Semi‐structured interviews are conducted to understand why consumers buy organic and/or local foods. The interview findings are consistent with existing theoretical frameworks for explaining environmentally significant behaviour: Value‐Belief‐Norm (VBN) theory and Attitude‐Behaviour‐Context (ABC) theory. Findings show that organic food shoppers in particular are motivated by values, beliefs and the creation of norms. However, the interviews indicate that knowledge (K), information seeking (IS) and habit (H) are also important in understanding why consumers choose organic and local foods. Incorporating demographics (D) as well, the resulting VBN‐ABC‐D‐K‐IS‐H or ‘Alphabet Theory’ is presented as a new framework to explain organic and local food purchase behaviour.  相似文献

This paper gives a deeper insight into consumer preferences for different food products of varying place of origin (i.e. local, Germany, neighboring country, non‐EU country) and production practices (i.e. organic vs. non‐organic). Consumer surveys combined with choice experiments were conducted with 641 consumers in eight German regions. Mixed logit models were estimated to draw conclusions on consumers’ preferences for different product attributes. The Stimulus‐Organism‐Response model was applied to theoretically frame the key findings. Results reveal that consumers prefer locally produced food to organic food. However, conclusions on consumers’ preferences should not be generalized as they vary depending on product type and consumers’ place of residence. When looking at the willingness‐to‐pay estimates for ‘organic’ and ‘local’ while distinguishing among consumers from different regions of Germany, results indicate that consumers living in rural areas and consumers living in the eastern part of Germany are less willing to pay a premium for organic products than urban consumers and consumers from other parts of Germany. As preferences for origin attributes and organic production vary between different food products and in different regions of Germany, market actors should design marketing activities accordingly. This study adds to the international research on consumers’ preferences for organic and/or local food. The results provide better insights into preference structures, as more than one product has been included and surveys were conducted in different regions across Germany.  相似文献

This paper presents a qualitative study of the trade‐offs made by organic food product consumers in the Chinese Metropolis of Shanghai. More precisely, this article deals with trade‐offs that consumers make between three types of products: (1) locally produced organic food products, (2) products that are locally and conventionally produced and (3) imported organic food products. We used a qualitative methodology using open questions and projective techniques and based on 23 individual interviews. Local organic products are the products best perceived by the Chinese interviewees, who think that organic food is beneficial to health and makes agriculture more environmentally friendly. The fact that food is produced locally is another positive argument for many interviewees who do not perceive any important differences between local and imported, more expensive, organic food products. Local and conventionally produced food products give rise to worries related to health and consumers buy them only because they are much cheaper than organic products. The reasons for choosing organic products are mostly related to health issues. Altruistic motives such as environmental concerns, food miles concerns or support for small producers are only emerging. This study mostly highlighted consumers' trade‐offs between different individual benefits, mainly health vs. economic benefits. However, some trade‐offs between altruistic (environmental concerns) and individual (economic) benefits are apparent, confirming emerging altruistic motives behind organic food consumption.  相似文献

One type of boundary rarely explored in international marketing are the cultural boundaries dividing Europe into regions with individual cultural backgrounds and different consumption patterns. This article explores information about such patterns of food consumption based on information from a database originating from a 1989 pan-European lifestyle survey comprising around 20 000 people in 15 European countries divided into 79 regions. The degree of homogeneity in the different nation-states and regions was analysed. The article contributes with new, specific empirical evidence about Europeans' food-related behaviour and attitudes and provides culture-based explanations and interpretations of observed differences and similarities. It is shown that nation/language boundaries still have a strong impact on European food cultures.  相似文献

The effects of the organic consumption are often contested with regard to the motives of consumers. Main goal of the paper is to present a theoretical framework that would encapsulate the motives of consumption and enable to identify the conditions for sustainable consumption. In particular, the paper seeks a new perspective that will not be tied to specific ways of life and that could bridge the complex, and often contradictory, motives of consumers. This framework is applied to map the values of organic food consumers in the Czech Republic with the use of the means‐end approach. The participants identified about 30 attributes related to organic food. Those attributes were divided into 14 basic categories. The study proves that Czech consumers mainly see organics as food ‘without chemicals’ that is favourable to health. At the same time, the identified hierarchical map of values reveals the great importance of the environmentally friendly approach, which results in the reduction of negative impacts and creates an opportunity to balance the relationship between society and nature. Some of the identified motives have pointed out a potential for merging together the egocentric and altruistic motives of ethical consumption in relation to the concept of ‘alternative hedonism’.  相似文献

