[目的]非洲猪瘟疫情暴发导致猪肉等畜产品市场供需结构性、区域性失衡,进而导致肉类价格大幅波动,不利于畜牧业高质量可持续发展。[方法]文章通过构建覆盖全国30个省(市、区,不含港澳台、西藏),包括猪牛羊和白条鸡四大肉类价格和非洲猪瘟疫情指数的动态面板数据,运用面板向量自回归模型(PVAR),研究非洲猪瘟疫情对猪肉等主要肉类价格的冲击和影响在重点、约束、适度发展区和潜力增长区(1)的区域异质性。[结果](1)非洲猪瘟疫情对不同区域不同肉类价格的影响存在着正负向不趋同的方向性差异,在冲击程度大小和时滞期上均存区域异质性;(2)区域间和区域内不同省份间猪肉等肉类生产流通和供需形势、及非洲猪瘟发生发展程度的差异是非洲猪瘟疫情对这些肉类价格冲击影响异质性产生的主要原因。[结论]非洲猪瘟疫情对肉类价格影响存在较为明显的区域异质性,亟需进一步优化生猪等畜牧产业布局,加快形成区域协同发展格局;健全动物疫病防控体系,建立多方协同联动机制;完善市场风险预警调控机制,加快实现产需顺畅匹配,确保畜产品市场总体平稳运行和畜牧业健康可持续发展。  相似文献

The remarkable economic changes occurring within China since 1978 have resulted in a striking alteration in food consumption patterns, and one marked change is the increasing consumption of meat. Given China’s large population, a small percentage change in per capita meat consumption could lead to a dramatic impact on the production and trade of agricultural products. Such changes have major implications for policy makers and food marketers. This paper concentrates on meat consumption patterns in the home in China. A censored linear approximate almost ideal demand system model was employed in the study, and major economic parameters were estimated for different meat items. Data used in this study were collected from two separate consumer surveys – one urban and one rural in 2005.  相似文献

This paper sets out meat consumption trends in the United Kingdom and within other EU countries over the past 40 years; it shows that whereas in the UK meat consumption has only increased by a small amount, for other EU countries it has almost doubled. In analysing the data in more detail, it is apparent that ‘non-price/income’ factors have been playing a more important part both for the UK and other EU countries. It is true that in recent years there has been much more published empirical work on the effect of different attitude, demographic and structural factors on meat demand; commercial and Governmental organisations have also been collecting a significant amount of relevant unpublished data. However, there has not been much recent progress on integrated approaches which combine the analyses of the consumer behaviourist with those of the economist. The paper concludes by stating that this is an area of growing importance for the food industry and those interested in analysing food demand trends. Agricultural economists should therefore get more involved in it.  相似文献

This paper employs a latent variable approach to isolate the effects of changing tastes on the share of total meat expenditure on different categories of meat products in Greece during the period 1965–1995. We find that changes in the relative expenditure on different categories of meat cannot be explained by changes in the relative prices of the different meat products and increased expenditure alone. For pork products in particular, the increase in the share of expenditure has been greater than would be expected as a result of the relative fall in their price. The increase can therefore be associated with changes in taste. This finding is of general interest to those conducting empirical research into consumer behaviour both in economies where there have been significant changes in patterns of food consumption, and where, as in the case of many less industrialised economies, rapid structural changes in food consumption patterns are still to come. It is also of importance to policy makers in assessing die effectiveness of advertising or promotional campaigns in influencing longer term changes in consumer preferences for different products.  相似文献

Abstract

This paper utilized a linear approximate version of the Almost Ideal Demand System to evaluate structural changes of meat consumption in Taiwan. Time transition paths for each product were identified, and the first-order autocorrelation was taken into consideration. Structural changes of beef consumption were completed before structural changes of other products had started. Shifts in consumption patterns of pork and poultry took about the same length of time. Structural changes of fishery products occurred toward the end of the time period. With the gradual switching time paths, estimated elasticities revealed that own-price elasticities for pork, beef, and fishery products became more responsive to their own-price changes.  相似文献

