The purpose of this research was to examine drivers of perceived value and healthy food consumption within the context of full-service dining restaurant patronage. Specifically, this study examines the influence of quality and non-quality cues on perceived value and the impact of perceived value on postconsumption experience. The model was tested using data collected from a sample of full-service restaurant patrons residing in the United States. Results of a structural equation analysis revealed that restaurant quality cues induce patrons’ perceived value in healthy food consumption. Regarding non-restaurant quality cues, patrons’ health concerns have an impact on perceived value; however the impact of peer pressure and mass media on perceived value did not show significant impact. Data analysis also showed that both perceived value and satisfaction are significant predictors of behavioral intensions. Interpretations of these findings are limited to the full-service restaurant segment and may not be generalized across sectors. The academic and managerial implications of these findings are considered. 相似文献

Public policy affects businesses in several ways, yet its intersection with the food logistics industry is not well understood. This article explores the case of the Sanitary Transportation of Human and Animal Food Rule—enforced in 2018—and its impact on the food logistics industry. It is one of the most significant rules of the U.S. Food Safety Modernization Act and, in many ways, improves the rulebook for U.S. food haulage. The objective is to prevent food contamination during transportation by establishing vehicle design and maintenance requirements, safe transportation operations, transit temperature controls, carrier personnel training, and record-keeping. The Sanitary Transportation of Human and Animal Food Rule also transforms the roles and responsibilities of traditional industry stakeholders (i.e., brokers, shippers, carriers, loaders, and receivers) and creates unique challenges for them. This article works to develop an understanding of stakeholders’ evolved roles via the salience model, identify challenges, and suggest relevant solutions, including a compliance checklist for each stakeholder. 相似文献

In recent years, a significant amount of research has focussed on the analysis of consumers' aversion to new technologies in food production and processing. At the same time, research has shown that environmental attitudes may be related to purchasing behaviour of consumers. This paper presents the result of an investigation into Canadian attitudes towards nanotechnology, in general, and in applications in the food industry. The relationship between the food technology neophobia scale, environmental attitudes and nanotechnology is examined. The results suggest that food technology neophobia is significant in explaining attitudes towards nanotechnology, in general, and for food packaging and foods. Environmental attitudes are important in explaining respondents' attitudes towards nanotechnology in general but not in explaining attitudes towards nanotechnology in food packaging or food applications. Survey respondents' views of the role of science and technology in society (makes society worse or better off) are a more important determinant of attitudes towards nanotechnology than whether they had heard of nanotechnology prior to the survey. 相似文献

In this article, the compromise effect (CE) is investigated according to which the choice share of a particular product is expected to increase when it is in an intermediate position in a subset of a product line. In a laboratory-based replication study, we tested CE both in hypothetical non-binding settings most commonly used in previous research on CE as well as in settings where experienced consumers make unforced and binding purchase decisions between real brands of two particular categories. While results prove robustness of the compromise effect even in the binding choice context, its magnitude is significantly reduced, hence indicating a hypothetical bias. Thus, since the CE is evidently less prevalent in the more realistic binding choice setting, compromise effects must be considered overrated to a certain degree in the previous studies on hypothetical decisions. 相似文献

There is an assumption, explicit in the current government policy, that involvement of mental health service users and carers in the planning, design and commissioning of mental health services will lead to better outcomes. The aim of this study was to examine evidence from board‐level participation of service users and carers that might support this assumption. A thematic analysis of documents generated by a strategic Lancashire Mental Health and Social Care Partnership during 2007 was undertaken. Themes for the analysis were generated from priorities identified from a postal survey of mental health services users from across Lancashire. The findings indicate that whilst service user and carer involvement is a high priority, the Lancashire Partnership spent most of its time discussing process and actions. Where service user involvement resulted in better outcomes, these improved outcomes were limited to the individual service users involved, rather than better outcomes for all service users. Whilst the membership of mental health service users and carers on the Lancashire Partnership Board presents a visible commitment from senior officers and may confer greater legitimacy to the decisions made by the Lancashire Partnership, service users and carers do not appear to play the desired instrumental role. Rather, their presence may be largely symbolic. This sends out the message across the health and social care system that partnership with service users and carers and their empowerment is important and has the potential to evolve further. 相似文献

This case study explores how two Finnish maritime-sector SMEs recognized business opportunities in Russia. The phenomenon is investigated through the concept of mental image. The data comprise qualitative interviews conducted in 2015–2017, during which one firm continued Russian internationalization efforts despite various challenges and the other ended up abandoning the market. The study contributes to prior studies of international opportunity recognition by emphasizing the role of mental images in the process, opening up the contents of such images and elaborating their dynamics based on events over time. 相似文献