Abstract

Benefit segmentation is a long-standing marketing approach that emphasises the ‘what’ and ‘how’ dimensions of consumer benefits; that is, what benefits consumers perceive in product/service consumption, and how such benefits are perceived. This research proposes a fresh time-based approach to benefit segmentation – namely, focusing on the ‘when’ element or when in time benefits take effect. Drawing upon a survey of UK consumers, it explains and discusses consumption motivations through examining antecedents of temporally dominated benefits in application to organic food. Specifically, the study investigates why some consumers predominantly seek present-based benefits vis-à-vis future-based benefits or vice versa in organic food purchase and consumption behaviour. Using correlation and regression analyses, the research findings establish significant associations of level of involvement, prior knowledge level, and product usage level, and some association of time orientation with the temporally emphasised consumption benefits consumers ultimately pursue. Overall, the research highlights the added contribution of a time perspective in a benefit segmentation approach which can assist marketers in understanding better and communicating more effectively with consumers through drawing up consumer profiles based on when in time their dominantly pursued benefit for an offering is perceived to take effect.  相似文献

The study adapts the theory of planned behaviour and proposes organic food-related attributes that constitute perceived behavioural control and individual attributes influence quality assessment and purchase intention. The study analyses these relationships separately for individuals who have purchased organic food and those who have not. Data were collected in two stages and conducted in both online and face-to-face formats. The findings show that surface food attributes in general have no significant influences on either quality assessment or purchase intention for both groups of consumers; whereas the attributes that are reflective of food safety and environment issues do. The latter explain additional variance in both quality assessment and purchase intention. Consumers’ purchase styles have significant moderation effects on product quality assessment and purchase intention in both groups. Implications are provided for researchers and practitioners to conclude the paper.  相似文献

The market for organic food products in industrial countries has changed significantly. Conventional grocery stores have entered this market in recent years and now present an alternative point of purchase to farmers’ markets and specialized health food shops. In Germany, the main newcomers in this field are the discount supermarkets. The question is whether the increased supply of organic food products leads to sustained effects on consumer behaviour. In other words, can a first‐time purchase of organic products at a discounter act as an ‘icebreaker’ and induce further purchases? This question is addressed here. A consumer survey (n = 231) indicates that an initial purchase of organic food in a discount store is indeed very likely to lead to follow‐up purchases. The link shown is statistically significant. Furthermore, customers are very interested in the availability of locally grown products, reliable information and easy comparison with non‐organic products. Important recommendations concerning organic product range, display and information, especially for retailers, can be deducted.  相似文献

There are many empirically determined influential factors known to control the organic food purchase behaviour. Of these known factors‐ health, product quality and concern for natural environmental degradation are seen as the major motives behind the organic food purchase. We, therefore, attempted to investigate the most prominent reason(s) for buying organic food, using the meta‐analyses of studies published during the last 25 years as our basis for conviction. Multilevel meta‐analyses was applied to the studies in review, in order to find the major reason(s) for the purchase of organic grocery, milk, fruits and vegetables. Although the three motivational factors mentioned above have been echoed throughout the history of organic food purchase research, the health factor has always topped the priority chart. The study in its overall empirical scale contributes to managerial implications and sets an agenda for future research.  相似文献

Due to growth and changing distribution channels for organic food in Germany, there is some concern that organic food is losing authenticity. Contrarily, local food production is seen as a new trend and is gaining market share. This article analyzes whether those alternative concepts of organic and local food production rather support or threaten each other in consumers’ choice. Results of a Bavarian survey, including a choice experiment for bread, beer, and milk on the attributes price, brand, local, and organic, are analyzed using a mixed logit model. Willingness-to-pay estimations confirm the importance of local production to the surveyed consumers, especially in interaction with organic production, leading to the conclusion that the two production methods can support each other in achieving price premiums. The estimated standard deviations show significant heterogeneity of the parameters for all three products for most attributes.  相似文献

