Determinants of dining satisfaction and post-dining behavioral intentions   总被引:3,自引:2,他引:1  
The purpose of this research is to empirically investigate the determinants and consequences of dining satisfaction with restaurant services. A total of 338 undergraduate business students participated in this research. Results reveal that there exist three sources of customers’ satisfaction with restaurant services: positive emotions, perceived service quality and negative emotions. Positive emotions have more impact on customers’ satisfaction than negative emotions. In addition, emotions mediate the impact of perceived service quality on dining satisfaction. Finally, satisfaction has a significant impact on recommendation, customer loyalty and willingness to pay more.  相似文献

The purpose of this research was to investigate empirically the influence of restaurant atmospherics on the dining satisfaction and behavioral intentions of restaurant patrons. An extensive literature review first identified five dimensions of restaurant atmospherics, namely: facility aesthetics, ambience, spatial layout, employee factors, and the view from the window. Data were collected from 10 middle and upscale full-service restaurants in Hong Kong, and factor analysis and multiple regression analysis were then performed to unveil the relationship between restaurant atmospherics and dining satisfaction and behavioral intentions. The results reveal restaurant atmospherics to have a significant influence on patrons’ dining satisfaction and their behavioral intentions, particularly their intentions to return and spread positive word-of-mouth and their willingness to pay more. Dining satisfaction itself was also found to have a significant influence on behavioral intentions, particularly the intentions to return and to recommend the restaurant. The paper concludes with the practical implications of the research.  相似文献

This study examined restaurant customers’ perceptions of justice according to service recovery effort levels and whether perceived justice influences customers’ future behavioral intentions. This study also investigated whether the effects of perceived justice on future behavioral intentions vary across customers’ relationship quality levels. The results showed that high recovery efforts were consistently evaluated highly in terms of perceived justice when compared to low recovery efforts, regardless of the level of relationship quality. Additionally, perceived justice brought about by service recovery efforts has a positive effect on customers’ future behavioral intentions. Hierarchical regression analyses suggested that relationship quality plays a moderating role between perceived justice and behavioral intentions in the distributive and procedural justice dimensions. Implications for the restaurant industry are also discussed.  相似文献

The purpose of this research is to explain the relationships among overall quick-casual restaurant image, perceived value, customer satisfaction, and behavioral intentions in the quick-casual restaurant industry. The findings indicate that overall quick-casual restaurant image significantly influences perceived value, and overall quick-casual restaurant image and perceived value had a significant role in influencing customer satisfaction. Additionally, overall quick-casual restaurant image, perceived value, and customer satisfaction are significant predictors of customers’ behavioral intentions. Finally, customer satisfaction can act as a partial mediator in the relationship between overall quick-casual restaurant image/perceived value and behavioral intentions. Furthermore, we discuss the theoretical and managerial implications of the findings and future research ideas.  相似文献

Using the loss aversion concept, this paper attempts to investigate the relationship between service quality and customers’ post-dining behavioral intentions in the restaurant sector. Incorporating the DINESERV instrument, the results gained from a Chinese chain restaurant indicate that a decrease in service quality from the reference point (customer's expectation) will decrease the perceived service value and customer satisfaction, but that an increase in service quality may not have significant effects on these two behavioral constructs. Moreover, the behavior-related causal relationships underlying service quality suggest that perceived service value and attitudinal loyalty succeed in acting as mediating variables within the model.  相似文献

The purpose of this study was to understand interrelationships among customers’ perception of nonverbal communication, customers’ emotional responses and customer satisfaction in the family restaurant. A total of 333 customers in Korea participated. The results showed that employees’ kinesics and proxemics among nonverbal communications have a significant effect on customers’ positive emotions, while employees’ kinesics and paralanguage affect customers’ negative emotions. Also, it was found that whether customers feel positive or negative determines their satisfaction. Limitations and future research directions are also discussed.  相似文献

ABSTRACT

This study examines how experiential value as perceived by customers of Korean family restaurants influences consumption emotions, self-connective attachment to the restaurant brand, and, ultimately, brand loyalty. Having conducted a comprehensive literature review, the study proposes and estimates a model that specifies the interrelationships among four dimensions of experiential value (i.e., atmosphere, escapism, customer return on investment, and service excellence), and latent variables of positive and negative emotions, self-connective attachment, and brand loyalty. Analysis with structural equation modeling was conducted with data collected from customers of family restaurants in South Korea. The results show that dimensions of experiential value influence either positive or negative emotions. The emotion variables, together with self-connective attachment, also mediate the relationships between perceived value of dining experience and brand loyalty.  相似文献

