"膝肉"又叫咸肉、盐肉或渍肉,是我国南方大众化的食品,尤其以贵州省侗族"胳肉"最为有名,是当地具有特色的传统腌制食品,由原材料猪肉、敷料糯米加工制成。由于味道鲜美,且能够长期存放,所以受到广大消费者的喜爱。为了全面了解"腌肉"的价值,对其营养成分进行了分析,以期为该食品的开发提供相关的理论依据。