目的 中国是世界上最大的生猪生产国和消费国,科学评价中国生猪产业国际竞争力水平,对于提高生猪产业国际竞争力水平,促进生猪产业可持续发展,具有重要的理论和现实意义。方法 文章基于产业发展视角构建了包含资源禀赋竞争力、生产竞争力、消费竞争力和贸易竞争力4个一级指标及13个相关二级指标的生猪产业国际综合竞争力评价指标体系,利用1995—2018年生猪产业相关数据,对中国、美国、德国、巴西、西班牙、俄罗斯等生产、消费和贸易大国生猪产业国际综合竞争力进行评价,并与传统的基于贸易视角的竞争力评价结果进行对比分析。结果 研究发现,基于贸易视角与产业发展视角的测算结果存在一定差距。基于贸易视角的测算结果显示,中国生猪产业缺乏竞争力,且竞争力仍在持续减弱。基于产业发展视角的测算结果显示,中国生猪产业具有一定竞争优势。其中,中国猪肉消费竞争力极强,显著拉升了中国生猪产业国际综合竞争力水平;生产竞争力和资源禀赋竞争力也具有一定优势;贸易竞争力处于劣势地位,明显拉低了中国生猪产业国际综合竞争力水平。结论 建议中国生猪产业充分发挥巨大的内需优势,提升生猪产业国际竞争水平,实现生猪产业高质量发展。进一步提高中国生猪种业创新能力,保障优良种猪供给;提高生猪生产技术效率与经济效率,提升生猪养殖场组织化、标准化、规模化水平;稳定生猪生产饲料供给;建立生猪产业风险防范机制。  相似文献

Introducing a new product is tricky because of potential problems with consumer acceptance. Dry aging is a technique that could make meat more tender, but at the expense of the color that would become darker. This technique is widely used for beef, but it could be useful in the pork industry since the increasing offer of lean meat has reduced its natural tenderness. We investigate Italian consumer preferences for dry aging applied to pork loin and the effect of information on consumer acceptance. A sample of 264 consumers was surveyed in June 2014 in Bologna, Italy, using a hypothetical rank-based conjoint analysis. Data were analyzed using a rank-ordered logit (ROL) approach. Results suggest that consumers preferred dry-aged pork loin to fresh pork loin. They also preferred products labeled with Italian origin and having low fat content. Factors affecting the intention to purchase dry-aged pork loin are age and information on dry aging.  相似文献

The New Zealand export meat industry has been through a considerable number of changes in the 1980s. The deregulation of export slaughter facilities, Supplementary Minimum Prices, Producer Board intervention, declining livestock numbers and domestic cost pressures have all affected the performance of the domestically based processing sector. Major changes in market access and demand have influenced off-shore marketing operations, particularly for sheepmeats. Additionally, there has been a change in the type of meat exported with a greater proportion of further processed product shipped in recent years. As an example of the impact of these developments on livestock producers, the producer share of the United Kingdom wholesale market return for a representative prime lamb carcase has fallen from 40 per cent in 1978 to 25 per cent in 1988. In this article the pattern of intervention in the New Zealand pastoral meat industries from the mid-1960s is detailed, emphasising the different environments of the beef and sheepmeat enterprises. Then the principal factors influencing domestic processing margins for these products are empirically examined. Alternative model specifications and alternative estimation techniques are compared and contrasted. The results of these analyses are discussed in terms of the historical patterns of assistance and structural change, and in terms of current rationalisation pressures on the meat processing sector.  相似文献

The aim of the paper is to explain to what extent meat consumption patterns in Spain are different in rural and urban areas and which are the factors explaining differences and similarities. A demand system using cross-section data from the latest Spanish National Survey has been estimated. Unit values have been used instead of market prices and price and quality effects have been obtained. The main conclusion is that meat consumption patterns in urban and rural areas are not really different as regards economic factors. Some small income and price effect differences have been found, specially for fresh pork and fish, Responses to changes in income and price are higher for fresh pork consumption in rural areas and for fish in urban areas.  相似文献

This article reviews the emerging trends in global food supply and demand up to 2020, and discusses policy challenges and obstacles to meeting this demand. Data were obtained from the International Food Policy Research Institute's International Model for Policy Analysis of Commodities and Trade (Rosegrant et al.). The country-specific data pertains to 37 countries and regions and 17 food commodities and prices in the world market. Cereal prices are expected to decline by about 11% by 2020; meat prices may decline by 6%. After 2010, cereal prices are expected to dramatically decline. Cereal demand will change with changes in income and urbanization. Maize and coarse grains will be replaced by wheat and rice. Life style changes may lead to a switch from rice to wheat. Growth in food consumption in developed countries will slow. A projected 82% of growth in global cereal consumption and almost 90% of increased global meat demand will occur in developing countries during 1993-2020. Asia alone will account for 48% of increased cereal consumption and 61% of increased meat consumption. 88% of food production growth will occur in developing countries through increased yields and 94% in developed countries. World trade in cereals will increase from an estimated 185 million metric tons annually to 328 million during 1993-2020. Food security for the poor and child malnutrition will remain unimproved. Yield growth is affected by agricultural research, fertilizer and energy use, land degradation, water scarcity, and bad policy. Water scarcity is the most limiting on yield growth. Malnutrition problems present multiple challenges.  相似文献

