最近几年来,随着经济的迅速发展,尤其是奥运会之前的这几年,酒店行业在全国各地风生水起,短时间内涌现出了一大批高星级饭店,前面20年高星级酒店的数量还不如最近五年产生得多,和酒店行业迅速发展相对应的是高等酒店教育也得到了迅速发展,培养出了大批量的酒店专业大学生,但问题是这些酒店专业毕业生却绝大部分选择了从事其他行业,分析其中原因,其中有一个很关键的原因就是酒店学生实习期间,都对酒店行业产生了不好的印象。从酒店专业学生实习环节存在的问题出发,分析了产生这些问题的原因,并总结提出了解决这些问题的对策。  相似文献

This study addresses the development of environmental strategies and associated management control in the international hotel industry, a sector of major economic and environmental impact hitherto largely neglected in the environmental management and accountability literature. The low key level of commitment to environmental management currently exhibited by the industry is considered in the context of dominant systems of hotel management performance evaluation and control, as well as the industry's current strategic management and budgetary practices. Informed by Giddens' structuration theory, the study offers a new theoretical framework, environmentally efficient resourcing, as a structured approach to the development of hotel environmental strategy and its management. This paper presents comprehensive data on the growth, structure and forms of involvement of multinational enterprises in the international hotel industry, and uses this data to provide empirical support for the eclectic theory of international production. Our understanding of the international hotel industry is that the ownership of a hotel often has the characteristics of portfolio investment and that the owners may have little knowledge of hotel operations. In these circumstances they will invariably employ a professional management company to run the hotel under a long term contract providing them with full control over the operation of the hotel. A particular feature of this paper is therefore to distinguish between, what we term, ‘equity-based control’ and ‘contract-based control’ of the enterprise and to point out the implications of this distinction for the analysis of the multinational enterprise.  相似文献

The hotel industry is renowned for its poor pay and employment conditions and a low take‐up of HR practices. It is generally believed that the industry has relied on a lowcost, numerically flexible and disposable workforce. Recently, however, there has been debate concerning the extent to which managers in the hotel industry are embracing high commitment HRM and functionally flexible work practices. This study seeks to shed light on this question by analysing large‐scale survey and interview data on the hotel industry in Australia. While hotel workplaces in general continue to be associated with high levels of numerical and temporal flexibility and greater informality of HR policies, it was apparent that larger luxury hotels were adopting more systematic employee management techniques and strengthening their internal labour markets through functional flexibility initiatives. Such firms were also pursuing numerical and temporal flexibility strategies, although in rather different ways.  相似文献

The complex and changing environment of the hospitality industry presents a never ending array of stimuli, pressures and demands which can become sources of stress for hotel supervisors. A focus on the identification of current and potential stressors in organizations, and the development of strategies which individuals and management may use to manage and reduce stress effectively, is imperative. This study is to investigate the perceived level of stress of hotel supervisors, to establish frequency of the use of various coping strategies, and to determine the burnout rate. This study also empirically examines the relationships among stress, coping strategies, and job burnout. A convenient sample of hotel supervisors of large hotels in Taiwan was selected. The return of 298 questionnaires represented 74.5% of the total supervisors surveyed. The study findings suggest that the major job stress of hotel supervisors originates from task characteristic and workload. Moreover, a direct action coping strategy may allow one to perceive the situations as opportunities and may, in turn, contribute to reduce job stress. Furthermore, hotel supervisors experience a lower level of burnout if they apply more direct action strategies in coping with the pressures of their job. The results of this study can be used as part of guidelines including what should be considered to reduce job stress and burnout in the work environment.  相似文献
