ABSTRACT

The aim of this paper is to study differing demographic factors affecting fast-food customers loyalty towards national or international fast food chains. A variety of variables used to gain a holistic view, which includes factors such as quality, price, food and demographic profile of consumers affecting loyalty of fast food chains. The study adopts the theory and method of the trust-commitment-loyalty explanation chain and examines the consumer survey adapted from Fast food by Sahagun et.al (2014). The present analyses 542 filled questionnaires in which systematic sampling is used. Indians prefer global fast food chains compared to Indian fast food chains. Loyalty towards global brands is higher than that for Indian brands because they are found to be of better quality which leads to higher frequency of visit and recommendation of the brands to their friends and colleagues. There is ethnic variation towards global and Indian fast food chains.  相似文献

Although incidences of foodborne illness caused by chemical hazards are increasing, the studies on public awareness of food chemical hazards are limited. This study was conducted to assess mothers’ knowledge, behaviour and concerns on diverse food chemical hazards. A total of 960 mothers sending their preschool‐aged children to child care centres in Gwanak‐Gu, Seoul, Korea were surveyed, and 633 (65.9%) returned the questionnaires. After excluding inappropriate questionnaires, 364 (37.9%) were analysed. The majority of the mothers were able to identify food categories containing acrylamide (83.2%) and trans fat (80.2%), while slightly over half of the mothers named food categories containing allergen (56.3%) or pesticide residues (57.1%). Less than two thirds of mothers were knowledgeable of human exposure pathway to environmental contaminants (59.3%), acrylamide (55.2%) or heavy metals (65.9%). A significant number of mothers showed familiarity on health risk from dietary exposure to environmental contaminants (82.4%), trans fat (91.5%) or heavy metals (96.7%) (P < 0.05). The data on safe food behaviour towards environmental contaminants (81.8%), acrylamide (98.0%), heavy metals (96.7%) and trans fat (90.6%) showed high levels of right behaviours. About 47.2% and 22.8% of mothers read label of food additives and ingredient statement on allergen when purchasing processed foods, respectively. Mothers seemed to be concerned about food chemical hazards. Among the sociodemographic characteristics, only age significantly differentiated mothers’ concerns on chemical hazards in foods (P < 0.05). This study suggests that mothers needed to be educated on food chemical hazards regardless of their education levels, occupation status or the number of child.  相似文献

This paper explores the effect of European Union (EU) food safety regulations on EU imports of baby food. Pesticides and contaminants contribute to various health problems. Children are more vulnerable to the dangers of pesticides and contaminants because as soon as they start eating solids, they consume a limited number of food items, most of which are fruits and vegetables. To protect the health of the most vulnerable part of the population, the EU regulations stipulate that no more than 0.01 mg/kg of any single pesticide residue is permitted in baby food. In this respect, the EU differs from most of its trading partners, the majority of which do not differentiate food safety regulations according to the age of the consumer. The purpose of this paper is to compare the EU regulations on maximum residue limits of pesticides to those of its major competitors through a severity index. This index is then introduced into a gravity equation to assess the impact on EU imports of baby food. We find that the EU regulation had a negative impact on the volume of trade but a positive one on the probability of setting up new trade relationships.  相似文献

