genetic technology) paired with affectively positive, neutral, and negative pictures. Subsequent evaluative measurements revealed that evaluative conditioning can explain attitude change toward food technologies when affective pictures are used. Furthermore, results indicate that evaluative conditioning is resistant to extinction after two months and acquired evaluative conditioning effect spills over in a product‐related context.  相似文献

Research has shown that women are less accepting of genetically engineered products than men. We expect two mechanisms to be at work here. First, in consumer behaviour theory, more knowledge is assumed to lead to more acceptance. We assumed that for genetically engineered foods, this general principle does not apply since long‐term consequences are not known yet. The well‐informed consumer is likely to be comparatively more concerned with this lack of knowledge. We call this the information paradox. Theory on the topic is relatively recent. The results of this study will help to distinguish consumer behaviour with regard to new types of food as compared with traditional foods. Second, we assumed that there is a gender factor included in attitudes toward foods. In general, women still plan food and household purchases. A tentative attitude and an accompanying reluctance toward food innovation are adopted when buying food for children. We call this the gender paradox. In this exploratory study we use data from the Eurobarometer. Eurobarometer surveys have been executed since 1973 by the European Commission among the adult population of European Union member countries (n > 10 000), monitoring the evolution of public opinion. Analysis of these surveys shows that gender differences exist in the acceptance of genetically modified (GM) foods in Europe. Women tend to be less accepting toward genetically modified foods. This supports our gender hypothesis. However, no evidence was found to support the assumed information paradox. It seems that knowledge leads to acceptance, also of GM foods, but more so for men than for women.  相似文献

Consumers living in both developed and developing nations rely upon foods that have been produced and processed in many countries and in a wide variety of ways. Therefore, it is not surprising that they express concerns about the safety of their food supplies. A technology proposed to improve consumer trust in food safety is irradiation. Despite extensive education efforts and endorsements given by many health‐related organizations worldwide, food irradiation has been slow to gain widespread acceptance. This ineffectiveness of diffusion efforts might indicate a need to broaden our theoretical perspectives of consumer acceptance of controversial technologies. Most theoretical approaches explain acceptance primarily as a function of perceived risks associated with a technology. The recreancy theorem, in contrast, explains acceptance as a function of public trust in societal institutions to effectively manage a technology. This study investigated the extent to which the recreancy theorem explained acceptance of food irradiation by US consumers, while statistically controlling for perceived risk and social‐demographic variables. The study used a longitudinal field design to survey one adult each in 116 households located in the Minneapolis, Minnesota area during the first large‐scale market test of irradiated food. The results indicate that the recreancy theorem might provide a valid conceptual approach to gaining a broader understanding of consumer acceptance of controversial new technologies.  相似文献

A recent application of biotechnology to food is genetic modification. Genetically modified (GM) plants, animals and processed foods have been introduced to the international marketplace in the 1990s. As scientific and technological progress in modern biotechnology continues at a breakthrough pace, the consumers are presented with different types and levels of information that is potentially relevant for making choices. Findings from studies of consumer attitudes and awareness towards GM products have varied greatly. Many studies, however, have indicated that public opinions about GM products are not fully formed and the task of informing the public is far from over. This study expands on previous research by examining the factors that influence the search for information about GM products. Utilizing the theory of consumer behaviour and information search, we analyse consumers’ information search patterns about GM products. Specifically, we estimate the probability that consumers search for information actively, passively or do not search for information at all, and the factors influencing this search. An ordered probit model is formulated to measure the factors, both economic and behavioural, that influence in‐formation search by consumers for GM products. Variables representing the informational attitudes and behaviour related to GM products have the greatest impact on the probability of searching for information about GM products. With the exception of age, demographic factors are not significant. The results point to information search, not, for the genetically modified characteristic, but instead for the absence of the characteristic.  相似文献