This article examines why organic agriculture and food consumption developed more strongly in some countries than others between the 1970s and the 2000s. The focus is the limited growth of the New Zealand organic sector, which contrasts with countries such as Denmark which were similar in size and shared significant export agri-business sectors, but whose organic food sector became significantly larger. While the power of incumbent vested interests and unsupportive public policies emerge as major explanatory factors, the article argues that the long-established national image of New Zealand as a clean and green country may have been the major constraint.  相似文献

Retailers are increasingly concerned with the sustainability of their business. Food waste is a major sustainability issue: 90 million tons of food are wasted in the EU every year. The production of much of this waste is directly linked to the food chain operations, included those performed at the retail stage. The literature on food waste has mainly focused so far on the quantification of the total food lost along the supply chain. However, the stage of retail has long been neglected. This paper attempts to partly fill this research gap, with the aim of measuring the extent of food waste in retailing as well as its environmental, social and economic value. To do so, we analyse the results of a food waste recovery project held in an Italian supermarket and, by drawing on the data collected in this case study, we perform an evaluation of the value of the food wasted. The results show that the extent of food waste in retailing is certainly considerable, both in terms of quantity and economic value. Moreover, we found evidence that it may be greatly reduced, with a significant limitation of its environmental impact and, through the mechanism of recovery, it may even generate social benefits. Despite the many limitations of such preliminary research, the results provide useful information for retailers aiming to develop strategies against food waste in the context of improving the sustainability of their business.  相似文献

Food labels are created to reduce information asymmetry and help consumers make better food choices. However, the labels may have unanticipated effects, especially when they share common characteristics that may introduce confusion in making food choices. This study investigates how perceived relationships between different food labels may affect the price premiums of organic and local attributes for milk and fresh strawberries. Results show that the impacts of perception vary by product and label, and different food labels could positively affect price premiums on organic and local products. Results provide policy implications for better labeling and educational programs to reduce inadvertent confusion and improve consumer decision-making.  相似文献

Despite the increased documentation of consumers’ purchases of organic food products, the motivations for such purchases are relatively under‐researched. An individual’s choice of food products can be linked clearly to ethical stances, but ethical choices can also vary from individual to individual, from industry to industry and among countries. Consequently, this paper investigates the degree to which ethical beliefs influence Scottish consumer perceptions, beliefs, attitudes and purchasing decisions, with regard to organic dairy products. Consumer purchasing motivations are revealed as being self‐interest‐centred (i.e. better tasting, safer), rather than altruistic. Therefore, to achieve future market development, organic dairy producers cannot rely upon the minority of hardcore green consumers to sustain growth, but must aim to modify perceptions and attitudes of larger consumer segments by implementing educational marketing campaigns that reinforce the ethical, environmental and societal benefits of organic production.  相似文献

Marketing food directly from producers to consumers, so circumventing the ‘middlemen’ in the food supply chain, has many potential benefits. For consumers, direct marketing initiatives are providing people with locally grown, fresh, healthy and, in many cases, organic food at affordable prices. Through buying locally grown produce, consumers are giving their support to local producers as well as helping to revitalize rural economies. Producers benefit through retaining more of the value of their produce, which can help them survive through the current crisis in UK farming. There are also environmental benefits. Creating markets where people can buy produce from local farmers and growers reduces the distance that food travels between producers and consumers, which in turn decreases global environmental pollution. One direct marketing scheme – the farmers’ market – has proved to be particularly popular with local people, producers and the local councils, organizations and institutions who are involved in setting them up. This paper focuses on one such market, the Stour Valley Farmers' Market, which commenced trading on 20th June 1999. Customers who attended the first three of these monthly markets were interviewed to investigate the reasons for their attendance at the market, and their attitudes towards a number of food issues including organic and genetically modified food, local and seasonal food and concerns they may have over the way their food is produced. The research has shown that most customers visited the markets initially out of curiosity, although some attended specifically to buy healthy fresh foods. The vast majority of interviewees expressed a preference for food which is organically grown and free from genetic modification. Organic foods are generally perceived to be healthier and more flavoursome. When buying fresh foods, interviewees stated the importance of quality and freshness in their choice of produce.  相似文献

