ABSTRACT

Certain practices are excluded from markets, even though they may contribute to more sustainable systems. Other practices are integral to markets despite their highly detrimental impacts. This study investigates how alternative practices in the food sector became integrated into the market through normalisation processes. Using a qualitative approach, it examines the processes by which practices, including the recovery, distribution and consumption of food waste, went from being excluded from a mainstream food market to becoming normalised within it. Normalisation occurs as a result of retracing the biography of an object, building community, rituals and sacrifices. The author discusses theoretical and managerial implications.  相似文献

While consumers in affluent countries are ever hungry for alternatives to the ‘Big-Food’ mainstream, critical scholars have raised serious questions about the meaning of ‘alternative’ food products. I explore scholarly critiques of alternative food, and argue against a binary approach that sees foods as either alternative or not alternative. Instead, I suggest the utility of taking a multifaceted, ‘family of issues’ approach that is both reflexive and materialist. The case of ethical meat is used to explore the myriad, often contradictory ideals contained within consumers’ search for alternatives to mainstream market options. Three cautionary lessons are put forward. First, the goal of producing myriad consumer alternatives is significantly hampered by the competing, and often contradictory demands of market forces. Second, the discourse of food alternatives uses a ‘win-win’ logic suggesting that consumer sacrifice or change is unnecessary; the challenge of reshaping, and even downgrading consumer expectations is a necessary, but tremendous challenge facing consumer projects for ecological and social change. Third, the search for eco-social alternatives cannot simply make consumers feel good about their purchases, but must address the material realities and limitations of niche markets, and the need for structural reform to the food system.  相似文献

This paper explores the factors that drive consumer demands for alternative food consumption (AFC) options in western society (i.e. plant-based, organic and local diets) as means to achieve sustainability and a state of food well-being. Specifically, we propose a holistic framework in order to identify factors that influence its adoption: idiocentric (functional, ideological and experiential) and allocentric (situational, sociocultural and institutional). The proposed framework provides a basis for discussion on how marketing can contribute to the establishment of AFC in western society and contribute to sustainability and food-well-being among low socio-economic status (SES) consumers. Marketing and public policy implications of this framework are discussed in light of food consumption by low SES consumers, a target particularly vulnerable to flawed states of food well-being.  相似文献

An alternative food network (AFN) is a comprehensive concept that aims to capture new and socially innovative networks of consumers and producers in short supply chains. The objective of this study is to understand the relationship of users to AFNs using subjective well‐being (SWB), which is a relevant concept connected to eating and alternative consumption. This paper explores the engagement and nature of SWB by qualitative data collected through in‐depth interviews of new and experienced members of different AFNs. The results suggest that membership in AFNs is able to increase SWB, while certain characteristics of these networks can also decrease it. Differences according to the level of engagement have been found for the studied AFNs. The results contribute to a better understanding of consumers in alternative consumption networks and also indicate some of the limitations of this business model.  相似文献

ABSTRACT

Research on the education of international students sheds light on the difficulties of studying in a foreign language, but often underplays the opportunities provided by cultural diversity in the classroom. This study, prompted initially by the authors’ experiences of the contrasts between East/West learning styles, explores how education systems, language, and cultural orientations inform students’ approaches to learning. It explains how role reversal in the classroom can be implemented in higher (university) education settings, to generate deeper perspectives of meaning and understanding when teaching internationally diverse cohorts to show how imaginative postgraduate student engagement can not only bridge cultural differences, but also capitalize upon them. While the apparent polarization between East and West educational system stereotypes served as the catalyst for the search for effective pedagogies of engagement, the proposed methods were found to have universal application, clearly resonating with culturally diverse cohorts studying in the UK. The approach benefits international business teaching as cultural, national, and institutional perspectives become explicitly incorporated into course material, using the students’ own background, knowledge and experience as resources to add value.  相似文献

Fresh vegetables originating from alternative food networks (AFNs) are an increasingly popular choice all over the world. Being part of an AFN frequently redefines consumption and participation of family members in food‐related activities. Community Supported Agriculture (CSA) is a type of AFN, providing increased access to produce in a form of risk‐sharing model between farmers and consumers, which at the same time influences organization of household resources. Thus, not only the given member of a CSA, but also his/her spousal activities in household processes should be taken in account. It is clear that entering into CSA significantly affects lifestyles and frequently requires a great deal of adaptation, possibly leading to a crisis of whether to stay within the CSA or cease membership. The objective of this study was to reveal how spouses influence CSA membership. Using an explorative design, this study has identified three emerging patterns of spousal influence: coherent, integrative and neutral/antagonistic. The spousal influence on CSA membership may represent partner activities regarding food issues but also has an effect on food preparation and culinary choices at home. Our findings suggest that membership in CSA presents challenges and thus spousal support is crucial in the long term. As a consequence, spousal influence should be examined in relation to CSA participation. Inconveniences associated with CSA membership could be avoided by providing more information about the importance of spousal support.  相似文献

