The current research examines the importance of restaurant attributes as rated by customers dining in a casual-style restaurant located in a medium-sized city in the Southeast United States. Previous research and the models used to measure customer perceptions of restaurant attributes were reviewed. The assessment instrument chosen for the current study was adapted from DinEX, developed by Antun, Frash, Costen, and Runyan (2010). A total of 92 customers completed the survey over a 10-day period in late August and early September of 2011. Results showed that customers rate food and service attributes as most important when dining out. Attributes related to atmosphere received moderate importance ratings. In using a confirmatory factor analysis, six latent variables emerged: social connectedness, service quality, atmosphere, food quality, healthfulness, and food value. The only statistically significant differences between the factors related to the demographic variables were that females rated the healthfulness of the food options as more important than males, and dinner customers rated the food value as more important than the lunch customers. Implications for restaurant operators and suggestions for further research are discussed.  相似文献

The literature on ethnic theme restaurants has already shown that patrons of such restaurants often wish to experience authentic ethnic culture, and customer satisfaction correlates with authenticity. This study examines the relationship between importance and performance of perceptions of authentic dining experiences in ethnic theme restaurants, and attempts to verify the influence of authentic dining experiences on repurchase intention in ethnic theme restaurants. After designing questionnaire content and sampling, this study obtained 538 samples. The analytical results show that authentic dining experiences effectively indicate customer repurchase intention. This study thus concludes that to attract more customers, ethnic theme restaurants should improve their service, settings, and food to provide customers a more authentic dining experience.  相似文献

A growing number of food trucks differentiate themselves in the competitive market by serving ethnic foods. The purpose of the study was to investigate the effect of customers’ authenticity and quality perceptions of ethnic food trucks on their memorable dining experience (MDE) and, consequently, word of mouth (WOM) while considering customers’ perceived risk. Data were collected from 540 customers who had dined at ethnic food trucks in the U.S. Structural equation modeling and hierarchical regression were employed to test the proposed hypotheses. The results indicated that authenticity perceptions influence quality perceptions and dining satisfaction directly, and MDE indirectly through dining satisfaction. Moreover, dining satisfaction affects WOM directly as well as indirectly through MDE. Among the three dimensions of perceived risk, hygienic risk mitigates both of the relationships between authenticity perceptions and dining satisfaction as well as between quality perceptions and dining satisfaction. Implications and suggestions for future research were discussed.  相似文献

This research explores how food experiential quality of consumers affects their overall dining satisfaction. Drawing on negative bias theory, we propose a nonlinear relationship between food experiential quality and customer dining satisfaction. Moreover, we investigate how restaurant price moderates the nonlinear relationship between food experiential quality and customer dining satisfaction. Results of the threshold model using 10,950 online reviews of 219 restaurants on Dianping.com provide support for the proposed hypotheses. The results suggest that a curvilinear relationship is found between food experiential quality dining satisfaction, and the turning points of nonlinear returns decreases for restaurants that belong to high-priced groups. Theoretically, our findings contribute to the existing literature by considering the nonlinear effect of food experiential quality on customer dining satisfaction in the hospitality area through the lens of negative bias, as well as considering the boundary condition. Practically, our findings suggest that restaurant managements can improve customer dining satisfaction through focusing on the food experiential quality of their customers and enhancing their response to customers who have low-level food experiential quality. In addition, if the restaurant price is high, restaurant managers should provide high-level of food experiential quality.  相似文献

The objectives of the study were to investigate the relative importance of institutional DINESERV factors (i.e., food quality, atmosphere, service quality, convenience, and price and value) that affect customer satisfaction in the university dining facilities and to examine the influence of customer satisfaction on return intention and word-of-mouth endorsement. A web survey questionnaire was distributed to 4659 students at a public university in the Midwest from May 10–24 in 2005. Factor analysis, ANOVA, correlation analysis, and multiple regression analyses were used to analyze the data. The findings showed that all Institutional DINESERV Dimensions had a significant positive effect on overall customer satisfaction and revisit intention. Improving customer satisfaction, which results in increased return intention and positive word-of-mouth endorsement in university foodservice establishments, will in turn not only strengthen customer loyalty, but also improve the dining facility's reputation and generate greater revenue.  相似文献

Food quality and employee task performance have been demonstrated to positively influence customer evaluations of restaurant dining experience. This study extends previous research by incorporating customer affective responses to examine the mediating processes underlying the relationships between customer perceptions of task performance/food quality and perceived value. The moderating influences of employee hospitality and entertainment cues on the relationships between customer perceptions of task performance/food quality and their affective responses were also examined. Results from surveying 308 customers of full-service restaurants showed that customer affective responses mediate the relationships between task performance/food quality and perceived value. The results also indicated that the relationship between food quality and affective responses increases with employee hospitability. However, employee hospitability negatively moderates the relationship between task performance and affective responses. Additionally, strong entertainment cues positively reinforce the relationship between task performance and affective responses, but do not significantly affect the relationship between food quality and affective responses.  相似文献

