Consumers' buying decisions are invariably influenced by their religion and culture. In Islam, the foods they consume must be halal or permissible according to the Islamic principles. However, there are other food attributes such as brand, price, promotion, and safety assurance that may also influence consumers' decisions. This article aims to evaluate consumers' preferences toward various attributes of the manufactured halal food sold in supermarkets. The focus is on halal certification because consumers, especially Muslims, need the assurance that the food they purchased is really halal. Two hundred eighty-eight people agreed to participate by providing their perceptions and preferences toward food product attributes. Certified halal food product gained the highest utility score and was the most important attribute.  相似文献

This study investigates the determinants of halal meat consumption within a Belgian Muslim migration population using the theory of planned behavior as a conceptual framework, with a focus on the role of self-identity as a Muslim and acculturation in the host country. Cross-sectional data were collected through a survey with 367 Muslims mainly originating from North Africa and living in Belgium. Findings reveal that in general, a positive health attitude toward halal meat predicts the intention to consume halal meat among Muslims. Perceived lack of safety measures or poor belief in the safety controls are shown to be potential barriers preventing Muslim consumers from eating halal meat. Low acculturated Muslims rely strongly on their positive personal attitude toward the health status of halal meat, whereas high acculturated Muslims rely on health attitude, animal welfare attitudes, and safety when intending to consume halal meat. Muslims with a high Muslim self-identity intend to eat halal meat because they believe that it is healthy whereas Muslims with a low Muslim self-identity are rather influenced by religious peers, together with their personal health attitude and availability concerns.  相似文献

ABSTRACT

The objectives of this report are twofold: to examine the demographic factors that drive demand for green food and to segment Chinese consumers based on their attitudes toward food safety. An online survey was used to collect consumer behavior information. A total of 402 responses were obtained covering participants who lived in 24 provinces and municipalities in China. Probit modeling, analysis of variance, and cluster analysis are used. Income, education, age, gender, presence of young children, household size, and overseas experience are variables that have an impact on green food purchase. Young, wealthy men, who have young children and live in a small household, are likely to buy green food. The survey shows that Chinese consumers are willing to pay a price premium for green food; however, price will be a major factor restricting the growth of the green food label in China, given market prices. Three segments―the “distrustful consumer,” the “ambivalent consumer,” and the “trusting consumer”―are identified for market segmentation purposes.  相似文献

Buyers have imperfect information about the food safety efforts exerted by suppliers. To gather information about safety, buyers often employ sampling inspection. Sampling inspection exhibits sampling error so some unsafe product passes inspection and some safe product does not. This uncertainty influences buyer and supplier behavior. In this article, I use a principal–agent model to examine how sampling inspection policies influence food safety. I use the model to examine the sampling inspection policies in the 1996 Pathogen Reduction/Hazard Analysis Critical Control Point Act. I conclude that the regulation of sampling inspection procedures is an effective tool for policy makers who wish to improve food safety.  相似文献

Abstract

This paper investigates consumers' perception of food quality in Tunisia. In fact, the development of quality standards is driven by government regulations and mostly in response to export markets regulations. The role of consumers in this process is quite missing. This paper first highlights the current food safety and quality programs undertaken by the Tunisian government. Second, we use a sample of 150 consumers chosen at random at two of the largest hypermarkets in Tunisia to analyze consumers' behavior regarding quality. The paper shows strong concerns about hygiene among other quality attributes and strong awareness about quality and quality assurance schemes in general. Consumers are also motivated by habits of consuming home made products for hygiene and taste reasons. If appropriate quality systems were implemented to assure consumers about such attributes this would boost up demand for quality products.  相似文献

The study authors investigate consumer reactivity to social and health concerns, social farm food’s perceived quality, and whether these attitudes can be expected to influence their behavioral intention with regard to these products. Data were collect on a convenience sample (N?=?361) via a questionnaire. Five hypotheses, concerning the relationships between social consciousness, health consciousness, social farm food perceived quality, and consumer behavioral intention, were tested via a structural equation model. The results indicate that both social consciousness and health consciousness have a positive impact on social farm food perceived quality. Consumer behavioral intention is directly influenced only by health consciousness but indirectly by both social and health consciousness, via the attribute of social farm food perceived quality. The findings depict a particular reactivity of potential consumers. The study provides a general outline of questions or studies that might be useful in the future.  相似文献

Although the advent of genetically modified (GM) foods changed the agricultural scenario in developed countries, existing research confirms that consumer perception about the consumption of the same is often distorted. GM foods entered the Indian market amid widespread controversies and criticisms. There exists a host of studies that tried to establish the factors that shape favorable consumer perception toward GM foods indeed, but evidence from developing countries like India is still missing. The article undertakes an exploratory investigation of the factors that shape consumer perception about the consumption of GM foods in India and subsequently confirms the same with the aid of a measurement model. The study provides important implications for managers in directing efforts toward influencing consumer perception and instigating positive attitudes toward GM foods so that the benefits of their use can be extended to the masses in relatively nascent markets.  相似文献

Demonstrating compliance with food safety requirements of the global food economy is a prerequisite for access. This article presents an overview of the governance within global value chains and their impact on the prospects of developing countries accessing and participating in the global food manufacturing value chain. Abstract

The paper aims to classify the quality cues and attributes of grated Parmigiano Reggiano cheese, an Italian traditional food cheese, exploring if they affect consumers’ quality perceptions and expectations. Analysis is based on a questionnaire administered in hypermarkets where grated Parmigiano Reggiano is sold. A factor analysis, using varimax rotation, and a cluster analysis, were performed, using the Stata 12 software package. The clusters used were: geographical origin and packaging (cluster 1); price, brand and quality certification (cluster 2); all sensory attributes (cluster 3); and a combination of sensory attributes with price, brand, and quality certification (cluster 4). This is the first study to examine the quality cues and attributes affecting quality perception and expectations of cheese for grated Parmigiano Reggiano from a consumer perspective. It is also the first to classify cheese attributes following a quality approach, encompassing previously studied sensory and other attributes.  相似文献

探讨“食野习俗”及其引发的生物链缺失问题。“食野”是我国传统饮食文化中需要反思的一个组成部分,民间的一些“食疗”、“食补”的传闻助长了食野习俗,商家的过度宣传,媒体的不当炒作又对食野陋习起着推波助澜的作用。食野习俗引发的生态环境问题主要是生物链缺失,由于害虫的天敌减少,害虫因而更加猖獗;为了确保增产,农民不断增施化学农药,这样又加剧了生态环境恶化,由此形成恶性循环。最后就限制或摒弃食野习俗和加快生物链修复等方面提出几点对策建议。  相似文献