Sustainable food consumption is an important aspect of sustainable development. When adopting a sustainable food lifestyle, consumers are confronted with complex choices. Today's food consumption is too complex to be explained by socio‐demographic factors exclusively. A broader perspective is needed. In order to explain behaviour across different consumer segments better, relatively homogenous segments of food consumers were identified by segmenting food consumers based on a wide range of variables. The current study aims to provide an overview of published studies that have segmented consumers with regard to sustainable food consumption. The literature review has been conducted by searching SciVerse Scopus for all relevant articles available until November 2010. The main criterion for including a specific study was the inclusion of empirical analyses of primary data, resulting in consumer segments with regard to sustainable food consumption. Sixteen articles were incorporated in the final analysis. First, the variables used for segmentation and profiling in the included articles have been categorized into three levels of abstraction: personality characteristics, food‐related lifestyles and behaviour. The three levels of abstraction proved to be helpful in categorizing the segmentation studies. The findings indicate that variables on all three levels were efficient in differentiating consumer segments regarding sustainability. In addition, the importance of price and health differed across the segments, although these variables are only indirectly related to sustainability. Second, the three most frequently identified consumer segments with regard to sustainable food consumption were: ‘greens’, ‘potential greens’ and ‘non‐greens’. These segments differed from one another on all three levels of abstraction. This implies that future segmentation studies should include variables on all levels of abstraction to get a complete picture of existing sustainable consumer segments. Marketers should be aware that targeting specific segments based on socio‐demographic variables exclusively is not sufficient. Personality characteristics, lifestyle and behaviour are all important to take into consideration. Attempts at stimulating sustainable consumption might be most effective when differences across consumer segments are taken into account. Future research is needed to explore the characteristics of different sustainable food consumer segments with respect to their potential contributions in promoting sustainable development.  相似文献

Despite the potential health- and sustainability-related benefits of insect-based food products, many consumers do not perceive them as an alternative to conventional foods. This research provides a systematic approach to explain consumer reactions to insect-based food products conducting a series of multi-method studies involving implicit, self-reported, and actual behavioral responses to real insect-based food products (provided by a partner company). The authors investigate how product type (i.e., whether the insect-based food is utilitarian or hedonic in nature) and packaging characteristics (i.e., whether the image of a real or stylized insect is present on the front packaging or not) interact with consumer-related characteristics (i.e., health consciousness and food neophobia) to affect feelings of disgust, which in turn influence willingness to try insect-based food products. A distinctive feature of this research is that a partner company used the findings to change its marketing tactics and observed an improvement in its market performance. Our research has clear implications for marketing managers trying to overcome consumer resistance to eating insect-based foods, as well as retail managers considering marketing such food products.  相似文献

This study examines the link between consumer weight level, food type, and consumer attitude toward both food and food advertisements. Further, this research explores how food advertisements containing emotional or informational claims influence the attitudes of overweight and normal-weight consumers. Two experiments were conducted to study the interaction between weight levels, food types (meat vs. vegetables), and advertising appeals (emotional vs. informational). The results showed mixed support for the six hypotheses. The findings indicate that consumer weight level interacts with food types, and emotional/information appeals affecting food evaluation and attitudes toward food advertisements. Managerial implications for food manufacturers and advertisers are discussed.  相似文献

This study was undertaken to answer four questions. How widespread is the interest in health issues related to food among consumers in Norway? What types of food-related health risks are the consumers concerned about? How is the concern expressed among different groups and subgroups of the population? How is the interest in food and health expressed in terms of food behaviour? The paper is built on results from two nationwide consumer surveys in Norway: one telephone interview including 1,021 persons and one postal questionnaire including 13,857 persons. The data revealed that 72% of the consumers were very or rather concerned that the food they eat could be harmful to health. Contrary to results from some other studies, the majority of the Norwegian consumers (57%) were mostly concerned that the food they eat could contain too much fat. Even though the fat issue attracted most attention, many were also concerned about food additives (39%) and contaminants from environmental pollution (43%). Logistic regression analyses showed that the expression of concern is different in various subgroups of the population, divided according to age, income, education and place of residence, Data on food behaviour confirmed the heavy emphasis that consumers put on the fat issue and on additives in food.  相似文献

