本文利用"习惯形成"(habit formation)假说来研究中国家庭食品消费行为的特征,并首次利用1989—2006年农村家庭微观面板数据进行实证分析,从而试图给出近年来农村居民储蓄率持续偏高、消费倾向持续偏低的一种新解释。对动态面板模型的系统广义矩估计结果显示,农村居民家庭的食品消费有显著的习惯形成效应,这一效应即使在考虑了家庭的"预防性动机"之后仍然是稳健的,并且它对消费的边际影响比预防性动机更为重要。但是本文估计出的"习惯形成"参数比用总量数据得到的习惯形成参数要小。  相似文献

国际食物消费启示与中国食物
缺口分析:基于历史数据

通过梳理美国、欧盟、日本、韩国和中国台湾的食物消费统计资料,本文发现食物消费存在四大特点,分别是在经济水平发达之前食品消费严重依赖本国(地区)农业自然资源禀赋、食物消费饱和状态广泛存在、班尼特法则和在外饮食常态化。另外,当人均GDP进入15 000美元~20 000美元区间后,食物消费趋于稳定或缓慢增长,粮食和肉类人均消费(包含水产品)均趋近于“双百”状态:口粮消费约100千克,肉类和水产品加总约100千克。通过考察中国内地的食物消费现状,本文发现2020年后中国内地的食物消费将趋于稳定或进入缓慢增长阶段,在肉类、植物油和食糖消费上还存在较大缺口。  相似文献

Impact of public distribution system (PDS) on poverty in rural India is established; however, how the households from different socio-economic backgrounds are procuring through PDS, relatively, needs study. With this objective, influence of factors like poverty status, family size, social group, religion, gender and occupation on probability of household incurring consumption expenditure through PDS has been studied by using unit level data of consumer expenditure survey of National Sample Survey Office (NSSO) and multinomial logistic regression technique. The study is restricted to food grains rice and wheat and reveals that probability of consumption, through PDS, of minorities, economically and socially backward classes are higher, in general.

This study provides an empirical analysis of the impact of changes in income distribution on food demand in China using data from China Health and Nutrition Survey. A new parametric form of an inverse demand system is introduced and estimated taking into account reported zero consumption. This new form is a natural extension of recent works that accommodate the incorporation of income distribution into the system and imposition of global regularity conditions in estimation. Our results generally indicate that the distribution of households across income groups is important in determining food demand in China and that a movement towards a more equal income distribution in China will stimulate the demand for vegetable, fruit, fish and eggs.  相似文献

Food security concern in China is also the world’s concern. Studies on food consumption in the past, however, often neglected the increasing food consumed away from home (FAFH). Drawn on a survey data recently conducted in nine cities by a week-long diary method, we found that FAFH in urban China accounts for a significant proportion of total food consumption, although its share varies by food category. With substantial expected income growth, overall FAFH consumption will likely continue to rise, but would be negatively affected by the rapid societal aging process, both in dining out probability and per capita consumption level. The main findings of this study have implications for food processing and service industries as well as for studies in food-related environmental issues.  相似文献

Depressive syndromes among the elderly have been recognized as important public health issues. This study contributes to this issue by investigating the causal effect of functional food consumption on depression among the elderly using a unique panel dataset of 1480 individuals drawn from a national representative survey of Taiwanese elderly in 1999, 2003 and 2007. In addition to estimating a standard individual fixed effect model, a random trend fixed effect model which allows for both unobserved individual-specific time invariant and variant factors is estimated. The results of the random trend model point to a significant and negative effect of functional food consumption on depression among the elderly. However, an insignificant effect is predicted by the standard fixed effect model. In addition to functional food consumption, living arrangement with children and engagement in the social activities of the elderly also significantly decrease the likelihood of the elderly becoming depressed.  相似文献

