In recent years, a significant amount of research has focussed on the analysis of consumers' aversion to new technologies in food production and processing. At the same time, research has shown that environmental attitudes may be related to purchasing behaviour of consumers. This paper presents the result of an investigation into Canadian attitudes towards nanotechnology, in general, and in applications in the food industry. The relationship between the food technology neophobia scale, environmental attitudes and nanotechnology is examined. The results suggest that food technology neophobia is significant in explaining attitudes towards nanotechnology, in general, and for food packaging and foods. Environmental attitudes are important in explaining respondents' attitudes towards nanotechnology in general but not in explaining attitudes towards nanotechnology in food packaging or food applications. Survey respondents' views of the role of science and technology in society (makes society worse or better off) are a more important determinant of attitudes towards nanotechnology than whether they had heard of nanotechnology prior to the survey.  相似文献

Nanotechnology shows great promise in a variety of applications with attractive economic and societal benefits. However, societal issues associated with nanotechnology are still a concern to the general public. While numerous technological advancements in nanotechnology have been achieved over the past decade, research into the broader societal issues of nanotechnology is still in its early phases. Based on the data from the Web of Science database, we applied the main path analysis, cluster analysis and text mining tools to explore the main research fronts and hierarchical structure of these societal issues. We found that the research studies fell into four categories: “General Toxicity and EHS (Environment, Health and Safety),” “Medicine and Cytotoxicity,” “Assessment and Regulation,” and “Environment and Ecotoxicity.” These research studies have disclosed much information about the potential effect of nanotechnology on public health and the environment. Relatively speaking, the studies on the assessment, regulation, preventive solutions, and environmental protection are just emerging. This finding indicates that an abundance of effort should be conducted on these emerging themes to maximize the benefits of nanotechnology while minimizing its potential harm. The implications for various parties in this domain are also presented.  相似文献

Although nanotechnologies are considered key technologies that can drive growth‐generating innovations in well‐saturated markets, worldwide investment in nanotechnologies has to date focused largely on technology‐related development programmes and little effort has been expended to research associated risks. As a result, even though prior discourses have sensitized western consumers to potential health‐related dangers, solid knowledge on, for example, the toxicological and eco‐toxicological risks and unintended side effects of nanotechnology are scarce. This paper therefore presents an overview of the current evidence on consumer knowledge and perceptions of nanotechnology and public engagement with it, with a focus on the US, the UK and Germany. Overall, even though survey data suggest that awareness of the term ‘nanotechnology’ has risen slightly, today's consumers are generally ill informed about its nature and its applications in consumer‐related products. Hence, based on our analysis of these data, we argue that early political engagement in the nanotechnology issue – for example, consumer policy options that support consumer interest in the marketing of ‘nanos’– would facilitate objective public discourse.  相似文献

Application of nanotechnology in the agrifood system and the rising number of nanofood products on the market are creating concerns among consumers and other stakeholders. These concerns and other potential barriers to the commercialization of agrifood nanotechnology products may limit the ability to capture its full potential. Understanding the emerging trends and the links between underlying values, expressed attitudes, and actual behaviors involving consumer acceptance of agrifood nanotechnology is important for governance, risk regulation, and the achievement of the full potential of agrifood nanotechnology. The purpose of the study was to use systems mapping to examine and analyze critical links between consumer acceptance of agrifood nanotechnology and factors such as trust, stakeholders, institutions, knowledge, and human environmental health risks. The study used a meta-analysis of the risk perception literature and solicited the opinions of experts to develop the systems map. Factors affecting consumer acceptance of agrifood nanotechnology are dynamic, complex, interactive, and interdependent, and consumer decisions to accept agrifood nanotechnology were found to be the results of complex feedback structure. This study suggests several consumer policy and programmatic levels in the system toward enhancing consumer acceptance of agrifood nanotechnology products where warranted.  相似文献

Nanotechnology has been a focal area of United States (US) Science and Technology policy since President Clinton’s administration. The Unites States is investing more funds in nanotechnology research and development than any other nation. The US National Laboratory community and Sandia National Laboratories in particular is responding to their country’s interest by generating exceptional Nano-based science and technology and focusing these efforts on national security and safety concerns. The United States and others are finding that the technological, safety, ethical, economic, and policy considerations centered on nanotechnology are complex and interconnected. Further, that tomorrow’s decision makers need an expanded educational background for them to make optimal choices concerning nanotechnology. Sandia National Laboratories responded to this need by initiating the National Institute for Nanotechnology Engineering (NINE). NINE is prototype educational effort designed to provide an exceptional foundation for the next generation of US nanotechnology decision makers.  相似文献

