Obesity in children is rapidly becoming a major public health problem in Hong Kong; the prevalence of overweight in children increased from 16.2% to 22.2% between 1998 and 2008. Healthy eating programs and policies exist, but only for primary schools, and students’ eating habits change when they are exposed to the new environment in secondary schools. Therefore, this study examined the relationship between available food in secondary school tuck shops and students’ purchasing preferences. A cross‐sectional survey was conducted from mid‐March to mid‐April 2016 across six secondary schools, using a questionnaire to measure students’ healthy eating knowledge and eating habits and a checklist to explore food options in each school's tuck shop. Linear regression was used to explore the relationship between eating knowledge and eating habits and logistic regression to explore the relationship between available foods at the tuck shops and the children's purchasing preferences. A total of 374 junior secondary students participated in the survey. A weak, positive correlation was found between healthy eating knowledge and healthy eating habits. No association was found between available food at tuck shops and children's purchasing preferences. The results reveal a definite knowledge‐attitude gap where healthy eating is concerned. Despite there being no significant association between the food offerings in tuck shops and students’ measured purchasing preferences (p > .05), 81% of the students stated that they would choose healthy food if offered, illustrating the urgent need to assess the variety and nutritional quality of foods available in secondary school tuck shops.  相似文献

The literature on the factors influencing children’s consumption behaviour is vast; however, gender-specific consumption behaviour and the determinants driving these discriminative decisions are largely unknown. This article contributes insights to the role of gender in food preferences using the example of school milk consumption by German primary school children. Study subjects included pupils, their parents, teachers, and other school personnel. The results of the multilevel model reveal that there are various factors influencing the probability that a child will decide to order school milk. In addition to individual factors such as socio-economics, eating habits, and preferences, consumption behaviour is also affected by social environmental factors. These factors include the preferences of parents, the consumption behaviour of teachers, teachers’ attitudes, and the attitude of the school principal. Additionally, policy-driven aspects (e.g., school milk price, product range) were included in the analysis and proved to have an impact on a child’s decision to order school milk. Although the results are limited to consumption behaviour for school milk, they can be used in the development of new or the revision of existing school food programmes. The example of school milk may shed light on how specific measures affect boys’ and girls’ consumption, e.g., how they react to price reductions or specific school settings.  相似文献

This methodological paper elaborates on the pitfalls and potentials for using participatory photo interviews that explore children's experiences with food. It aims to show how participatory photo interviews can give a deeper understanding of children's food preferences. Such knowledge will be useful to other researchers who wish to apply the method in social studies involving children and food. We studied 12 families comprising seven‐ and eight‐year‐old children and their parents to illustrate how this method can be used to identify and understand children's food preferences. The children took photographs over a one‐week period while eating family dinners at home and grocery shopping with their parents. The photos were then used to elicit information during separate in‐depth interviews. Qualitative data analysis software (NVivo 10) was used to content analyse the data. We found that participant photo interviews were a useful method for helping children to remember and describe the sensory, cognitive and affective situational associations of their meals. This approach helped to explore interesting aspects of children's preferences such as their response to raw vegetables, the importance of controlling and choosing meal ingredients and ambivalent food preferences. We discuss parental involvement during data collection as it represents one of the methodological pitfalls. Another limitation is the risk of sensitive information to be breached. We conclude that participatory photo interviews have potential for future food research involving children and may provide information difficult to elicit using other methods.  相似文献

