We elaborate mechanisms through which multi-stakeholder collaboration can ameliorate food loss and waste (FLW) from the end-to-end supply chain. In this context, we integrate the discourse on collaborative relationships in supply chains with stakeholder theory (roles and orientations) and use a multi-method approach combining systematic literature review (SLR) and embedded case studies based on secondary data. We develop a conceptual framework that illustrates collective stakeholder orientation emerging from aligned vertical and horizontal stakeholder orientation across the supply chain towards reducing FLW. We explain how achieving such alignment requires these stakeholders to navigate various collaboration conditions (structural and sporadic) that otherwise spur individualism, culminating in FLW mitigation efforts across food supply chains. We develop propositions, motivate future research, and offer practical implications.  相似文献

We present a conceptual framework depicting the issues and strategies of a firm with an innovation (in product or technology or system). To “implement” the innovation in terms of procurement of feedstock (intermediate inputs), production and processing, and marketing, the innovating firm undertakes strategic design of its supply chain. It must decide how much to produce, what segments of the supply chain to undertake in-house versus sourcing externally, and what institutions such as contracts and standards it will use to coordinate the suppliers assuring its external sourcing. The paper illustrates with cases from developed and developing economies, draws policy implications, and lays out a research agenda.  相似文献

The issues of food loss and waste (FLW) in the global supply chains have recently gained attention. However, causes for FLW and their mitigation strategies for curbing FLW at different stages of the supply chains remains under researched. Our research aims to address these research gaps in a three-fold way: i), we identified key causes (through root-cause analysis) of FLW in the supply chain of developed and less developed countries; ii), systematically classified measures and policies, which have been implemented to mitigate FLW; iii), developed an interdisciplinary conceptual framework for waste utilisation practices that can contribute towards the triple bottom-line in food system. A root-cause analysis was performed, and mitigation strategies identified by systematically analysing and synthesizing the extant research published over the past 20 years (1998 to 2018) in the areas of food loss and waste in the supply chain. A conceptual model for the prevention of FLW utilising a systems approach through the circular economy concept has been proposed. Since the agri-food sector is largely interdisciplinary, we have also demonstrated a method of integrating contributions from multiple disciplines in our proposed model towards achieving a total depollution (zero waste supply chain).  相似文献

Surplus food management plays a key role in food waste reduction. This paper addresses the multifaceted concept of food supply chain sustainability by presenting a model of surplus food generation and management (called ASRW, Availability-Surplus-Recoverability-Waste), which encompasses the integrated food supply chain (i.e. business, environmental and social players). The model was developed using a bottom-up approach, by conducting 30 exploratory case studies and iterating theory development and data analysis. Three confirmatory case studies, from different food supply chain stages, are also presented to demonstrate how the model can be used to identify food waste reduction strategies.  相似文献

The paradox that tonnes of food is wasted while people go hungry has raised concern from national and international authorities. In developed countries, reducing these problems has focused on surplus food distribution as a ‘win-win’ solution contributing to sustainable development goals. While the existing literature acknowledges the role of third-sector organisations, research on the supply chain of surplus food distribution and the coordination among actors is limited. This research explores actors and organisations in the value chain of surplus food distribution at the city level. Based on semi-structured interviews and participant observation, our findings highlight the need for a coordinated effort between actors as an essential arrangement to capture the value of surplus food. Despite the close cooperation, hierarchical power relationships exist between organisations in the supply chain. We unpack challenges in the surplus food supply chain, such as lack of a legislative framework for food donations and organisational sustainability issues that have forced third-sector organisations to work independently to reduce the uncertainties of food quality and quantity. We shed light on the practical implications by highlighting how multiple stakeholders could improve the efficiency of surplus food distribution.  相似文献

There is increased interest in greater localization of food supply chains but little evidence about the effects of localization on supply-chain costs. Assessing these effects is complex in multiple-product, multi-process supply chains such as the dairy industry. In this study, we develop a spatially-disaggregated transshipment model for the US dairy sector that minimizes total supply-chain costs, including assembly, processing, interplant transportation and final product distribution. We employ the cost-minimizing solution as benchmark to compare alternative scenarios of increased supply chain localization. Our results indicate: (1) short-run limits to increased localization, (2) modest impacts on overall supply-chain costs, and (3) large cost re-allocations across supply chain segments, regions and products. We find that increased localization reduces assembly costs while increase processing and distribution costs. Cost increases are larger in regions with smaller raw milk supplies and during the season when less raw milk is produced. Minimizing distances traveled by all dairy products results in tradeoffs across products in terms of cost and distance traveled. The relationship between increased localization and costs appears to be nonlinear.  相似文献