In society, young consumers are influenced by an array of factors within their home, school and social environments. The adolescent period is one in which the individual becomes a more independent consumer, exerting increased degrees of independence and a subsequent freedom of preference. Such independence may be particularly apparent within the social environment, despite young consumers generally being categorized under the ‘family market’, within the Hospitality Spectrum. The aim of the study was to analyse young consumers’ food preferences within the home, school and social environments, with particular reference to the role of the Hospitality Spectrum. Young consumers for the study, are defined as being between 11 and 16 years, segmented into two age groups: 11–13 years and 14–16 years. The selected sectors of the Hospitality Spectrum which were studied, were the fast food service and school canteen sectors. In order to fulfil the research aim and objectives, a range of research instruments and analysis techniques were used. The results of the study to date would illustrate that tentative steps have been taken within the school and fast food sectors, to bridge the ‘gaps’ between business supply and consumer preferences. Gender differences were found in food selections within school canteens and fast food establishments, with females more likely to select ‘British’ styled fast foods at school and males more likely to select ethnic foods at fast‐food establishments. No significant differences were found between the two age segments. It is vital that the increasingly important role of the young consumer segment is recognized, in particular considering them as individuals rather than as a part of the ‘total’ family consumer package. However, in market segmentation young consumers are an important consumer group and it must not be overlooked that they will be the future adult consumers. The Hospitality Spectrum must therefore treat this group with respect for the consumer service industry to achieve its full potential. The results of this Northern Ireland study indicates that although the young consumer segment is viewed as important within the selected sectors of the Hospitality Spectrum, the extent of their full potential has yet to be recognized.  相似文献

Abstract

Eco-design packaging is a potential tool to reduce food waste. However, the absence of a theoretical basis regarding the relationships between eco-design packaging and consumer food waste behavior obscures the social impact of this packaging. This study assesses research linking eco-design packaging and food waste avoidance from a consumer perspective. The authors analyze 22 articles in top-tier journals, and conclude that consumer perceptions of eco-design packaging could reduce food waste. Results lead to a conceptual model of the mechanism whereby consumer perceptions of eco-design packaging influence food waste avoidance intentions.  相似文献

While a number of U.S. agricultural industries have implemented a region of production (ROP) certification, little research has focused on ROP valuation associated with both whole and processed forms of a food product. Understanding consumer preferences toward certified products sold in multiple forms is critical to the success of a new certification program in an industry that sells products at multiple levels of processing. This study examines preferences for a possible ROP-certified vegetable across two product forms: fresh and processed. Discrete choice analysis was conducted using data collected from an online panel survey of 553 U.S. food consumers. A chile pepper product’s ROP was deemed important by participants, although the ROP certifier appears to matter less than other potential certifications (e.g., safety, quality). Differences in the importance of ROP between product forms suggest a single certification can have disparate effects on consumer preferences for different forms of a ROP-certified vegetable.  相似文献

The present work is focused in some aspects of the adoption process of unfamiliar foods. We make a distinction for the concept of unfamiliar food based on consumers’ degree of knowledge of the ingredients, therefore, we categorize unfamiliar food in two different types: unknown food (unknown ingredients) and novelty combination food (known ingredients combined in a novel or unusual way). Based on this distinction, we analyze the effect of this different source of food unfamiliarity on the intention to try it, considering personal traits such as food neophobia and consumer ethnocentrism. Our results show that the degree of food unfamiliarity has a higher impact on intention to try in consumers with low levels of consumer ethnocentrism, and that type of unfamiliarity moderates the effect of level of unfamiliarity on intention to try only in consumers with high level of consumer ethnocentrism.  相似文献

The article deals with a comprehensive, interdisciplinary examination of the effect of lighting on the purchasing decisions of consumers and the perception of lighting on the food market. It is the integration of questionnaire survey and measuring of light intensity and color temperature (chromaticity), respectively, of emitted color spectrum in grocery shops. The object of the study is the accent lighting in served shop departments of fresh food (meat, deli, dairy products, fruit, vegetables, bread, pastry) but also in other departments of supermarkets (wine, alcohol, organic food, specials, seasonal goods). Based on the light tests conducted in retail stores, we have identified the light conditions in national and international chains operating in Slovakia. Using EEG equipment in simulated conditions, we discovered true consumer preferences for different lighting conditions (color temperature, color rendering index) for the selected type of food. The article concludes with certain managerial implications in the sphere of food retailing and recommendations for further research studies.  相似文献

