EDITORIAL     
ABSTRACT

Developments in the area of the nutritional value of Quick Service Restaurant (QSR) meals since 1990 are discussed in this paper, including the impact of the NLEA Act, the obesity issue, and changes in QSR menu items. Previous studies of the ratings of Quick Service Restaurant meals are reviewed. A replication of the Baikie, Konell and Totten (1994) study is discussed. Respondents with high nutrition knowledge found the meals to be more fattening than did those with low nutrition knowledge (p < .10). No significant differences between socioeconomic groups were found. The authors then compared the findings to previous studies of Quick Service Restaurant meal ratings.  相似文献

The U.S. government initiated food labeling reform in 1989, which culminated with the Nutrition Labeling and Education Act (NLEA) of 1990, emphasizing the provision of improved nutrition information on most food products. The goal of such labeling reform has been to provide consistent, readable, understandable and usable food labels that enable consumers to make more healthful food choices. This paper examines the theoretical impact of the new regulations on consumer food choice behavior. The paper first discusses the use and impact of food labels by/on consumers, and uses a choice model to desribe the effects of these new labels on consumer food choice decisions. In particular, the research focuses on two important food attributes, and the presence of information of these attributes through the new nutrition labels, which may influence consumer purchase behavior.  相似文献

Recent legislative changes in the European Union have mandated nutrition labeling for the majority of pre‐packaged foods. This research compared effects of several nutrition labeling formats on consumers' food choices (i.e., the nutrition table, GDA 100 g/ml, and GDA portion). We primarily focused on whether nutrition label information was standardized to a fixed or varying comparison baseline. Fixed baselines (e.g., 100 g/ml) allow consumers to make direct, relative comparisons of products, while varying baselines (e.g., portion size) often require consumers to undertake complex mathematical calculations. Findings suggest that consumers' food choices are likely to be healthier when nutrition label information is presented on a fixed baseline. Gender was found to moderate these effects such that women made healthier choices—but only when the nutrition label baseline was fixed. Thus, the type of comparison baseline is an important characteristic of nutrition labels for public policymakers, public health officials, and academic researchers to consider.  相似文献

Legislation that mandates the provision of nutrition information on restaurant meanus has been proposed in several states. This research presents findings from an experiment that investigates how the provision of nutrition information and a health claim influence consumers’ attitudes towards the product, nutrition‐related attitudes, disease risk perceptions, source credibility judgements, and nutrient value estimates for restaurant menu items. In addition, how the nutrition frame (or context) within which a menu item is evaluated moderates these effects is examined. The results indicate that providing target item nutrition information, as well as a nutritional context, affects consumers’ attitudes, perceptions, and judgments. In addition, the context interacts with the provision of both a health claim and nutrition information for the target item. The theoretical, managerial, consumer welfare, and public policy implications of our research findings are discussed.  相似文献

This research examines the metacognitive effects of nutrition facts label clarity on food preferences. Two experiments show that, holding information content and comprehensibility constant, providing consumers with easier-to-process nutrition information increases purchase intentions for food products. The effect occurs not only for healthy (study 1) but also, and more ironically so, for unhealthy (study 1 and 2) food products. In addition, the latter fluency effect is found to be stronger among people scoring low in nutrition knowledge (study 2). These findings emphasize the consequences of delivering easily readable nutrition information to consumers. They also point to a potential pitfall of health prevention policies based on the simplification of nutrition labeling.  相似文献

A random sample of American elementary school educators, representing all but three of the 50 United States, responded to a questionnaire designed to ascertain: (1) their opinions concerning the inclusion of food and nutrition concepts in the elementary school curriculum; (2) their actual practices concerning the teaching of food and nutrition in the elementary classroom: and (3) their needs for elementary food and nutrition teaching materials. The results suggested that nutrition was the food and nutrition concept area most highly valued in relation to the education of young children and the concept area most frequently taught in American elementary classrooms; it also represented the concept area most in need of the development of teaching materials. Congruently, nutrition represented the food and nutrition concept area most frequently reported as being supported by American school administrators.  相似文献

Overweight and obesity are major health issues in many countries. Nutritional labels provide a means to making healthier food choices. Gazing longer at nutrition labels rather than the products' packaging may be a first step in making a healthy decision when purchasing or consuming a product. Using eye-tracker methodology, we examined the influence of an educational nutrition booklet on duration of gaze at nutrition labels. Thirty-two adults from New York City participated in a pretest–posttest study. Participants were randomly assigned to the nutrition education group (NE) or the control group for 10 min. The NE group reviewed a picture-based educational nutrition booklet. The control group worked on a word find puzzle. Participants' duration of gazing at nutrition labels was assessed. Results revealed a significant interaction of group and nutrition label gazing such that the NE group gazed significantly longer at the nutritional label in the posttest compared to the pretest. The NE group gazed significantly longer at nutrition labels during the posttest than the control group. There was no effect for the control group. The findings show that briefly reviewing an educational nutrition booklet increases duration of gaze at nutrition labels.  相似文献