As an alternative to traditional free-gift promotions where consumers have little say over which gift item they receive, retailers are increasingly offering consumers an option to choose from a menu of free-gift items (e.g., buy a washing machine and pick a steam iron or a vacuum cleaner for free). However, little is known about what drives consumers' perceptions of value associated with a menu of free-gift items. Using data from a unique retail-promotion setting and controlled-lab studies, we show that the perceived attractiveness of free-gifts follows an inverted U-shape (or plateauing-shape) as the ‘menu-size’ increases. We also highlight the interplay of resource (time and money) constraints experienced by consumers and menu-size on the proposed effects. Our findings not only help retailers better design free-gift promotions but also contribute to the academic conversations in the domain of promotional-gifts by exploring the downstream consequences of offering choices in a promotional-gift context. 相似文献

This research examines consumers’ processing of Facts-up-front food labels as implemented by the Grocery Manufacturers Association (GMA). Facts-up-front labels include both positive (virtues) and negative (vices) nutritional icons. The processing and relative efficacy of Facts-up-front labels are compared to the original FDA proposal of front-of-pack labels which only included vices. The results suggest heuristic processing of these labels, whereby consumers consider the nutritional icons on the front-of-pack labels similar to affective stimuli. The addition of virtues alongside vices on the label has a compensatory effect, i.e., the food item is evaluated as healthier when there are both virtues and vices on the label compared to when there are only vices. Such heuristic processing of Facts-up-front labels that allows nutritional virtues to compensate for nutritional vices has the potential for consumers evaluating harmful foods as relatively “healthy” thus compromising consumer well-being. These findings illustrate the importance of empirically testing changes to nutritional labels before large scale implementation. Since consumers process front-of-pack labels heuristically and not cognitively, it is not surprising that nutritional literacy does not moderate the effects of label design on healthiness evaluations. Numerous empirical studies have confirmed the existence of the compromise effect, which stipulates that options positioned between extreme alternatives in a product space are perceived as more attractive, hence becoming more likely to be chosen by consumers. However, literature on the topic frequently addresses the limited realism of prior work due to the artificial designs that were used. In a laboratory-based replication study, we examine the compromise effect across several categories in a more market-like scenario, in which experienced consumers make unforced decisions between real brands. In particular, we investigate whether the compromise effect varies in strength across the choice settings, depending on whether a hypothetical choice setting or a binding setting (in which subjects face buying obligations in terms of real payments for products) has been applied. While our results prove the robustness of the compromise effect for both choice frames, its strength differs significantly. Specifically, the compromise effect is evidently not as strong when real payments are introduced in binding choice settings. In addition, analysis of moderating factors confirms that compromise effects are stronger for categories where subjects are more in agreement about the relative quality of the options. 相似文献

Scholars argue that multinational corporations tend to locate their investment in countries with lower labor standards, but empirical results are highly inconsistent. In this paper, we investigate the effect of differential labor standards on the location choice of outward greenfield foreign direct investment (FDI) from Brazil, Russia, India and China (i.e. the BRIC countries). We find robust evidence that while there is a tendency toward the attraction of FDI by lower labor standards in developed countries, such a “race” is absent in FDI directed to developing countries. Location choice is highly path dependent upon previous trading relations between the home and the host country, which hampers the MNCs’ ability to arbitrage. Conversely, capital mobility at the industry level is found to intensify the race to lower standards. 相似文献

Consumer use of the Nutrition Facts Panel (NFP) is an important topic of interest to researchers and public policymakers. Studies conducted in the United States and elsewhere find high levels of self-reported use of the NFP or its equivalent. However, data from self-reports may inflate estimated NFP use due to social desirability problems. Utilizing data from an online experiment, we examine whether consumers choose to view the NFP when assessing the nutritional properties and disease-fighting abilities of foods. We also examine the antecedents of NFP-viewing behavior and its implications for the accuracy of healthfulness judgments and the potential for overgeneralization. We conclude with a discussion of the public policy implications of our results and point to directions for future research. 相似文献

Household food waste is considered to be the largest share of food waste along the food supply chain. Given that its recoverability is also more challenging compared to food waste in other stages of the chain, most studies on household food waste adopt a pre‐emptive approach by aiming to identify and address consumer beliefs, attitudes and actions that are linked to food waste. In scientific literature, household food waste has often been studied in relation to the habit of purchasing discounted food products (DFP). However, findings have been contradictory. Specifically, while some authors found that deal‐prone consumers are usually of lower income and therefore display a wiser and more attentive attitude towards grocery shopping, other authors reported that the purchase of discounted products was usually linked to compulsive shopping, hence resulting in higher food waste quantities at home. Due to these discrepant findings, a definitive answer on the impact of DFP on household food waste does not currently exist in the literature. This paper analyses the correlation between the purchase of DFP and weekly household food waste quantities. To do so, we examine (a) the results of a food waste diary experiment carried out on a representative sample of 385 households in Italy in February 2017, and (b) the results of a 23‐items Computer Assisted Web Interview survey administered to the same householders, in which shopping habits were investigated. Results revealed no evidence of either a positive or negative relationship between the purchase of DFP and household food waste quantities. Frequency of grocery shopping was the only variable found to have a significant impact on household food waste quantities. 相似文献

