This paper presents a model for strategic analysis in the restaurant industry. A review of the evolution of environmental scanning and the concept of industry structure is offered. These concepts as well as the results of research into the environmental scanning behavior of hospitality firms are synthesized into a proposed model for corporate environmental scanning activities.  相似文献

Surprisingly few studies deal with the implications of large events for hotel prices. We address this issue by modeling hotel prices in Munich under the influence of the Oktoberfest. By utilizing internet data from a metasearch provider for check-in dates prior to and during the Oktoberfest 2012, it is analyzed how the event affected the daily price level as well as price differentials between hotels. In general, average hotel prices are very volatile over time. Apparently, Munich hotels tend to set prices according to expected demand and vary those depending on the day of the week during the event. Ceteris paribus, roomrates are highest on Oktoberfest Friday and Saturday nights, followed by Oktoberfest weekdays and Oktoberfest Sunday nights, but there is a general and strong price-raising impact. Prices differ across hotels mainly due to the star category attributed to a hotel and the proximity to the event. Both price premia are time-dependent.  相似文献

Green mega-events have become popular, but few critical examinations of these events have been conducted. This study aimed to fill this gap by identifying present and absent factors in the greening framework of a mega-event hosted by a city in China. Using the 2011 International Horticultural Exposition in Xi’an as a case study, green practices from bidding to preparing to hosting were identified and analyzed. The results showed that (1) pollution control, improvements in the ecosystem services supply, greening of industry, and a sustainable transport strategy were utilized to enable a greener urban eco-environment, greener industries, and a more efficient transport system. (2) Hospitality management ignored solid waste minimization, eco-procurement, and the greening of visitors. And (3) a typical hierarchical model of greening governance was utilized, and an environmental certification and a participatory mechanism for various stakeholders were lacking. These findings contribute to the event management field by modeling greening principles and highlighting the similarities and differences in mega-event greening.  相似文献

This article reviews the hospitality marketing research published in four top hospitality journals from 2008 to 2010 for the purposes of identifying significant trends and gaps in the literature. A total of 274 articles are reviewed and classified based on research topic, industry focus, and analysis technique as well as on a number of other methodological criteria. Significant topical and methodological trends are discussed. Important topical trends are synthesized and specific directions for future research are proposed. We conclude with the presentation and discussion of an organizational framework for future hospitality marketing research.  相似文献

Governments around the globe are utilising events as an integral part of their policies for regional development. Therefore, there is an increasing need to ensure event public policy has the capacity to facilitate opportunities for regional development.The purpose of this paper is to present a framework for the development of public policy for regional events. The framework was conceived to address criticisms which emanated from the analysis of 219 event policies published from 1974to 2004 by nineteen Australian local governments. These criticisms suggested that the event policies contain redundant rhetoric, are ad hoc and reactive, are developed by an insular policy community and do not contain enough proactive, theoretically informed initiatives. Thus the framework was designed to provide a constructive foundation for local governments to collaboratively develop theoretically informed event policy which has the capacity to proactively develop strong and vibrant regions.  相似文献

This study was designed to explore the nature of environmental performance of tourism accommodations in Goreme Historical National Park which is in the UNESCO World Heritage List. The data were collected from 73 accommodation managers by using survey questionnaire that included 39 environmental performance indicators. Findings show that tourism accommodations have low performance on energy efficiency, water conservation, responsible waste management, communication, environmental training, the environmental awareness, necessary knowledge about and interest in the environmental protection and environmental policy. The accommodations need to have environmentally sensitive, concerned and knowledgeable managerial staff in order to preserve ecological integrity in protected areas.  相似文献

This paper tests the influence of various attributes of event attendance on visitor satisfaction. The Anzac Day commemoration at Gallipoli, Turkey, provides the backdrop for the study. The significance of this place and event is born out of the involvement of the Anzac soldiers (Australian and New Zealand Army Corps) in the First World War and their battles against Turkish forces at Gallipoli in 1915. Fittingly, Anzac Day, the 25th of April, the day of the landings, is a national day of commemoration in Australia and New Zealand. Data for this study was collected by an exit survey of 331 Australian attendees at the Gallipoli commemorations. In addressing the aim of this study, exploratory and confirmatory factor analysis was undertaken as a basis for the subsequent development of a model of satisfaction using Structural Equation Modelling (SEM). The results indicate that aspects relating to the amenities, transport and ceremonies held at Gallipoli are significant predictors of event satisfaction. This research provides a positive contribution to the understanding of customer satisfaction in event settings, extending the limited research on attendee satisfaction to investigate its elements in relation to a large-scale commemorative event associated with battlefield tourism.  相似文献

