Abstract

The aim of this study is to know Italian consumers’ preferences for Pasta and consumption habits. Food culture and concerns about food security and product innovation were investigated. A sample of Italian consumers was interviewed. Consumer’ profile, motivations and purchasing behavior were described. Relationships between observed variables and the latent constructs that explain the preferences were highlighted. There is asymmetric information between consumers and producers. Consumers believe Pasta is made with Italian grains, and therefore it is healthy and safe, although that’s not always the case. Intrinsic and extrinsic high quality, which derives from growing and production technologies, is required.  相似文献

Abstract

This study provides new insights on consumer preferences for chicken welfare attributes in a developing country context. Further, the inclusion of chicken transportation methods as an attribute is a useful contribution to empirical literature. Choice experiment survey data from 200 chicken consumers in Kenya were analyzed using random parameter logit model. Consumers had a positive preference for use of certified transportation, humanely slaughtered chicken and welfare labeling. However, there was a negative preference for using antibiotics in chicken production. Relative to the current price of chicken meat, consumers were willing to pay a premium of 30% for use of certified transport, 72% for animal welfare labeling, 135% for humane slaughter, 236% for nonuse of growth hormones and 40% less for chicken reared in confined systems.  相似文献

Abstract

Today, the importance of consumption of organic products has become more evident to the consumer due to the great benefits of these products. The aim of this study is to investigate the factors affecting the preferences of organic tea consumers in Tehran by considering the heterogeneity of consumer’s preferences. For this purpose, mixed logit and latent class model were used. The required information were collected through field surveys by completing a questionnaire from 405 respondents from Tehran citizens in 2016. Results from estimating mixed logit and latent class models confirm the heterogeneity of preferences between consumers. Different levels of income, education, age, history of poisoning and awareness of organic products were identified as heterogeneous factors. The results of the estimation models showed the maximum willingness-to-pay is related to the attribute of the disease and long-term effects. According to the findings of the study, it is suggested to help increase people's awareness of the characteristics of organic products and the use of targeted-oriented strategies to encourage consumers to consume organic products.  相似文献

ABSTRACT

Consumer organic food choice motives and purchase preferences were studied in a structured quantitative survey (N = 201) in Bangalore, with the aim of identifying consumer segments based on these motives and preferences. Further, sociodemographic differences between the clusters were studied. Face-to-face interviews were used to sample the data, which were analyzed with factor and k-means cluster analysis (SPSS 16.0). Five latent factors were identified based on the motives, representing a set of consumer concerns labeled here as “food phobia” (health),” “environment,” “humanity,” “healthy eaters,” and “control.” Further, three clusters emerged from these motives representing 38%, 37%, and 25% of the sample size. The factors differ in terms of variance. Here, the records of perceived healthiness (food phobia) were the most important element, explaining 18.37% of the total variance. These clusters were differing in terms of the level and order of motivations. The health factor was a most important motive in two clusters, followed by environment. Further, humanity was the most important motive for the third cluster. This may reflect a heterogeneous nature of consumers in study area. Additionally, five clusters were identified based on the preferences, and profiles of these clusters differed in terms of sociodemographic factors and consumption pattern. Segments were identified based on motivating factors and preferences, and linking them with food choice motives and products preference provides the input needed by marketing professionals and policy makers to calibrate more efficient marketing strategies to better focus and position their products and design their communication strategies for target segments.  相似文献

ABSTRACT

Organic food market is very challenging in Europe and developing rapidly with different rates between the western and eastern parts. The objective of this report is to gain knowledge about attitudes toward organic fruits and vegetables among Slovenian consumers. Results indicated that organic buyers tend to be younger and higher educated than those who do not buy them. In addition, consumers’ trust in the authenticity of the goods and price are also issues. However, the main barrier to increase the market share of organic products is consumer information. According to the research results an important task for the producers will be to increase consumers’ knowledge of what an organic product is and how to differentiate it in the marketplace. Along with knowledgeable and educated consumers, consumption could be raised on another level. The results of the research could be used for planning further marketing activities.  相似文献