The dynamic development of biotechnology in recent years has raised serious public concerns about the possible risks arising from genetically modified organisms (GMOs). The aim of this study was to investigate consumer opinions regarding genetically modified (GM) foods. The research also aimed at verifying the differences in the attitudes of respondents from two, relatively culturally diverse research sites. To obtain empirical data a face‐to‐face survey was conducted in 2015. It covered a total of 976 randomly selected individuals. The study was performed in the capital of the United Kingdom—London and the Polish capital—Warsaw. The results of the study show that almost half of the respondents were familiar with the GMO concept. According to the respondents, the greatest benefits arising from the genetic modification are: enhanced shelf‐life of food and crops' resistance to extreme climatic conditions. The main disadvantages were: unpredictable consequences of deoxyribonucleic acid (DNA) modification, production of species‐specific toxins and food allergenicity. Over two thirds of people surveyed support the idea of the obligatory labeling of GM foods. The information presented on food packaging should primarily include potential contraindications to the consumption, indication that food was produced using transgenic sources and a warning about potential allergenicity. An almost equal number of respondents showed intention for purchasing GM food products, an intention to act otherwise, or was not decided. As many as 27.7% of survey participants showed negative attitudes toward GM foods, whereas only 19.8% predominantly positive. It is worth noticing that, with only one exception, no statistically significant differences were observed between the opinions of Polish and British respondents.  相似文献

The use of biotechnology in food production has generated considerable debate involving the benefits and risks associated with its use. Consumer acceptance of genetically modified foods is a critical factor that will affect the future of this technology. Using data from a national survey, this study examines how public acceptance of food biotechnology is related to consumers’ socioeconomic and value attributes as well as the benefits associated with the use of this technology. Empirical results suggest that consumer acceptance of food biotechnology increases considerably when the use of this technology brings tangible benefits for the public. Consumers with different socioeconomic and demographic attributes have diverging views of food biotechnology only when its use brings specific benefits to them. When the use of genetic technology confers no additional benefit, public attitudes towards genetically modified foods are driven primarily by their scientific knowledge, views of scientists and corporations associated with biotechnology as well as public trust and confidence in government.  相似文献

Previous research reveals mixed signals regarding the potential for consumer acceptance of irradiated food. Consumer acceptance seems to depend upon the nature and amount of information provided about irradiation. Survey research finds that only about 20–30% of respondents initially express favourable opinions of irradiation with some cautionary signals concerning consumer suspicion of the process and its benefits to the public. Some laboratory experiments and market tests, on the other hand, indicate a willingness of the consumer to accept a high quality, government-approved product, especially when irradiation is placed within the context of alternative pest and bacteria control treatments. However, these studies fail to provide the consumer with negative information about irradiation. This study examines the relative impact of social persuasion and both favourable and unfavourable information on consumer acceptance of food irradiation. The study takes the approach that consumer acceptance is a social process, wherein acceptance becomes subject to societal approval through word-of-mouth conversations. Previous literature suggests that social persuasion, particularly negative social persuasion, should outweigh favourable information on consumer acceptance of a new technology. This proposition is supported by the results of our study, which indicates that responses that were initially favourable to irradiation, especially those opinions formed in the absence of unfavourable information, should be interpreted with caution. The study supports previous research, therefore, suggesting that industry and governmental agencies would benefit from close inspection of societal attitudes towards the food irradiation process.  相似文献

Scientists have asserted that genetically modified (GM) food offers financial, environmental, health, and quality benefits to society, but the realization of such benefits depends on consumer acceptance of this new technology. Consumer concerns about GM food raise questions about what consumers know about GM food and to what extent this knowledge translates into their evaluations of GM products. The present research empirically examines the effect of both objective and subjective knowledge on perceived risk and, in turn, key consumer behaviors associated with GM food. The results reveal that objective knowledge about GM food significantly reduces performance and psychological risks, whereas subjective knowledge influences only physical risk, and the valence of that impact depends on the level of the consumer's objective knowledge. Furthermore, different risk types enhance consumers' information search and reduce their propensity to buy GM food. The overall findings thus suggest the need for cooperation among government, scientific institutions, and the food industry to foster effective communication strategies that increase consumers' objective knowledge, reduce their risk perceptions, and encourage consumer adoptions of GM technology. © 2007 Wiley Periodicals, Inc.  相似文献