Following a brief review of the development and underlying purposes of the Fair Trade movement, the paper introduces perhaps the key issue for the UK Fair Trade movement currently: the mainstreaming of Fair Trade food products. The macromarketing literature, with its focus on sustainable consumption, ecocentrism and a consequent need to change the dominant social paradigm, is used as a framework for analysing the findings of an empirical study of this mainstreaming process involving interviews with and case study material from both Fair Trade organisations and the major supermarkets which have engaged with Fair Trade. The key question that the paper addresses is whether Fair Trade, particularly as it enters mainstream markets, provides an exemplar, from within the existing dominant social paradigm, of the kinds of actions that the macromarketing literature suggests are necessary to enable sustainable consumption. Implications for both the Fair Trade movement and for macromarketing are drawn out.  相似文献

In the context of some criticism about social responsibility education in business schools, the paper reports findings from a survey of CSR education (teaching and research) in Europe. It analyses the extent of CSR education, the different ways in which it is defined and the levels at which it is taught. The paper provides an account of the efforts that are being made to mainstream CSR teaching and of the teaching methods deployed. It considers drivers of CSR courses, particularly the historical role of motivated individuals and the anticipation of future success being dependent on more institutional drivers. Finally it considers main developments in CSR research both by business school faculty and PhD students, tomorrows researchers and the resources devoted to CSR research. The conclusion includes questions that arise and further research directions.  相似文献

In line with the Callonian approach in economic sociology, this paper introduces the concept of “fairtradization” to analyze the assemblages of human agents, material devices, and discourses through which the fair trade market is enacted. We argue that the retail setting is a key site for the enactment of particular versions of “fair trade,” focusing on a case study of the newly designed world shops in Flanders (Belgium). We reveal that the new shop design – aimed to address particular overflows resulting from the mainstreaming of fair trade – constitutes a multivocal shopping environment that enables four analytically distinct enactments of fair trade shopping. Our analytical approach opens up a more dynamic and complex understanding of fair trade beyond the unidirectional diagnosis of mainstreaming. More generally, it provides support for a radically performative view of consumption markets, pointing to the importance of retail settings as socio-material spaces for their enactment.  相似文献

Fair Trade is a global social movement that blends an alternative business model with explicit transformative objectives—a ‘business and campaign’. This paper explores the ways in which the movement challenges aspects of hegemony, including colonialism and free trade, to transform traditionally exploitative global production and trade relations. We present a case that the mainstreaming of Fair Trade into commercial distribution channels has not led to its principles being embedded in conventional trade. Instead, the dominant discourses of Fair Trade are currently assimilation, and appropriation or ‘clean‐wash’. Finally, we suggest ways in which elements of the movement have maintained their original counter‐hegemonic character, taking Fair Trade beyond the current discourse of individuals ‘shopping for a better world’ and into realms of collective decision making about consumption, and new producer/distributor relationships that challenge the distribution of value, through the ‘alternative high street’.  相似文献

The aim of this paper is to further develop the recent discourse surrounding the mainstreaming of fair trade (FT) products, particularly the strategic responses to fair trade by UK retailers. The research investigates the characteristics of a values‐driven retailer via the exemplar of Co‐operative Food (CF), a UK food retailer. The paper draws on a longitudinal case study (1999–2007) of CF and includes findings from a series of in‐depth semi‐structured interviews with key informants. The paper develops a set of fair trade characteristics for a values‐driven business in the UK retail sector. The paper also illustrates the importance of both social resources and ethical relationship marketing in ensuring the success of a FT retailing strategy. The values‐driven business model investigated in this paper demonstrates the importance of intangibles such as relationships and networks, particularly with upstream stakeholders such as cocoa farmers.  相似文献

This paper investigates the potential and actual contribution of corporate social responsibility (CSR) to gender equality in a framework of gender mainstreaming (GM). It introduces GM as combining technical systems (monitoring, reporting, evaluating) with political processes (women’s participation in decision-making) and considers the ways in which this is compatible with CSR agendas. It examines the inclusion of gender equality criteria within three related CSR tools: human capital management (HCM) reporting, CSR reporting guidelines, and socially responsible investment (SRI) criteria on employee and diversity issues. Although evidence is found of gender equality information being requested within several CSR related reporting frameworks, these requirements are mostly limited in scope, or remain optional elements. The nature and extent of relevant stakeholder opportunities are investigated to explain this unfulfilled potential.  相似文献