Abstract

A serious diversification of Greek consumers' food buying behavior can be observed during the last decade. Following similar trends worldwide, an important percentage of Greek consumers have been oriented to quality food products of higher added value. This value is delivered through the implementation of various certification strategies and the use of different communication messages. A study of the procedure through which Greek consumers evaluate a variety of quality certification schemes is, hence, necessary and valuable. In the present survey, a stratified sample of urban consumers is used with the objective to analyze their attitudes toward the organic label and the HACCP and ISO14000 certification schemes separately. The study evolves around the assumption that purchasing of organic, HACCP or ISO14000-certified food products expresses consumers' health and environmental consciousness and reflects the food industry's ethical concern.  相似文献

The aim of our research is to examine Swedish consumers' perception and preferences of domestic vegetables compared to on the one hand imported and on the other hand organically grown vegetables. The paper draws from two consumer studies. The first study is a text analysis of consumers' associations to the four concepts Swedish, imported, organic and conventional vegetables as well as a conjoint analysis of the relative importance of the same four characteristics in the case of carrots. The second study is a taste experiment on tomatoes from the same Swedish grower labelled in three different ways, as Swedish, Dutch or organic. The conjoint analysis indicates that Swedish origin is considered more important than organic production methods. The text analysis shows that Swedish is associated with positive values, for instance, high quality, while imports have a more negative image. Organic is associated with characteristics such as being non-toxic, good quality and expensive while conventional is associated with poison, being good enough and traditional. The preference for Swedish vegetables is supported by the taste study. Tomatoes that were labelled as Swedish or organic were perceived as tastier than tomatoes labelled as Dutch. Thus, the experience of taste seems to be affected by the labelling. The conclusion is that to many Swedish consumers “Swedish is good enough” as a quality criterion. However, the research situation differs from a real shopping environment, where consumers make choices between bundles of different attributes, not only provenance and production method. Moreover, in a real shopping situation supermarkets promote their own private brands, regardless of origin, thus make origin less accentuated.  相似文献

We examine consumers' preferences for chickens under different levels of foodborne health risk, animal welfare and pric attributes. We analyse how their preferences vary according to the risk reduction method. Our comparison is between risk reductions achieved by conventional improvements in the meat supply chain system (e.g. more stringent regulations and inspection regimes), and risk reductions achieved by food packaging nanosensors. Our comparison uses a two‐treatment discrete choice experiment in which each treatment sample is only presented with one of the risk reductions: either nanotechnology or conventional methods. We also investigate heterogeneity in preferences for two consumer groups: (i) consumers who usually buy conventional raw, whole chickens, and (ii) consumers who usually buy niche, welfare‐improved chickens, such as free‐range and organic. Our results show evidence of heterogeneity in preferences and willingness‐ to‐pay values of the both consumer groups. We find that consumers, on average, prefer raw, whole chicken with a lower risk of food poisoning, better animal welfare, and lower costs, regardless of the presence of nanosensors. Although consumers in general showed no strong preferences towards or resistance to nanotechnology, those who buy chickens with better animal welfare, on average, showed higher WTP for food risk reduction and animal welfare relative to conventional chicken consumers.  相似文献

Abstract

There has been little research about which combinations of health claims, food product categories, and nutrient enrichment labellings are most appealing to consumers. This paper tests whether specific product group differences exist for health claims and ingredient labellings based on the food additive Xanthohumol. To analyze preference heterogeneity, differences between consumers with a high, medium, or low preference for organic food products were considered. For data collection, an online-based discrete choice experiment was applied in Germany for the product categories milk, yoghurt, water, cola, and chocolate. The choice experiments were analyzed with multinomial and mixed logit models. Positive effects for the considered health claims that are based on the effect of the food additive Xanthohumol could be found for water, milk, and yoghurt. The comparison of the different organic consumer segments revealed that respondents with a medium preference for organic food products show the highest preference for the considered health claims.  相似文献

