The market-oriented reform in China in the past 4 decades has greatly reshaped the consumption pattern in rural areas. In particular, farmers’ diets are more likely to depend on food market development such as food accessibility. This study investigates the role of food accessibility in the transition of dietary pattern in rural China by using the China Health and Nutrition Survey data (1997–2011) and whether food accessibility helps alleviate the deviation between farmers’ dietary pattern and the recommended dietary pattern according to China Food Pagoda 2016. The primary results indicate that food accessibility contributes to improvements in quality. In particular, food accessibility increases the consumption of oil and decreases the consumption of cereal, potatoes, and beans; fruits; vegetables; and salt. Further estimation finds evidence that along with increasing food accessibility, fruit is converging to the recommended dietary pattern in China Food Pagoda 2016, and the deviations of legumes, nuts, and oil are increasing. We also observe that the impact of food accessibility on dietary quality is stronger for those not engaged in agriculture production. Our study provides valuable implications for rural development and nutrition security in the developing world.  相似文献

Over 1994–2010, adult dietary quality in the United States increased by 10 percent. We find a shift in consumption between at-home and away-from-home food played a relatively minor role as compared to changes in demographics and educational attainment. The two largest contributors we identify include an increased usage of nutritional information and a shift away from relying heavily on price, taste, storability and ease of preparation when shopping for food. Our findings suggest nutrition policy discussions could focus on further shifting attitudes/preferences towards healthier diets while allowing consumers to better extract nutrition information when making food choices.  相似文献

The Sustainable Development Goals (SDGs) agenda makes achieving food security and ending malnutrition a global priority. Within this framework, the importance of fisheries in local and global food systems and its contribution to nutrition and health, particularly for the poor are overlooked and undervalued. This paper reviews current fish production and consumption from capture fisheries and aquaculture, highlights opportunities for enhancing healthy diets and outlines key multi-sectoral policy solutions. Mirroring the call for a diversification of agricultural research and investment beyond a few staple grains, it is anticipated that productivity gains for a few farmed aquatic species will not suffice. Capture fisheries and aquaculture have a complementary role to play in increasing fish availability and access, and must be promoted in ways that support measurable nutrition and health gains. This paper argues that the lack of a nutrition-sensitive policy focus on capture fisheries and aquaculture represents an untapped opportunity that must be realised for ensuring sustainable healthy diets for all.  相似文献

In 2014, the Rome Declaration on Nutrition recognized food system sustainability as a key condition to ensure adequate nutrition and access to healthy diets for all. Five years later, the evidence has never been more clear: despite a series of positive outcomes, our current food systems have increasingly generated severe environmental, social, and health-related costs. Many of the most severe health impacts of food systems can be traced back to the core practices of industrial food and farming systems (e.g. input-intensive agriculture; intensive livestock production; mass marketing of highly processed foods; deregulated global commodity chains). Yet alternatives exist.This article provides an overview of the key impacts generated by current food systems on human and environmental health, with an emphasis on their effects in the region of Europe and Central Asia. It then brings together evidence on how diversified agroecological systems can play a key role in meeting health and nutrition goals, while also addressing the environmental, social, and economic challenges created by current systems. Ultimately, the article sheds light on how to break away from the underlying drivers keeping current systems in place, and suggests how more diversified systems can effectively be promoted through systemic, multi-sector, and integrated policy approaches to ensure healthy diets for all.  相似文献

A major barrier to achieving sustainable diets is the lack of clearly defined and agreed upon intervention points that will positively influence multiple sectors of the food system. There is an urgent need to understand what policy approaches and interventions will most effectively enhance the sustainability of diets in rapidly urbanizing low- and middle-income countries. To address this need, this work combines the input of diverse stakeholders and analysis of existing datasets to develop a conceptual framework for sustainable diets that is locally relevant to Vietnam using a process that is generalizable to other developing countries. The resulting framework includes 235 unique, measurable indicators within eight domains: (1) food production, (2) food processing and distribution, (3) food loss and waste, (4) food access and consumption, (5) food and water safety, (6) nutrition, (7) sociopolitical context, and (8) environmental impact. This conceptual framework was employed in a participatory workshop that brought together 50 Vietnamese stakeholders from diverse areas of expertise to identify and prioritize specific metrics for measuring sustainable diets. Based on the results of the stakeholder workshop, expert interviews, and characterized datasets, a comprehensive set of minimum metrics for each domain was produced and key leverage points that are likely to have an impact across multiple sectors were identified. These leverage points include food quality and safety, agricultural chemical usage, food waste, and water management. The analysis is expected to contribute to evidence-based policymaking in Vietnam to cultivate more sustainable diets.  相似文献