Food consumption patterns in Asia show a trend away from staples toward high protein food derived from animal and dairy products, fruit and vegetables, fats and oils. Such changes in food consumption patterns are due to rising incomes, urbanization, globalization, and modernization of marketing infrastructure. In this article, we analyze the demand for the animal‐derived food group comprising meat (chicken, beef, pork, and mutton), eggs and fish, and derive income and price elasticities in seven Asian countries using the system‐wide approach. Demand homogeneity and Slutsky symmetry properties were tested and found to be compatible with the data. Our findings reveal that animal‐derived food as a group is a necessity (except in Taiwan) and its demand is price inelastic (except in Taiwan and Sri Lanka). The implied unconditional demand elasticities reveal that, in all countries (except beef in Japan and Taiwan), chicken, beef, pork, mutton, eggs and fish (except in Taiwan) are all necessities and the demand for all types of animal‐derived food in all seven countries are mostly price inelastic. The cross‐price elasticity estimates are mostly found to be positive, meaning that there is a higher degree of substitutability between chicken, beef, pork, mutton, eggs, and fish.  相似文献

This article provides the first known examination of how animal welfare information provided by media sources impacts beef, pork and poultry demand. Results suggest that media attention to animal welfare has a small, but statistically significant impact on meat demand. Long‐run pork and poultry demand are hampered by increasing media attention whereas beef demand is not directly impacted. Loss in consumer demand is found to come from exiting the meat complex rather than spilling over and enhancing demand of competing meats. An outline of economic implications is provided for the broader discussion of animal welfare.  相似文献

[目的]基于中国农村微观经济数据,分析全面建成小康社会对农村居民肉类消费的影响。[方法]文章运用恩格尔模型和考虑"零消费"问题的近乎理想需求系统模型(AIDS)的两阶段模型,对全国8个省份的农户数据进行实证分析。[结果]首先,肉类食品的需求收入弹性均为正值,农村居民肉类需求随着收入增长而增加。其次,肉类食品需求收入弹性存在差异,其中,禽肉收入弹性最大,牛羊肉收入弹性最小。再次,不考虑"零消费"问题时,牛羊肉的需求弹性被高估0.12~0.29,猪肉的需求弹性被高估0~0.02。最后,到达全面建成小康社会的标准时,目前低于收入标准的农村居民人均猪肉、禽肉和牛羊肉消费量将分别增加3.42kg、1.86kg和0.57kg,消费结构将进一步优化。[结论]全面建成小康社会将促进农村居民人均收入增长,进而扩大人均肉类消费量、优化肉类消费结构;农村家庭户主受教育程度与肉类消费具有正向相关关系。  相似文献

Retail demand systems for 19 different cuts of meat for beef, lamb, pork, bacon and poultry in Great Britain are estimated from monthly time series of consumer expenditure from 1989-2000 using a two stage budget allocation process and an LA/AIDS specification. The unconditional expenditure, own and cross price elasticities are derived for the individual meat cuts. The impact of adverse publicity from meat scares, especially BSE, and of positive publicity through consumer promotion and advertising are incorporated into the modelling. Meat scares produced a reallocation of consumer spending from red to white meats during the 1990s. The impact of species-based advertising was shown to have complex spillover effects both within and between meat species, and the response of consumer demand to advertising was considerably less than to adverse publicity.  相似文献

In this study, Canadian household meat consumption behavior in exotic (deer and elk meat) and traditional meats (beef, pork, chicken, turkey, bison, and seafood) is examined. This research introduces some differences in public response to transmissible spongiform encephalopathies (TSE) risks across consumer segments from different sources of meat supply, including hunted meat. The analysis uses a combination of survey and household meat purchase data that include a balanced household panel of 2,393 households per year across time. A two-step estimation procedure is used with a probit model in the first step (consume or not) and a doublelog–translog two-stage demand system in the second step (level of consumption). It is assumed and tested that household sociodemographics, consumers’ risk perceptions/attitudes, and media coverage of bovine spongiform encephalopathy (BSE) and chronic wasting disease (CWD) are underlying demand shifters in consumers’ daily meat purchase decision. The results suggest that households who obtain venison from hunting show the highest confidence in venison safety. Exotic meat preferences negatively affect traditional meat consumption in the daily diets of households who purchase traditional meats from stores and obtain venison from hunting. In response to the media coverage of BSE and CWD, exotic meat eaters are less sensitive to animal disease media information than the general population.  相似文献

This study examines meat consumption in China, the world's largest meat consumer and producer, by considering both meat consumed at home and away from home based upon a diary‐based household survey. The results indicate that income growth leads to beef, poultry, other meat and pork away from home consumption to grow more than proportionally to total meat consumption. We also find that meats consumed away from home grow faster than at home counterparts due to higher income elasticities, suggesting that ignoring meat away from home could significantly underestimate current and future meat consumption.  相似文献