ABSTRACT

This study examines consumers' willingness to purchase pesticide-free fresh produce (PFFP) in Canada's Maritime Provinces. Households' decisions in purchasing organic foods are reflected in their willingness-to-pay (WTP) a premium for obtaining these types of products. WTP was modeled as a function of a series of explanatory variables including sociodemographic, socioeconomic, media, and public awareness about the impact of pesticide use on health and environment. Results suggest that Maritimes' consumers tend to pay the premium because they believe that the use of pesticide in conventional farming is life threatening. In addition, males and individuals with bachelor degrees are more willing to pay the premium, but those who visit farmers' markets on a regular basis are less likely to pay a premium for pesticide-free fresh fruit and vegetables. Finally, results show that media have no impact on consumers' decisions to purchase pesticide-free fresh produce.  相似文献

Abstract

The present study examines the way consumers form their purchase intentions for organic products using the concepts of perceived quality and value. A model of relationships among quality cues, evaluative judgments, and willingness to buy for organic foodstuff is then developed and explored empirically with respect to biological olive oil. The data provide support for the critical importance of perceived value on consumers' purchase intention. The discussion centres on theoretical and especially managerial implications for organically and naturally produced food.  相似文献

Supermarkets in urban Kenya have risen from a tiny niche a half decade ago to a fifth of food retail, spreading well beyond the richer consumers to derive more than a third of their sales and half of their customers from low income and poor consumers. This paper explores the patterns and determinants of purchases of the overall food category versus fresh fruits and vegetables, over Nairobi consumer income strata, for purchases from supermarkets versus traditional retailers. ABSTRACT

Japan is the most lucrative organic market in the Asian region and is projected to account for about 80% of the Asian market revenues by 2009 (Kuhlmann and Jones, 2006). This study identifies Japanese consumer preference and interest in two major labeling information- source of organic certification/traceability and country of origin for organic food products. Stated preference method (SPM) based survey data was collected from two major cities in Japan in order to develop Japanese consumers' organic food choice model. Findings show that Japanese consumers are willing to pay 10% price premium for the organic food products compared to conventional products that have no specific labeling, suggesting a significant profit margin to be possibly captured by the organic producers and marketers. The Japanese consumers have perceived value of the JAS label in their stated preference and showed willingness to pay a price premium for this quality certification system, which validates the importance of government-regulated mandatory labeling. Regarding the country origin labeling issue, the Japanese consumers showed clear preference for the domestic organic products to the imported products, while showing no preference for any particular country origin for imported organic products. For private-voluntary organic labeling, the consumer organization-led organic label is considered to be more reliable source than the retailer-guaranteed organic label.  相似文献

ABSTRACT

We analyze the relevant quality attributes of apples which drive and influence consumer choice in the city of Bologna (Italy). A hypothetical choice experiment was conducted to elicit Italian consumer’s willingness to pay for apple attributes and was included as a part of a questionnaire survey. A group of 301 consumers were surveyed in Bologna in July and August 2016. Data were analyzed using a multinomial logit model. Results suggest Italian consumers are willing to pay more for yellow apples and for apples harvested in Trentino-Alto Adige region, compared with other Italian areas. Furthermore, results highlight a preference for locally produced apples, whereas organic apples are only slightly preferred to the not organic alternative. Results of this study could be used to develop marketing strategies for apple differentiation or for a new product development and target the right product to the right consumer.  相似文献

Abstract

Consumers' needs have grown to such an extent that they are sought out of nutritious and pleasant organoleptic foods, as well as functional foods. This study explores consumer attitudes towards health nutrition products and particularly functional foods, using data from a survey to 325 consumers. The results designate that consumers recognize different kinds of functional foods, willing to pay a premium for their purchase. They perceive that functional foods may contribute to easily follow a healthy and balanced diet and reduce the risk of health problems but appeared anxious about the health benefits these foods communicate in their labelling.  相似文献