This study develops a multilevel framework that connects customer-to-customer (C2C) interaction quality to brand attachment through customer experience. Two food traits—uniqueness and taste—and service quality are posited to play different roles in this link. This research contributes to the literature on the effects of food traits and service on the experience creation process at upscale restaurants. By including both objective measures from user-generated ratings and subjective measures from customer evaluations of restaurant dining, this research sheds new light on the cross-level direct and moderating effects on the experience creation process, and thus answers the question of when and how this process is contingent on food traits and service of different dining outings. It further contributes to the brand attachment literature by revealing the cross-level moderated mediating effect of customer experience on customer emotional connection to a restaurant brand.  相似文献

This case study assesses the asymmetric relationship between the relative importance of service quality attributes and overall customer satisfaction in Korean casino settings, using impact-range performance analysis (IRPA) and impact asymmetry analysis (IAA). Results validated the rigor of IRPA and IAA over importance–performance analysis (IPA) in identifying key determining attributes of customer satisfaction/dissatisfaction among various casino service quality attributes based on three-factor theory. The theoretical and practical implications of this study’s findings are included to enrich both academicians’ and casino industry professionals’ understanding of customers’ perceptions of and attitudes towards casinos, and the development of a marketing strategy.  相似文献

COVID-19 pandemic negatively affected the restaurant industry and reopening provides restaurants an opportunity to survive this crisis. This study examined the interplay of perceived importance of preventive measures, dining involvement, brand trust, and customers’ intention to dine out at American Chinese restaurants during the reopening period. Additionally, the study investigated the moderating role of country-of-origin (COO) effect on these relationships. 296 U.S. restaurant customers recruited via a market research company completed the online survey. Structural equation modeling was used for data analyses. The results indicated that dining involvement had a direct positive effect on customers’ intention to dine out. Moreover, both perceived importance of preventive measures and dining involvement could enhance customers’ intention to dine out indirectly via brand trust. Positive COO effect moderated the relationship between perceived importance of preventive measures and brand trust. The study provided significant implications for restaurant operators in the U.S during the reopening period.  相似文献

This is the first study to explore the connection between Australian residents’ satisfaction with Korean cuisine, the various characteristics of the restaurant experience, and Australians’ intention to visit Korea. Data was collected from customers of 16 Korean restaurants in the state of Queensland, Australia. While four factors (facility, menu, service, and food) were derived as selection attributes, menu factors had the most positive effect on customer satisfaction. The study found a positive correlation between satisfaction with local Korean food and the propensity of diners to think about visiting Korea. The results of this study can be used to enhance competitiveness and tourist marketing for Korea. The results reported here may have a broader application to provide effective managerial and marketing information to many other ethnic restaurants in Australia and beyond.  相似文献

This study empirically examined not only the relationship between perceived quality and satisfaction/loyalty, but also the role of customer perceptions of atmospherics in an ethnic restaurant segment. Specifically, this study, using hierarchical regression analyses, investigated the direct effects of service quality and food quality on customer satisfaction and loyalty as well as the moderating effect of the perception of atmospherics, in Korean restaurants. As expected, this study showed that service and food quality have positive and significant effects on customer satisfaction and loyalty. This suggested that, similar to other restaurant segments, employee service and food are of great importance for ethnic restaurants as well. Verifying the moderating role of atmospherics, however, this study found that good employee service can be more effective for increasing the satisfaction and loyalty of customers with a low perception of the atmospherics compared to those with a higher perception. Further, providing quality food is particularly critical for creating customer satisfaction in ethnic restaurants where atmospherics are not satisfactory. 同顾客与员工、顾客与服务环境之间的互动研究相比,服务接触中顾客间互动的研究明显匮乏,这也逐渐成为了服务接触理论进一步深化研究的关键领域。文章基于顾客体验的视角,构建并实证检验了游客间互动对游客再惠顾意愿影响的概念模型,发现了游客间互动的4个维度在影响游客体验价值各层面上存在的差异性以及体验价值的不同维度在游客间互动对再惠顾意愿影响中的不同中介作用:礼仪违背、友好交谈对情感性、认知性、社会性体验价值有显著影响,并间接影响游客的再惠顾意愿;一方面干扰和争执对功能性、情感性体验价值有显著的负向影响,建议与帮助对体验价值的4个维度有显著正向影响,进而间接影响游客的再惠顾意愿,另一方面干扰与争执对再惠顾意愿有直接的负向影响,建议与帮助对再惠顾意愿有直接正向影响作用。此外,有效辨识出各人口统计变量的不同水平对各研究变量影响的差异。这对于旅游企业开展良好的顾客关系管理具有重大的指导意义和价值。  相似文献

The current study examines the influence of unfamiliar food-related attributes (i.e., ingredients and food names) and stories about food origins on consumers’ perceptions of authenticity and their purchase intentions. The results show that unfamiliar ingredients, unique food names, and stories about food origins increase consumers’ perceptions of authenticity. In ethnic restaurants, authenticity has been emphasized as a critical factor for ensuring customer satisfaction and purchase intentions. The mediating role of customers’ perceptions of authenticity is confirmed in the current study. The findings of the current study suggest that the management of Chinese restaurants should develop unique food names and stories about a dish’s origin, as these are pivotal elements contributing to customers’ perceptions of authenticity and purchase intention.  相似文献