This study examined American customers’ perceptions of values regarding dining experiences in Korean restaurants in the United States. Specifically, the effects of hedonic and utilitarian values on customer satisfaction and behavioral intentions were investigated. This study also examined the moderating effect of familiarity with Korean restaurants on the relationships among perceived values, satisfaction, and behavioral intentions. Overall, the results indicated that American customers valued the utilitarian aspects of Korean restaurants more than the hedonic aspects. Additionally, utilitarian aspects had a stronger impact on customer satisfaction and behavioral intentions than hedonic aspects. However, when considering customers’ familiarity level with the restaurants, hedonic aspects more effectively induced positive behavioral intentions in the low familiarity group, proving that familiarity has a moderating role. Conversely, utilitarian aspects appeared to be more influential in terms of the behavioral intentions of the high familiarity group. Theoretical and practical implications are also discussed.  相似文献

This study investigates American customers’ perceptions of Chinese restaurants in the U.S., using the Importance–Performance Analysis (IPA) approach. This study also examines which attributes of Chinese restaurants influence American customers’ satisfaction and behavioral intentions. The IPA shows that environmental cleanliness and attentive service are two important areas where Chinese restaurateurs can make improvements. In addition, food taste and service reliability appear to be key attributes for Chinese restaurants’ success. Overall, this study indicates that food quality, service reliability and environmental cleanliness are three pivotal attributes to create satisfied customers and positive post-dining behavioral intentions. Chinese restaurant managers should reasonably allocate their limited resources to restaurant attributes based on their contributions to customer satisfaction and behavioral intentions.  相似文献

The purpose of this study was twofold: to investigate the structural relationships between patrons’ emotional responses induced by advertising, their perceived value, and their behavioral intentions in the chain restaurant industry; and to investigate which attributes of advertising bear the strongest impact on behavioral intentions. Based on the literature review, six evaluative dimensions of advertising were derived: relevant news, brand reinforcement, stimulation, empathy, familiarity, and confusion. Theoretical relationships between these six evaluative dimensions and patrons’ emotional responses, perceived value, and behavioral intentions were derived based on the literature review. Following the collection and analysis of data obtained from chain restaurant patrons, it was found that four dimensions of advertising in particular (relevant news, stimulation, empathy, and familiarity) have a significant impact on inducing emotional responses in patrons. Among the four dimensions, stimulation was found to bear the most significant effect on patrons’ emotional responses. It can thus be stated that advertising-induced emotional responses positively influence patrons’ perceived value. During this study, it was found that the level of arousal induced by advertising plays a moderating function in the relationship between patrons’ emotional responses and hedonic value. The possible interpretations of these findings and their managerial implications are discussed in the latter part of this article.  相似文献

Recognizing the increasing importance of healthiness in food-related businesses, this study attempted to investigate the role of consumers’ affective responses in a healthy food consumption context. To achieve its objectives, this study incorporated anticipated emotional constructs in a decision-making model and investigated the relationships among perceived healthiness, anticipated guilt and pleasure, and behavioral intentions (e.g., purchase, spreading positive word-of-mouth, and recommending the food) in a quick service restaurant setting. The results of this study suggest that anticipated pleasure positively influenced behavioral intentions and mediated the relationship between perceived healthiness and behavioral intentions, whereas anticipated guilt did not influence behavioral intentions. Additionally, this study investigated the moderating role of dietary concerns in consumers’ decision-making processes and found that the low dietary concerns group was more susceptible to anticipated pleasure compared to the high dietary concerns group. Consumer-generated restaurant reviews are important sources in consumers’ purchase decisions. The purpose of this study is to explore the impact of emotional intensity on perceived review usefulness as well as the moderating effects of review length and reviewer expertise. Data from 600,686 reviews of 300 popular restaurants in the US were obtained from Yelp. Using a text mining approach and econometric analysis, empirical results show that (1) positive emotional intensity has a negative impact on perceived review usefulness, whereas negative emotional intensity has a positive impact on perceived review usefulness; (2) among the two most prevalent discrete negative emotions in online reviews (i.e., anger and anxiety), reviews expressing anger are more useful than those expressing anxiety; and (3) review length and reviewer expertise can moderate the effect of emotional intensity on perceived review usefulness.  相似文献

Europe, Australia, the United States and now Asia have documented recent increases in numbers of “solo” consumptive restaurant dining behavior, representing an emerging worldwide restaurant industry trend. The study’s objectives were designed to explore unchartered solo dining research addressing perceived territoriality as a theoretical foundation for identifying potential physical and psychological boundaries applied to the solo dining context and for examining the relationships between those boundary factors, solo diners’ perceived territoriality, overall satisfaction and revisit intentions. Results showed that restaurant physical and psychological boundaries positively influenced perceived territoriality, leading to positive solo dining satisfaction and revisit intention. Further, this study revealed that solo diners’ motivations significantly moderated the effects of psychological boundaries upon their perceived territoriality. Implications and recommendations for future research are provided.  相似文献