The changing preferences of Dutch consumers for meat and fish are investigated using a switching almost ideal demand system. Structural change in demand between January 1994 and May 1998 is decomposed into underlying trends, temporarily irreversible preference shifts triggered by the BSE crisis of March 1996, and a “panic” reaction against beef in the month of the crisis itself. Preference shifts due to the BSE scare reduced expenditure shares for beef, minced meat and meat products by 2.5, 3.3 and 7.9 percentage points respectively. There were offsetting gains in the shares of pork, prepared meat and fish. Taking underlying trends also into account, changing preferences over the whole period reduced beefs share by 4.9 percentage points and increased those of poultry, prepared meat and fish by 4.1, 4.9 and 5.2 percentage points respectively.  相似文献

Summary

A broad view of the European Union (EU) quality policy to the meat sector is given in this article. It analyses the links between quality policy and consumer attitudes and behavior in the Spanish meat market. Quality programs allow traceability within the chain, which is an important improvement, compared to the traditional way of marketing meat. For this reason, we study the evolution and performance of Spanish meat market from the view of consumer behavior. This paper mentions some basic information in quality policies in Spain, including the results of a survey carried out in 1997, with some practical conclusions.  相似文献

Abstract

The Spanish horticultural sector has been adversely affected by recurring crises in the last years, showing a significant economic impact upon demand. These crises have different sources (internal and external) and origins (food safety, social, and environmental issues). However, research devoted to analyzing the nature and scope of these events and their influence on consumers’ perception is scarce. For this purpose, this research provides a conceptual framework that defines and classifies the main image crises that have affected the sector. Consequently, an exploratory study is conducted to analyze to what extent European consumers know the sector and to determine how consumer knowledge influences the Spanish product-country image. Data were analyzed using a Logit Model. Results suggest that crises have seriously affected the demand of Spanish vegetables and consumers’ perceived image. Factors affecting the sector’s image through consumer knowledge are different depending on consumers’ country-of-origin (national vs. foreign countries).  相似文献

Recent labeling policies in developed countries place new focus on origin labeling, especially country of origin labeling, for a variety of food products. It is not clear if this new emphasis on origin is the result of more ethnocentric consumer preferences for food. We measure consumer preferences for country of origin in four different international locations and one domestic control location using a conjoint experiment to test the null hypotheses that consumers do not have stronger own-country preferences. In addition, we compare the relative importance of consumer preferences for origin to their preferences for genetically modified food and pesticide-free production using attribute coefficients from within location ordered probit models. The study was conducted in China, France, Niger, and the United States. We find consumers tend to prefer food from their own location indicating ethnocentric tendencies do play a role in shaping country-of-origin preferences. Country of origin is generally less important to consumers than genetically modified food content and pesticide use in food production.  相似文献

To understand the market for sustainable foods, it is important to allow for heterogeneous preferences. However, most studies of consumer preferences for sustainable foods only investigate average consumer preferences. They do not take into account that some consumer segments attempt to purchase as much sustainable food as possible, others are almost indifferent to the notion of sustainable food, and still others consider sustainable food a complete hoax. The aim of this study is to explore the preferences for various types of premium eggs across three consumer segments. We conduct a choice experiment including 900 Norwegian consumers and perform a behavioural segmentation based on the frequency of organic food purchase. We find that the segment purchasing the most organic food is, as expected, willing to pay a significant premium for organic eggs over eggs displaying only enhanced animal welfare. However, most consumers, who only occasionally purchase organic products, are unwilling to pay more for organic eggs than for enhanced animal welfare eggs, suggesting diminishing marginal utility for additional attributes. We find that a third consumer segment attempts to avoid organic eggs, even when they cost the same as other eggs. Our findings suggest that organic products will be unsuccessful in acquiring a larger share of the market as long as most consumers are unwilling to pay a premium for organic products with all their cost increasing sustainable attributes over products that have only a single sustainable attribute, in our case enhanced animal welfare.  相似文献