The labelling of genetically modified (GM) foods is an important policy issue, as consumers' attitudes towards these foods appear to be quite sensitive to information about their potential benefits and risks. Because it is difficult for labels to differ across consumers, differences in reactions to label information could lead to conflicts across consumer groups or to different market outcomes. Using factor and cluster analysis, we uncover three consumer segments with different attitudes to the risks and benefits of GM foods. Our segmentation‐based analysis on consumer reactions to information points out important differences across consumers. Not only did we find differences across segments in how they view the credibility of GM‐related information, we also find differences in how information influences segments' perceptions of the product, and in their likelihood to buy.  相似文献

In the past, communication strategies aimed at facilitating consumer acceptance of genetically modified foods have focused on technology-driven, top-down practices. The utility of these practices in influencing the extent to which consumers accept specific GM foods was tested in attitude change experiments involving 1655 consumers from Denmark, Germany, Italy, and the UK. Different information strategies were tested against a control group for their ability to change consumer attitudes. No attitude change occurred. Rather, results indicate that all strategies had a uniform attitude activation effect that significantly decreased consumers' preferences for GM foods as compared to the control group. The discussion focuses on why technology-driven information strategies have failed to convince consumers of the merits of GM foods, and relates these results to recent changes in consumer policy that are aimed at engaging consumers in the debate about innovation processes rather than attempting to align their views with those held by expert communities.  相似文献

Market failure can be corrected using different regulatory approaches ranging from high to low intervention. Recently, classic regulations have been criticized as costly and economically irrational, and thus, policy makers are giving more consideration to soft regulatory techniques such as information remedies. However, despite the plethora of food information conveyed by different media there appears to be a lack of studies exploring how consumers evaluate this information and how trust towards publishers influence their choices for food information. In order to fill such a gap, this study investigates questions related to topics that are more relevant to consumers, who should disseminate trustful food information, and how communication should be conveyed and segmented. Primary data were collected both through qualitative (in‐depth interviews and focus groups) and quantitative research (web and mail surveys). Attitudes, willingness to pay (WTP) for food information and trust towards public and private sources conveying information through a new food magazine were assessed using both multivariate statistical methods and econometric analysis. The study shows that consumer attitudes towards food information topics can be summarized along three cognitive‐affective dimensions: the agro‐food system, enjoyment and wellness. Information related to health risks caused by nutritional disorders and food safety issues caused by bacteria and chemical substances is the most important for about 90% of respondents. Food information related to regulations and traditions is also considered important for more than two‐thirds of respondents, whereas information about food production and processing techniques, lifestyle and food fads are considered less important by the majority of respondents. Trust towards food information disseminated by public bodies is higher than that observed for private bodies. This behaviour directly affects WTP for food information provided by public and private publishers when markets are shocked by a food safety incident. WTP for consumer association (€1.80) and the European Food Safety Authority (€1.30) are higher than WTP for the independent and food industry publishers that cluster around zero euro. Furthermore, trust towards the type of publisher also plays a key role in food information market segmentation together with socio‐demographic and economic variables such as gender, age, presence of children and income. These findings invite policy makers to reflect on the possibility of using information remedies conveyed using trusted sources of information to specific segments of consumers as an interesting soft alternative to the classic way of regulating modern food markets. To significantly reduce the volumes of food currently wasted in industrialized countries, tackling food waste on the household level is paramount. While awareness campaigns and economic incentives are important measures, it is crucial to look beyond individual decision making and scrutinize how contextual factors frame consumer lifestyles in ways that intensify the issue of food going to waste. This paper addresses the role of material contexts—in particular, infrastructures and technologies—in the shaping of food shopping and storing practices and thus consumer food waste. It presents an in‐depth, qualitative study with 24 Austrian households, conducted from November 2016 to February 2017. Data were collected through food waste diaries, semi‐structured interviews and a total of 16 focus group discussions. In line with other studies, we find that food waste is a largely unintended outcome of entangled daily routines revolving around food, such as meal planning, grocery shopping and food storing. The characteristics of food retail infrastructures—in terms of accessibility, density and type—shape these routines and thus potentially influence excess food purchases. Food storing practices as well depend on the characteristics of domestic infrastructures and co‐evolve with technologies used for storing food. Unraveling the interconnectivity between material contexts and household food practices can inform policy, product design and food retail development and thus has implications for reducing consumer food waste.  相似文献