The prevention of allergy reactions to food requires communication between individuals with food allergies and restaurant employees. This study investigated the effectiveness of framed messages (gain-framed versus loss-framed) in encouraging food allergy communication and explored factors that influenced customers’ intentions to communicate with restaurant staff about their food allergies. A total of 291 valid survey responses were collected. Approximately 70% of the participants had experienced food allergy reactions in restaurants, but less than 15% of them could always communicate with restaurant employees before placing food orders. Overall, participants perceived dining out as somehow risky. Gain-framed messages were more persuasive than loss-framed messages in encouraging food allergy communication. Fear, attitudes toward the messages, the perceived effectiveness of the messages, and the severity of one’s food allergies were significant predictors of customers’ intentions to communicate. Customers’ attitudes toward the messages mediated the relationship between message format and the behavioral intention to communicate.  相似文献

COVID-19 pandemic negatively affected the restaurant industry and reopening provides restaurants an opportunity to survive this crisis. This study examined the interplay of perceived importance of preventive measures, dining involvement, brand trust, and customers’ intention to dine out at American Chinese restaurants during the reopening period. Additionally, the study investigated the moderating role of country-of-origin (COO) effect on these relationships. 296 U.S. restaurant customers recruited via a market research company completed the online survey. Structural equation modeling was used for data analyses. The results indicated that dining involvement had a direct positive effect on customers’ intention to dine out. Moreover, both perceived importance of preventive measures and dining involvement could enhance customers’ intention to dine out indirectly via brand trust. Positive COO effect moderated the relationship between perceived importance of preventive measures and brand trust. The study provided significant implications for restaurant operators in the U.S during the reopening period.  相似文献

Very few studies focus on the behavior of hotel and resort spa customers in China. Hence, this research proposes a model for testing the impact of spa service quality, positive and negative consumption emotions, and hedonic and utilitarian perceived value on the behavioral intentions to visit a spa. The valid sample comprised 487 customers of five-star hotel/resort spas in China. Data were obtained from the self-administered survey answered by respondents constituting the sample. This study identified the vital function of consumption emotion, especially positive emotion dimension. The results indicated the mediating influence of positive emotion on connecting service quality and creating the perceived value of consumers as well as behavioral intention in the hotel and resort spa context.  相似文献

This study tested the sufficiency of both the Theory of Planned Behavior (TPB) and the extended TPB models by adding the variable of past behavior. In addition, the present study examined the mediating role of the TPB variables on the relationships between past behavior and customers’ intentions to engage in different types of dissatisfaction responses (i.e., voice, negative word-of-mouth communication, and exit). Results of the study demonstrated the strong predictive power of the original TPB mode but the inclusion of past behavior did not significantly improve the predictability of the three dissatisfaction response intentions. Furthermore, the mediating analyses indicated that the influence of past behavior was mediated by TPB variables. In the contexts of negative word-of-mouth communication, the effect of past behavior on intention was mediated by attitude. Meanwhile, both subjective norm and perceived behavioral control mediated the relationship between past behavior and the intention to engage in voice behavior.  相似文献

Based on the Mehrabian–Russell model, this study investigates whether aesthetic labor performance affects the positive emotions and behavioral intentions of customers in full-service restaurants. This research also identifies the mediating effects of positive emotions on aesthetic labor and behavioral intentions. A total of 320 valid questionnaires were collected from the customers of a well-known chain of restaurants in Taiwan. Structural equation modeling was used to estimate a model linking aesthetic labor, positive emotions, and behavioral intentions. The results revealed that aesthetic labor positively and significantly influences positive emotions and behavioral intentions, and that positive emotions positively and significantly influence behavioral intentions. However, when the control variables of food quality, ambiance, and service quality were added, aesthetic labor did not positively influence behavioral intentions. In addition, positive emotions did not mediate the relationship between aesthetic labor and behavioral intentions. Finally, we provide a discussion on practical implications and suggestions for future research.  相似文献

In contrast to the substantial work on resident perceptions toward tourism development, relatively little is known about residents' emotional responses. By applying cognitive appraisal theory, this study aims to identify the causes and consequences of resident emotions toward Tourism Performing Arts (TPA) developments across urban and rural communities. Based on a quota sampling method, surveys of 438 and 435 residents were undertaken in two typical urban (Hangzhou) and rural (Yangshuo) TPA destinations in China. Results revealed that rural residents reported a higher intensity of positive emotions and were more supportive towards TPA development. Positive emotions (i.e., happy, loving and grateful) for rural and urban residents were elicited by outcome desirability, fairness, and coping potential whereas negative emotions were generated differently. Complex emotions, rather than specific emotions were found to be related behavioral intentions towards TPA development. Findings suggest targeted strategies such as promoting TPA in urban communities and offering preferential local access for rural communities.  相似文献