Canned food once represented an astonishingly innovative technology although it is now largely ignored in food discourse. As with so much in our lives, familiarity renders an object invisible. To explore the changing social significance of canned food, as the format developed from scientific curiosity to domestic ubiquity, this paper examines reports in The Scotsman newspaper from the late 1870s to the 1930s. Although canned foods were slow to break into the mass market they were little short of revolutionary in the way they brought new tastes from across the world to ordinary British households. A few cans in the larder provided simple storage and reassurance that the unexpected visitor could be fed – perhaps with something a little out of the ordinary. Against this background of quiet assimilation into our food culture, canned food has been controversial and provided an unwitting rehearsal for contemporary food narratives. In these old newspapers, it was somewhat surprising to find reports of disquiet that are recognizable in our own times – the convenience of canned food posed a threat to culinary skills; questions were raised about the nutritional value and safety of processed food; we had become excessively reliant on imported food and disregarded our own produce.  相似文献

The demand for kosher food has grown markedly during recent years, largely due to their perception as healthier, “safer,” more nutritionally enhanced value, and improved hygienic preparation conditions. This perception was verified by a survey conducted in Israel with 440 respondents. Both groups, younger and older age, secular and religious people, perceive the term kosher in a beneficial light, affecting the public view of food products as well as fast-food outlets. The survey, which was conducted in Israel, could be utilized as a pilot furnishing and facilitate a basis for further studies in other countries. The data highlights the vast market potential entailed in improving consumer perception of overall quality. Given the elevated perceived image of kosher food as “healthier” and of an enhanced quality, this study provides an essential marketing tool and detailed information in order to enable both manufacturers and retailers to expand the kosher segment and corner a larger share of the food market.  相似文献

In the past decade many food hazards appeared (i.e. bacteria of Escherichia coli, dioxins in pork). When information about food hazards is announced, many concerns about food product arise. As a result consumers stop buying the kind of food in which hazard appears, which makes losses to the food producer. In this study, the results of survey are presented. The survey was conducted among 712 respondents in the southeast Poland. Respondents were asked about the source of information they prefer to be informed about the food hazard, their reactions to food hazard and their ways to protect themselves from food hazards in case of food scares. On the basis of the results, it was found that the main sources of information they prefer are television (85.4% of indications) and the Internet (61.4% of indications). Moreover, when a food hazard appears and consumers are informed about this fact their first reaction is to check if they have bought this product, and 30% of respondents declared that they would not buy this product again. To make sure that a particular food product is safe, consumers buy products they know (70.5% respondents). The answers varied on the socio‐demographic characteristics of respondents.  相似文献

This paper critically examines the discourse surrounding fair trade mainstreaming, and discusses the potential avenues for the future of the social movement. The authors have a unique insight into the fair trade market having a combined experience of over 30 years in practice and 15 as fair trade scholars. The paper highlights a number of benefits of mainstreaming, not least the continued growth of the global fair trade market (tipped to top $7bn in 2012). However, the paper also highlights the negative consequences of mainstreaming on the long-term viability of fair trade as a credible ethical standard.  相似文献

对美国食品药品管理局(FDA)新近制订的((食品保护计划:国家食品供应综合保护战略>进行了解读和评析,介绍了该计划的出台背景、制订目的和适用范围,美国国家食品供应安全保护战略的三大要素,以及FDA推进食品保护计划的关键步骤和行动举措设想,分析了美国食品保护和进口食品监管的新动向.认为该计划对美国国家食品供应安全工作具有重要战略意义和深远历史意义,为完善美国食品安全体系,加强食品安全和食品防护工作提供了新思路,同时对我国食品保护特别是进口食品监管体系建设有一定的启示作用和借鉴意义,但FDA最终能否排除各种阻力成功地推行其行动计划,还存在许多不确定因素,即使要求扩大职能的相关法律修订提案获得国会批准,各种行动举措的全面实施也需一定的时日,而且其实际改革效果如何尚有待未来实践的检验.  相似文献

This article brings together insights on the global challenges of achieving a safe food system. Through looking at examples of food safety initiatives, relevant success factors are identified and then distilled into five essential elements for developing a robust and safe food system. While much of the work in this area looks at government initiatives, this article looks particularly at industry-led initiatives. The article includes a brief look at the importance of food in Chinese culture and the current structure of the Chinese food chain. Specific initiatives from other markets are reviewed, and the five elements are outlined.  相似文献