Previous research has mainly focused on consumers' environmental values and attitudes to explain green consumption. However, it has been neglected how situational factors like the way a consumer is affected by the impacts of environmental pollution influence environmental attitudes and the demand for organic food products. To fill this void, we firstly introduce a taxonomy of different types of factual concernment and perceived concern. Factual concernment describes the manner in which a person is affected by the negative consequences of environmental pollution, whereas perceived concern expresses an anxious sense of interest. Building on that taxonomy, an experimental study analyses how four types of factual concernment (direct vs. indirect; material vs. immaterial) influence consumers' perceived concerns (in terms of environmental and health concern) as well as the readiness to gather information, the readiness to make sacrifices, the willingness to pay higher prices and purchase intentions. The study reveals that particularly direct concernment fosters the consumption of organic food. However, the study did not find any differences between the influences of material and immaterial concernment on the organic food purchase decision.  相似文献

The German youth is relatively well informed about healthy eating, but does not act in accordance with this knowledge. It is also known from empirical studies that there is an association between lifestyles, food knowledge and the eating patterns of older teenagers. However, is there a similar correlation in regard to younger children? This article shows results of a study addressing this issue by empirically investigating leisure time activities, food intake and food knowledge. The study conducted with 907 children, on average 12 years old, out of an urban region in northwest Germany using a written questionnaire, implies that food patterns and food knowledge have to be improved because they are – on average – only marginally acceptable. On this level, they are not in line with a healthy future. For the first time in Germany, food patterns and food knowledge of seventh grade pupils were analysed in relation to their lifestyles. The study revealed four lifestyles. One family‐oriented lifestyle and three non‐family oriented lifestyles: outdoor and sociable youth, culture‐oriented youth, and multimedia kids. The family‐oriented lifestyle influences the children's food patterns in a positive way; the three found non‐family‐oriented lifestyles lead to less preferable food patterns. The results imply that there is a phase of unhealthy food patterns at the beginning of the second life decade, which seems to be linked to the detachment from the parents and the gained independency, expressed by the first self‐chosen lifestyles. As lifestyles have such a vital influence on healthy eating, and family is no longer the place where children get their everyday competencies, school has to enable pupils to make healthier food and lifestyle choices.  相似文献

The study aimed to investigate the direct and indirect impact of health consciousness (HCN) on the purchase intention (PIN) of organic food products in India – a rising hub of organic food consumption. For the indirect effect of health consciousness on the purchase intention, the study added the serial mediation of consumer attitude (ATT) (based on the Theory of Planned Behaviour) and food safety concern (FSC) as major constructs. There is a lack of empirical evidence on the mediating role of FSC in the impact of HCN on ATT or their PIN. Further in a developing country like India, there lacks a comprehensive study considering all the above four factors on organic food consumption. 438 useable responses were collected using the mall intercept method from purchasers frequenting five exclusive organic food stores in a metropolitan city in India. The hypotheses on direct and indirect effect of HCN on PIN and the serial mediation of FSC and ATT was tested using Structural Equation Modelling (SEM). CFA/SEM analysis upon establishing the conceptual model's goodness-of-fit, revealed the insignificance of FSC having direct impact on ATT and PIN and having any mediating role in the impact of HCN on ATT. There was also no significant impact of HCN on FSC. ATT too showed no significant mediating role in the impact of FSC on PIN. Nevertheless, both FSC and ATT together as serial mediators significantly influence the impact of HCN on PIN. Retailers and marketing professionals need to devise strategies based on the study's findings, emphasizing on the details of health benefits and improvements consumers will obtain upon consuming their organic products. Practical implications and theoretical contributions are discussed.  相似文献