Certification labels have become a ubiquitous feature on food products across grocery store shelves. Although it is widely acknowledged that certified products often garner higher prices than their noncertified competition, less is known regarding what those price differences are based on, and what the personal, political, or ethical implications are for consumers. This research note argues for greater attention to the implications of certified food prices—which we conceptualize as the “consumer costs” of food certification. The paper discusses the theoretical linkages between food certifications and prices, and outlines the resulting consumer costs of which we are concerned. Through a pilot study in Salt Lake City, Utah, we investigate prices found on certified grocery store rice, and consider the causes and implications of the consumer costs of food certification.  相似文献

Abstract Higher food costs of a recommended diet may be a barrier to the improvement of unhealthy dietary habits. For the assessment of food costs for children, age-specific dietary intakes as well as average food prices must be known. This study is based on the measured food intake from a total of 1668 3-day weighed diet records of children aged from 5 months to 18 years and on recommended dietary intakes for these age groups. Based on the food costs related to the energy intake (Deutschmarks per megajoule; DM per MJ), the recommended diet using common food products does not incur higher costs than the current diet in all age groups. For infants, a diet using commercial infant food conforming to the restrictive German pesticide regulations incurs 50–150% higher food costs than the use of home-made meals. For children and adolescents, the nutritionally inferior quality of the current diet can be improved by a price-balanced interchange of foods, mainly by favouring plant foods instead of meat and confectionery.  相似文献

ABSTRACT

Care of older adults, including meal service to home-dwelling individuals is under pressure for improving its resource utilization. There is concern for potential meal quality impacts of this development – and subsequently for the users’ food intake and nutritional status. The objective of the study is to examine the municipalities’ additional costs of initiatives to improve quality in the supply of meal services for the home-dwelling elderly. An economic optimization model was developed and used to determine the cost-minimizing meal production scheme under alternative specifications regarding production methods, ingredient sourcing, composition of dishes, menu variation, and delivery frequency for each municipality in Denmark, while taking heterogeneity of users into account. Alternative modifications to the quality standards within these dimensions have been analyzed. Results suggest that except for higher delivery frequency, the additional costs of the considered quality improvements are modest (1–5% of the current cost), whereas daily delivery would increase the cost by 10–15% in several municipalities. Despite relatively low additional costs, Danish municipalities may lack the economic incentive to undertake such quality improvements, because the additional costs cannot be passed on to the users; thus, municipalities will need to finance these costs by savings on other municipal services.  相似文献

Federal intervention in food labeling is often proposed with the aim of achieving a social goal such as improving human health and safety, mitigating environmental hazards, averting international trade disputes, or supporting domestic agricultural and food manufacturing industries. Economic theory suggests, however, that mandatory food-labeling requirements are best suited to alleviating problems of asymmetric information and are rarely effective in redressing environmental or other spillovers associated with food production and consumption. Theory also suggests that the appropriate role for government in labeling depends on the type of information involved and the level and distribution of the costs and benefits of providing that information. This report traces the economic theory behind food labeling and presents three case studies in which the government has intervened in labeling and two examples in which government intervention has been proposed.  相似文献

The governance of nanotechnology seeks to limit its risks, without constraining opportunities. The literature on the effectiveness of approaches to governance has neglected approaches that impact directly on the behavior of a researcher. We analyze the effectiveness of legal regulations versus regulation via self-commitment. Then, we refine this model by analyzing competition and autonomy as key contingency factors. In the first step, qualitative interviews with nanotechnology researchers are conducted to reflect this model. In the second step, its empirical relevance is tested using a survey of 90 nanotech researchers. The results indicate that legal regulations, as well as self-commitment to an informal CoC reduce the scope of behavior. Finally, that competition and autonomy affect the relative strength of these governance factors.  相似文献

The purpose of this study was to study the relationship between social position and food tastes. The empirical data stem from a survey carried out in 1991 on 703 people aged 23–26 years. Bourdieu's theory of the relationship between social position and consumption was used as a theoretical framework. Bourdieu attacks the position often expressed by economists that consumers are similar in most respects except for their economic capital. He introduced the concept ‘cultural capital’ when describing different consumption practices and emphasizes the relationship between gender and food tastes. The social position variables in this study include economic and cultural capital, and gender. Participants were asked to evaluate exotic, healthy, filling, inexpensive and traditional food. Two dimensions of food orientations were observed: food as form and food as function. Economic capital was of importance concerning the costs of food and its filling functions. Groups rich in cultural capital were more interested in healthy and exotic food and less interested in filling food than those possessing less cultural capital. Women were more concerned about healthy food than men. Cultural capital had an independent effect when economic capital was constant.  相似文献