This study examined how individual health values influence interest in healthy foods, positive outcome expectations, hedonic expectations, and behavior intentions. A total of 1188 valid questionnaires were collected from customers who had consumed healthy menu items at casual dining restaurants. The results indicated that health value was the key element that inspired customer interest in healthy eating and aroused hedonic and positive outcome expectations, which in turn enhanced intentions to purchase healthy food items. Restaurant managers are advised to establish creative marketing strategies to motivate customer interest in healthy menu items and emphasize benefits of their healthy food items. Future studies can extend the scope of research by examining differences in geographical areas or demographic profiles.  相似文献

This study aims to examine whether the presence of an organic food menu can positively influence diners’ decision-making. A 3 (restaurant segment: quick service vs. casual dining vs. fine dining) by 2 (price discrepancy between competing restaurants: small vs. large) scenario-based experiment was conducted with 405 U.S. consumers. MANCOVA results indicate that using organic ingredients offers a greater advantage for the quick-service segment regarding perceived food quality, attitudes towards the restaurant, and willingness to select, compared to casual and fine dining segments. The magnitude of a premium price of organic ingredients negatively influences such advantage in the process of consumers’ decision-making. When a large (vs. small) premium price is charged for using organic ingredients, customers’ preferences for the restaurant (over its rival) significantly drops to such an extent that customers are more willing to choose the competitor (i.e., rival restaurant with a conventional menu). As many readers struggle with massive textual information on review websites, developing optimized recommender systems that assist readers in identifying relevant reviews is critical. The present study aims to explore and predict the relationship between a reviewer’s evaluation of distinct attributes (i.e., importance and sentiment of a restaurant aspect)2 and overall satisfaction (i.e., generic numerical rating of a restaurant). Latent Aspect Rating Analysis is modified to achieve the goal. The study identifies five restaurant attributes: food & drinks, customer service, dining atmosphere, restaurant value, and location. Restaurant value contributes most from the importance perspective and food & drinks contributes most from the sentiment perspective. Restaurant value ranks the first as the overall satisfaction of attributes (i.e., combination of importance and sentiment). Accordingly, the present study suggests a supplement of the “dynamic” recommender systems. This study offers scholars and practitioners a refined approach to analyze wealthy review content.  相似文献

This exploratory study expands the current literature on servicescapes by examining the total noise environment in restaurants and the impact of ambient noise levels and general restaurant attributes on customer satisfaction and loyalty behavior, defined as the customer's willingness to return to a restaurant and motivation to recommend it. The researchers surveyed guests at one casual dining restaurant in the Southwestern United States. The results showed that services, physical attributes, and quality of food and beverage had significant impact on overall satisfaction, overall atmosphere, and loyalty behaviors. Noise level factors such as effects of noise and appropriateness of noise levels, influenced overall satisfaction, but not loyalty behaviors.  相似文献

Many destination marketers have utilized gastronomy as a source of new products and activities to attract tourists. Despite the substantial rise in the Chinese outbound market, very little is known about how Chinese tourists evaluate their travel dining experiences. By using narrative analysis, this study examines attributes that may affect Chinese tourists' evaluation of their travel dining experiences. On-site participant observation and focus group interviews were conducted, respectively, with Mainland Chinese, Taiwanese, and Hong Kong group tourists, while they were on holiday in Australia. A total of 15 attributes were identified, which were classified under the following six categories: tourists' own food culture, the contextual factor of the dining experience, variety and diversity of food, perception of the destination, service encounter, and tour guide's performance. The respective implications of the attributes on travel dining experience are also discussed.  相似文献

The purpose of the current study is to assess the influence of employees’ perceived service climate on customers’ perceived service value and behavioral intention. Furthermore, the paper investigates the extent to which service quality mediates the relationship among employees’ perceived service climate, customers’ perceived service value, and behavioral intention. Data were collected from convenience samples of 400 customers and 375 hotel employees. The results of structural equation modeling indicated that: (1) employees’ perceived service climate has a positive and significant influence on service quality, customers’ perceived service value, and behavioral intention and (2) service quality has a positive and significant influence on customers’ perceived service value and behavioral intention. Additionally, this study revealed that the indirect effect of employees’ perceived service climate on customers’ perceived service value and behavioral intention through service quality is more than the direct effect of employees’ perceived service climate, customers’ perceived service value, and behavioral intention.  相似文献

Currently research investigating travel dining experience from a cross-cultural perspective was limited. This study aimed to compare the domestic Chinese and foreign English-speaking customers’ dining experience of Beijing Roast Duck, a specialty food representing the gastronomic identity of the local cuisine. By employing semantic network analysis of the online consumer reviews, the results identified three common dimensions perceived by both groups, including the food, the restaurant and the occasion for dining out, and the service encounter. However, the domestic and foreign customers differed in their orientation about the aspects of the service encounter that they cared about. They also showed substantial differences in their perception about value for money as well as the cultural and experiential nature of the meal. The study also attested to the utility of the semantic network analysis method to uncover the rich information contained in the vast user generated content online.  相似文献