Food insecurity or lack of access to adequate and nutritious food is a major determinant of under‐nutrition. Expenditure patterns accompanied by unemployment, low level of education, inflation and high food prices have a direct negative impact on food availability within households (Moller, 1997). Ghany and Schwenk (1993) found that as household income increases, the proportion of expenditures on food decreases, the proportion of expenditures on clothing, rent, fuel, and light stayed the same and that of sundries increased. The aim of this study was to investigate household expenditure patterns on food and non‐food items in Khayelitsha. A total of 20 households (10 from the formal and 10 from the informal settlements) were randomly selected from those willing to participate in the study. A questionnaire with open ended and closed questions was used to collect data. The questionnaire comprised four sections namely: biographical information, socio‐economic information which used wealth quintiles to assess households’ social economic status, total expenditure information and a food/hunger scale was used to assess households’ food availability. The findings revealed that households from informal settlements spent more money (62.2%) as a proportion of their income on food compared to households from the formal settlement (39%). There was higher unemployment rate (100%) at the informal settlement compared to the formal settlement (40%). Wealth quintiles scales did not reflect the social status of the households as equipment and assets owned by households were only used as fallback position during times of economic hardships. Households used different purchasing strategies; food and non‐food items were mainly purchased from outside the township (60%). Forty percent of the households bought their items from local shops and spazas because they allowed them to buy items whenever little money was available or to take items on credit. All the respondents preferred to buy bread and small items from spazas and local shops. Prices of items in the spazas and local shops were higher compared to prices of items in bigger shops outside the townships. The food/hunger scale and wealth quintiles showed that informal settlement households were more food insecure (as they were all unemployed and about 50% of the households ran out of food always) and had fewer assets compared to the formal settlement households. The implications of these findings underscore the need to improve socio‐economic conditions of low resource households through empowerment programs. These programs can be in the form of training in management/decision making, work related skills/literacy (to help them access formal employment), business management/income generation skills (to help them to be self‐employed), budgeting, and food gardening. This approach can help to increase the resource base and alleviate food insecurity in low resource households.  相似文献

There is an increasing and sustained interest in participatory research with children. We subscribe to these new perspectives by involving children as co‐researchers investigating their preferences when it comes to foods and eating. The overall aim of the research project Sustainable Eating Children's Way: Promoting Healthy Food Habits among Children 10–12 (Barn som medforskare i matlandskap) is to create an understanding of how children's food habits can develop in healthier and more sustainable ways. The specific aim of this paper was to discuss the methods used in the first phase of the project in order to find an answer to the question: ‘Is it possible to gain a deeper and more nuanced understanding of children's preferences in foods and eating?’ The research process in this project can be looked upon as two parallel processes: the overall one initiated by the senior research team and the one incorporating the children as co‐researchers. The children participating were 10‐year‐olds attending two classes in the fourth grade of a Swedish government‐funded school. We found the children knowledgeable and competent as co‐researchers. Involving children in the research processes and giving them freedom to explore is a promising way of letting their voices be heard in health promotion programmes.  相似文献

Food advertising to children is an issue that is at the centre of debate and the purpose of this paper is to critically examine the claims and the evidence. Several issues are examined: the child’s understanding of advertising, the content of advertising to children; food choices in families, children’s food choice and behaviour, and the effect of advertising on food choice. Major conclusions are the following: that children understand the function of advertising from the age of 8–9 years, although there are limitations on how effectively they apply this knowledge; that the content of advertising to children has remained relatively unchanged for 25 years; that children play an active role in food choice in families; that children’s dietary preferences and habits are well-established before advertising is understood; and that advertising’s role in children’s food choices and preferences is multi-factorial and complex.  相似文献