Consumption of food away from home is rapidly growing across the developing world, and will continue to do so as GDP per person grows and food systems evolve. Surprisingly, the majority of household surveys have not kept up with its pace and still collect limited information on it. The implications for poverty and inequality measurement are far from clear, and the direction of the impact cannot be established a priori. This paper exploits rich data on food away from home collected as part of the National Household Survey in Peru, to shed light on the extent to which welfare measures differ depending on whether food away from home is accounted for or not. Peru is a relevant context, with the average Peruvian household spending over a quarter of their food budget on food away from home since 2010. The analysis indicates that failure to account for this consumption has important implications for poverty and inequality measures as well as the understanding of who the poor are. First, accounting for food away from home results in extreme poverty rates that are 18 percent higher and moderate poverty rates that are 16 percent lower. These results are also consistent, in fact more pronounced, with poverty gap and severity measures. Second, consumption inequality measured by the Gini coefficient decreases by 1.3 points when food away from home is included – a significant reduction. Finally, the inclusion of food away from home results in a reclassification of households across poor/non-poor status – 20 percent of the poor are different, resulting in small but significant differences in the profile of the poor in dimensions such as demographics, education, and labor market characteristics. Taken together, the results indicate that a serious rethinking of how to deal with the consumption of food away from home in measuring well-being is urgently needed to properly estimate and understand poverty around the world.  相似文献

In this paper we study the relationship between women’s empowerment in agriculture and their iron deficiency status in Maharashtra, India. This is the first time the Women’s Empowerment in Agriculture Index (WEAI) has been used in association with explicit measurement of medical biomarkers for women’s iron deficiency status. Using primary data for 960 women we find that the log odds of a poor iron status in women decline as women’s empowerment levels in agriculture improve. Further, this decline is seen in the presence of multiple dietary diversity measures (dietary diversity score, share of rice and wheat in the diet, total iron intake and iron intake from iron-rich food groups – all for 24-h and 30-day recalls) suggesting that in addition to dietary pathways women’s empowerment can play a role in addressing micronutrient deficiencies like those of iron in a vulnerable sub-group of the population. It also reinforces the need to move away from the ‘staple grain fundamentalism’ that has characterized agricultural policy in India, towards more nutrition-sensitive food systems.  相似文献

This article summarizes research and policy questions, and research methods and findings of four case studies of the impacts of the 1994 CFA franc devaluation in West Africa on urban food consumption. The case studies are household surveys from Burkina Faso, Côte d'Ivoire, Mali, and Senegal. The research showed, in general, that, comparing food consumption patterns after the devaluation with those before, that: (1) total cereal intake fell, especially for the poorest; (2) the intake of imported rice held steady; (3) the intake of domestic coarse grains (millet, maize, sorghum) did not rise, except for an increase in maize intake in Burkina Faso; (4) only in Mali was there a significant shift to domestic rice; (5) imported wheat intake dropped; (6) roots, tuber and plantain consumption did not receive a boost; (7) there was an alarming “de-diversification” of the diet, especially for the poorest with reductions in meat, edible oils, and vegetables/fruit, as well as imported milk; there was, however, some increase in domestic oils/butters consumption; (8) there was some “individualization” of consumption patterns with increased importance of the informal restaurant sector. The most striking results in the context of the policy debate are that cereal intake fell, and that the (expected) shift from imported rice to local coarse grains did not occur. The lack of such a shift is explainable in terms of the lackluster supply response of the coarse grain sectors, and the resilience of rice demand based on its convenience of processing and preparation for the urban consumer. These results together imply: (1) the economics and technology of agro-processing of coarse grains need to return to the center of the cereals debate in West Africa; (2) emphasis on the capacity of local coarse grain and domestic rice producers to respond to incentives needs to be increased.  相似文献

This paper determines the cropland use associated with the dietary patterns of 16 European countries and investigates sources of variation in land use between and within these countries. The analysis combines food availability data at the household level with country-specific land use data for food items. The household food availability data is obtained from a standardized and post-harmonized databank, developed in the Data Food Networking Project (DAFNE). The results show large differences between the land use of the 16 European countries, ranging from ±1500 m2 (Ireland) to ±3000 m2 (Malta) to supply an average person’s food demand. Major reasons for this divergence include disparities in total caloric food availability and in national yields. The composition of the diet is only a minor source of variation. Using food consumption data at the household level makes it also possible to look for sources of variation within countries. This paper investigates sources of variation within countries by examining the influence of education of the household head on land use associated with food consumption. The analysis shows that diets of people with only elementary education need on average 20% more land than diets of people with a higher education (2302 m2 and 1948 m2, respectively). The basis of this difference is the higher caloric availability for people with only an elementary education; the influence of differences in the composition of the diet is negligible. Variation in land use between countries is thus caused by the different agricultural productivities and caloric availabilities, and the major source of variation within countries is the caloric availability. The composition of the diet is only a minor source of variation, both between and within countries. The results implicate that highly educated people have a lower demand for land.  相似文献