The purpose of the research is to contribute towards a better understanding of the role of design and creativity in the pitch phase of an event bid. The paper does not seek to re-document the formal proposal process of preparing and bidding for an event but instead will look at an element within event bidding, the pitch to the client. Winning an event pitch is a crucial part of the events industry and is undertaken by most event management companies (EMC) or agencies. It is highly competitive. The material is based on qualitative research with key individuals working in the events industry and presents selective reflections upon the pitch process, the rationale and criteria for pitching and the extent to which they use creative thinking to win. Design and creativity are essential components that help make events memorable experiences, but as the paper demonstrates they also have a significant role in securing the event contract in the first place. In some cases elaborate and extreme design tactics are used to make a successful pitch.  相似文献

This study examines the effects of residents' trust in government and their emotions toward an event on their perceptions of potential impacts and their support. This study also examines the moderating role of event attachment on the strength of relationships between residents' trust in government and their impacts perceptions, emotional responses, and as well as their support based on social exchange theory and cognitive appraisal theory. Findings clearly indicate that residents' support is a function of both cognitive and affective assessment of perceived impacts. Trust in government influences directly residents' support and indirectly through perceived impacts and experienced emotions toward an event. Findings further suggest that level of event attachment moderates the effects of trust on residents’ perceptions of impacts, their emotions, as well as on their support.  相似文献

This paper tests a model based on hypothesized relationships among sport involvement, place evaluations; at the level of venue and host city, and event satisfaction as antecedents of behavioral intentions. The relationships are explored among a sample of people attending the 2012 London Olympic Games (n = 603). Spectators completed questionnaires at event venues, providing responses at the place and time of the consumptive experience. Confirmatory factor analysis was employed to determine the dimensions of the constructs and to test the validity of measurement items. The structural model indicated that sport involvement and place attachment influenced revisit intentions but this was not the case for event satisfaction. This suggests that although tourism will benefit when spectators experience a psychological connection with event venues, the Olympic Games offer a distinctive event experience that does not have a direct influence on intentions to revisit the host city.  相似文献

Despite its importance, environmental stewardship is not always the top priority in the hotel industry in Europe. This study investigates the influence of the geo-political, economic and socio-cultural context of a country on the environmental attitudes and pro-ecological initiatives incorporated in this sector. To illustrate the differences, hotels in Sweden and Poland were targeted and a total of 349 hoteliers participated in an e-mail-based survey. The study reveals that hotel operators generally recognize the need for environmental protection and are involved in a number of activities. The economic situation and pro-environmental efforts initiated by the government were found to have an impact on certain aspects of hoteliers’ attitudes and actions. The survey has further indicated the two major directions that need to be followed when introducing environmental sustainability into the hotel industry. The first involves incorporating responsible technical and behavioural practices in the sector. The second highlights the necessity of initiating greater demand for “green” practices from the customers.  相似文献

This study examines the relative importance of three influential factors (stakeholder pressure, economic opportunities, and top managers’ personal environmental concern) in shaping managerial attitudes toward adoption of green programs in the hotel industry. The results, based on a sample of 235 top managers of hotels affiliated with three U.S. state hotel associations, suggest that stakeholder pressure is the most dominant predictor of managerial attitudes toward adoption of green programs followed by economic benefits and top managers’ personal environmental concern. In addition, the relationship between managerial attitudes toward adoption of environmental programs and organizational environmental commitment is found to be moderated by the ownership style. The relationship is stronger for independent hotels than for chain-affiliated hotels, indicating a more significant role of managerial discretion in implementing environmental strategies at the independent hotel setting than the chain hotel setting.  相似文献

Managers that scan the environment in their boundary spanning roles need to be attentive to the opportunities and challenges that may arise due to changes occurring within the environment. As an industry environment changes, an entrepreneurial management orientation helps firms adapt to changing market conditions. The purpose of this study is to examine the link between management style and environmental scanning. Based on responses from 201 top-level hotel executives, the findings suggest that entrepreneurial managers are more frequent scanners of the environment.  相似文献