With technological adoption and trade liberalization, per capita incomes have grown rapidly in industrialized countries. Income growth has resulted in increased per capita meat consumption. Projecting future meat consumption requires quantifying the relationship between per capita income and meat consumption. This study estimates the relationship between income growth and meat consumption using data from 32 countries. Beef, pork, poultry, and lamb income elasticities declined at different rates as income levels increased. High income countries have experienced relatively constant per capita meat consumption. Low income counmes with low income growth have had stagnant meat consumption. Low income countries with growing incomes have experienced increasing meat consumption. Countries such as China characterized by relatively large income growth and moderate population growth have experienced large increases in total meat consumption.  相似文献

目的 中国是西瓜甜瓜生产和消费大国,其产业发展对于保障城乡居民鲜果消费和带动农户增收非常重要。方法 文章系统梳理了1961年以后中国西瓜和甜瓜产业变迁史,运用重心模型分析中国西瓜和甜瓜生产重心演变轨迹及优势主产区变化,解析其区域布局变迁背后的影响因素。结果 (1)1961年以来中国西瓜甜瓜产业发展划分为缓慢发展期、快速发展期、全面增长期和结构调整期4个阶段。(2)20世纪90年代以来,中国西瓜生产重心整体比较稳定,向西南移动了196.82 km,中国甜瓜生产重心变化剧烈,整体向西移动了545.64 km。(3)进入21世纪以来,中国西瓜和甜瓜东北优势区地位逐渐下降,西北优势区发展快、潜力大。(4)自然禀赋、科技创新、产业政策及消费需求升级是中国西瓜和甜瓜产业区域布局变化的主要影响因素。结论 针对中国西瓜甜瓜产业发展面临的现实需求与制约瓶颈,提出未来要提升农业生产“三品一标”能力,加大产业科研资金投入,创新绿色技术,提高机械化水平,加快产销模式变革和业态功能创新,推动西瓜甜瓜产业高质量发展。  相似文献

Recent structural changes in dietary patterns in Asia resulting from economic development are placing increasing pressure on the existing production systems in the region-particularly those systems producing ruminant meat, non-ruminant meat and milk. This has significant policy implications for the countries in the region in terms of self-sufficiency goals in these commodities and the associated inter-and intra-regional trade opportunities in the future. Forecasts of ruminant meat, non-ruminant meat and milk production and consumption for selected Asian countries between the years 2000 and 2010 revealed the following: China, Pakistan and Viet Nam are likely to be self-sufficient with respect to ruminant meat; Malaysia is likely to continue to be a net importer of ruminant meat; India and Malaysia will be more than self-sufficient with respect to non-runvinant meat with the converse being true for Pakistan; and India, Laos and Pakistan will be self-sufficient with respect to milk production with the possibility of Indonesia, Thailand and Cambodia becoming self-sufficient if the current trends continue. Structural changes in the early 1980s generally resulted in higher average annual growth rates of production-particularly in non-ruminant meat production. Thus forecasts of ruminant meat production and consumption by 2000 using the medium-term average annual growth rates for production present a more favourable outcome in terms of self-sufficiency for countries such as Bangladesh, the Philippines and Viet Nam but a less favourable outcome for countries such as Indonesia, Malaysia, Laos and India. Similar forecasts for non-ruminant meat indicated an improvement in the long-term non-ruminant self-sufficiency estimates for most cases-particularly for Bangladesh, China and Cambodia. Intensification and commercialisation of meat production systems have increased meat self-sufficiency in a number of countries but often at the expense of grain self-sufficiency. Given these trends, the impact of trade liberalisation measures on livestock production in the region and inter-and intra-regional trade of livestock commodities and grain is likely to be significant.  相似文献

This article uses national, quarterly data to conduct an empirical analysis of pre‐committed meat and fish demand by U.S. and Japanese households using the generalized almost ideal demand system (GAIDS). Pre‐committed demand represents the component of demand that is insensitive to both income and price adjustments. U.S. consumers are found to hold significant positive pre‐committed demand for beef and pork, while Japanese consumers appear to possess significant, positive pre‐committed demand for beef and fish. This provides evidence to partially explain observed differences in Japanese and U.S. consumer reactions to nonprice and nonincome effects in beef, pork, poultry, and fish. In addition, based on in‐ and out‐of‐sample performance, the more general GAIDS is preferred to the almost ideal demand system (AIDS) for both the U.S. and Japanese demand systems. Results lend to improved demand modeling efforts and more complete understanding of true market forces at hand in meat and fish markets for these culturally diverse consumer groups.  相似文献