Studies have shown that adults' comprehension of medical and nutrition terminology is often poor. This study's objectives were to determine nutrition terms that adults could not define correctly; to determine whether demographic characteristics affected the subjects' score, and to determine whether defining nutrition terms in educational material increased subject comprehension of the terms. Phase I involved 400 adult subjects from the airport and train station who were approached randomly and asked to complete a terminology test. Phase II involved 100 soldiers (aged 18–28) and 100 senior citizens; half of the subjects read information in which the nutrition terms used were defined and the other half read information in which the nutrition terms were not defined. All subjects then completed a nutrition terminology test. Statistical analysis included mean score, item analysis and regression analysis. In phase I, subjects had a moderate knowledge of the terms tested. In phase II, the mean score of subjects who read information in which the nutrition terms were defined was significantly higher than those not provided with definitions. The results of this study suggest that adult comprehension of nutrition terms may improve when the terms are defined.  相似文献

This study investigates the effects of perceived time pressure on adherence to recommended dietary practices (RDPs). Two potential moderators of the negative effects of perceived time pressure on food behavior are investigated. These are (1) human capital including both knowledge of nutrition and years of formal education and (2) health risks perceived to be associated with a poor diet. As hypothesized, perceived time pressure has a negative effect on adherence to RDPs. However, results also demonstrate that knowledge of nutrition can mitigate the negative effects of perceived time pressure on food behavior. Specifically, when knowledge of nutrition is low, the relationship between perceived time pressure and RDPs is substantial and negative (−.79). In contrast, when knowledge of nutrition is high, the relationship between perceived time pressure and RDPs is near zero. These results suggest that consumer education dealing with nutrition can help to offset negative effects of perceived time pressures on dietary practices.  相似文献

This study examines how the perception of a household main meal planner about the importance of nutrition in food shopping is related to the person's sociodemographic characteristics. Results of this study suggest that black, female, higher educated, and nonworking main meal planners generally perceive nutrition as more important in food shopping than do others. Findings also suggest that nutrition is more important to main meal planners who reside in cities and in the South. The results have important implications for government nutrition programs. The perceived importance of nutrition is also crucial to the success of consumer information programs that promote health and market nutritious foods.  相似文献

Over the past decade, the world has been facing an obesity epidemic. In the popular press and certain governmental and public policy circles, this seems to be attributed to the marketing efforts of fast-food and chain restaurants. As a solution to this problem, many have proposed increasing the amount of nutrition information available to the public by adding nutrition information to restaurant menus and menu boards. However, some debate has ensued about the use and function of this nutrition information. Specifically, this research attempts to uncover whether consumer actually use the nutrition information to aid their decision-making process. In two experimental studies, results are presented to enlighten the discussion of consumers’ reactions to nutrition information when it is present on restaurant menus. Contrary to what public policy makers have stated, this research shows that only small groups of consumers use nutrition information on a restaurant menu. The results in both studies indicate that when consumers eat out at restaurants, their decisions are based on taste and preference rather than nutrition information if it is presented on a menu. These results may have implications for the provision of nutrition information on restaurant menus and consumer decision-making.  相似文献

Mandatory labelling of nutrition information with a numerical nutrition facts panel is commonly required for prepackaged food products. Recently, food manufacturers and retailers have developed simplified nutrition signals such as front-of-package labelling (e.g. the Traffic Light label) or retail shelf labels (e.g. Guiding Stars), which provide a more intuitive signal of nutritional content. Using survey data from a sample of consumers from western Canada, this paper examines consumer responses to two private nutrition labelling programs: Guiding Stars and the Traffic Light label. Consumers are more receptive to the Traffic Light label than the Guiding Stars. Ordered probit models explore the factors influencing the likelihood of using these nutrition signals. Trust in the food label, perceived difficulty of using nutrition information, nutrition knowledge, and the importance placed on nutrition influence receptively to these labels. Simplified nutrition labels are likely to complement, rather than substitute for, the existing Nutrition Facts Table.  相似文献

The ways in which consumers make judgments about the nutritional quality of food products are a major concern for public policymakers. Given the focus on nutrition information in public health policies, the information processing paradigm has been widely used in past research. However, there is evidence that nutrition information processing is a difficult task for consumers. We examined 14 interviews from consumers of diverse social background in order to inventory the different kinds of heuristics used for making nutritional quality judgments. Narratives in which consumers elaborate about their strategies to assess nutritional quality of food products were analysed. Our findings show that: (1) consumers tend to use shortcuts to simplify nutrition information processing; (2) heuristics unrelated to nutrition information are commonly utilized; and (3) these heuristics rely on semantic, sensory and visual cues. The implications of our findings are discussed from a public policy standpoint.  相似文献