This paper investigates the determinants of pro-environmental consumption, focusing on the role of reference groups and routine behavior. We study the factors that explain whether or not people have installed residential solar energy equipment or have subscribed to green-electricity programs, and the factors that influence the intensity of buying organic food. In addition to demographic characteristics and environmental attitudes, we consider the following categories of determinants: economic and cognitive factors (income, estimated price premium, level of information on environmentally-friendly goods); consumption patterns of reference persons; own consumption patterns in the past. Using a unique data set from a survey conducted in the region of Hanover, Germany, we find the following: (1) Economic and cognitive factors are significant covariates of all three kinds of pro-environmental consumption. Their influence is greatest in the case of green electricity. (2) Consumption patterns of reference persons are significant covariates of all three kinds of pro-environmental consumption. Their influence is greatest in the case of organic food. (3) The intensity of buying organic food is greater the longer people have been consumers of these goods.  相似文献

本文通过我国31个省的城镇居民消费结构数据,利用扩展线性支出系统(ELES),分析了人口结构调整对我国居民消费结构的影响。研究结果表明:(1)随着老龄化程度的加深,社会总抚养系数的提高会增加人们基本生活支出;(2)从边际消费倾向来看,虽然未来我国居民消费结构升级表现为娱乐文化和教育等支出的提高,但是因老龄化引起的社会总负担系数的提高很可能对该部分的消费产生挤压;(3)家庭耐用品、交通通信和娱乐文化教育的收入弹性大于1,未来消费结构优化的重点也应当增加其贡献,提高我国居民的消费潜力。  相似文献

This article explores rural household food consumption behaviour in China using a large household data set from Jilin Province. Data are classified into four main food groups—grain, vegetable products, animal products and other foods. A household food demand system, incorporating four household characteristics, is estimated using an LA-AIDS model, assuming a three-stage budgeting procedure. Expenditure elasticities for a range of food groups are estimated, with a particular focus on animal products. The inclusion of household characteristics did not have a big impact on the elasticity values in any of the three stages of the budgeting process. The total expenditure elasticity for grain (Stage II) was 0.64, suggesting substantial future growth in household demand for fine grains such as rice and wheat, as per capita incomes continue to grow in rural areas. The highest conditional and total expenditure elasticity values were for the animal products (Stage II) group, 1.22 and 0.76, respectively. Within this group the elasticities were highest for the meat sub-group at 1.14 and 0.87, respectively, suggesting an almost proportionate increase in demand as household incomes grow. Added demand pressures from animal production will likely keep grain policy high on the political agenda.  相似文献

Most Americans need to consume more fruits, vegetables, and dairy products. This need is particularly acute among low‐income individuals. This study examines the cost‐effectiveness of two economic policies that use alternative policy levers available within the Supplemental Nutrition Assistance Program (formerly Food Stamp Program) to increase consumption of these under‐consumed foods. Data from three nationally representative surveys are used to estimate demand elasticities, marginal propensity to spend on food out of food stamp benefits, and consumption amount of and spending on under‐consumed foods among food stamp recipients. Results suggest that a 10% price subsidy would curtail consumption deficiencies by 4%–7% at an estimated cost of $734 million a year. When the same $734 million is used to finance food stamp benefits, consumption deficiencies are predicted to narrow by only 0.35%–0.40%. (JEL C34, D12, Q18)  相似文献

This study examines the relationships between exposure to food and beverage product television advertisements and consumption and obesity outcomes among youth. Individual‐level data on fast food and soft drink consumption and body mass index (BMI) for young adolescents from the Early Childhood Longitudinal Study, kindergarten cohort, (1998–1999) and adiposity measures for children from the US National Health and Nutrition Examination Survey (2003–2004) were combined with designated market area (DMA) Nielsen media advertising ratings data. To account for unobserved individual‐level and DMA‐level heterogeneity, various fixed‐ and random‐effects models were estimated. The results showed that exposure to soft drink and sugar‐sweetened beverage (SSB) advertisements is economically and statistically significantly associated with higher frequency of soft drink consumption among youth even after controlling for unobserved heterogeneity, with elasticity estimates ranging from 0.4 to 0.5. The association between fast food advertising exposure and fast food consumption disappeared once we controlled for unobservables. Exposure to cereal advertising was significantly associated with young adolescents' BMI percentile ranking, but exposures to fast food and soft drink advertisements were not. The results on adiposity outcomes revealed that children's exposure to cereal advertising was associated with both percent body fatness and percent trunk fatness; fast food advertising was significantly associated with percent trunk fatness and marginally significantly associated with percent body fatness; and exposure to SSB advertising was marginally significantly associated with percent body and trunk fatness. The study results suggest that continued monitoring of advertising is important and policy debates regarding the regulation of youth‐directed marketing are warranted.  相似文献