Although the ethical aspects of transformational leadership have attracted considerable attention, very little is known about followers’ reactions to the moral and immoral conduct of transformational leaders. Against this background, this study examined whether and how transformational leadership interacts with moral and authoritarian leadership behaviors in predicting followers’ in-role and extra-role efforts. Building on attribution theory, we hypothesized that the positive and negative effects of these leadership behaviors would be particularly pronounced for highly transformational leaders given that this leadership style elicits strong attention and sense-making efforts among followers. We tested our model in a sample of 228 individuals comprising 114 leader–follower dyads from a wide range of organizations and industries. In line with our hypotheses, results revealed that for highly transformational leaders, moral leadership behaviors related positively to employees’ in-role and extra-role efforts whereas authoritarian leadership behaviors related negatively to employees’ in-role and extra-role efforts. In contrast, moral and authoritarian leadership behaviors did not significantly affect followers’ reactions to leaders low in transformational leadership. Taken together, these findings suggest that transformational leadership, contrary to its largely positive perception in the literature, can be a rather mixed blessing. Implications for theory, future research, and managerial practice are discussed. 相似文献

Many existing studies on emerging markets and firms have concentrated on the separate effects of institutional reforms and quality of the institutional infrastructure for attracting inward foreign direct investment (FDI) and fostering outward FDI. We argue that both these perspectives should be considered in an interplay, as there are links between inward and outward FDI in a country's economic development, which is captured by the investment development path (IDP) concept. Moreover, while predominant attention has been paid to emerging markets, little has so far been done to evaluate the sustainability of the institutional development, including later post-transition stages. We extend the IDP with insights from the institutional theory and conduct a comparative analysis of the effects of institutional reforms on IDP paths of ten Central and Eastern European (CEE) post-communist European Union (EU)-members. We find that while most of the studied post-transition economies follow a quadratic relationship between the net outward investment (NOI) position and each country's economic development, the role of institutional reforms is not in all cases accelerating the movement through the stages of the IDP. As an alternative to promotional price cuts, retailers and manufacturers often rely on non-price promotion techniques, such as premium promotions, where consumers receive a free gift with the purchase of a product. We compare the effectiveness of premiums to that of price cuts, and study moderators of this comparative premium effectiveness. We use data from a large online shopping simulation study with more than 2,000 participants to model consumers’ purchase decisions in response to premiums and price cuts. Results indicate that the impact of premiums on purchase behavior is systematically lower than that of equivalent price cuts. However, a premium’s smaller sales impact may be offset by a cost advantage. This is especially true for private label brands where the premium’s purchase effects do not differ too much from those of a price cut. We calculate how large the cost advantage has to be for a premium to be more profitable than a price cut, and show that premiums entail risks as well as opportunities, for both manufacturers and retailers. 相似文献

Consumers’ and marketers’ growing reliance on digital and social media has significantly influenced the nature of communications. Importantly, new communication mediums have made it easier for communicators to provide recommendations to a single individual (i.e., a one-to-one communication known as narrowcasting) as well as to large numbers of individuals (i.e., a one-to-many communication known as broadcasting). The current research assesses the impact of advice scope (either narrowcasted or broadcasted advice) on consumers’ likelihood of taking advice. Across two experiments, we demonstrate that the acceptance of broadcasted or narrowcasted advice is dependent upon tie strength between the advisor and the advisee. Furthermore, we highlight the role of psychological reactance in consumers’ response to narrowcasted and broadcasted advice. Our results extend prior research on consumer advice utilization and identify situations where broadcasted advice may be more persuasive than narrowcasted advice. 相似文献

Are multinational enterprises (MNEs) makers or takers of corruption? This review focuses on corruption in the multinational context to highlight issues specific to MNEs, and captures 139 articles from 75 English journals over the period of 1999?2020. Our review not only highlights common themes around the contextual challenges facing MNEs, but also how a key strand of the literature focuses attention on the role of MNEs as active agents in corrupt practices. It is often implied that corruption is something endemic to the emerging markets, which MNEs from the north have to cope with if they have to do business there, rather than what significant numbers of such firms actively instigate or sustain. Hence, we challenge predominantly western perspectives informed by institutional-economic analyses that too often, pose a false dichotomy between the global north and global south. With ethical misconduct commonplace in organizations and with the touting of competitive advantage associated with ethical organizational practices, considerable attention has turned to leadership integrity. Leaders are uniquely situated to influence the behavior of organizational members, and integrity has been shown to be instrumental in supporting ethical behavior and decision‐making. This article explores the role and influence of human resources management (HRM) in supporting leadership integrity among a group of large organizations operating in crisis‐stricken Greece. Although the institutional and cultural context of Greece appears to exacerbate role tensions confronted by human resources (HR) professionals, its forces are not deterministic; findings from in‐depth interviews with 12 HR directors indicate that the HR potential to secure ethical influence at the top level is primarily contingent on the nature of the organization's culture. Cultures of integrity enable HR executives to influence integrity and ethical behavior in top management teams (TMTs). In contrast, compliance‐based organizational cultures appear to breed a fickle HR presence: fostering integrity and ethical behavior for the middle and lower levels of an organization, while turning a blind eye to integrity violations at the top. 相似文献