This paper reviews estimates of food related greenhouse gas (GHG) emissions at the global, regional and national levels, highlighting both GHG-intensive stages in the food chain, and GHG-intensive food types. It examines approaches that have been proposed for mitigating emissions at each stage in the chain and looks at how these sit within wider discussions of sustainability. It finds that efficiency-focused technological measures, while important, may not only be insufficient in reducing GHGs to the level required but may also give rise to other environmental and ethical concerns. It gives evidence showing that in addition to technological mitigation it will also be necessary to shift patterns of consumption, and in particular away from diets rich in GHG-intensive meat and dairy foods. This will be necessary not just in the developed but also, in the longer term, in the developing world. This move, while potentially beneficial for food secure, wealthier populations, raises potentially serious nutritional questions for the world’s poorest. A priority for decision makers is to develop policies that explicitly seek to integrate agricultural, environmental and nutritional objectives.  相似文献

The member countries of the World Health Organization (WHO) have recently endorsed its global strategy on diet, physical activity and health. The strategy emphasises the need to limit the consumption of saturated fats and trans-fatty acids, salt and sugars, and to increase consumption of fruits and vegetables in order to combat the growing burden of non-communicable diseases. This paper attempts a broad quantitative assessment of the consumption impacts of these norms in OECD countries using a mathematical programming approach. We find that adherence to the WHO norms would involve a significant decrease in the consumption of vegetable oils (30%), dairy products (28%), sugar (24%), animal fats (30%) and meat (pig meat, 13.5%, mutton and goat 14.5%) and a significant increase in the human consumption of cereals (31%), fruits (25%) and vegetables (21%).  相似文献

Criteria for assessing the adequacy of a national average diet are proposed, and the global average cereal production per capita needed to provide an adequate average diet is calculated. The technical feasibility of maintaining global food production per capita up to the year 2050 is assessed. The required input of nitrogen fertilizer is estimated and the water supply in relation to crop evapotranspiration is discussed. It is shown that maintenance of the present global cereal production per capita would be accompanied by a moderate increase in grain consumption per capita in the less-developed countries, but that this will involve a major increase in the net import of grain from the more-developed countries. Achievement of a satisfactory average diet in the less-developed countries as a whole cannot be achieved until the population of this group of countries has declined to a level substantially below its future peak.  相似文献

Food assistance programmes in Micronesia have been blamed for creating disincentives to agriculture and nutritionally adverse dietary habits. In 1982 a USDA commodity programme in the Northern Mariana Islands was replaced by the Nutrition Assistance Program (NAP), which required that at least 25% of food coupons be used for the purchase of local foods. Consumption of local fish and bread increased, but consumption of local fruits and vegetables declined among NAP participants. Although targeted coupons did not reverse the trend towards imported foods, the bakery and fishery endeavours indicate that improved marketing can be coupled with food stamps to increase local food production and consumption.  相似文献

Given the inseparable environmental and health impact of dietary habits, integrating health and sustainability goals has become a highly topical issue in policy development and communication to encourage consumers to adopt healthier and more sustainable diets. Increasing evidence indicates that it is possible to develop diets that are both environmentally sustainable and healthy, but their potential success largely depends on consumers’ willingness and ability to change their behavior. This study investigates consumer perceptions of the match, or mismatch, between healthy and sustainable diets, and gives insight into consumers’ motivation to eat healthily and sustainably, as measured by involvement. Data were collected in Spring 2014 through a cross-sectional quantitative online survey with samples representative for age, gender and region in four European Union (EU) countries (United Kingdom, Germany, Belgium, and the Netherlands) (n = 2783). The images of a healthy diet, a sustainable diet and a plant-based diet were found to be highly compatible based on a strongly observed match between European consumers’ perceptions of these concepts. Half of the participants were highly involved in healthy eating and one third in both healthy and sustainable eating. Informational food policy actions targeting both healthy and sustainable food consumption behavior are recommended to address issues relevant to the target segments, taking into account their levels of involvement. Increasing consumers’ motivation and involvement in health and sustainability emerges as a key trigger for increasing healthy and sustainable eating.  相似文献