Audience segmentation and focus group methods were used to evaluate consumer reactions to a risk/benefit/option message about agricultural chemicals in the food supply. The approach was well-received and showed potential for raising consumers' concerns regarding health and environmental risks associated with pesticides, along with confidence in their ability to minimize exposure to residues. Although consumer interest in organic food has risen over time, resulting in a generally positive attitude toward these organic food products, scholarly research suggests a comparatively low volume of its consumption in the market. This has resulted in an urgent need to study the motivations which enhance consumers’ proclivity to purchase food items produced organically. The current research attempts to understand potential associations between motivations (intrinsic and extrinsic), attitude, and buying behaviour towards organic food. Self-determination theory (SDT) was applied to develop a theoretically grounded framework which was evaluated with 378 organic food consumers. The hypotheses were tested by analyzing the data through structural equation modelling (SEM), wherein environmental concerns and trust were the moderating variables. The study results demonstrate the significant influence of intrinsic motivation, integrated and external regulation on consumer attitude, and buying behaviour. But, attitude had no significant association with buying behaviour. The findings indicate consumers’ motivation may be stimulated to encourage higher frequencies of purchasing organic food by emphasizing values that reflect motivations arising from ethical or green consumerism, health, and social benefits. Furthermore, policymakers should focus on avenues to integrate organic food as permanent parts of individual lives and a socially exalting behavioral action.  相似文献

The main purpose of this work consists of displaying the different attitudes of men and women towards organic food, and their willingness to pay for it, in three different consumer intensities: usual, occasional and potential consumers. Several surveys have been carried out to obtain a representative sample of regular food purchasers living in Castilla‐La Mancha (Spain). Statistic analysis previously detecting significant differences with regard to gender and type of consumer has been conducted by univariate analysis to describe attitudes, and multivariate analysis, through ‘logit’ models, to calculate maximum willingness to pay. Results show that women have a more favourable attitude (directly related to their lifestyle) to the purchase and consumption of organic food than men, whereas men are inclined to pay a higher price for organic food than women. In general, men are disposed to pay a higher increase in price than women.  相似文献

Alternative food networks (AFNs) are growing in number and relevance in Germany. Those networks include new models of production and distribution, such as food cooperatives (FoodCoops), self‐harvest gardens or community‐supported agriculture (CSA) schemes. AFNs, as an alternative to conventional food supply systems, are characterized by a close producer‐consumer interaction. They are typically located within urban or peri‐urban areas. The study aims to identify the rationale and motivation of urban residents in participating in AFNs and developing a consumer typology. We also assess whether AFNs potentially lead to collective action with societal impact. Therefore, we conducted a qualitative content analysis based on 18 interviews with members of existing AFN projects in three German metropolitan regions. Our results revealed that the willingness of urban consumers to participate in AFNs is driven by a broad range of motives. They include personal desire for high‐quality food (in terms of taste or freshness) and health reasons, but also political or environmental motives (opposition to conventional agriculture or short transport distances). Furthermore, consumers often want to support a certain farmer and his/her philosophy or they appreciate the community‐building aspect. Three different consumer types were derived from the motive combinations. Many consumers communicated a sense of belonging to a societal movement, however, our study revealed a lack of organization and collective action. Although AFNs can influence the consumption patterns of individuals, their potential to induce social change and to challenge traditional models of consumption in the near future does not appear to be high.  相似文献

The transformation of industries and industry architectures is approached through a community evolution analysis of two closely related value chains. A longitudinal multilevel data set on the consumer food value chains in Britain and Ireland is analyzed. The analysis highlights the central role of coevolution between members of the value-chain communities, including the related institutional context. Commensalism is explored through its constituent processes of competition and cooperation. Both are seen to act powerfully in shaping change and transformation. The divergence between the two value chains studied bears out the basic evolutionary premise that evolution is constructed, not determined by generic processes.  相似文献

The significant attention and growth surrounding sustainable foods has created a demand for research investigating different factors that can aid in predicting and explaining consumer behavior. This article utilized an attitude-behavior framework, the Theory of Planned Behavior (TPB), to identify factors that might influence consumer valuation of organic, fair trade, and local labeled food. Approximately 1,000 consumers from a 2008 nationwide survey were used in data analyses. Some TPB determinants proved successful in understanding consumer motivations (behavioral control, social norms). These results can be used by a wide variety of food marketers to connect with consumers to promote effective marketing strategies of sustainable food products  相似文献