This paper addresses the following subjects: biotechnology and consumers, concern about risks, consumer acceptance, labelling of foods produced using biotechnology, the legal approach to consumer protection, and consumer protection policies relating to biotechnology products in the European Union, the United States, Turkey and global institutions such as the Convention for Biological Diversity (CBD) and the World Trade Organisation (WTO). It is likely that biotechnology will gain ground much more rapidly in the twenty‐first century than in the past. Despite rapid, detailed and precise advances in gene technology, its applications have not been the received with a great deal of consumer enthusiasm. Consumers have approached genetically modified foods with considerable apprehension and opposition. Consumer concerns about bioengineered food products focus on the questions of human health, environmental and social risks and benefits. The most important stages in the process of marketing new foods produced using biotechnology are to demonstrate user need and consumer acceptance. Generally, the technical complexity of biotechnology makes it difficult for consumers to understand details of the product and the specific attributes of biotechnology applications. Scientific uncertainty, the nature of consumer concerns and general reluctance to accept biotechnology products, increase the importance of consumer protection. Legal protection is a very important factor in the solution of new social problems related to technological advances. More specifically, consumer and environmental law support consumer protection related to foods produced with biotechnology. The basic principles of consumer law can be re‐formulated as consumer rights. Environmental law is a new phenomenon, but precautionary principles and public participation in decision‐making for environmental law are relevant to consumer protection relating to bioengineered food products.  相似文献

Genetically modified rice with a high folate content, i.e., folate biofortified rice, was recently developed to tackle folate deficiency. A consumer segmentation study is conducted to explore its market potential in the Chinese Shanxi Province, where the burden of folate deficiency is among the world’s highest. Cluster analysis of 451 rice consumers identified three segments: enthusiasts (14.2%), cautious (41.2%), and opponents (44.6%). Enthusiasts obtain the highest score of GM food knowledge and attitudes and have the highest GM rice acceptance rate, followed by cautious and reluctant consumers. Regarding GM food information, enthusiasts use almost entirely audiovisual channels and rely more on the industry, while other segments depend more on informal channels and anti-GM sources. Trust levels in these channels/sources differ between enthusiasts (high), opponents (neutral), and cautious (low). Based on multinomial regression, a targeted communication approach is recommended with a focus on female, cautious consumers and rural, low-educated opponents.  相似文献

This study examines the perceptions and attitudes of Singaporean residents who attended the first public lecture on genetically modified (GM) food in the country. Scales were developed for the underlying consumer concerns, and their relationship with one another and with demographic variables were examined. Slightly more than half of those who attended the talk (n= 417) indicated that they were worried about GM foods and 86 percent agreed or strongly agreed that GM foods should be labeled. Issues relating to health, ethics, and perceived benefits were the major underlying concerns. These were related to several demographic variables and also to perceived knowledge about biotechnology. Women were more concerned about the ethical and health aspects compared to men. Those with post‐graduate education were the least concerned about health and ethical issues and more likely to buy GM foods if consumer benefits are shown. Married respondents were less concerned about health issues compared to single ones. Also, those with children under fifteen years of age were less concerned about health issues compared to others and more likely to buy GM foods if consumer benefits are shown. Respondents subscribing to the Hindu religion were more likely than others to buy GM foods If benefits are shown. Also, those who considered themselves vegetarians were more concerned about the ethical aspects of GM foods compared to others.  相似文献