Encouraging consumers to shift their diets towards a lower meat/lower calorie alternative has been the focus of food and health policies across the world. The economic impacts of such changes on regions have been less widely examined, but are likely to be significant, especially where agricultural and food production activities are important for the region. In this study we use a multi-sectoral modelling framework to examine the environmental and economic impacts of such a dietary change, and illustrate this using a detailed model for Scotland. We find that if household food and drink consumption follows healthy eating guidelines, it would reduce both Scotland’s “footprint” and “territorial” emissions, and yet may be associated with positive economic impacts, generating a “double dividend” for both the environment and the economy. The economic impact however depends critically upon how households use the income previously spent on higher meat/higher calorie diets. Furthermore, the likely (but not modelled) benefits to health suggest the potential for a “triple dividend”.  相似文献

Diet quality is closely linked to child growth and development, especially among infants aged 6–23 months who need to complement breastmilk with the gradual introduction of nutrient-rich solid foods. This paper links Demographic and Health Survey data on infant feeding to household and environmental factors for 76,641 children in 42 low- and middle-income countries surveyed in 2006–2013, providing novel stylized facts about diets in early childhood. Multivariate regressions examine the associations of household socioeconomic characteristics and community level indicators of climate and infrastructure with dietary diversity scores (DDS). Results show strong support for an infant-feeding version of Bennett's Law, as wealthier households introduce more diverse foods at earlier ages, with additional positive effects of parental education, local infrastructure and more temperate agro-climatic conditions. Associations with consumption of specific nutrient-dense foods are less consistent. Our findings imply that while income growth is indeed an important driver of diversification, there are strong grounds to also invest heavily in women’s education and food environments to improve diet quality, while addressing the impacts of climate change on livelihoods and food systems. These results reveal systematic patterns in how first foods vary across developing countries, pointing to new opportunities for research towards nutrition-smart policies to improve children’s diets.  相似文献

An OECD report on Food Marketing and Economics stated in 1970 that ‘the basic direction of development … is towards a food industry dominated by a limited number of large, efficient, dynamic, market oriented companies’. This is certainly so. In the UK from one to three companies already account for from 60 to 96% of the sales of a wide range of processed foods (biscuits, breakfast cereals, bread, frozen fish, frozen vegetables, ice cream, margarine, potato crisps, sugar, tea, tinned fruit and tinned soups). Out of £362 million spent on advertising in 1973, £88 million was spent on food, more than on any other product category. Undoubtedly the food industry is influencing to an increasing extent what people eat, and their nutrition. An extensive report on the status of the UK food industry and many of its sectors, British Food Profile1, was released in 1978. The report is discussed below.  相似文献

The impact of providing food assistance in kind (via food, stamps, or restricted debit cards) vs. cash has long been a subject of debate. Prior efforts to causally identify the effects of the two types of transfers have been hindered by concerns over non-random selection into assistance programs, misreporting of program benefits, and identification of inframarginal households who, theoretically, should treat cash and in-kind transfers identically. This paper reports the results of an economic experiment designed to cleanly test some conceptual issues associated with in-kind vs. cash giving in a lunchroom meal setting. Given current debates about the healthiness of food assistance recipients’ diets, we also consider the impacts of placing restrictions on in-kind transfers that either prohibit soda purchases with the transfer or require the transfer be spent on fruits and vegetables. Overall, we find that, as theory predicts, in-kind transfers have the same effect on food expenditures as an unrestricted cash transfer for inframarginal consumers, and for extramarginal consumers, food expenditures are higher for in-kind than cash transfers. Participants also respond to the fruit and vegetable restriction as theory would predict. However, in contrast to the theoretical prediction, the soda restriction reduces soda expenditures for more than half the inframarginal consumers.  相似文献

Within a context of delivering food security into the future, dietary guidelines are being reframed, corporations are replacing unsustainable products, and consumers are being encouraged to become ecological citizens. While there is a growing literature on the food practices of ‘alternative’ consumers, ‘mainstream’ consumers are less well understood. This paper describes qualitative research undertaken in a socio-economically disadvantaged area of Sydney, Australia, which aimed to uncover consumer views towards sustainable and healthy diets. Most participants indicated a discrepancy between their desired and actual behaviours: while they want to support Australian, or local, food producers they gravitate towards cheap and tasty food from ‘anywhere’; and while they associate nutritious food with fresh food, they will buy processed foods which can be less expensive, appeal to children and are prone to less waste. Reflecting mainstream Australian political culture, participants were compromising household food budgets in order to pursue a socially acceptable standard of living (including decent housing, car-reliance). They were also incorporating the pleasure and desires of family members as part of ‘the moral arts of everyday life’. Using social theories of consumption and practice sociology we argue that food choices and practices – easy or not – need to be interpreted as part of the role that consumption plays in political citizenship and moral subjectivity. In the Western Sydney context, food practices are essentially household budget and family nourishment practices rather than nutrition and sustainability practices; a position which is not addressed in the government’s new food policies or wage determination processes.  相似文献