Researchers have shown that “cluster” is a more useful unit of analysis than “nation” in innovation studies. Clusters are characterized by interconnected organizations, shared resources and frequent knowledge flows. Within national boundaries, multiple clusters with different relative advantages may coexist, and exhibit very different innovation patterns. Yet, in studies of innovation in emerging economies, there remains little attention on cluster-based advantages, and how these advantages generate distinct patterns of innovation. To bridge this gap, this study analyzes the diffusion patterns of nanotechnology in two Chinese clusters—Beijing and Shanghai. With different relative advantages, the diffusion of nanotechnology has been oriented by different levels of “imitation” and “innovation” forces in the two Chinese clusters. This study applies the Bass Model to quantify imitation and innovation forces, and compare the resultant diffusion patterns of nanotechnology in the two clusters with other technologies. Supplementary qualitative data is also provided to show how Chinese scientists perceive their relative advantages in different clusters. Among other things, the findings suggest that scientists of emerging economies favor the learning-by-doing principle while utilizing external networks.  相似文献

The wide range of prices found in local food markets allows consumers to reduce the cost of food purchases through comparison shopping in two or more stores. Little is known, however, about how much can be saved by comparing prices for a whole market basket of food items. This paper presents evidence relating to the savings which can be realized through comparison shopping, and shows how savings can vary in markets of different sizes. Analysis of data on the prices of a market basket of food items in 15 local markets indicates that there are substantial differences in the dispersion of prices between small, medium and large food markets. The effect of these differences is to make the potential saving from comparison shopping much greater in large market areas, as compared with small ones. It is found that the dollar benefits of comparison shopping to consumers are likely to be greater than the costs of search in large shopping areas, but may not justify the costs in small and medium size areas.  相似文献

Controlling for differences in taxes and transportation costs, the Nordic Competition Authorities claims, in a report from 2005, that food prices are 11% higher in Sweden compared to the EU-15 countries. One explanation for this put forward in the report is the limited competition on this market which suggests there to be a potential for lower food prices. This paper focuses on distributional effects of a price decrease on food. Based on a simple model of household utility, the households demand for food is derived and estimated. Price and income elasticities for different income groups are then calculated based on these parameter estimates. Our results suggest that food is a normal good with an average income elasticity of approximately 0.18 and a price elasticity of 0.45. In addition, and of importance from a policy perspective, the results indicate the income elasticity to differ across income groups while price elasticities are constant.  相似文献

Food security is a key objective of agricultural and food policy in Tunisia. The 2007–2008 food crisis highlighted the negative impacts of price volatility on international markets both in terms of food insecurity and budget exposure. Tunisian food subsidy expenditures ranged from $180 million to $710 million in 2006–2010, so volatile world prices meant volatile subsidy costs. Moreover, cereal production in Tunisia still has much instability due to climate conditions, which also influences imports and, consequently, subsidy expenditures. This study applies a structural model to conduct stochastic analyses of trade and policy impacts on food security and budget expenditures in the Tunisian wheat market. The methodology disaggregates durum wheat and soft wheat markets and generates projections of import prices of durum wheat and soft wheat, using projections of world prices provided by the Food and Agricultural Policy Research Institute at University of Missouri (FAPRI-MU). The key innovation is the generated stochastic analyses of subsidy costs based on stochastic world price projections and stochastic domestic wheat yields based on historic yield variances. The analysis highlights the sensitivity of subsidy costs to world prices, volumes imported and domestic production, so that alternative policy tools can be considered.  相似文献

This paper examines environmental and health consciousness, as well as behavioural costs and their effects on the purchase of organic products. The consumption of organic products is regarded as an investment in individual health. The low‐cost hypothesis takes environmental attitudes and behavioural costs into account and is applied to organic food consumption. The survey conducted in three German cities in 2006 using self‐administered questionnaires (n = 521) does not investigate willingness to pay but rather self‐reported behaviour. The results of the regressions using the Heckman correction show that income does not affect the regularity of organic food consumption but that it does influence individual expenditure on organic food. Furthermore, there is an inverted u‐shaped relation between age and the purchase of organic products. Although health consciousness has a stronger association with organic food consumption than does environmental concern, the interaction between behavioural costs and health or environmental consciousness shows no effect. Thus, the low‐cost hypothesis is not supported.  相似文献