In society, young consumers are influenced by an array of factors within their home, school and social environments. The adolescent period is one in which the individual becomes a more independent consumer, exerting increased degrees of independence and a subsequent freedom of preference. Such independence may be particularly apparent within the social environment, despite young consumers generally being categorized under the ‘family market’, within the Hospitality Spectrum. The aim of the study was to analyse young consumers’ food preferences within the home, school and social environments, with particular reference to the role of the Hospitality Spectrum. Young consumers for the study, are defined as being between 11 and 16 years, segmented into two age groups: 11–13 years and 14–16 years. The selected sectors of the Hospitality Spectrum which were studied, were the fast food service and school canteen sectors. In order to fulfil the research aim and objectives, a range of research instruments and analysis techniques were used. The results of the study to date would illustrate that tentative steps have been taken within the school and fast food sectors, to bridge the ‘gaps’ between business supply and consumer preferences. Gender differences were found in food selections within school canteens and fast food establishments, with females more likely to select ‘British’ styled fast foods at school and males more likely to select ethnic foods at fast‐food establishments. No significant differences were found between the two age segments. It is vital that the increasingly important role of the young consumer segment is recognized, in particular considering them as individuals rather than as a part of the ‘total’ family consumer package. However, in market segmentation young consumers are an important consumer group and it must not be overlooked that they will be the future adult consumers. The Hospitality Spectrum must therefore treat this group with respect for the consumer service industry to achieve its full potential. The results of this Northern Ireland study indicates that although the young consumer segment is viewed as important within the selected sectors of the Hospitality Spectrum, the extent of their full potential has yet to be recognized.  相似文献

The nutritional habits of UK consumers have become a cause for concern with an increasing number of people suffering from diseases related to nutrition. The way in which food is prepared may contribute to the nutritional content of the diet. Traditional methods of cooking and eating are being influenced by increased ownership of domestic appliances. This study aimed to carry out a cross sectional study of people living on Merseyside to determine the ownership and use of small kitchen domestic appliances in relation to the possible consequences the appliances may have on the nutrient intake of the individual. An opportunistic sample of 276 female adults aged 25–70 years was recruited from amongst university staff and community groups within Merseyside. Data were collected using a self‐completion questionnaire consisting of questions concerning personal details, the ownership and use of domestic appliances that may influence nutrient intake. The Liverpool John Moores University Ethics Committee granted ethical approval. Microwave ovens, electric toasters and grills were owned by 80% of the population. Coffee makers, handheld electric food mixers, sandwich makers, blenders and food processors although owned by over 45% were used by the majority only once a week or less. Newer items such as a bread maker were owned by 9% who were significantly more likely to have a professional occupation. Those with unskilled occupations were significantly more likely to own a deep fat fryer and least likely to own a food processor. Those aged 25–34 years were significantly least likely to own a handheld food mixer. Households comprised of couples with or without children were significantly more likely to own sandwich makers, bread makers, food processors and handheld food mixers. No difference in the use of the appliances was found with occupational group or age. A large percentage of people own a variety of domestic appliances, the use of which may have a beneficial effect on their nutrient intake, however, it is of concern that those in the lower socio‐economic group were more likely to own appliances that will have a negative effect on their diet.  相似文献

This study investigated the use of price discount promotions at private clubs. The purpose was to determine whether the promotions led club members to purchase the promoted food entree items when dining at the club, and the effect of the promotions on the purchase of regular or non-promoted food and beverage items. Over three-fourths of the members who cited the promotion as a reason for visiting the club purchased one or more regular price items. Members visiting the club for the promotion spent more money on regular price items than on promoted items. Moreover, the majority of promotional purchases were made by members who did not visit the club in response to the promotional advertisement.  相似文献

Adolescents are the consumers of tomorrow; therefore policies aimed at increasing organic food consumption should address the needs of this group. To discover their attitudes towards organic food and their knowledge of the subject, a survey among almost 700 school children aged 15–16 years was conducted. Four main groups of questions were used: adolescents’ knowledge of organic food, attitudes, whether they bought organic food and the perceived influences they exerted on the buying patterns of their parents. From the survey it can be concluded that adolescents’ attitudes towards organic food are positive, but their knowledge of and their willingness to buy it are low. Campaigns aimed at encouraging the purchasing of organic food targeted at adolescents should particularly emphasize those characteristics of organic foods that they can relate to their interests and ethical preferences, for example, animal welfare and environmental considerations.  相似文献