This study investigates the relationship between food consumption and economic development in Turkey and European Union countries. Differences in food diets are analysed by using data on per capita consumption in caloric terms based on the period from 1970 to 2000. The cluster analysis is employed to derive country grouping on the basis of similarities in dietary structure in the 1970 and 2000. Existence of a trend towards a common European diet is explored with Beta convergence. The empirical results show that per capita food consumption is becoming less responsive to changes in income and appears to be reaching a ceiling in the majority of EU countries and Turkey. However, the share of animal products in food consumption diet is low and income expenditure elasticity of animal products is higher with 0.84 values in Turkey than that in European countries in 2000. There are great differences in dietary structure between Turkey and the European Union. Differences also exist between European Union countries; however, despite these differences there is a general tendency for dietary structure to become increasingly similar across the majority of European Union countries. The result also supports the absence of a convergence towards a common diet if Turkey joins the European Union.  相似文献

In this paper we apply nonparametric methods in order to discuss some empirical aspects of household consumption behaviour. First, we study the differences in the consumption behaviour between household types. We find that, except for food, there are no clear significant differences. Secondly, we derive the functional form for the food Engel curve, using specification tests consistent in the direction of nonparametric alternatives. Finally, we use this specification to discuss the misleading conclusions that could be reached from a mechanic interpretation of the rejection of Hausman's test, when applied to test the exogeneity of expenditure. The data is obtained from the Spanish Expenditure Survey 1980–81 and 1990–91.  相似文献

This study investigates determinants of sustainable food consumer behaviour in Belgium. To gain a better insight in sustainable consumption, a study was conducted in which attitudes and behaviour as well as the role of individual characteristics like confidence and values related to sustainable products are analyzed. The focus of the analysis is on exploring the influence of determinants as hypothesised by the theory of planned behaviour (TPB) - attitudes, perceived behavioural control, social norms - on sustainable consumption intention in general, and specifically depending on consumer's perceived confidence and personal values. The empirical research builds on a survey with a sample of 456 young adults using a questionnaire and showing an advertisement for hypothetical sustainable dairy products. Stepwise multiple regression models showed that 50% of the variance in intention to consume sustainable dairy was explained by the combination of personal attitudes, perceived social influences, perceived consumer effectiveness and perceived availability. In addition, different levels of confidence and value orientation yield different strengths of the determinants. The findings yield public policy and marketing recommendations for stimulating sustainable food consumption among young adults.  相似文献

Agri-food sector is a crucially important part of the society, because it is a major factor affecting public health and welfare and it also contributes – directly and indirectly – both to the environment and to the national gross product and employment. Improving sustainability of the agri-food sector implies production of nutritionally better food by using fewer inputs and by reducing environmental burden.In reducing environmental burden, it is essential to restrict the material throughput, to identify the hot spots and direct the measures to them. Improving performance of the food sector requires that the benefits and inputs be quantified in an unambiguous way and that the inputs are estimated for the whole production chain. A comprehensive view of the whole system is necessary.Here, the material flow approach (MFA) has been used to describe the Finnish food flux. The quantitative numerical data have been derived from the farm models' data base, and the data have been adjusted so as to comply with the production and consumption statistics of Finland. Using the compiled data an extended input–output model has been constructed. The model allows for the evaluation of some of the economic and environmental consequences, when the structure of food production and the patterns of food consumption are changed. The consequences can be traced within agriculture, within the food sector as a whole, or at the level of the nation-wide economy. In combination with other information the model, thus, serves as a practical tool for planning.The paper at hand gives an overview of the data base and the basic calculation principles of the model. The usability of the model is demonstrated with results from modelling examples, in which the share of organic production or the share of vegetarian food in the average Finnish diet has been increased. The possibilities and restrictions of the approach as well as some of the needs for further development are discussed.The study is the first step in developing MFA methods to analyse and to monitor the material flows of the Finnish food flux. The results have been used also in compiling the Finnish physical input–output tables. The study, thus, contributes to the overall development of the materials flow accounting.  相似文献

