CMC、瓜尔胶、黄原胶与蛋白质的相互作用使得其可作为稳定剂和增稠剂应用于乳制品中。本研究通过单因素实验,选出CMC、瓜尔胶、黄原胶为正交因素,研究其复配后对含乳饮料感官、离心沉降率的综合影响。经过正交优化后,含乳饮料的感官、离心沉降率优于对照组,含乳饮料的最优配方为:蔗糖8 g,脱脂乳粉3.5 g,CMC 0.4 g,瓜尔胶0.03 g,黄原胶0.01 g,柠檬酸0.35 g,柠檬酸钠0.06 g,加水至100 g。同时可折算出复合稳定剂配方为(以每100 g计):CMC 90.9 g,瓜尔胶6.8 g,黄原胶2.3 g。 相似文献

当前市场上各种混合蛋白饮品种类繁多,其中蕴含混合蛋白体系,为了有效提高混合蛋白体系的稳定性,需要合理选择稳定剂,单纯使用一种稳定剂往往难以达到理想效果,为了分析复配稳定剂在混合蛋白饮品中的应用,本文以大豆分离蛋白和浓缩乳蛋白为主要原料,综合分析卡拉胶、黄原胶、PGA3种稳定剂及其复配混合物对混合蛋白体系稳定性的影响,进一步综合分析混合蛋白饮品中复配稳定剂因素间的交互作用。最终得出结果为多种稳定剂合用,常用复配稳定剂包括卡拉胶、黄原胶、果胶、PGA、CMC以及海藻酸等,在此条件下制得的混合蛋白饮品稳定性良好,具有广泛的实际应用价值。 相似文献

建立口香糖中的柠檬黄、靛蓝、日落黄、诱惑红、亮蓝和赤藓红的液相色谱分析方法。该方法利用二极管阵列检测器中的多波长检测模式,对色素进行有效分离,实验结果表明,质量浓度在0.2~10.0 mg/kg时,各组分校准曲线的相关系数均大于0.999,方法的检出限(S/N=3)为0.01~0.04 mg/kg,样品加标回收率均在70%~87%,相对标准偏差(RSD)为3.1%~6.6%,方法的灵敏度和精密度均符合相关要求,该方法具有快速、准确、操作简单等特点,适用于口香糖中色淀类色素的检测。 相似文献

The purpose of this article is to examine the issues related to the chewing gum marketing practices employed by a Cypriot company importing gum. Thus, the product, its target market, and competition are examined, a SWOT analysis is performed and the marketing mix is presented. Then the results are compared with the international market. The case study method was employed to gain an initial understanding of the marketing practices employed by the company concerning the production of chewing gum. The findings showed that the company offers a gum of superior quality, which in two years' time has captured a great share of a very competitive market. This essay is a business and cultural history of Wrigley marketingin North America from the 1890s until the early 1930s. Wrigleyrelied on wholesalers at a time when consumer goods makers wereexpanding their sales forces. A prolific advertiser, Wrigleyprovided favorable terms to retailers carrying chewing gum,countering the view that advertising, by enabling direct communicationbetween manufacturer and consumer, diminished retailer cloutin the chain of distribution. Wrigley advertising constructedmeanings on multiple levels, discussed here with the theoreticaltools of liminality and semiotics. The text of Wrigley ads championedrelief for two modern conditions: indigestion and stress. Theimagery, mainly that of the liminal "Spearman," evoked notionsof unworldly escape and infantile nostalgia. The ads were richlypolysemic. Accordingly, Wrigley's widespread popularity andmarket dominance by 1930 should be assessed in terms of bothmarketing function and representational process. 相似文献