There are numerous studies in the academic literature which assert that environmental attitudes can influence the process of sustainable tourism in protected areas. To test this claim, this research was undertaken in Central Karakoram National Park, Pakistan. The purpose of the research was to examine the differences in environmental orientations of four stakeholder groups associated with protected area tourism and to determine the factors that might influence their intentions to engage in environmentally responsible behaviour. The New Ecological Paradigm scale was used to assess environmental orientations. In addition, interviews were conducted to examine the factors that impacted these orientations. The results show significant differences among the stakeholders' orientations towards the environment and multiple factors that influence stakeholders' intention to engage in environmental conservation and sustainable tourism, namely economic benefits, awareness and information, top down governance and resource use rights.  相似文献

This study investigates environmental reporting in the Asia Pacific airline sector. The findings indicate that only five airlines (all in four developed countries in the region) have published standalone environmental reports. The environmental reports of those five airlines were examined, using the assessment model developed by Adams (1998). Fifteen elements from Adams’ framework plus one additional element were employed to analyse the content of the reports. At least 69% of the 16 elements were mentioned in the reports. Comparisons of environmental policy statements and environmental management systems used by the airlines were also made.  相似文献

One of the aims of wildlife tourism is to educate visitors about the threats facing wildlife in general, and the actions needed to protect the environment and maintain biodiversity. To identify effective strategies to achieve this aim, this paper examines participants’ memories of their wildlife tourism experiences and explores processes through which such experiences can lead to long-term changes in conservation behaviour. Findings are based on 240 visitors’ extended open-ended responses to a follow-up web survey administered approximately four months after a visit to one of four marine-based wildlife tourism venues in Southeast Queensland. Qualitative analysis revealed four levels of visitor response to the experience, implying a process involving what visitors actually saw and heard (sensory impressions), what they felt (emotional affinity), thought (reflective response), and finally what they did about it (behavioural response). Recommendations are provided for ways tourism managers and wildlife interpreters can maintain and strengthen these dimensions of memorable experiences in order to enhance visitor satisfaction and encourage visitors’ long-term adoption of environmentally sustainable practices.  相似文献

The fast pace of change will present many challenges in the new millennium. The success of the leader of tomorrow will depend on how well he or she is able to identify the forces that will drive change, invest in industry leading competitive methods that will take advantage of the opportunities presented by these forces and consistently allocate resources to these methods. Identifying the forces driving change is the most challenging aspect of this co-alignment concept. This paper explores the macroforces, which can be expected to drive change, and possible impact they will have on the hospitality organization. These forces include: globalization and economic change, a knowledge-based environment, the future of labor and quality in service delivery systems, and the growing consumer desire for improved well-being. The success of tourism firms relies heavily on their ability to adapt to the changing external environments. Environmental scanning, as the acquisition and use of information about external events and trends, has received greater attention in the tourism management literature. This study investigated the environmental scanning initiatives of travel agent companies in Singapore through a questionnaire survey. In total, 42 completed forms were returned from 319 invited firms. The findings discovered a positive relationship between the scanning frequency and the perceived strategic uncertainty of task environment. It was also found that human information sources were used most frequently for collecting environmental information due to their highest reliability, while electronic sources were under-utilized probably due to lack of computer-based information system and awareness toward the importance of online information.  相似文献

Tourist visits and landings on the ice free areas of Antarctica is the most recent large scale human activity on this continent. More than 98 per cent of tourists visit by cruiseship, which means less than two per cent of tourism is land based. Environmental impacts are generally transient with pressure placed on repeatedly visited shore based attractions. This article analyzes academic research from the International Journal of Hospitality Management (IJHM), as it applies to the dimensions of the management process related to the Research Methodologies proposed by Ritchie [1987. Roles of Research in Tourism Management. In: Ritchie, J.R.B, Goeldner, C. (Eds.), Travel, Tourism, and Hospitality Research. Wiley, New York, pp. 13–22]. This analysis provides insight on the evolution of research published in the IJHM from 2000 to 2005 and compares the results with previous studies. The IJHM has evolved in to an empirical journal with highly sophisticated methodologies and procedures. Therefore, the intention of this article is to provide a vision of the current research efforts in hospitality while providing a better contextual understanding of the directions and trends in qualitative and quantitative research methodologies.  相似文献