One of the most challenging tasks in today's food industry is controlling the product quality throughout the food supply chain. In this paper, we integrate food quality in decision-making on production and distribution in a food supply chain. We provide a methodology to model food quality degradation in such a way that it can be integrated in a mixed-integer linear programming model used for production and distribution planning. The resulting model is applied in an illustrative case study, and can be used to design and operate food distribution systems, using both food quality and cost criteria.  相似文献

We investigate how the retailer’s inventory policy affects the total cost of a serial supply chain. When the retailer uses the locally optimal (s,S) policy, there is randomness in order time and order quantity to the supplier whereas the supplier sees randomness only in order quantity for the suboptimal (R,T) policy and only in order time for another suboptimal (Q,r) policy. Using an extensive computational study, we find that the suboptimal policies perform better from the total supply chain perspective. The benefit of policy changes is magnified when the retailer costs are low, when the supplier costs are high, and when there is information sharing.  相似文献

Food supply chains increasingly rely on big-data management solutions to foster collaboration across the food supply chain and improve business performance. However, little is known about collaboration practices that actors on the digital food supply chain adopt to solve problems such as food waste, or about the drivers and barriers related to the digital transformation of the food supply chain. Most of food waste studies rely on quantitative analysis, which cannot reveal relevant details about the tensions and dynamics of collaboration. We conducted a qualitative study drawing on eighteen in-depth interviews - of managers of large multinational and local organizations covering different and relevant roles on the digital food supply chain - to investigate how organizational and food supply chain processes are affected by the digitalization of the operations along the food supply chain. By triangulating emerging findings with literature on supply chain management we discuss different views about collaborative practices for food waste prevention in the food supply chain and provide insights on how supply chain design and firms' operations have been re-conceptualized with the usage of digital technologies and on the institutional forces both limiting (barriers) and fostering (drivers) the diffusion of the digital food supply chain.  相似文献

Recently, the amount of literature on analyzing the effects of investment strategies to control lead times has been increasing. Issues on investment to reduce lead times are important because variability in lead time between successive stages often has a great effect on the coordination of supply chain.This paper considers dual-sourcing models with stochastic lead times and constant unit demand in which lead times are reduced at a cost that can be viewed as an investment. In order to obtain an analytically tractable model, the distributions of lead times for two suppliers are assumed to be exponential. In our two-supplier model, we will concentrate on lead times as random variables, which are made endogenous in the stochastic lead-time model through “expediting factors”, the constants of proportionality between the expedited lead times and ordinary lead times, as was done by Bookbinder and Çakanyildirim (Eur. J. Oper. Res. 115 (1999) 300).Firstly, we determine the order quantity (Q), reorder point level (r), and order splitting proportion (k1) in the case of no lead-time reduction. Using the (Q,r) found, we decide the expediting factors and new k1 in the case of lead-time reduction. We compare the expected total cost per unit time for the two models and investigate savings. Additionally, sensitivity analyses are conducted with respect to the various cost parameter ranges, and remarks are made for further research.  相似文献

Electronic marketplaces (e-marketplaces) have a profound influence on the way in which organizations manage their supply chains. Proponents of the e-marketplace concept suggest that web-based trading systems, such as World Wide Retail Exchange (WWRE) and GlobalNetXchange (GNX), would enable companies to more efficiently buy, sell, and manage their supply chain processes on a global scale. This study investigates the extent to which e-business tools of the e-marketplace are used by channel members in the retail sector for business-to-business supply chain management (SCM). The study is based on a survey involving food service companies, retailers, and wholesalers in the UK. It is shown that the e-marketplace supply chain applications enable the majority of companies to automate transaction-based activities and procurement-related processes rather than strategic supply chain activities. The results also indicate that full participation in e-marketplaces requires companies to integrate their internal and external supply chain activities and share strategic information.  相似文献