In South Africa there has been a paucity of data on food and nutrition labelling since the publication of the new food‐labelling legislation. This study aimed to explore whether the nutrition information on food products influences consumer purchasing behaviour; reasons for reading or ignoring nutrition information on labels, and to investigate expectations regarding food / nutrition labelling. Nine focus‐group discussions were held with adult consumers (N=67) in Cape Town, South Africa. Food price was sometimes the only consideration when selecting food products, irrespective of quality and nutritional value. When buying products for the first time, consumers were more inclined to read the nutrition information compared to habitual purchases or buying known brands. The list of ingredients, nutrient content claims and specific health endorsement logos were considered important. Reasons for reading nutrition information were mainly to assess the nutritional value or health properties, to avoid certain ingredients/allergens and to determine quality. Consumers struggled to understand the information on labels, specifically the nutrition information table. A lack of time or interest, price concerns and trust in labelling information also emerged as reasons why consumers ignore the nutrition information. There is a need for simpler food labelling, more graphics, and less complex terminology, information overload and quantitative information. It is recommended that a standardised front‐of‐package labelling scheme and a single health endorsement logo for South Africa be considered. More should be done to educate consumers on utilising the information on food labels correctly, in order for them to make healthier food choices.  相似文献

Nutrition label format effects across different levels of product nutrition value and groups of younger (under 58 years; average 46 years) and older consumers (58 years or more; average 70 years) are examined using a 3 × 2 × 2 experimental design. Age interacts with nutrition level in affecting nutrition evaluation measures with older consumers displaying smaller differences in nutrition attitude and purchase likelihood for a low versus a high nutrition value product. Older consumers also perceive all labels as more difficult to understand. Consumer performance on judgment tasks vary across label formats and nutrition value manipulations. Implications for consumer welfare and future research are offered.  相似文献

This study emphasises the inter-relationships among family variables, nutrient intake and perceived health status among Malawian women. The sample consists of rural women residing in Zomba, Malawi, southern Africa. Data were collected from April to June 1993 on (1) family cohesion and adaptability, assessed by a modified version of Olson's FACES 11; (2) dietary intake using a modified food frequency questionnaire; and (3) a 24-item questionnaire on perceived health status, barriers to health and desired methods of communicating nutrition information in the village. The results indicated that Malawian rural women perceived their families as highly cohesive and adaptable. Diseases frequently identified as common in the family were not perceived as related to nutrition. Income significantly correlated with dietary adequacy. The study suggests that efforts to promote health and nutritional status should be directed at disease prevention and its ecological relationship with nutrition. Strategies for communicating nutrition information in rural Malawi are provided.  相似文献

The rising prevalence of diet-related illnesses, the most visible of health problems, in both developed and developing countries has become a serious public health concern. Nutrition labeling plays an important role in promoting healthy diet and, thus, in improving population health. The objective of the present study is to investigate how socioeconomic factors—age, income, gender, education, marital status, house locality and employment status—affect the use of nutrition labels among Malaysian adults. The Third National Health and Morbidity Survey of Malaysia, which consisted of 34,539 respondents, is used for analysis. A logit model is developed to examine the probability of using nutrition labels. Evidence from the present study shows that age, income, gender, education, and marital status are significantly associated with the use of nutrition labels. In particular, age reduces the likelihood of using nutrition labels, while high income earners, females, the well-educated, and married individuals are more likely to use nutrition labels. The findings of the present study suggest that differentiated targeted efforts should be used on the various population groups identified when implementing programs and activities promoting the use of nutrition labels.  相似文献

Providing nutrition information at the point of purchase is one approach that can be used to help consumers adopt and maintain a healthy diet. Previous research has examined consumer self‐reported notice and use of the information as well as how the design of the information affects its attention and use in a laboratory environment using eye‐tracking methodology. This study advances the literature by applying eye‐tracking methodology to explore consumer visual and choice behavior in a real shopping environment, and by recognizing that nutrition information competes with other visual stimuli in the store and consumers are vulnerable to a “limited attention span” for nutrition information in a shopping setting. Data came from a cross‐sectional survey conducted in two grocery stores in the United States in July 2014 with a convenience sample of 60 grocery shoppers while they were selecting and buying items from one of three product categories (ready‐to‐eat cereal, snacks, and soup). The study finds that point‐of‐purchase nutrition information faced strong competition for participants’ attention from other visual elements in a real shopping environment and the attention is dominated by nonnutrition elements, particularly brand/product name, product imagery, and product pricing. Nutrition‐related information, on the other hand, received much less attention, with claims and front‐of‐package nutrition symbols seen by more participants than the Nutrition Facts label. The study suggests that to more effectively enable nutrition information to “catch the eyes” of shoppers at the point of purchase, increasing consumer exposure to the information and enhancing shopper education may merit further investigation.  相似文献

To clarify the relation between the curriculum system and the understanding of nutrition terms, 944 students aged 8–12 years living in Japan, the USA and the UK, were asked about the recognition, medium for recognition, and understanding of nutrition terms. The effect of nutrition education from an early stage in elementary schools in the UK and the USA was confirmed. These results suggest the possibility of beginning nutrition education earlier in the elementary school in Japan. American students had paid attention to food labels. These results showed that a learning and teaching strategy founded on comprehensively based subjects in the USA had influenced good behaviour for dietary life. On the other hand, there was not a relationship between an understanding of nutrition terms and a developmental stage. Many students in three countries were influenced by television commercials to buy candy or soda. We think that it is important to develop a curriculum that includes practical learning and ensures hours of teaching for the purpose of acquirement of nutritional knowledge. It is also necessary to encourage critical thinking skills to evaluate television commercial messages through school lessons.  相似文献