Intellectual property piracy is widely believed, by authorities in both US industry and government, to be rampant in China. Because we lack evidence on the rate at which unpaid consumption displaces paid consumption, we know little about the size of the effect of pirate consumption on the volume of paid consumption. We provide direct evidence on both the volume of unpaid consumption and the rate of sales displacement for movies in China using two surveys administered in late 2008 and mid-2009. First, using a survey of Chinese college students’ movie consumption and an empirical approach parallel to a similar recent study of US college students, we find that three quarters of movie consumption is unpaid and that each instance of unpaid consumption displaces 0.14 paid consumption instances. Second, a survey of online Chinese consumers reveals similar patterns of paid and unpaid movie consumption but a displacement rate of roughly zero. We speculate on the small displacement rate finding relative to most of the piracy literature.  相似文献

Food consumption may account for upwards of 15% of U.S. per capita greenhouse gas emissions. Online carbon calculators can help consumers prioritize among dietary behaviors to minimize personal “carbon footprints,” leveraging against emissions-intensive industry practices. We reviewed the fitness of selected carbon calculators for measuring and communicating indirect GHG emissions from food consumption. Calculators were evaluated based on the scope of user behaviors accounted for, data sources, transparency of methods, consistency with prior data and effectiveness of communication. We found food consumption was under-represented (25%) among general environmental impact calculators (n = 83). We identified eight carbon calculators that accounted for food consumption and included U.S. users among the target audience. Among these, meat and dairy consumption was appropriately highlighted as the primary diet-related contributor to emissions. Opportunities exist to improve upon these tools, including: expanding the scope of behaviors included under calculations; improving communication, in part by emphasizing the ecological and public health co-benefits of less emissions-intensive diets; and adopting more robust, transparent methodologies, particularly where calculators produce questionable emissions estimates. Further, all calculators could benefit from more comprehensive data on the U.S. food system. These advancements may better equip these tools for effectively guiding audiences toward ecologically responsible dietary choices.  相似文献

文章基于与2015年度诺贝尔经济学奖得主迪顿的接近理想需求系统 AIDS 来源相同的EASI需求系统 ,采用CHNS调查数据 ,运用 EASI需求系统实证分析了各类食品价格上涨对不同收入等级城镇家庭消费与福利的影响 ,并比较了收入补贴与价格补贴的经济效果.研究发现:(1)我国城镇居民动物性食品消费支出占食品总支出的比重最大 ,其次是粮食和蔬菜 ,城镇居民的食品消费结构为"动物性食品+粮食+蔬菜" ,这说明动物性食品价格上涨对我国城镇居民日常膳食消费的影响相对较大.(2)粮食价格对困难户和最低收入家庭的福利影响最大 ,动物性食品价格对较低收入家庭的福利影响最大.(3)对低收入家庭而言 ,当动物性食品价格上涨时 ,收入补贴政策的效果优于价格补贴政策 ;当粮食价格上涨时 ,价格补贴政策的效果优于收入补贴政策.文章最后从生产、补贴政策和分配制度的角度提出了政策建议.  相似文献

The consumption of meat from wild animals (or bushmeat) occurs throughout Africa and highlights the conflict between two distinct development goals: food security and biodiversity conservation. Growing human populations throughout the greater Serengeti ecosystem rely heavily on bushmeat as a source of protein, which places pressure on migratory wildlife populations. This paper uses unique data from protein consumption surveys from 131 households over 34 months in a generalizable empirical framework to estimate price, cross-price, and expenditure elasticities of protein sources, and analyze the potential economic effects of policies to mitigate bushmeat hunting and consumption. Results suggest that: (1) directly increasing the price of bushmeat through enforcement or other policies to reduce supply will have the most direct and largest effect of bushmeat consumption; (2) increasing income increases bushmeat consumption as well as consumption of other meat sources; (3) if surrounding fisheries experience a negative shock, or collapse, this will lead to a dramatic increase in bushmeat consumption. Overall, these results strongly indicate that policies to reduce bushmeat hunting while maintaining food security must be considered in a broad and comprehensive framework.  相似文献