Consumers' lifestyle changes and striving towards better time management have resulted in the greater choice they are offered with regard to store formats. Therefore, this study was undertaken to identify the factors that influence consumers in their patronage of a particular store format and to categorize department and specialist food store consumers according to their preferences in store layout and product range in a South African context. A qualitative research approach was used and data were collected using semi‐structured interviews with open‐ended questions. Purposive sampling recruited participants shopping for food in a department store in Johannesburg. Forty semi‐structured interviews were conducted before data saturation was reached. Store‐related factors such as store location, appearance and hygiene, service quality, convenience of trading hours, and consistency in store layout predominantly influenced participants in their patronage of a specific store format. Furthermore, product‐related factors such as quality, price, product range and convenient packaging enhanced consumers' store preference. Department store consumers were orientated towards one‐stop shopping and time‐saving strategies, while specialist food consumers were focused on food shopping and the trading hours of the store. Although similarities in participants' preferences with regard to department and specialist food store were found, different preferences were found regarding the placement of specific items within the store. Participants had similar preferences regarding the product range of a food store. However, department store participants emphasized the provision of convenience food and non‐food items. The findings of this study are valuable in providing department and specialist food store retailers with guideline recommendations regarding store layout and product range in order to effectively respond to the needs and preferences of consumers within an emerging economy.  相似文献

A survey of the nutritional composition of primary school children's packed lunches and school meals over I week in October 1990 was carried out in an inner-city school in Nottingham where the majority of children had free school meals and were therefore by definition from low-income families. Maximum, minimum and mean levels of energy, protein, fat, carbohydrate and dietary fibre were calculated from food composition tables, together with the proportions of the energy contributed by fat, carbohydrate and protein. There were very large differences in the ranges of protein (2.6–24.7 g), fat (10.0–55.3 g) and carbohydrate (33.7–160.9 g) in packed lunches compared to those from school meals (protein 23.3–81.9 g, fat 24.0–65.5g and carbohydrate 37.2–140.3) although the mean percentage of energy from fat was similar in the packed lunches compared to the school meals (43.1 vs. 42.7). The mean energy provided by the school meals was approximately 33% higher than that from packed lunches (2554 kJ vs. 3386 kJ). Whilst accurate food consumption measurements were not performed, observational studies of the children indicated that food was left uneaten, particularly with packed lunches where the crisps and chocolate were often eaten first and the sandwiches remained half-eaten or untouched.  相似文献

Children come into contact with food in different places and contexts, i.e. ‘foodscapes’. The aim of the paper was to study what knowledge children construct regarding food and meals in the foodscape at school and how they do so, focusing on the school meal context. Observations, interviews and focus group interviews were used. The children appropriated ideas and understandings from the adult world and society as a whole and used it among their peers in the school meal situation. This included the adoption of institutional commensality, the telling of stories about food, and the classification of foods in dichotomies.  相似文献

The dramatic rise in childhood obesity has triggered great concern among parents, health providers and researchers, public policy makers and politicians. In a controlled experiment with 166 primary school children in Australia, this study investigates the effects of availability, point-of-purchase advertising and sampling on children's food preferences and their first independent food purchases. The results indicate that availability and point of purchase advertising has a significant effect on changing children's preferences. The effects of sampling, in the presence of other forms of promotion, are less clear. The implications of these findings for marketers and public-policy makers are discussed.  相似文献

Food allergy is a chronic disease that can only be managed through avoidance of problematic proteins in the diet. Inappropriate communication about food allergens can cause stress and insecurity, which may have a negative impact on quality of life. The aim was to investigate whether information provided through current labelling practices meets the need of food allergic consumers. A total of 40 participants (20 adult food allergy suffers and 20 parents of food allergic children) were recruited from two different European countries (Greece and The Netherlands), and interviewed while shopping in a supermarket. Participants were asked to purchase 15 potentially problematic food items as if for their own household. Their information search behaviour was observed, and participants were questioned about their preferences for food allergen information provision. Participants reported experiencing problems associated with current food allergy information provision. It was reported that inappropriate use of fonts, colours and languages, application of precautionary labelling and lack of harmonization in labelling practices across countries can cause (un)necessary dietary restrictions for food allergic consumers. Research is needed to investigate the feasibility and implementation possibilities for new information delivery strategies and amendments to existing European labelling policy.  相似文献