Using data from a national survey, this study analyses US consumers’ acceptance of genetically modified foods that provide additional nutritional benefits. Using an ordered probit model, this study examines the relation between the willingness to consume genetically modified foods and consumers’ economic, demographic and value attributes. Empirical results suggest that despite having some reservations, especially about the use of biotechnology in animals, American consumers are not decidedly opposed to food biotechnology. Consumers’ economic and demographic variables are only weakly related to their acceptance of food biotechnology, especially when technology involves plant‐to‐plant DNA transfer. However, public trust and confidence in various private and public institutions are significantly related to their acceptance of food biotechnology. Overall, consumer acceptance of bioengineered foods is driven primarily by public perceptions of risks, benefits and safety of these food products.  相似文献

New technologies are hitting the marketplace every day. In trying to make sense of these new technologies, consumers perceive a series of risks and benefits of consumption and use those perceptions to form product judgments. One way for managers to mitigate organizational related risk is to understand how consumers perceive consumption‐related risk. To illustrate this point, the case of genetically modified (GM) food is examined and a series of focus groups is conducted in which participants examined different product labels that either framed the technology as a benefit gained or as a risk avoided. The results indicate that consumers do indeed form very different product evaluations based on how the new technology is framed, but these evaluations vary based on the level of the consumers’ preexisting knowledge. This study provides support for the contention that a better understanding of consumer risk perceptions is an important first step in developing marketing strategies for new technology‐oriented products.  相似文献

Public interest in the durability of household appliances may be traced back 40 years to criticism of planned obsolescence raised by an emerging consumer movement. A recent revival of interest in product life spans has taken place in the context of increasing waste generation and debate prompted by proposed producer responsibility legislation, but data on the age of discarded products and consumer attitudes to product life spans have been lacking. This paper draws upon recent data from research into discarded household appliances in the UK to enhance a theoretical model of product obsolescence and explore some implications for marketing and public policy. A survey of over 800 households provided quantitative data on consumer attitudes and behaviour relating to appliance life spans and a subsequent series of focus groups enriched this data with personal narratives. Respondents were evenly divided on whether or not appliance life spans are adequate. Variations in behaviour demonstrated how users may influence appliance life spans. Overall, the results suggest that consumers have an important role in reversing the trend toward increased appliance waste but currently face economic disincentives and lack adequate product information.  相似文献

Legislation that mandates the provision of nutrition information on restaurant meanus has been proposed in several states. This research presents findings from an experiment that investigates how the provision of nutrition information and a health claim influence consumers’ attitudes towards the product, nutrition‐related attitudes, disease risk perceptions, source credibility judgements, and nutrient value estimates for restaurant menu items. In addition, how the nutrition frame (or context) within which a menu item is evaluated moderates these effects is examined. The results indicate that providing target item nutrition information, as well as a nutritional context, affects consumers’ attitudes, perceptions, and judgments. In addition, the context interacts with the provision of both a health claim and nutrition information for the target item. The theoretical, managerial, consumer welfare, and public policy implications of our research findings are discussed.  相似文献

Conscious of the nutritional failings of the current food systems, there has been a call in the last decade or so to move beyond sustainable consumption and towards sustainable diets defined as healthy diets that also optimize the environment, food quality, socio‐cultural values, the economy and governance. Previous studies have shown how local food initiatives can lead to greater levels of sustainable consumption and healthier diets and have focused on the key role played by the conscious‐consumer. Analysing various types of local food initiatives—from community‐oriented to more private‐run activities—they have described the processes that local food initiatives set in motion to empower conscious‐consumers and to ultimately change habits and routines. Taking the specific case of a business‐oriented box delivery scheme in Italy, the article sheds further light on the mechanisms that enable clients to consume in more sustainable and healthier ways, with a central role played by learning, commitment and empowerment. Obstacles however exist in the form of the way people's everyday lives are structured, and the competing values that people draw upon in making their food choices. Support is therefore needed from public institutions to make it easier for people to choose healthier and more sustainable food provisioning systems.  相似文献