This paper develops a model that describes the performance of supply chains based on their elasticities of supply and demand. The model can be used to predict a supply chain's ability to respond to supply interruptions, cost increases, and demand shifts, while also quantifying the degree to which it is prone to the bullwhip effect. The bullwhip effect is a behavioral phenomenon by which orders are distorted as they are transmitted through the chain. Four types of supply chains are identified and their distinct operating characters are examined. The impact of rival firms and the impact of a decoupling point on supply chain performance are also examined.  相似文献

To achieve a competitive edge in the rapidly changing business environment, companies must align with suppliers and customers to streamline operations, as well as working together to achieve a level of agility beyond individual companies. Consequently, agile supply chains are the dominant competitive vehicles. Embracing agile supply chain requires asking some important questions, namely: what exactly is agility and how can it be measured? Moreover, how can agility be effectively achieved and enhanced? Due to the ambiguity of agility assessment, most measures are described subjectively using linguistic terms. Thus, this study develops a fuzzy agility index (FAI) based on agility providers using fuzzy logic. The FAI comprises attribute’ ratings and corresponding weights, and is aggregated by a fuzzy weighted average. To illustrate the efficacy of the method, this study also evaluates the supply chain agility of a Taiwanese company. This evaluation demonstrates that the method can provide analysts with more informative and reliable information for decision.  相似文献

In this paper, we explore paradoxes firms face when managing demand and supply activities and managers' experience of coping with and transcending these paradoxes. Following an exploratory research approach and based on the analysis of interviews with executive managers, documents from, and observations of 19 business-to-business (B2B) firms, we develop empirically grounded propositions. We first find and explain three major demand and supply paradoxes, namely collaboration-competition, concord-conflict, and integration-differentiation. We then expand on the handling mechanisms B2B firms employ to respond to these paradoxes. We find that B2B firms that understand, balance, and transcend demand and supply paradoxes achieve greater synergy between demand and supply activities and leverage both demand and supply approaches as overarching guiding principles for their strategy. Our study informs B2B marketing and marketing strategy by exploring the nature and role of paradoxes that shape the relationships between demand and supply activities. In doing so, it also offers an empirical account of the discrepancy between the theory and practice of demand and supply integration.  相似文献

The Internet fosters the integration of business processes across the supply chain by facilitating the information flows necessary for coordinating business activities. However, the Internet also supports the use of market mechanisms, such as auctions, that foster price competition. Using market mechanisms is less likely to generate a sustainable competitive advantage, but they might offer the opportunity to purchase some items at a lower price. Managers have the challenge of selecting the Internet-enabled coordination mechanism that best fits the needs of a variety of business situations in the supply chain. Dealing with food waste is a major concern for the food system in the transition towards a circular economy (CE). Previous studies have developed various solutions to address the issue, but the role of for-profit start-ups remains poorly understood. This paper aims to analyse the forms of institutional work conducted by start-ups to prevent and reduce food waste. This paper adopts the multiple case study approach, utilising a three-year netnography of the emerging food waste reduction business and interview data from company representatives. We outline four categories in which the start-ups conduct institutional work: appearance of food, quantity of food, edibility of food, and living with food. The start-ups disrupt existing institutions that lead to food waste, as well as create new institutions to enable and reinforce their business operations. We argue that the start-ups have an influential role in changing the normative and cognitive-cultural institutional pillars in the shift towards a CE. The article provides a contribution to studies on the CE and food waste and has practical implications for both established and start-up businesses.  相似文献

This study introduces a framework and model, although applied in a practical setting, sets the stage for further theoretical development of mid-range theory. The methodology applied in the study has four main stages, namely interviews with managers from an online food retail supply chain, analysis of soft and hard data using questionnaire-based surveys of customers and suppliers, archival and factual information gathered from the supplier and the online food retailer to measure food waste across the supply chain and analytical models to quantify various effects. A number of propositions emerged from our multiple methodologies and observations. The major research contribution of this work is to advance Natural Resource Based View (NRBV) to the supply chain and various complexities involved in food waste management. Dynamic capabilities were clearly evident and necessary in rapidly changing industrial contexts such as online food supply chains. This paper also proposes a food waste minimization-and-mitigation model, establishes the direct and indirect outputs of food waste and brings attention of the food waste debate in the context of an exemplar online food supply chain, as well as provides a middle range theoretic framework to enhance understanding on theory and its application to this field informed mainly NRBV.  相似文献

This article examines the relationship between diffusion of digital networks and performance of specialised sub-contracting SME's.