A random sample of American elementary school educators, representing all but three of the 50 United States, responded to a questionnaire designed to ascertain: (1) their opinions concerning the inclusion of food and nutrition concepts in the elementary school curriculum; (2) their actual practices concerning the teaching of food and nutrition in the elementary classroom: and (3) their needs for elementary food and nutrition teaching materials. The results suggested that nutrition was the food and nutrition concept area most highly valued in relation to the education of young children and the concept area most frequently taught in American elementary classrooms; it also represented the concept area most in need of the development of teaching materials. Congruently, nutrition represented the food and nutrition concept area most frequently reported as being supported by American school administrators.  相似文献

Primary school children's fruit consumption and attitudes, knowledge and preferences regarding fruit were investigated using interview techniques in schools in England (Nottinghamshire) and Germany (north east), and analysed on the bases of culture, sex and social class. Children from both countries had strong positive attitudes towards increasing fruit consumption and differed little in their ability to correctly identify five fruits (including tropical fruits). Fruit preferences also showed many similarities, with more than 95% of children from both Germany and England choosing apples as fruits they liked, followed closely by strawberries, oranges, pears, grapes and bananas. Fruit consumption by German children was, however, higher than English children both at breakfast and in school breaks. Strategies for increasing fruit consumption in English children are discussed in relation to the findings obtained.  相似文献

Seafood in the adolescent diet has many benefits, yet a number of adolescents do not consume the recommended levels. Despite this the consumption of seafood by younger consumers has received scant attention in the extant literature. Previous studies on adolescents’ food‐related behaviour tend to focus on general choice mechanisms or perceptions of food and mainly relate to fruit and vegetable intake. The present study seeks to address this gap through investigating the impact of family upon the consumption of seafood by younger consumers through exploring adolescents’ attitudes and behaviour in regard to eating seafood. Utilizing an exploratory qualitative methodology, seven focus groups of adolescents aged 13–19 years were conducted at two schools in South West England. Discussions covered a range of issues related to adolescent seafood consumption. The use of thematic content analysis found that the family, and parents in particular, exert high levels of influence over adolescents’ consumption of seafood both at home and when dining out. The parent who does the shopping and cooking has the greatest role. Sibling preferences and dietary choices also influence whether seafood is served in the home. Of value to researchers and management are the insights gleaned into the influences on adolescents’ attitudes towards and behaviour in regard to eating seafood. In particular, encouraging seafood consumption will rely upon interventions aimed at both parents and children and need to take into account adolescents’ diet and lifestyle preferences, while also acknowledging the influence of peers and the school food environment.  相似文献

The aim of this study, with the pedagogic meal in focus, was to identify pre‐school staff members’ attitudes to the role of food and meals as part of daily activities at pre‐school. Interviews were carried out at 12 pre‐schools and a total of 34 pre‐school staff participated. The staff revealed strong opinions as well as ambivalence towards how food and meals should best be integrated into their daily work and pedagogic activities. The pre‐school staffs’ lack of or insufficient education and knowledge regarding food and nutrition resulted in an ambivalent and uncertain situation with respect to how they should see themselves as teachers in the meal situation. Nevertheless, most of the staff had a clear perception of what it meant to practice a pedagogic meal. It meant helping and encouraging the children to help themselves and serving as an adult model for the children at table, though this pedagogic activity was uncommon. While the staff were satisfied with the pre‐schools’ role of catering for the children, they expressed concern about or even mistrust towards the children's parents. Despite, or perhaps due to, their inadequate knowledge about food and nutrition and the lack of specific aims for the pedagogic meal, they assumed that the public sector was a better educational institution regarding foods and a better guarantor for children's food habits and dietary intake. As the teachers’ identities have changed over the past years they have not yet found a solid ground for determining how food and meals could be integrated into their everyday work as pre‐school teachers and childminders.  相似文献
